Two Easy Summer Sides Summertime has arrived at Brookberry Farm! The warm weather months are the perfect time to invite some friends and neighbors over for a casual meal. This month, The Farm Truck is featuring two easy sides. Apple Bacon Coleslaw
Baked Potato Chip Nachos with Gorgonzola & Bacon
• 1/4 cup cider vinegar • 1 cup mayonnaise
• 2 large russet potatoes, sliced 1/8 inch thin
• 3 chives, minced
• 1/3 cup honey
• 1-2 teaspoons olive oil or use olive oil spray
• 1/4 teaspoon salt
• 2 teaspoons kosher salt
• 1-2 ounces Monterey jack cheese, shredded
• 1/4 teaspoon ground pepper
• 1/4 pulp free orange juice
• 1-2 ounces gorgonzola cheese, crumbled • 3 slices bacon,precooked and chopped
Preheat the oven to 350 degrees. Wash and dry the potatoes. • Using a mandolin set to a 1/8 inch, slice the potatoes and place on a clean dish towel or paper towels to drain moisture. Shred the jack cheese and chop the gorgonzola if necessary. • Toss the potatoes with the olive oil and place the slices on a cooking rack placed in a baking sheet (allows for better baking). Bake the potatoes about 20 minutes or until starting to brown a bit. Meanwhile, chop up the bacon and set aside. • Scatter the jack cheese on the potatoes followed by the gorgonzola cheese and bacon. Bake another 3-4 minutes, just to melt the cheese. • Remove from the oven, top with chives.
• 1/2 juice from fresh lemon • 1 teaspoon ground black pepper • 1 small Fennel shredded • 1 medium cabbage, cored, shredded • 1/2 pack of bacon fried crispy then broken up into small pieces • 1 bunch scallions, thinly slice 1/2 cup finely minced parsley leaves, optional • 4 firm apples, peeled, cored and shredded
Combine ingredients in a large bowl and let sit in the fridge overnight. Mix well before serving.
Top 1o Perennials for a Colorful Garden
about
The Farm Truck
Long-blooming perennials make life easy for gardeners who crave color all summer. To be sure, through careful selection and planning, continuous sequence of bloom can be achieved using a multitude of plants that flower for a brief time. But having perennial flowers that bloom all summer gives us more room for error. Just plant these workhorses in a place where they will be happy and let them do the work for you.
The Farm Truck is published by Berkshire Hathaway HomeServices Carolinas Realty for Brookberry Farm residents.
