‘ONLY THE BEST IS GOOD ENOUGH’ As the son of a baker and pastry chef, Ralf Berendsen was predestined to walk in his father’s footsteps, but ultimately things did not work out that way. Via intermediate stops with several leading chefs abroad, he started working at Restaurant La Source in 2011. Two years later he was awarded his first Michelin star here.
my feet on the ground and I’m a happy man when restaurant guests are happy with our creations. And these creations are actually the work of the entire La Source team. Without competent motivated colleagues, even the best chef won’t be able to put top-quality meals on the table and inspire guests each and every day.’
‘I’m a born perfectionist. Everything that’s on the plate must be complete. We set the bar very high, only the best is good enough! I only work with fresh top-quality products, where possible from the region. The guests who visit us are experienced gourmets with refined taste buds who also have high standards when it comes to the presentation of meals and the setting. That requires both creativity and discipline and the utmost concentration from me and my team. Even the smallest detail has to be in line with the greater whole.’
‘The perfect place to treat yourself’
Michelin-starred chef Ralf Berendsen is not only a perfectionist, he’s also a control freak. He goes so far in this that all the dishes served are prepared by him. This also applies to the accompanying desserts after the meal. ‘It’s not acceptable for the son of a pastry chef to outsource the pastries. That would be a mortal sin.’ La Source has recently added dishes with matching beers to its menu. ‘In cooperation with a family brewery in Limburg, we have started by developing a beer especially for La Source. The competition has become so steep between Michelin-starred chefs that you have to be constantly on the lookout for new inspiration. I have a notebook on my bedside table in case I get an original idea in my sleep. Inspiration can’t be planned.’ Some of his colleagues have become radio and TV stars, are publishing their own cookbooks and earning a lot of money in the process. ‘I wish everyone success and enjoyment. Personally I don’t need to be the centre of attention all the time. In fact, I don’t have time for it! As the saying goes, where there is light, there is also shadow... I prefer to keep

Maître Kevin Vondenhoff not only stands out in the dining room with professional and charming service, but also with heartfelt friendliness. This same hospitality characterises the entire team, making every guest feel at home here. The restaurant was recently renovated, the interior is timeless, elegant and luxurious. The wonderful view and beautiful terrace top it all off. On the plate, Michelin-starred chef Ralf Berendsen serves gastronomic works of art that can take their place among the very best in Belgium. The chef starts out with beautiful, luxurious top-quality products like Gillardeau oysters, Persian caviar and pigeon from Anjou. His cooking style is inspired by French cuisine, but presented in a modern way, with an eye for detail. What’s more, he knows how to please with the use of international seasoning and products. During our visit we enjoyed a wonderful preparation of langoustine, coconut and tandoori masala, and an original dish with warm foie gras, ginger beer, yuzu and hazelnut. The play of texture and temperature gives the preparations an extra dimension. From the amuse-bouches to the impressive trolley of mignardises, it’s clear that quality is their strength here. The wine cellar is also very impressive. La Source and Domaine La Butte aux Bois: the perfect place to treat yourself.’

‘A TOURMALINE IS MUCH MORE PERSONAL THAN A SHARE IN A COMPANY’ Turning a passion into a job isn’t within everyone’s reach. But Jochen Leën managed to make this dream come true. At quite a young age, he was already interested in rare colourful precious stones, and he turned his fascination into a profession. In his personal ranking of favourite stones, tourmaline is definitely number one. Last year the American superstar Alicia Keys received a ring from her husband – producer and rapper Swizz Beatz – for their sixth wedding anniversary. Not just any ring, but a 32-carat rectangular-cut watermelon tourmaline. The price tag is unknown, but the name of the designer probably already sounds familiar to regular guests at Domaine La Butte aux Bois: Jochen Leën. The display cabinets in the lounge always contain some of his jewellery designs. ‘I have had an office and a work space here since 2010. Within the foreseeable future we’ll also have a boutique here, so that everyone can take a look at more of my work, without any obligation to purchase’, explains the 36-year-old from Lanaken, who studied the four-year Jewellery Design and Goldsmithing course in Antwerp. He gained experience with different jewellers and since 2008 he has worked on a freelance basis. He also has a workshop in Antwerp and is recognised by the World Federation of Diamond Bourses.
Indiana Jones ‘Tourmaline is mostly found in Latin America and Africa, but I’m not an Indiana Jones-type who goes through the jungle searching for exclusive stones (laughs). I mostly buy them via mine owners and

individual collectors. It’s only after certification by a lab with great expertise that I start designing a piece of jewellery with it.’ ‘I never make a series of a design. A certain customer niche only wants unique pieces. Many buyers consider it as an investment with added emotional value. A piece of jewellery is much more personal than a share in a company and is usually passed on to the next generation. Even if you don’t wear it, you can still enjoy it by simply looking at it. Tourmaline exists in the most beautiful colour variations.’
Paraiba ‘My absolute favourite is the Paraiba tourmaline, named after the eponymous state in Brazil. It’s much rarer than diamond and has shades of ocean blue and green. Diamond is more expensive, but if you’re going for top quality, the prices are similar. In order to determine the value, the four Cs also apply here: colour, clarity, carat, cut. First I am usually charmed by the unbelievable colours, but of course I also consider the three other aspects. For example if a stone is not perfectly cut, I won’t be happy with it.’ Jochen Leën considers it a great advantage that he can work at Domaine La Butte aux Bois. ‘Buying a piece of jewellery is different to buying a pair of shoes. You need complete peace and quiet for that. Domaine La Butte aux Bois is the perfect setting, particularly after the recent extension. Many foreign clients even book a room, so that they can sleep on their decision and make the right choice the next day.’

After finally settling in the Belgian town of Lanaken, he joined Domaine La Butte aux Bois as a personal coach in early 2017. Now he gives us a look behind the scenes at Le Gym, La Butte aux Bois’ exclusive members only fitness club. ‘My father was the first Dutch triathlete to take part in the IRONMAN competition in Hawaii and encouraged me to follow in his footsteps. As a professional golfer and coach, I began coaching toplevel athletes from various disciplines. Besides that, I help people who are trying to achieve a healthy balance of work, family and free time. These clients range from business leaders to independent entrepreneurs to familiar faces from the media and showbiz industries, both young and old.’

ANTI-AGEING TREATMENTS AND BOTOX ARE NO LONGER TABOO – EVEN FOR MEN.’ ‘In short: dermatology is about everything to do with the skin and this covers a broad spectrum of diseases and applications. This explains the high degree of specialisation among dermatologists. In my case that’s the treatment of varicose veins and cosmetology', explains Dr Yolande BullensGoessens. Together with a colleague, she runs a dermatology practice in Genk and also works part time at Spa Retreat La Forêt at Domaine La Butte aux Bois. ‘The formula works: the team at La Forêt have the additional benefit of a doctor specialising in cosmetology and I get the chance to practice my profession part time in a gorgeous hotel environment. It feels cosier here than in a medical practice. I was able to pick out the lotus flowers on the wall of my work space myself.’

Complications can only occur if it’s not done professionally or if it’s applied in the wrong places.’

IGNACE SCHOPS, FOUNDER HOGE KEMPEN NATIONAL PARK
‘FROM BLACK LUNG TO GREEN LUNG’ Twenty years ago, as director of the Regionaal Landschap Kempen en Maasland (Kempen and Maasland Regional Landscape), Ignace Schops began lobbying to create the Hoge Kempen National Park. Almost ten years later, his efforts were rewarded: on 26 March 2006, the first and still the only national park in Belgium was opened. ‘By 2027 we want to double the size of the park from 6,000 to 12,000 hectares’ explains the 52-year-old climate ambassador and nature conservationist. When designing the new section of Domaine La Butte aux Bois, we specifically chose to integrate the entire accommodation into the surrounding Hoge Kempen National Park. The hotel rooms and the sun terrace offer sweeping views of the surrounding woodland. With guidance from coach Ingmar Harthoorn, guests can take part in all kinds of outdoor activities like Nordic Walking, mountain biking and walking. The facilities and treatments at Spa Retreat La Forêt – the name already says it all – are based on what Dr Yolande BullensGoessens describes as ‘the elementary forces of Mother Earth’. ‘All over the world, we are seeing high-end hotels being embedded in nature. La Butte aux Bois is a beautiful example of this’, says Ignace Schops. His words have an engaging and convincing power, the consequence of many years of efforts for the environment. When he talks about landscape protection, people listen. Let’s take a quick look at his CV. In 2008 in San Francisco he received the Goldman Environmental prize, also known as the Green Nobel Prize, in the presence of 3,500 guests. The same year he was
selected as a fellow by Ashoka, a worldwide organisation promoting social entrepreneurship. At the end of 2009 the European Parliament appointed him international ambassador for biodiversity. Since 2014 he has been the president of Europarc Federation, an umbrella association for all national parks in Europe.
Al Gore He regularly meets the world’s greats, like the Secretary-General of the United Nations and Nobel Prize winner Al Gore, and in 2013 he joined the former US Vice-President’s Climate Leadership Corps. Gore’s documentary ‘An Inconvenient Truth’ made millions of people aware of the consequences of the greenhouse effect for humankind over the next fifty years. ‘Economics are essential, climate change is existential’, emphasises Ignace Schops. In short, the man from Heusden has an international reputation, his know-how makes a lot of things possible. For example, he has been successfully striving for symbiosis between tourism and nature for many years now. Hoge Kempen National Park created five thousand jobs and generates an annual turnover of €191 million. ‘Ecology and economics can go together perfectly’, he explains. ‘In Belgian Limburg, we came to understand that well after the mines closed. At the time, the province had a great need for new employment. I was the director of the environmental association Natuurpunt Limburg at that time. Within our organisation, we wanted a project in which the qualities of the region were key. One of these qualities was the region’s natural assets.’

‘In this context, in 1990 the Kempen en Maasland Regional Landscape was created, and the contours of the Hoge Kempen National Park were drawn. From the poverty of the past we made the wealth of the future. Or if you want to say it with more wit: the black lung became a green lung. A transition like this can't be left to chance, of course. Alles van waarde is weerloos (Everything of value is defenceless) wrote the Dutch poet Lucebert. This not only applies to art, but also to nature. This is why we must think very carefully about every human intervention, however small it may be.’
Earthquake area Not everyone agreed with Ignace Schops’ plans. ‘Many people said to me: If you want to protect nature, you’re not going to let great crowds of people loose on it are you? We countered the objections with our ‘(Re)connection model’ which employs four principles: connecting nature with nature, connecting people with nature, connecting the economy with nature and connecting policy with practice. This was a pioneering model.’ ‘A simple adjustment: all access points are at a distance from the park, sometimes kilometres away, so that the stream of visitors is channelled. Our model is now even being considered at Yosemite

National Park and Yellowstone National Park in the US, in South Korea and in the earthquake area in central Italy, where I recently visited. We provide the model free of charge because we feel that change is more important than the money we could earn with it. Elon Musk at Tesla thinks in the same way.’
Birdwatching Ignace Schops realises that all efforts for nature are impossible in the long term without socio-economic return. ‘If you don't create any added value, it’s very quickly over. It’s best for the money spent to stay within the region, so that you stimulate the local economy. This is why we, along with Toerisme Limburg (Limburg Tourist Board) find research into visitors’ spending behaviour very important. The numbers tell us how it is. With the help of electronic measurements, we can say exactly how many people have visited a national park in a month. This is the only way you can calculate the economic value of nature.’ ‘Don't get me wrong: I am passionate about nature and would rather only work on fauna and flora. I love frogs and salamanders, but sound business management is crucial in order to offer high-quality ecotourism. I still see huge opportunities in the
relationship between health and nature. If you have a stiff arm or a sore back, for example, the doctor sends you to a physiotherapist. Why wouldn’t your doctor send you to a nature therapist if you’re going through a bad patch? With ten sessions of, say, birdwatching, you might be back to your old self. Nature is a wonderful medicine, both as a prevention and a cure. This is why more and more hospitals are focusing on their outdoor spaces. It has already been shown that patients recover more quickly if their room offers close contact with the natural environment. The new wellness centre at La Butte aux Bois is really catering to this trend.’

Sense of stay According to Ignace Schops, there is still a lot of work to do in order to make the planet more liveable, particularly in the field of raising awareness. ‘My motto is: Think globally, act locally and change personally. That last point is particularly important. If we want to save the earth, everyone must start with themselves. If each individual thinks that he or she can’t make a difference, we’re all collectively moving towards the exit. Thankfully more and more people are finding their sense of stay important. They’re choosing their destination more carefully. You can see that from the increase in holidays closer to home. This trend isn’t just related to the increasing
feeling of insecurity, but also the realisation that either they’re not aware of the wealth of their own area, or they don’t know it well enough.’
LATTE ‘The tourism sector also needs to assume its responsibility. Each year, 200 million people enter the world market of tourism. This is why it’s important for us to make the right choices. We have translated our plans for the National Park into a simple slogan: ‘Twee keer zo mooi, twee keer zo sterk en twee keer zo groot’ (Twice as beautiful, twice as strong and twice as big). For the latter, over the next ten years we want to expand towards Bilzen, Natuurgebeid De Klaverberg (De Klaverberg Nature Reserve) in As, the Duinengordel (Dune Belt) in the north and Dilserbos (Dilsen forest). I want to sincerely thank all our partners and my fantastic team for their continued support, even in difficult circumstances.’ ‘If we succeed in our goal, we will double the size to 12,000 hectares and we’ll be a medium-sized park in Europe. In order to approach this project successfully, we need to be ‘LATTE’: Local, Authentic, Traceable, True and Ethical. Indra Nooyi, CEO and Chair of the food and drinks giant PepsiCo, made these five values her gospel. She is considered one of the most powerful women in the world and sets a great example.’
