The traditional neapolitan Pizza is a yeasted flatbread generally topped with tomato sauce and cheese (mozzarella) and baked in an oven. Its proper name is pizza Margherita, because it was first prepared in honour of Queen Margherita. In Naples, this pizza is baked in a wooden oven: it’s very good! In 2009, upon Italy's request, Neapolitan pizza was safeguarded in the European Union as a Traditional Speciality Guaranteed dish.

Chiacchiere are very common in Naples on Fat Tuesday, called “Carnevale�. The word "chiacchiere" translates into "chatter", "chitchat", or "gossip", but in this context it is a strip of sweet pastry dough fried and coated with powdered sugar.

We usually eat this cake at Easter; it’s made with wheat and flavoured with a liqueur made from flower essence. It’s quite impossible to describe it, you should taste it!

There are two things that are synonymous with Easter in Napoli – Pastiera – the ricotta and wheat based pie and the rustic and savoury Casatiello Napoletano. It’s the Neapolitan Easter with eggs embedded on top and topped with crosses made from dough. Casatiello is stuffed with an assortment of cured pork and cheeses (the particular mix varies from recipe to recipe) and baked until golden brown in the oven. 7

It is a soft cheese, typical from the Campania region, where the buffalos are raised in a natural way. The buffalo mozzarella exists in numerous different forms, delicious and appetizing, like the fresh bocconcini, the spirited knots, the cherries, and many other variants that are all prepared with simple and natural ingredients.

Although this dish it will certainly satisfy the most discerning palate with its strong and intense taste. Shaped like a mushroom, is very difficult to prepare and requires a long process; the babĂ is completely immersed in rum, but there is also a variant with limoncello.

The anchovies are a type of blue fish that is found in the Mediterranean Sea, considered a poor fish is actually very nutritious and rich in healthy substances. The anchovy-based recipes are many and very diverse: one of the most famous and simple is definitely the Neapolitan recipe, where the anchovies are fry in hot oil and turn after being wrapped in flour.
