A holistic approach to aesthetic medicine
Dear Guest, This year, the Park Igls Mayr clinic celebrates its 25th birthday: what an amazing quarter of a century during which so much was achieved! Modern Mayr Medicine was founded by Dr Martin Winkler and carried further by Dr Peter Gartner, offering a holistic medical approach quite unlike any other approach to health. For this, our 25th anniversary edition, our two pioneers discuss key aspects of Modern Mayr Medicine. This issue also introduces our readers to microbiological stool testing: a ground-breaking diagnostic milestone! The rediscovery of medical grade honey to treat wounds represents a return to ancient methods of healing. Plus, get back on track with gait analysis and enjoy the interesting news from our kitchen: protein supplements reimagined by Head Chef Markus Sorg. I hope you enjoy our magazine and look forward to welcoming you back to the Park Igls Mayr clinic. Andrea Gnägi (Mag)

25 years ago, a pioneering success story began at the Park Igls Mayr clinic which has proven to be of huge benefit to many people. Thanks to Modern Mayr Medicine new milestones were reached in holistic medicine and therapy. The founder of this new approach to health at Park Igls is Dr Martin Winkler: Modern Mayr Medicine is his life's work. He entrusted it to the capable hands of the Mayr clinic's current medical director, Dr Peter Gartner. Together, they look back on the last 25 years.

25 YEARS PARK IGLS
Dr Peter Gartner: Dr Winkler, you came to Mayr medicine rather unexpectedly, didn’t you? Dr Martin Winkler: That’s right! I used to be a trauma surgeon with my own practice in the Ötztal. The turning point came in 1982 when I moved to Innsbruck. I was asked to open a health centre in Lans, modelled on the – at that time somewhat unusual – Golfhotel in Dellach on Lake Wörther where they practised classic Mayr medicine. Dr Gartner: You trained under Dr Kojer and Dr Rauch – the 'heirs' to FX Mayr. How did these men influence your career?
When Dr Winkler joined Park Igls 25 years ago, Modern Mayr Medicine was finally able to flourish.
Dr Winkler: I trained as a Mayr physician, I was in thrall to the traditional approach practised by Dr Kojer and Dr Rauch. They had both studied under FX Mayr himself and rigorously followed the guidelines issued by the International Society of Mayr Physicians. It was a rocky road, and for the first few months I was only allowed to watch – even though I was a fully qualified and practising medical doctor! When Dr Rauch eventually allowed me to take a patient's blood pressure, it felt like being awarded a knighthood [smiles]! Dr Gartner: But even after completing the training, you encountered obstacles, didn't you? Dr Winkler: Due to the International Society of Mayr Physicians's strict rules it was almost impossible to progress the traditional method. Dr Rauch dared to introduce a mild derivative diet that deviated from the customary three-week course of treatment by introducing light foods and protein supplements – and Dr Kojer didn't hold back in his criticism. When I suggested the addition of even more protein – and published a book about it – my membership of the Mayr Society was even temporarily suspended.
Dr Gartner: So, despite the strong opposition from leading Mayr physicians at the time, you set about establishing Modern Mayr cuisine. Today, the study of different tissue types – from atrophic to vital – tells us that yours was the right way forward. Modern Mayr cuisine is divided into eight stages, which allows us to offer a diet plan to suit each type – tailor-made so to speak. Dr Winkler: We have Dr Kojer to thank for this development, because his disapproval reinforced my conviction that things could be done differently. When I joined Park Igls 25 years ago, Modern Mayr Medicine was finally able to flourish. Dr Schwarz and Dr Gnägi, the leaseholders and investors, created the parameters that placed the wellbeing of guests at the centre of running a therapeutic centre focused on medicine and health. Dr Gartner: Establishing the Park Igls Mayr clinic – at that time it was still known as the Parkhotel – must have therefore represented a real ‘blow for freedom’! And Modern Mayr cuisine the first step in the right direction. Dr Winkler: Yes, but we faced similar issues with regard to exercise therapy. Dr Kojer prescribed strict rest to his health resort guests. As a result, the guests would secretly take themselves out for walks whenever Dr Kojer went away. This prompted me to make changes in terms of exercise too. After all, it made little sense to ban guests from doing something healthy they so clearly enjoyed! Dr Gartner: Did distancing yourself from these conservative rules also nudge the concept of autonomy into stronger focus? Dr Albert Gnägi, investor and leaseholder, in conversation with freeholder Dr Stephen Beck

Dr Winkler: That’s right. Over the years, I'd observed that guests were happier and more focused if they were included in decision-making. So, I started to get them more engaged in the planning for their therapeutic stays. Dr Gartner: We still ask guests which dietary stage they would choose for themselves and, interestingly, they tend to be much tougher on themselves than we are! In addition to diet and exercise, you were also interested in cooperating with conventional medicine. Dr Winkler: Yes. Working with local physicians is a key factor in Modern Mayr Medicine. And it's what makes Igls so exceptional. Mayr medicine is holistic and based on both the Mayr method and conventional medicine.
into the intestine repeatedly confirms the theories of Mayr medicine. I'm sure that the six principles of Modern Mayr Medicine will also find their way into orthodoxy. Dr Gartner: Every aspect of Modern Mayr Medicine has undergone constant development over the years. Markus Sorg, our head chef, is constantly evolving Modern Mayr cuisine on the cutting edge of nutritional science. Michael Multerer is doing the same for exercise therapy and offering the most up-to-date methods. Close cooperation with all kinds of disciplines gives us a head start in every respect. Plus, we reached another milestone when we intensified our psychological services. Psychology has a much greater role to play than was first thought and lies behind everyday issues that need to be tackled, such as stress management. However, society's perception of mental health needed to change first. Dr Winkler: New ideas seem to develop physio logically. It is generally difficult to present and then implement a fully formed idea. It needs to develop organically; the conditions and the team need to be right... that's how innovation can emerge and thrive. Dr Gartner: Do you consider the development of Modern Mayr Medicine as your life’s work? Dr Winkler: There’s an old German saying about all the things a man should do: build a house, plant a tree... Park Igls is the ‘house’ I built, and I'm delighted that it is being developed, just as I would have liked. It’s wonderful to know that one has been able to do something positive for people. Dr Gartner: Thank you!
Dr Gartner: I agree. The proportions of com plementary and orthodox medicine need to be well balanced. FX Mayr was himself a practitioner of conventional medicine, and we too adopt a critical attitude to esoteric approaches. Dr Winkler: Generally, there are many parallels with conventional medicine. Rest is commonly prescribed to patients, and rest is what Mayr dietetics means for the digestive system. Research

The gut’s message to the cerebrum: let the bacteria in! How bacteria in the gut affect our health and the role of molecular fecal DNA testing. Major findings about an underrated organ and its populations.
8
BACTERIA IN THE GUT
H
ealthy or diseased? ‘All disease begins in the gut’ is how Hippocrates is said to have summed it up – but he could just as easily have swapped ‘disease’ for ‘health’. Dr Irene Brunhuber, GP and Mayr Physician at Park Igls explains: ‘A 1.70m tall, 20 to 30-year-old person weighing 70kg is made up of around 30 trillion cells and 39 trillion micro organisms.’ Around 2kg of their total weight is made up of bacteria, and 50% of the gut’s contents consists of bacteria. No wonder that everyone is talking about microbiota – all the living microorganisms in the body – and the microbiome – the sum of bacterial genes in the body – as they are increasingly nudged into focus by scientific research. These tiny ‘subtenants’ have an enormous impact on human health. Effecting positive health outcomes by making changes in the diet and supplying the gut with specific bacterial strains is an equally huge possibility. Molecular fecal DNA testing provides us with data to help us establish therapies that compose the cacophony of intestinal flora into a symphony of good health.
Around 2kg of our total weight is made up of bacteria, and 50% of the gut’s contents consists of bacteria.
THE BACTERIA ARE COMING! Prior to birth the human body is germ-free although bacterial colonisation starts during the birth process. ‘The bacteria’s settlement into the body is influenced by the type of delivery, the young infant’s diet, environmental hygiene levels and antibiotics. Colonisation in adults varies widely and depends on a range of factors such as age, location, health, socio-economic status and diet.
BACTERIA IN THE GUT
9
A FEW KEY MICROBIOTAL FUNCTIONS • Utilises food, supports digestion by removing less digestible carbohydrates and fibres, separates indigestible substances • Affects the immune system • Produces vital substances such as vitamin K, folic acid and other B vitamins • Detoxification of foreign substances • Stimulates bowel activity • Protects intestinal mucosa, supplies energy to intestinal mucosa, activates mucus production in the gut • Protects against colonisation by pathogenic germs
Antibiotics – the ‘bacteria killers’ If you’ve ever had to take antibiotics, you may have experienced one of the typical side effects: diarrhoea is caused by a disruption in bacterial colonisation. Antibiotics cause a long-term reduction in gut bacteria biodiversity. We used to think that things quickly returned to normal once a patient finished a course of antibiotics, but we now know that antibiotics bring about long-lasting changes to the bacterial colonisation and can even lead to extreme pathogenic germ growth.
10
BACTERIA IN THE GUT
GOOD AND BAD BACTERIA Often considered nothing more than pathogens, bacteria have a bad reputation. However, we live in a symbiotic balance with bacteria, and really need them to stay healthy. The majority of our bacterial ‘health guardians’ reside in the gut – our nutrition provider and an essential part of the immune system: 80% of our immune cells are contained in the gut, and they interact closely with bacteria. To fulfil its functions, the gut requires a healthy mucosa and epithelial cell layer and for the bacterial colonisation to be intact. If these factors are abnormal or lacking, pathogens find it easier to spread, leading to an over-burdening of the immune system and increased susceptibility to infection.
the physician. ‘Analysis discloses microbial imbalances, provides a picture of microbial biodiversity and gives us data with which we can survey the intestinal environment. In addition, examining digestive performance and the intestinal mucosa allows us to assess the immune situation in the gut.’ Complex investigations of the intestinal microbiome are only partly successful when using culturing methods, which can only identify 30 to 40% of intestinal bacteria. Better results are achieved with DNA methods that allow analysis of most of the bacteria present.
Often considered nothing more than pathogens, bacteria have a bad reputation. However, we live in a symbiotic balance with bacteria, and really need them to stay healthy.
MINI-THERAPISTS IN THE GUT The general rule is: the greater the bacterial diversity, the better! There is no such thing as a positive or negative germ, ‘conditions and diversity are the key, as are the microbiome’s actual metabolic activities’, says Dr Brunhuber. According to one study, healthy ageing also correlates to a high level of gut intestine biodiversity. Interactions with the body are diverse and of fundamental importance. This is what allows us to change bacterial colonisation in the intestine by introducing dietary changes and probiotics, thereby benefiting health.
Bacteria form a dense turf on the intestinal mucosa and prevent pathogens from docking or penetrating. Unhealthy eating habits, stress, infections and medication – especially antibiotics and laxatives – negatively affect the intestine. ‘If the intestinal environment – and thus the balance of bacterial strains – is upset, the result can be a whole gamut of health problems, including bloating, constipation, diarrhoea, food intolerances, allergies, chronic inflammation and immune system dis orders’, says Dr Brunhuber. Bacteria can affect visceral pain responses via the gut-brain axis and even the function and development of the central nervous system. Being able to identify bacterial strains and their relationships in the gut allows us to study disease processes and develop appropriate therapeutic measures.
A better understanding of the physiological connections between the body and microbiota also leads to exploration of their role in a range of disease processes.
Diet, probiotics and prebiotics (fibre utilised in the gut to support microbial function) affect all gut bacteria either directly or indirectly. Increased roughage (prebiotics) can change the microbiome, which is why a combination of pre and probiotics is recommended for successful therapeutic outcome. ‘Ultimately, everything depends on getting the composition and quantity of bacterial strains right. We rely on the results of the stool analysis to identify them’, Dr Brunhuber explains. This is the only way to turn the cacophony into a long-lasting symphony.
MICROBIOLOGICAL STOOL ANALYSIS HOLDS UP A MIRROR TO HEALTH ‘Stool analysis provides valuable information on intestinal conditions and thus provides an excellent basis for therapeutic proposals’, emphasises
BACTERIA IN THE GUT

Health lives in the gut… ... only half the story: it’s the bacteria in our digestive tract that give us health.
INTESTINAL BACTERIA ARE A FACTOR IN THE FOLLOWING COMPLAINTS
THE FOLLOWING DISEASES AND DISORDERS HAVE ALSO BEEN LINKED TO THE MICROBIOME
IRRITABLE BOWEL SYNDROME, CHRONIC INFLAMMATORY BOWEL DISEASE & DIVERTICULOSIS A recent study has shown that chronic inflammatory bowel diseases, irritable bowel syndrome and diverticulosis are indicative of microbial impairment and alterations in the number and composition of bacteria. Bacteria have a major part to play in treating irritable bowel syndrome in the form of probiotics.
• Allergies & food intolerances
OBESITY Studies have shown that bacteria in overweight people are super-efficient at extracting energy from food. The ratio of two major bacteria groups determines how many calories are obtained from food and absorbed by the body. Dietary changes combined with special pre and probiotics can sustainably affect this ratio. COLON CANCER Bacterial metabolic products such as hydrogen sulphide may play a role in the development of diseases including colon carcinoma. Here too, risks can be reduced with probiotics.
12
BACTERIA IN THE GUT
• Neurological and psychiatric disorders, e.g. depression, multiple sclerosis, migraines and autism • Chronic inflammatory diseases, e.g. arthritis • Diabetes mellitus
THE HUMAN BODY AS HABITAT According to the latest findings, the ratio of micro-organisms to human cells is a relatively balanced 1.3 :1. However, the microbiome’s genetic information far exceeds that of us humans: two million bacterial genes as opposed to 23,000 human genes. Every organ system that links to the outside world houses microorganisms • The digestive tract is home to the highest number of microorganisms • Skin • Respiratory system • Genitourinary tract • Female mammary gland
Some assailants of intestinal flora • Antibiotics • Overuse of laxatives • Nutritional imbalance and unhealthy diets • Infections • Stress

Jump up and smile! The perfect combination: bellicon® trampoline training and Modern Mayr Medicine
BASIC POSITION FOR ALL BELLICON® MINI TRAMPOLINE EXERCISES • Stand barefoot on the trampoline with legs hip-width apart • Bend the knees slightly – but don’t let them cover the tips of your toes • Push your bottom back – just a touch! • Tense up abdomen and buttocks • Keep your back straight and pull your shoulders back and downwards • Chest out, head up and tip of your nose pointing straight ahead
Always begin your exercises in the basic position with a gentle swinging motion. Keep swinging gently for around a minute while keeping both feet on the trampoline before starting any of the other exercises. Don’t overdo it to start with. It’s a good idea to try the first exercise units with the help of an experienced instructor. Last but not least: enjoy!

TRAMPOLINE TRAINING
T
he joy of movement and effective exercise – ‘new’ trampolining at Park Igls for strength and happiness!
The Park Igls Mayr clinic’s activity programme includes an intriguing new exercise concept: trampoline training. It’s a workout that fits really well with Modern Mayr Medicine’s principle of gentle exercise. Today’s trampolines dispense with metal springs and instead are made with highly elastic rubber rings that allow the elasticity to adapt to body weight and dynamics. This means it’s gentle on joints and extremely beneficial to motor control! GET THOSE HAPPINESS HORMONES FLOWING! The bellicon® mini trampoline is ideal for achieving quick and noticeable effects. Feel the positive changes in just a few minutes a day as the exercises activate every muscle, tendon and cell in your body. Trampolining motivates the adrenal glands to produce happiness hormones. Simply put: exercising on a mini trampoline makes you smile – and that's the best medicine, as the saying goes! EFFECTIVE INTERPLAY OF TENSION AND RELAXATION When exercising is so much fun there’s every probability that you’ll feel motivated to exercise more – and very soon, you’ll notice all kinds of muscles getting stronger thanks to the interplay of tension (in the downward movement) and relaxation (in the upward movement). Add to this the dynamics and instability that work the fascia and strengthen the important deep stabilising muscles, and you have the perfect, gentle and effective workout.
RELIEF FOR THE SPINE The upward swinging motion relieves strain on the spine and joints – landing back on the trampoline causes the body to contract gently, with no negative effects on your spine and joints. This alternation of tension and relaxation means that the intervertebral discs can soak up the fluid they need for their cushioning function and thus they too can remain (or become) healthy and supple. FULL-BODY EXERCISE ON THE CELLULAR AND METABOLIC LEVELS The expansion and contraction of the body is echoed throughout the body’s organs and cells. A slight tingling sensation under the skin becomes noticeable as the cells receive oxygen, blood and nutrients. No other form of exercise offers such gentle yet effective cellular training for the whole body!
NOTICEABLE EFFECTS OF FIVE MINUTES DAILY BELLICON® EXERCISES AT A GLANCE • Stronger cardiovascular system and muscles • Improved balance • Activated cellular metabolism throughout the body • Stimulates lymphatic drainage and boosts the immune system • Improved posture • Exercises are gentle on joints and back
EASY EXERCISES FOR EVERYBODY The mini trampoline’s target group is large and embraces the young, the elderly, exercise newbies and elite athletes. The selection of super-effective bellicon® exercises is equally comprehensive and sets (almost) no limits to your imagination. As is often the case, the key to maintaining a regular exercise routine on the mini trampoline lies in its simplicity. The device takes up very little space and bellicon® even offers a model with folding legs for easy storage. GET STARTED!
• Relieves pressure on the knees and hips • Tones the pelvic floor • Prevents osteoporosis • Beneficial for people with allergies and diabetes • Reduces stress and fatigue • Releases happiness hormones • Excellent for people with Parkinson's

MEDICAL YOGA AND MODERN MAYR MEDICINE Yoga mobilises the musculoskeletal system and has a positive effect on every aspect of the body. Different postures and breathing techniques stimulate the circulation, gently massage the internal organs to activate digestion and help still the mind. Calming inhalations and exhalations combine with meditation exercises for relaxation and inner harmony. Like Modern Mayr Medicine, Yoga is about training consciousness and developing body awareness as well as mindfulness. Another key aspect that links Modern Mayr Medicine and Yoga is breathwork.
MEDICAL YOGA

THE BREATH: MIRROR OF THE SOUL AND GATEWAY TO LIFE The breath is our chief source of energy and purification, and breathing consciously enhances our wellbeing. Within our nervous system, there is a strong association between our breath and our feelings which means that breathing can be regarded as the link that joins body, mind and spirit. During Yoga classes and one-to-ones, we therefore work on the breath and the diaphragm as well as on the physical and psychological aspects of our practice. Modern Mayr Medicine also supports the idea that correct and conscious breathing can have a healing effect, relieve digestive problems, boost the immune system, improve brain activity and detoxify the body.
THE FOCUS OF MEDICAL YOGA AT PARK IGLS: • Movement, strength and flexibility • Anatomically sensible, correct and body-friendly exercises • Body awareness • Discovering our own bodies • Breathwork • Relaxation and calmness • Mindfulness • The immune and nervous systems
HOW YOGIC BREATHING EXERCISES HELP:
• The cardiovascular system • Internal organs
• Relieves rigid body patterns • Massages internal organs • Relaxes • Promotes easy breathing • Offers a pathway to spiritual awakening
Whether balancing, calming or energising: the right breathing technique can control many of our bodily processes. Why not give it a go?
THE POSITIVE EFFECTS OF REGULAR YOGA PRACTICE: • Health benefits • Helps us deal with stress • Makes us more resilient • Promotes healthy digestion • Improves the body's ability to self-heal • Brings about a sense of lightness and joy • Boosts self-confidence and self-efficacy • Enhances wellbeing

GAIT ANALYSIS
A healthy
step
in the right direction – Gait analysis for prevention and rehabilitation at Park Igls. OptoGait: the innovative diagnostic procedure that measures the way you walk.
W
alking is our main mode of motion. After mastering our earliest steps in infancy, it takes very little time for walking upright to become automatic. However, ‘automatic’ does not mean ‘correct’. And did you know that a ‘wrong’ gait can cause headaches as well as back and joint problems? Walking is a complex interplay of movements that can be upset by the smallest deviation. In our everyday lives we only use two-thirds of our motor skills, which is the main reason for ‘evasive movements’ creeping in which can lead to longterm pain. This is why, to get to the bottom of many complaints, it is essential to examine the way we walk. A gait analysis combined with a video recording makes our walking patterns quite clear to us and shows how important it is to tackle the way we walk.
‘
Man learnt to walk upright early on, but it still gives him discomfort.’ HENRIETTE WILHELMINE HANKE,
GAIT AS AN INDICATOR OF HEALTH Minor deviations of the musculoskeletal system are difficult to perceive with the naked eye. Thanks to new diagnostic methods, however, we now have simple yet high-tech procedures at our disposal that enable us to identify variances in the locomotive apparatus with great precision. The data obtained from gait analysis allow us to obtain a precise diagnosis and thus prescribe effective preventive or rehabilitation measures.
GERMAN ROMANTICIST AUTHOR, 1785–1862
HOW DOES OPTOGAIT GAIT ANALYSIS WORK? OptoGait is the first portable analysis laboratory for dynamic gait or run analysis. It is an optical measuring system consisting of a transmitting
GAIT ANALYSIS
23
and a receiving bar, each fitted with 96 LEDs that continually communicate with each other and supply the key data used to produce a recovery plan. The OptoGait system at Park Igls can be easily attached to treadmills where it provides gait analysis data in real time, including stance phase, swing phase, stride length and contact phase.
While the sensors on the treadmill record your step length as well as the heel and toe contact of your feet, a small gyroscope strapped to your back measures the acceleration of your upper body and its position.
GAIT ANALYSIS AT PARK IGLS A gait analysis at Park Igls takes around 15 to 30 minutes. We make several video recordings of you walking or running – wearing trainers and barefoot. We start by introducing you to our gait analysis system and giving you a chance to get used to the treadmill. The treadmill’s speed is set to suit your requirements and can range from a leisurely walking pace of 3 to 4km per hour to moderate jogging speed. One of the most important parameters in gait analysis is step length, i.e. the distance between left and right feet, which allows us to detect any differences between left and right. Differences in step length can be caused by weak musculature, restricted movement after injury or by placing undue strain on the body during everyday activities. Another decisive parameter in gait analysis is the stance phase, which should be as symmetrical as possible. While the sensors on the treadmill record your step length as well as the heel and toe contact of your feet, a small gyroscope strapped to your back measures the acceleration of your upper body and its position. These data provide additional information about your spine and trunk muscles. We also use a video camera to record gait behaviour from various perspectives. These recordings provide you with important feedback as you watch yourself walk. Once our experts have evaluated all the data, we discuss how to approach treatment and therapy. Ideally, gait analysis would be performed at the beginning of a stay at our Mayr clinic to give you time to practice the therapeutic measures before going home where you will be able to continue practising your exercises with confidence. In most cases, we prescribe exercises to strengthen specific muscles to compensate for any agility and gait weaknesses. Massages can also help release shortened muscles to rebalance your gait.
24
GAIT ANALYSIS
Your step in the right direction: sharpen body awareness and focus on your gait!
WHEN IS GAIT ANALYSIS PARTICULARLY RECOMMENDED? • When pain is present as you walk • Following leg injury • In cases of back and/or spinal injury • Before and after surgery to the locomotive apparatus or back
Gait analysis is also extremely useful for prevention. By age 70, only 80% of us still walk normally. This reduces to 20% by the time we’re 80! Decreasing muscle mass and an impaired sense of balance affect our safety when we walk. Gait becomes less stable, more wide-legged and ‘tottering’. In this respect, gait analysis offers a preventive measure to raise our awareness and spur us on to start exercising early and improve both gait and balance. It's never too late to work on the way you walk! We look forward to welcoming you in our panoramic gym on the third floor!
• If you have received an artificial joint (hip, knee or ankle)

Good food for a healthy life Protein is one of our body’s building blocks
PROCESSES SUPPORTED BY PROTEIN …weight loss …muscle development …muscle repair
A
healthy diet is vital for wellbeing and fitness. This is hardly news, still we cannot emphasise it enough!
In addition to exercise, nutrition is a major factor in preventing diseases such as gout, dia betes, obesity and cardiovascular problems. Developed by Park Igls Mayr clinic, Modern Mayr cuisine encompasses eight dietary stages. As well as being the ideal accompaniment to our guests’ treatment programmes, it is also a perfect holistic nutrition concept to follow at home. Healthy, therapeutic nutrition in the spirit of FX Mayr is highly considered. At Park Igls, we believe that healthy living requires healthy eating. Our eight-stage nutritional plan will surprise you with its gourmet approach to diet-appropriate dishes. Obviously, detoxifying the digestive organs is at the core of Modern Mayr cuisine. This nutritional diet cuisine is both cuttingedge and preventive, and it forms the basis of our therapy. Modern Mayr Medicine’s diet concept is not about self-denial, starving yourself or calorie counting; it is about changing your lifestyle. Simply put, it’s about living healthily for the long term, cutting out things that are bad for us, but without sacrificing the pleasures of good food! Protein is key to our eight dietary stages, and it poses a special challenge for Head Chef Markus Sorg, which he explained during our interview (see opposite). The fact is that protein strengthens the

immune system and muscle development, it is filling and above all contributes to our physical and mental energy supply. No life is possible without protein. However, the amino acids that make up proteins should only be consumed in a natural, easily digestible form. Furthermore, vegetable proteins are much more digestible than animal proteins. Since less energy is expended in digesting vegetable protein, the body is able to produce energy reserves. Good protein is found in most pulses such as beans, lentils and peas as well as in some vegetables and cereals. The lupin bean’s protein is considered particularly beneficial. Lupin protein is alkaline and it contains an optimum ration of all 20 amino acids, including the eight essential amino acids. Modern Mayr Medicine’s personalised nutrition, exercise and treatment programmes give guests a new body awareness and greater balance. Part of the success of the Mayr concept lies in trusting in its advice: always eat in a relaxed atmosphere and savour every bite fully.
PROTEIN – ELEMENTARY! Around 75% of our body dry mass consists of protein. Protein is the most important component of muscles, blood, skin, hair and the internal organs.
Protein: when – how – why?
We ask Head Chef Markus Sorg 1. Why do we need protein? What’s its effect in the body? Protein consists of amino acids, of which eight are essential to life but cannot be produced from scratch by the body – therefore we need to have them in our food. Protein is important for building muscle and for brain and nerve cell development. However, it’s important not to get carried away and consume too much! Eating more than 0.8 grams of pure protein per kilogram of body weight risks protein metabolites to be stored in the connective and fatty tissue. As tissue jellifies and tissue pressure increases, Mayr physicians speak of protein build-up which can be the precursor of many chronic diseases! 2. What exactly are ‘protein supplements’? Foods that provide us with valuable proteins including Tyrolean Alpine cheese, low-fat quark, mozzarella, trout fillets and turkey ham. 3. Modern Mayr cuisine is divided into eight stages – from fasting with tea to the Mayr Energy Diet. What Modern Mayr cuisine stages include protein supplements, and why? We provide our guests with supplementary protein and vegetables as soon as they reach stage two – the difference between this stage and the subsequent ones lies in the quantity.
PROTEIN
27
SUPPLEMENTS The basic building blocks of proteins are amino acids, eight of which are essential to life and cannot be produced by the body – this means they have to be introduced in food!
9. When people leave Park Igls, what should they think about when they prepare meals at home? What protein supplements should they opt for, how should they prepare them and how much should they use? That’s fairly simple – don’t fixate on ready-made products, but instead – inspired by our stay and cookery classes – implement your own ideas, i.e. cook! It’s very easy to get portions under control so long as you pay attention to your body’s satiety signals. This is something best learnt by having regular Mayr therapies.
4. What foods are good sources of protein? Various cream cheeses, vegetable proteins such as pulses, seaweed (chlorella), sprouted grains, seeds and beans, soya products... 5. Why is animal protein a problem? I don’t personally consider animal protein to be problematic. Again, it’s the quantity that matters. We prefer to use meat sourced from environmentally conscious farms (organic and regional), and we love using top products to create something incredible.
m Gour p ti
6. Which is your favourite protein supplement? How is it prepared? Avocado spread with linseeds and basil – spoon out the flesh and blend to a fine purée with salt, pepper, nutmeg, linseeds, basil and lemon. 7. How can we refresh the way we cook proteins? By putting together new food combinations with high biological value, and by being creative: try pickling, smoking, fermenting etc. 8. Do you have any new recipes or preparation methods? We’re always trying things out and developing our recipes. New recipes will be coming soon.

Health and honey: thank goodness for bees! The healing effects of medical honey – ancient knowledge rediscovered
‘
Honey and pollen cause warmth, clean sores and ulcers, soften hard ulcers of lips, heal carbuncles and running sores.’ This quote from Hippocrates illustrates that honey’s healing effects were well known as far back as ancient Greece. While we modern-day mortals enjoy honey for its taste and soothing properties, Greek mythology ascribes the immortality of gods such as Zeus, Hera and Asclepius (the god of healing) to the wonders of honey.
30
MEDICAL HONEY
EMPIRICALLY SHOWN TO BE BENEFICIAL The most famous physician of antiquity enjoyed the taste of honey as much as the next man, but Hippocrates also reported on the substance’s antifebrile properties and used it on open wounds – as did the ancient Egyptians. It’s astonishing that modern medicine took thousands of years to rediscover this ancient home remedy. The University of Bonn undertook several studies over many years to research the properties of honey. According to their latest results, this golden miracle is better at healing certain types of wounds than modern antibiotics! Thank goodness for bees – and for Peter Molan! The New Zealand biochemist studied the clinical properties of mānuka honey when applied externally to chronic and acute wounds. This comes as no surprise to Park Igls Mayr clinic’s Dr Gartner and nurse Babsi Kleeven. They have had brilliant results with honey for very many years.
A few months ago, the Park Igls Mayr clinic started to use more medical grade honey in its treatments, especially when dealing with wounds and burns. ‘The results are amazing’, Babsi Kleeven tells us referring to the fact that, ‘dead tissue is shed more quickly when honey is applied, which helps the wound heal more quickly.’ She goes on to explain the special features of medical honey: ‘Anti bacterial medical grade honey creates a moist wound healing environment and is suitable for rapid odour control and at any wound healing stage.’ HONEY IN THE FIGHT AGAINST ANTIBIOTIC RESISTANCE Medical honey’s comeback is due in part to the emergence of germs that are resistant to almost all common antibiotics. ‘This has made the use of medical honey for wound care very attractive. Honey can deal with around 60 types of bacteria and scientists assume that the antimicrobial effect of mānuka honey – the basic ingredient of medical grade honey products – is thanks to the enzymes that the bees produce. The extraordinary anti bacterial effect of this honey, which is produced in New Zealand and parts of Australia, may be due to the high content of sugar enzyme methylglyoxal (MGO) – up to 100 times more than ordinary honeys. In conclusion, mānuka honey is probably the most versatile – and tastiest – antibiotic ever! It is suitable in numerous areas of application, available in many administration forms and highly sought after for its many positive properties, including anti-inflammatory effects. This makes the somewhat pungent honey a popular remedy for ailments of all kinds.
Application areas Many positive experiences with mānuka honey have been recorded as it is suitable for use both externally and internally – especially effective for colds and bacterial infections.
EXTERNAL APPLICATIONS • Lesions: wounds, grazes & cuts • Burns • Skin disorders: psoriasis, dry, chapped skin, eczema, acne & neurodermatitis • Fungal infections • Herpes • Insect bites • Infections
INTERNAL APPLICATIONS • Colds, coughs & throat infections • Sinusitis • Cystitis • Gastritis • Yeast infections • Bowel inflammation: irritable bowel & diarrhoea • Stomach ulcers, oesophagitis & heartburn • Mouth inflammation: gums & periodontal disease

A holistic approach to aesthetic medicine Aesthetic medicine and Modern Mayr Medicine – two seemingly disparate fields in sync.
32
AESTHETIC MEDICINE
T
he ParkZeit in conversation with Dr Peter Gartner and Dr Fabian Petschke – plastic surgeon and consultant at Park Igls – discuss the relationship between nutrition and beauty. The two doctors provide a fascinating insight into tissuelifting, wrinkle-reducing and fat-busting therapies, as well as the beneficial aspects of the Mayr method on aesthetics. WHAT ARE THE MAIN AREAS OF AESTHETIC MEDICINE USED AT PARK IGLS? Dr Fabian Petschke: Non-surgical methods and those that contribute to wellbeing, i.e. approaches that are consistent with the principles of Mayr Medicine. This includes PRP – platelet-rich plasma – which uses the patient’s own blood for therapeutic purposes, as well as hyaluronic acid facial treatments and fat freezing. Dr Peter Gartner: Many medical aesthetic methods are a good fit with the Mayr ethos and can enhance the success of our treatment programmes. One of Mayr’s effects is increased overall tissue elasticity. Our recent introduction of before and after photos provides excellent documentation of this: increased smoothness is apparent after two or three weeks. However, I also appreciate the eagerness of guests who would like to pre-empt or expedite the effects of their treatments. I do have reservations when it comes to Botox, but the methods highlighted by Dr Petschke are certainly compatible with our philosophy. WHAT IS PRP THERAPY? Dr Petschke: We extract 10ml of plasma from 20ml of a patient's own blood for facial injections. Plasma platelets secrete messenger substances that contribute to the formation of collagen, thereby strengthening the tissue. Skin rejuvenation occurs from the inside as it triggers wound healing processes. Scientific appraisals show that this effect remains visible six months after a treatment. HOW IS IT DONE? Dr Petschke: We centrifuge the patient’s blood to extract the plasma, which is then injected into the face with fine needles – using a local anaesthetic if preferred. This treatment takes an hour and a half, and we recommend up to three sessions. PRP is suitable for all skin types – including dry skin – and is particularly helpful in the lower eyelid and upper lip areas. Strengthening the tissue improves the complexion, giving skin a more radiant appearance. We can also achieve good results with acne scars –
although not with acute acne. Since PRP uses the patient’s own blood, there are no side effects or allergic reactions. I cannot emphasise enough, however, that this method should only be carried out by qualified medical specialists. Dr Gartner: It may be a cliché, but true beauty really does come from within: Mayr treatments help to activate the body’s power of self-regeneration, which in turn leads to greater happiness and wellbeing. Conclusion: beauty can indeed radiate from within. We repeatedly see aesthetic medical treatments increasing patient compliance during Mayr programmes, which is a real boost to outcomes.
True beauty comes from within.
DOES PRP WORK FOR HAIR LOSS? Dr Petschke: The cause of hair loss is the first thing to consider. Although it may be possible to delay the process of certain forms of spot baldness, not all baldness is treatable. WHAT EFFECT DOES TREATMENT WITH HYALURONIC ACID HAVE? Dr Petschke: This treatment is quite different to PRP therapy and restores plumpness to the face as well as reducing wrinkles. When you compare young and old faces, you can clearly see that young, triangular face shapes lengthen as they age. In other words, there is volume loss in the cheek-
AESTHETIC MEDICINE
33
bones, cheeks and lower jaw. Nasolabial folds and marionette creases become more pronounced. The number of wrinkles on the forehead and around the eyes increases. I can use hyaluronic acid – a substance that occurs naturally in skin – to smooth out wrinkles and contour the face. HOW DOES THE TREATMENT WORK? Dr Petschke: Effective facial contouring requires around 10ml of hyaluronic acid, so it’s not a cheap option. Although the treatment is widely available, it is rare for the desired effects to be achieved – contouring means more than simply wrinkle injections. For a natural, long-lasting result, it is important that we do not inject directly under facial lines. This is why I cannot over-emphasise the need to consult a medical specialist. Treatment effects are immediate and last for up to a year. WHAT IS THE RELATIONSHIP BETWEEN BEAUTY AND NUTRITION? Dr Petschke: I firmly believe that we have to look at beauty from ‘the inside out’ as well as offering aesthetic treatments. I have a holistic approach that includes food supplements and nutritional analysis and is why I enjoy working within the parameters of Modern Mayr Medicine so much.

AESTHETIC MEDICINE
Dr Gartner: The Modern Mayr Medicine concept goes beyond repair and towards learning. Most forms of fasting focus on weight loss, but the Mayr approach teaches people how to eat. This balances the intestinal microbiome, prevents health com plaints and illness, and improves wellbeing. This has been a topic of discussion in many previous editions of the ParkZeit.
The Modern Mayr Medicine concept goes beyond repair and towards learning.
We also advocate orthomolecular substances as dietary supplements. At Park Igls, we can perform molecular genetic microbiome investigations for detailed analyses of intestinal bacteria. This enables us to advise patients about their diet and any supplements they might find helpful. We also pay short shrift to health myths: popular misconceptions like ‘carbs are bad’ can cause harmful increases in protein consumption. If we eat more than 0.8 to 1 gram of pure protein per kilo of body weight it gets deposited in the body’s deep
connective tissue, and the result is weight gain. Carbohydrates are fine so long as we exercise to burn them off. The number one toxin is lactate – not carbohydrates! WHAT ARE SUCCESSFUL METHODS FOR BODY CONTOURING AND FAT REDUCTION? Dr Gartner: Weight loss is not the primary purpose of Mayr treatments, although it is a welcome side effect. Incidentally, men lose weight faster than women – a fact that conventional medicine cannot provide a conclusive explanation for. Excess fluid is flushed out by dieting, but intracellular fluid is also cleaned, and this has positive health effects. Dr Petschke: Many of my patients – mostly women – come to me with stubborn fat that dieting fails to shift. Fat deposits on the belly, hips and thighs can be genetically determined. Medical cryolipolysis – or cooling therapy – is a highly efficient method for destroying these stubborn fat cells. Areas of excess fat are cooled to -8o C. This is a temperature at which fat cells are destroyed. Treatments take just 70 minutes. Over the following four weeks, the subcutaneous fat cells die before being flushed by the lymphatic system. The result is a measurable reduction. I use this treatment on people who are slightly overweight and whose weight loss expectations are realistic. The latest generation of equipment also allows us to treat small areas such as double chins, the lateral chest and the knees. Medical cryolipolysis is non-invasive so there is no downtime for patients. IS THERE A WAY OF TREATING SCARRING? Dr Petschke: I know from my clinical work that excessive scarring can cause psychological pro blems. Are they the result of surgical complications? What is the reason for the scarring and is this problematic for the patient? Scarring causes injury to the fascia and disrupts its traction. The resulting fascial adhesion can lead to a range of clinical symptoms for which surgery or injections with the patient’s own fat can be helpful. All scar treatments must be preceded by a detailed consultation of the patient’s medical history and will be different for every individual. Dr. Gartner: Scars can act as interferants. In my practice I keep seeing patients with chronic pain. The patient’s medical history then reveals that there is scarring somewhere other than where the pain is. Pain therapy in the form of an injection can then lead to the pain disappearing within a matter of seconds.
Dr Fabian Petschke Originally from Germany, Dr Petschke came to Innsbruck as a student but liked it so much he decided to stay. He chose to train as a general practitioner as he felt this would help to develop his clinical instincts, but never lost sight of his ultimate ambition of becoming a plastic surgeon. Dr Petschke has been a consultant at Innsbruck University Hospital’s department for plastic, reconstructive and aesthetic surgery since 2008, specialising in reconstructive surgery following burns or complex wounds. Following the opening of his own clinic in Innsbruck in 2009 he combines private practice with consultancy to the Park Igls medical team.

Neuro@Mayr for Parkinson’s patients An update from Dr Gartner
Can Neuro@Mayr and intestinal cleansing in general also prevent degenerative diseases of the nervous system? Based on current scientific studies, I can only say: absolutely!
Neuro@Mayr is the Park Igls’ response to the latest scientific findings, according to which degenerative diseases of the nervous system – including Parkinson's disease and multiple sclerosis – arise in the gut. Dr Gartner, you have had many positive experiences with Parkinson's patients who underwent intestinal cleansing in line with Modern Mayr Medicine. The Neuro@Mayr module now offers targeted support that includes physiotherapy, Feldenkrais®, deep-tissue massage and one-to-one neuropsychological coaching, is that right? Dr Gartner: Yes, Modern Mayr Medicine’s regenerative effect on the neuro-intestinal combined with targeted physiotherapeutic treatment, neuropsychological coaching, deeptissue massages and Feldenkrais® improves flexibility and coordination, teaches new ways of moving and offers strategies for making day-to-day life easier.
Is there a test to determine the likelihood of developing Parkinson's disease? A number of symptoms may suggest the beginnings of Parkinson's disease. These include constipation, olfactory disorders, sleep disorders, inner agitation and, of course, the classic neurological changes in posture, movement, hand-writing and voice. Ultimately, a neurologist would need to be consulted for a clear diagnosis. What can Parkinson's patients do to help relieve their symptoms? There are numerous tips and tricks, depending on whether the focus of the symptoms lies in the motor, vegetative or psychological area. Our therapists can provide more information. Also, there are many self-help groups and organisations that can be useful, including www.parkinsons.org.uk and www.michaeljfox.org.
At what stage of Parkinson's can Neuro@Mayr improve symptoms? And when does it cease to be helpful? Sustained improvement can only be expected in the early stages. Unfortunately, improvement is unlikely for advanced forms of neurodegenerative diseases.
