Brookberry Farm residents are invited to join other members of the local community at a Second Harvest Food Bank lunch event called Set the Table to promote a healthy, hunger-free Northwest North Carolina. In keeping with the spirit of Second Harvest, lunch guests will gather in fellowship around a very special family-style meal prepared with fresh, local ingredients.

Honoring Clyde Fitzgerald

LOCAL TREASURES

The University of North Carolina School of the Arts has introduced a new summer music series called UNCSA Presents: The American Music Series. The series will feature Mavis Staples on June 7, the Del McCoury Band on June 23, Las Cafeteras on July 26, Anna and Elizabeth on July 28 and Josh Ritter on August 2. All concerts begin at 7:30 p.m. and will be held at the Stevens Center. Summer is the perfect time to enjoy an evening in downtown Winston-Salem with world-class performers thanks to UNCSA! Mavis Staples Mavis Staples is a living legend of American rhythm and blues and gospel music. She was inducted into the Blues Hall of Fame and the Rock and Roll Hall of Fame, is a recipient of the National Heritage Fellowship, and is a Kennedy Center honoree. In 2011, she won a Grammy Award for her album “You Are Not Alone.” Before Staples became a solo singer in 2001, she sang primarily with her legendary family group, The Staple Singers, who evolved from enormously popular gospel singers in the late 1950s to become the most spectacular and influential spirituality-based group in America.

Summer Corn Salad Fresh corn will be available from local farmers’ markets soon. Corn is so versatile but a favorite is Summer Corn Salad. Be sure to make it ahead of time for your next family cookout, a weeknight treat or, better yet, take it on a picnic lunch!

Ingredients

• 3 tablespoons olive oil, divided • 1 tablespoon lime juice • ¼ teaspoon salt • 1½ cups fresh or frozen corn, thawed • 1½ cups cherry tomatoes, halved • ½ cup finely chopped cucumber • 2 tablespoons minced fresh basil • ⅓ cup crumbled feta cheese • 2 tablespoons Italian dressing (optional)

Whisk together 2 tablespoons of oil, lime juice, and salt in a small bowl and set aside. Cook corn in a skillet with remaining oil until tender. Pour corn into a large bowl, cool slightly and add tomatoes, cucumber, and basil. Refrigerate until ready to serve. Right before serving, drizzle with dressing, feta cheese and Italian dressing (if desired).


Patio Tomatoes

It’s not too late to plant tomatoes in large pots on your Brookberry Farm patio or deck. Tomatoes are easy to grow and delicious when served fresh! Here are a few tips to get you started: • Pick a Good Spot — Place pots where they’ll receive at least six hours of sun. If pots aren’t near a water source, make sure you can get a garden hose to them (or don’t mind lugging a watering can around), because tomatoes need a steady moisture supply. • Choose the Right Pot — Full-grown tomato plants need a lot of space for a strong root system. For maximum production, the ideal pot size is 18-inch diameter for determinate tomatoes and 24-inch diameter for indeterminate tomatoes. • Use Premium Quality Potting Soil — Garden soil from planting beds tends to be too heavy for containers. Fill containers with premium quality potting soil to provide the air and moisture circulation needed by your plants. • Add Support — Insert a support when you plant each tomato, as doing so later on may disturb the growing roots. A traditional tomato cage or stake works great. • Water Regularly — Proper watering is a big key to success for growing tomatoes in pots. Keep soil consistently moist but not saturated. Place a saucer beneath each pot to catch water that runs through the soil, so plants can absorb that extra moisture over the course of a hot day. (It will also protect decks and patios.)
