Our Location in the idyllic Alpbachtal The Pirchner Hof is located on the outskirts of the Alpbachtal village of Reith, Europe’s ‘most beautiful village in bloom’. In the summer, more than 900km of footpaths, various mountain biking and cycling routes, as well as via ferratas, a high ropes course, a beautiful bathing lake in the centre of the village, and plenty of water sports activities on the Brandenberger Ache River await our guests. In winter, skiers can take advantage of 47 lifts and 145km of pistes in the nearby Alpbachtal Wildschönau ski resort. Night skiing is on the hotel’s doorstep, as is access to parts of the comprehensive cross-country ski network that encompasses some 100km of trails. Here in the Alpbachtal, we believe in gentle winter activities. This is why we also have many cleared winter hiking trails, toboggan runs and snowshoeing possibilities. Our proximity to the two cities of Innsbruck and Kufstein, as well as a whole host of other Tyrolean attractions is attractive whatever the time of year. 5

Hildegard von Bingen: Saint, Visionary & Role Model ‘Nurture life wherever you find it’ – this quote by

Hildegard von Bingen probably best sums up her teachings, and our attitude at the Pirchner Hof. This is true in the kitchen where most of the ingredients used come from our own farm or are supplied by local producers, and where we produce special Hildegard dishes as well as our standard menu. Again in tune with Hildegard von Bingen’s ideas, our nurturing Health & Spa

area is based on the four elements, and we have a substantial daily programme that offers you Hildegard-themed walks and lectures. The teachings of Hildegard von Bingen are of a holistic nature. They cover all areas of life, are easy to apply, health enhancing and enjoyable. This means that her lore is extremely interesting to us in our own time.

Hildegard von Bingen: Her Life & Work

Hildegard-expert and author Brigitte Pregenzer

Hildegard von Bingen was born in 1098 and entered the Benedictine monastery at Mount St Disibode at the age of eight. This is where she later became the abbess, founded two new convents and wrote several books, including ‘Physica’ about the healing power of nature, ‘Causae et curae’ about the causes and treatments of diseases, as well as several discourses also about human responsibility, God‘s work and their interaction. She corresponded with many of the most important people of her time, composed a great deal of music and travelled widely on preaching tours into advanced age. She was not canonised and named a Doctor of the Church until 2012.

When we make a conscious decision to appreciate nature’s elements, we create space for our inner wellbeing. ‘Just as the four elements hold the world together, they also form the structure for the human body. From fire humans have the warmth of their bodies, from air they have their breath, from water they have their blood and from earth their bodies.’ Our garden is dedicated to the energy of life and features ‘power spots’ based on the four elements. Warm your body and soul at the power spot of fire. Comfortable seats and a gentle breeze await at the power spot of air. The power spot of water is located in the vicinity of the natural bio pond, outdoor swimming pool and Kneipp circuit. And at the centre of the earth power spot – a space of profound emotions – stands a mature linden tree known to folklore as the ‘tree of lovers’.

In the cycle of the seasons Spring – the fasting season Hildegard von Bingen considered spring to be a time of fasting. However, her idea of fasting does not involve starvation and concentrates more on conscious abstinence. She firmly believed that cutting out food entirely was harmful, not only to the body but also to the soul. In addition to the Pirchner Hof’s fasting and detox programmes, our meals and dishes are always light in the spring; this is to avoid any unnecessary burdening of the body at this time of renewal. Our spring menu features herby cream cheese, wholegrain spelt bread, fish, fennel in all variations – from salad to tea – and vegetable soups. This light diet gently detoxifies and cleanses the system while the spirit soars, unburdened by heavy fare.

Good to know: One of the first plants to greet the sun in spring is ground ivy. Hildegard von Bingen describes creeping charlie, as the plant is also known, as a plant with exceptionally beneficial properties: ‘Ground ivy is more hot than cold, and it is dry. Its vital energy is profitable, so that if a person who languishes eats it often, it will help him.’ A medicinal plant, ground ivy is used as an oral rinse for throat inflammations, coughs and respiratory symptoms and as a remedy for wounds and skin inflammations. It works wonders and has an agreeable, somewhat spicy flavour. Ground ivy is also used to flavour salads, and as an ingredient in sauces, soups, herb butters, pestos and vinegars. Summer – the season of herbs The natural ingredients that we find on the Pirchner Hof Hotel & Farm’s doorstep are in peak season during the summer months. The harvest from our Hildegard von Bingen herb garden is constant and abundant, and every meal includes freshly picked herbs. Hildegard von Bingen recommends that we avoid heavy foods in summer as we might otherwise overload our bodies and digestive systems. Furthermore, food and drink should be served at the right temperature, that is to say neither too hot nor too cold. The summertime delicacies she praises include cold berry soup, fruit salad, apple & mint ‘smoothies’, vegetables or veal in aspic, and mixtures of herbs and milk.

Good to know: Typical summer herbs are lemon balm and sage, which grow abundantly in our herb garden. Lemon balm or Melissa officinalis is one of the best known medicinal herbs of our time. Originating in the Mediterranean, it has long been cultivated in our latitudes. Rub a leaf of lemon balm between your fingers and it will exude a pleasant, citrusy fragrance – hence the name. Nowadays, it is impossible to imagine natural medicine without lemon balm, and it is attributed with sedative, antispasmodic, cooling and analgesic properties. It is chiefly drunk as a tea to soothe anxiety and cramps, and thanks to the herb’s high essential oil content it is also extremely flavoursome and delicious. Moreover, lemon balm is a remedy for indigestion and stomach cramps.

Autumn – the season of preserves The profusion of fruit and vegetables from our kitchen garden and orchard allows us to make full use of a wide variety of autumnal processing opportunities. To preserve the plentiful vitamins in our produce, we bottle, pickle or freeze fruits and vegetables. Herbs are used to make herb vinegars and oils, a wonderful way of preserving their great taste and beneficial effects. In the cold winter months, jams made with Hildegard fruits such as blackberries, raspberries, apricots and redcurrants are sweet messengers of the summer to come.

Good to know: Quinces play a prominent part in Hildegard’s teachings, and are harvested in the autumn at around the same time as apples. This furry fruit, whose merits are insufficiently recognised, is a real vitamin bomb. Quinces contain high levels of vitamin C, trace quantities of selenium, potassium, calcium, magnesium, phosphorus and iron. Another plus is their high level of rare folic acid and tannins. Furthermore, quinces contain record amounts of pectin, which helps digestion and has a beneficial effect on cholesterol levels. But beware: raw quinces are inedible and need to be cooked to enjoy their positive qualities – transformed into jelly, cake topping or jam, quinces are both healthy and delicious.

Winter – the season of rest For Hildegard von Bingen and the Pirchner Hof Hotel & Farm, winter is a time of rest and wellbeing. This is when we are most vulnerable to coughs and sneezes, and when an extra dose of comfort is most welcome. As in summer, winter food should be served at the right temperature and eaten in a pleasantly warm room. In the cold season herbal teas are also highly beneficial and have a fortifying effect on the system. Winter is also a season of celebration and revelry, and Hildegard von Bingen advocates sensible indulgence in culinary pleasures. Richer foods now appear on the menu and include flavoursome, warming Christmas cookies baked with Hildegard’s spices. Winter dishes enjoyed in moderation and seasoned with herbs and spices also have a healthful effect on the body. A very important fruit in Hildegard’s teachings on nutrition is the sweet chestnut, which we associate with warmth, comfort and Advent.

Good to know: Chestnuts have a wide range of uses. They can be boiled, roasted, ground into flour, used as a side dish or a salad ingredient. They are most popular roasted and can be bought from roadside stalls in winter. Chestnuts are gluten-free, so the flour is suitable for people with coeliac disease and can be used as a replacement for wheat. Chestnuts were once considered the bread of the poor; little did they know that their diet was so healthy! Whether boiled, raw or roasted, according to Hildegard, the chestnut has a subtle effect on the human organism: ‘The chestnut tree is very hot but has great power mixed with that heat. It symbolises discretion. The virtue in it, and its fruit, is useful against all infirmity in a human.’

Healthy enjoyment – Hildegard von Bingen on nutrition Fresh, locally produced food delivers energy and all essential nutrients. In addition to spelt – which Hildegard von Bingen describes as the easiest to digest, most warming and oil-rich of grains, and thus superior to all others – the Pirchner Hof’s kitchen makes use of fresh fruit and vegetables. Much of it is grown in our own gardens and cooked as soon as it is picked. What we do not grow ourselves, we source from nearby farms and suppliers. To add flavour, we rely on the fresh herbs from our Hildegard von Bingen herb garden.

Good to know: The subtle effect of food is one of the cornerstones of Hildegard’s teachings on nutrition. Subtlety is the healing power that is inherent in every part of creation, and there is a clear interaction between remedy and food in Hildegard’s cookery lore. Hildegard classified food (herbs, plants and animals) as warm, cool, dry, moist and neutral, which is helpful in finding the right remedy and food to suit each individual’s state of health. We derive our energy from food, and the better its quality, the more energetic and happy we are. Subtlety is not measurable, but certainly noticeable – it is, so to speak, the specific, spiritual component that is inherent in every creature and plant, and that has an effect on a human being.

Meat – a thing to be relished or relinquished? As in many other spheres of life, the old adage of moderation in all things applies to meat consumption: we should eat a well-balanced and good quality diet. Although Hildegard von Bingen referred to pork as ‘nutritional poison’, there is no reason why a moderate consumption of beef, chicken or venison should not form part of a balanced, Hildegard-style diet. At the Pirchner Hof Hotel & Farm we rely on our own beef suckler herd, which has been tended by our son Thomas since 2010. One of our specialities is Tyrolean yearling, a premium and versatile meat from young cattle, characterised by its excellent quality.

Spelt-Based Fasting Week

Some weeks are medically supervised by Dr Felicitas Karlinger.

Blood-letting will be available, but early registration is required. Fasting weeks always start on a Sunday with a meeting at 5pm. This is followed by our initial fasting soup. Valid from 10 to 17 Jan, 21 to 28 Feb, 20 to 27 Mar, 22 to 29 May, 29 May to 5 Jun & 16 to 23 Oct 2016

Take time for peace and tranquillity, do yourself some good. Fasting adds new aspects to your life, because the conscious choice of abstinence creates space. Fasting, in the sense of ‘reducing’ outside influences and abstaining from the objects of prosperity we don’t actually need, allows us to see things in perspective and sensitises us for the adoption of a healthy lifestyle. A moderate spelt-based reduction diet that includes the Hildegard fasting soup is on the menu. Exercise & Activity Programme Aqua-Fit

‘smovey’

We make use of the natural resistance and buoyancy in the element of water for our gentle wake up exercise sessions. Moderate mobilising, strength and stretching exercises put a spring in your step at the start of the day.

First developed as a therapeutic aid for an athlete with Parkinson’s disease, ‘smovey’ has become a sports equipment super-trend. A ‘smovey’ for swing/move/smile is probably the most effective, universal, sustainable and easiest to use sports and therapy device. This swing ring consists of a spiralled tube, steel balls and a grip. Swinging it back and forth causes healing and strengthening vibrations. This form of exercise strengthens the muscles (including the deep muscles), activates cell activity, protects the joints, promotes balance and coordination, invigorates the internal circuits, activates reflex zones and can also be used for deep relaxation.

Nordic walking Originally conceived as an alternative to cross-country skiing, this low-impact total body strengthening sport has seen a tremendous growth in popularity. Energetic, rhythmic walking with the aid of poles relieves pressure on the joints and spine, builds up muscles, improves flexibility, strengthens the cardiovascular system and relaxes neck and shoulder muscles; a sport for everyone and for all seasons.

Foot fitness

Pilates A body workout that focuses on posture, breathing, flexibility, muscle toning and relaxation, Pilates releases tension, develops deep supporting muscles and encourages natural energy flow. 30

Specific foot exercises aimed at preventing a range of foot-related problems and misalignments. A specially designed exercise programme strengthens the muscles of the arches, energises reflex zones, mobilises toe and ankle joints, and trains balance and coordination, thereby improving the roll of the feet from heel to toes whilst walking.


Back exercises Most of us have suffered some form of back problem at one time or another. Therefore we should make gentle back exercises to mobilise, strengthen and stretch the spine and surrounding muscles an integral part of our daily lives, whether for prevention or to relieve spinal problems. Exercises are tailored to benefit the cervical, thoracic and lumbar spine.

ZEN fitness

Our Exercise & Activity Programme is complemented by: Outdoor activities Guided walks with the Peer family – awarded the Austrian Seal of Quality Control for hiking, Nordic walking tours, guided mountain bike tours (bike rental charged separately), Kneipp sessions, guided snowshoe walks & winter hikes. Health rituals Herb walks with Maria Schellhorn, campfire evening, tree meditation and barefoot walks.

A combination of qigong, Yoga and tai chi. These peaceful exercises are primarily aimed at calming the breath and improving mobility with the help of strength, balance and coordination exercises. They are easy to learn and have long-term beneficial effects.

Zumba A blend of aerobics and Latin dance elements, the movements used in Zumba are not standardised but adapt to the rhythm of the music used in class. Zumba exercises build balance, coordination and endurance – and add pizzazz to your fitness regime.
