An itchy rash, a tickle in the throat, watery eyes, in worse cases even respiratory distress without warning or exertion, flatulence and diarrhoea, a swelling of the limbs – it can get much worse! All these are the reactions of the immune system – well removed from normality and completely bewildering at first occurrence. Of course, a visit to the doctor is necessary and more often than not the diagnosis shows an allergy or food intolerance. Professor Kurt Luger discussed this highly relevant subject with the medical team at Parkhotel Igls as there is a constant increase in the number of people who show these kinds of symptoms … Meticulous adherence to the principles of Mayr Medicine can provide help and alleviation as many of these complaints can be traced back to the gastrointestinal tract.

dr barth Type I allergy (immediate type) is by far the most frequent form of allergy. Generally speaking anaphylactic reactions range from minor skin reactions to disruption of organ function e.g. asthma, to fatal circulatory failure or anaphylactic shock! Anaphylaxias are overreactions of the immune system, triggering excessive release of mediator substances such as histamines. Neurodermatitis is one example of a predisposition to immediate-type allergies which are genetically anchored. Prevention is a way to avoid allergies, i.e. avoiding contact with the allergen. Furthermore, hyposensitisation is an established part of treatment. The body is influenced in a targeted manner by a gradually increased dose of allergens. Acute therapy mainly involves the administration of antihistamines, fattening mast cell stabilisers, cortisone and adrenalin. Early recognition of the associated symptoms can be vital and life-saving! The most frequent emergency symptoms are: reddening of the skin, blisters or swelling of the limbs, itchy skin or mucus membranes, tickling in the throat, difficulty swallowing, nausea, vomiting, headaches, respiratory distress, asthma attacks, restlessness, non-specific feelings of anxiety, mental stupor, accelerated or slowed down pulse, in extreme cases passing of urine or faeces, unconsciousness and respiratory arrest.

30% of the population in German-speaking countries believe they suffer from some kind of food intolerance, but just 3% of all adults have a genuine food allergy. However, the number of complaints is rising and the food industry being forced to respond. ‘In most cases we are dealing with four different types of allergies or intolerances. Research has provided excellent insight for some, but overall knowledge in connection with the different associations and sub-types of allergies and intolerances is largely insufficient. However, one thing which is certain’ says Dr Peter Gartner ‘is that all these phenomena are related to an overtaxing of the immune system.’ Type I allergy is also described as the ‘immediate type’ due to the reaction to grasses, pollen, food, etc. occurring directly after contact. Immune system plays havoc Pseudo-allergy is the term used to describe an overreaction and symptoms similar to ‘real’ allergies without immunoglobulin mediation. These are predominantly triggered by food additives, pesticide residues or various components in medicines. Food allergies are caused by immune reactions and in principle every food or food ingredient can trigger an allergic reaction. Milk alone contains 25 different proteins which are known to provoke allergies or intolerances. Inherited predispositions can increase the risk and the amount of allergen intake can be a determining factor for the allergy severity. If babies are given cow milk products after weaning, this can open the door to allergies. Other contributing factors – according to Dr Gartner – are sleep deficit, mental stress and disturbed intestinal flora. A highly successful tried-and-tested therapy involves the use of special laser acupuncture developed from classical Chinese acupuncture. Apart from allergy avoidance – no longer eating the food in question or avoiding substances which cause allergies – Modern Mayr therapy is used in particular. The intestines are the core of the immune system, hence they should be given the highest priority. —

Fructose intolerance is very much on the increase due to the enormous quantities of industrially produced foodstuffs. Fruit sugar is added to just about everything, be it yoghurts, soft drinks and as a food additive. It irritates the intestines and manifests itself in a number of symptoms – for instance flatulence and diarrhoea, head and neck aches, acute problems with the spinal column – just to name but a few. Furthermore, carbohydrate digestion disorders can lead to a serotonin deficiency – the intestines act some-how like the ‘serotonin kitchen’ of our body. Serotonin deficiency can reduce stress resistance, increases pressure and anxiety and can easily lead to depression. The best possible remedy is to stop eating the foodstuffs in question and to embark on a healing fasting cure, or alternatively the gourmet diet according to Mayr, i.e. an intestinal regulation needs to be undertaken.

There are a number of test methods to identify allergies and food intolerances – blood and skin tests are the most common. In the case of the skin prick test, the suspected substance is applied to the skin and introduced into the skin with a fine needle prick. Lactose and fructose intolerances are normally measured with a respiratory air test whereby even small amounts of nontaken up sugar can be recorded as exhaled hydrogen. At Parkhotel Igls medical department we also use an ‘applied Kinesiology’ bioenergy test: with the help of an electronic instrument information about various substances is delivered to the body in form of electromagnetic vibrations. puMpkin-oranGe soup with CoConut Milk and Curry 270 g pumpkin (musquee pumpkin or butternut squash) 10 g butter 1 tbsp yellow curry powder Salt and pepper Ground nutmeg 100 ml orange juice, freshly squeezed 500 ml base broth (see p 18 of ‘F.X. Mayr für Gourmets’ cookery book) 200 ml coconut milk, unsweetened 2 tbsp argan oil

Peel pumpkin, remove seeds and surplus fibre and cut into small pieces. Melt butter in a casserole, add pumpkin pieces and sauté until translucent. Season with curry powder, salt, pepper and nutmeg. Add orange juice and simmer until lightly reduced. Pour in broth and cook over low heat until pumpkin has softened (6 to 8 min.) Stir in coconut milk and argan oil and purée in a blender until smooth.

saddle oF venison wrapped in wholeMeal bread duMplinG with CarrotGinGer ConFit VENISON Fleur de Sel 5 peppercorns 5 juniper berries 20 ml olive oil 500 g saddle of venison, fully trimmed, bones removed BREAD DUMPLING 400 g wholemeal bread, several days old and hardened 100 g white bread, dried and cut into small cubes

1 tbsp pine nuts 2 eggs, separated 300 ml soy milk 1 small bunch of parsley Oregano Ground nutmeg Salt and pepper Peel of 1 organic lemon Juice of ½ orange 100 ml olive oil 1 pear 200 g yogurt Salt and pepper

Crush salt, pepper and juniper berries in a pestle and mortar. Add olive oil and mix until well combined. Rub this marinade into the venison and leave to rest for half an hour (do not refrigerate). Then brown meat on all sides in a little hot olive oil and set aside. For the bread dumpling, cut wholemeal and white bread into 1 cm cubes. Heat a little olive oil in a pan, add bread cubes and pine nuts and sauté until lightly browned. Place bread and nut mixture into a bowl, add egg yolks, soy milk, freshly chopped parsley, spices and lemon peel and stir until well blended. Add a pinch of salt to the egg whites and beat until stiff, then fold into the bread mixture. Place batter onto a moistened kitchen towel and put venison in the centre. Fold up and roll into a log shape so that the meat is

completely covered with the batter. Squeeze both ends tight, then tie towel on both ends with kitchen twine, submerge in a large pot with boiling water and cook vigorously for about 18 minutes. Once cooked, remove dumpling from water and set aside to rest for about 5 minutes. Then remove the kitchen towel and cut the dumpling into even slices with a sharp knife. Pour orange juice into a measuring cup and carefully add olive oil so that the oil forms a separate layer on top of the juice. Finely grate pear into the measuring cup. Fold in yogurt, season with salt and pepper and purée to a fine texture with a hand blender. CARROT-GINGER CONFIT 750 g organic carrots Fresh ginger root, approx. 2 cm Vanilla pod (Tahiti or Bourbon) Fleur de Sel

Peel and trim carrots, quarter lengthwise and cut into 1 cm cubes. Peel ginger and cut into paper thin slices. Depending on potency of your vanilla pod, scrape the seeds or ‘vanilla caviar’ from about half or one third of the vanilla pod. Place diced carrots, ginger, vanilla seeds and pod into a pot and marinate with salt, pepper, cumin, cane sugar and the freshly squeezed lime juice. Cover marinated carrots with water and cook over medium heat until tender but still firm. Remove two thirds of the carrot cubes and set aside, cook the rest until soft. Remove the vanilla pod and purée the cooked carrots to a fine consistency. Then whisk in the oil until the texture is thick and creamy. Shortly before serving, add the reserved carrot cubes into the mixture and heat through.

spelt Flour CrÊpes with FiG, sheep’s Milk CreaM Cheese and Forest honey FillinG 1 large handful of spelt flakes A pinch of sugar for caramelising FOR THE BATTER 200 ml milk 50 ml double cream 50 ml sparkling water 3 tbsp spelt flour 4 tbsp sieved plain wheat flour 2 tbsp sugar 1 tbsp cornflour 3 eggs 300 g sheep’s milk cream cheese 3 figs Butter or oil for frying

In a non-stick pan, heat spelt flakes without oil until they are just starting to crackle. Sprinkle with sugar to caramelise but make sure that the flakes do not stick together. Remove from heat, spread on a plate and set aside to cool. For the batter, place milk, cream and sparkling water into a bowl and mix with the spelt and wheat flour. Stir in sugar and cornflour. Beat in eggs and blend until well combined. Set aside to rest for 10 to 15 min. Place cream cheese into bowl, cut figs into quarters, peel and add to the cream cheese. Crush figs with a fork and mix with cream cheese. Heat up a pan and brush with a little butter or oil. Pour in the batter, so that the base of the pan is covered to make thin and round crêpes. Sprinkle with caramelised spelt flakes, allow to set for a short time and then flip over to cook other side. Fill crêpes with the fig and cream cheese mixture, drizzle with honey and serve.
