Grilled BBQ INGREDIENTS •
6 boneless, skinless chicken breasts
BRINE •
3 cups of cold water
•
3 cups of buttermilk
•
2 teaspoons of chili powder
•
�/4 cup of salt
•
�/4 cup of granulated sugar
CHICKEN BREASTS
BBQ SAUCE • 2 cups of tomato sauce
•
2 teaspoons of chili powder
•
�/3 cup of apple cider vinegar
•
1 teaspoon of smoked paprika
•
2 tablespoons of tomato paste
•
2 teaspoons of chili powder
•
2 tablespoons of Worcestershire sauce
•
1 teaspoon of Kosher salt
•
�/2 teaspoon of ground black pepper
•
�/3 cup of molasses
•
2/3 cup of light brown sugar
Combine all of the barbecue sauce ingredients in a medium sized saucepan. Simmer over medium-low heat until thick, stirring occasionally. Refrigerate until you are ready to grill. In a bowl, combine all of the brine ingredients. Add the chicken, cover and refrigerate for 1 hour. Preheat the grill for 15 minutes on high. Remove the chicken from the brine and pat dry with paper towels; discard the brine. Place the chicken on the hottest part of the grill and cook for 2 minutes. Turn the chicken over and brush with sauce. Cook until browned. Turn the chicken over and move to the cooler part of grill. Brush with sauce and cook for 2 additional minutes. Repeat the turning and brushing 2 more times, 2 minutes on each side. Cook for 1 to 3 minutes or until the internal temperature reaches 165°. Let rest for 5 minutes before serving. This chicken is best paired with corn on the cob, pasta or vegetables!
