was cultivated in monastic gardens north of the Alps. Interestingly, no clear distinction was made between foods and medicinal plants in Hildegard von Bingen’s time: everyone knew which foods could heal.

Oh, Finocchio! Hildegard von Bingen held fennel in high regard – she considered it a cure-all and identified many ways to use it. This special plant has a key role to play throughout our lives – particularly during fasts, when it truly comes into its own.

WHAT DOES FENNEL CONTAIN? Fennel provides almost twice as much vitamin C as oranges. 100g contains a quarter of the daily iron intake required by an adult male. Fennel’s most important ingredients are anethole and fenchol, both essential oils. Anethole is an expectorant and has an antibacterial and antispasmodic effect. It is mainly used for fragrance and flavouring in oral hygiene products.

In addition to her favourite, spelt, Hildegard von Bingen considered fennel to be one of the most healing of foods. In Ancient Greece, Hippocrates (a physician) and Theophrastus (a scientist) highlighted its healing properties; while Dioscorides, a pioneer of pharmacology, came to the same conclusion. For a long time, fennel was only grown in the Mediterranean, and it took until the Middle Ages before it

In naturopathy the whole herb is used, but the seeds are considered especially beneficial as their essential oil stimulates cilia movement in the airways, dissolves mucus, kills germs and supports gastrointestinal activity. Whether eaten raw, steamed, or consumed as a tea made from the seeds, fennel’s healing properties extend far beyond digestion – although this is its most wellknown benefit. Fennel’s many useful properties were scientifically proven in the 20th century. Fennel tea is another favourite during our Hildegard von Bingen spelt fasts here in the Alpbach Valley. Fennel harmonises the acid-base balance and brightens the eyes. It is the perfect supplement to a fast, helping to curb any unpleasant side effects. It warms, helps against bad breath, aids healthy digestion, and makes us happy. TIP Did you know? Fennel seeds work best when soaked whole and eaten on an empty stomach.

Hildegard von Bingen says:

‘Fennel is pleasantly warm, neither dry nor cold. Even eaten raw, fennel does not harm the body in any way. In whatever form one eats fennel, it makes us happy, gives us a good skin colour and body odour and promotes good digestion. Eaten daily on an empty stomach, fennel and its seeds reduce awful mucus and decay, suppress the foul odour of the breath, clear the eyes, warm the body and strengthen its powers.’

Swarm intelligence Bees accompany our summers and are fundamental to our lives. At Rosi Fellner’s farm in Breitenbach, you can watch hundreds of thousands of these furry little creatures, observe colony life and learn why every single bee is so important. Off the beaten track and surrounded by forests and meadows, Rosi Fellner’s Pumpenhof farm is the perfect place for a bustling army of bees. The bee farm is open to visitors and home to ten busy colonies – although Rosi looks after 60 colonies in total. A hive can contain up to

HONEY AND HILDEGARD 70,000 bees, so the loud buzzing is hardly surprising. Ready to work just 15 minutes after hatching, a bee’s work ethic is impressive: each colony supplies Rosi with around 15kg of honey per year. This is then made into sweet spread, candles, healing salves, propolis oil and many more products which are available to purchase. Visitors can also take a look behind the scenes: the Bee Academy runs every Wednesday from June to August. Rosi explains how these creatures live and the crucial work they do; visitors can also taste honey direct from the comb, watch the beehive up close and visit the production workshop.

Honey plays an important part in Hildegard fasts. It is used in ‘heart wine’: a parsley and honey wine that works wonders as a pick-me-up, especially when blood pressure or blood sugar levels dip. Honey is also part of the baldmoney, pear and honey treatment used mainly to detox and achieve a healthy gut. This natural remedy (also known as Hildegard’s Gold) is based on pears, honey and a mixture of baldmoney and spices.


Show courage 900 years after Hildegard von Bingen, one thing has changed more than any other: the status of women. These days, it’s hard to imagine how unique Hildegard’s position and impact were. She pushed boundaries and showed courage on countless occasions, growing in stature and strength all the while. Let’s follow her example – although we don’t have to run several monasteries to show courage and grow.

Being brave is good for us. It strengthens us, and builds confidence and self-belief, it also teaches us to approach life with optimism and accept challenges. But courage also requires us first to be afraid: of situations, people and things. Courage grows as fears are overcome, not from the absence of fear. Confronting your fears shows you who you are and allows you to grow. Courage is a muscle. The more we use it, the stronger it gets. Experiencing our own strengths – and developing our self-worth – makes us happy. Overcoming our fears gives us freedom – in who we are and what we do, sweeping away the boundaries we set for ourselves, and allowing us to lead more fulfilled lives. When we think about Hildegard von Bingen, we mustn’t picture a fusty old nun

UP, UP AND AWAY The high ropes course in Kramsach is one of the largest, most spectacular and sophisticated courses in our part of the world. Comprising 7km of steel cable, this elaborate construction has been integrated into an 8,500sqm section of forest. Highly qualified trainers support visitors throughout the course and help them to tackle the 50 different stations. There are three different courses with varying levels of difficulty. The via ferrata at Lake Reintal in Kramsach features two routes with a rope length of around 250m. Route 1 has a difficulty level of C/D and route 2 (level E) is suitable for sport climbers. The approach starts east of the ‘Kramsach Parkplatz Halbinsel’ bus stop. The roping-up point is 20 minutes away through the forest and the entry point is a little further on. Tip: Take a detour to the waterfall just before joining the route.

– she was an extremely busy, charismatic and strong woman who railed against the conventions of her time. Her achievements are still making an impact today. It stands to reason that Hildegard must have been afraid at times. We know that she was courageous – and where there is courage, there must once have been fear. Both fear and courage are subjective. The boundary between the two differs for everyone, just as we all fear different things. What is crucial is to have allies – we may still be afraid, but our fear is shared. HIGHLIGHT SUNRISE WALK ON THE GRATLSPITZE WITH YOUR HOSTS A mountain sunrise is an unbelievably magical experience. As the glorious orange ball emerges over the peaks, all thoughts of the early start and strenuous climb will be forgotten. Your eyes will begin to glisten and your heart will swell. In the summer, we are delighted to offer sunrise walks on the Gratlspitze (1,899m) as part of our weekly programme. Tip: Guests with restricted mobility who would like to experience a mountain sunrise can travel by cable car to the Wiedersbergerhorn (2,127m) every second Thursday from the end of July to September. The excursion begins at 4am with the journey to the upper terminus – the mountain hike takes around 45 minutes (head torch and sturdy footwear compulsory!).

HIGH COLOUR ALPINE ROSE FESTIVAL AT THE WIEDERSBERGERHORN Every year, from mid-June to mid-July, Alpine roses swathe the Alpbach Valley mountains in an astounding shade of pink. This extraordinary sight will be celebrated at the Alpine Rose Festival on 27 June 2020. Programme: 10am: Guided walk around the Wiedersbergerhorn to see the Alpine roses 11am: Alpine Rose Festival starts at the upper terminus on the Wiedersbergerhorn with music, Alphorn players, delicious food, fun at the Lauserland adventure playground, and much more. The Inn Cycle Path and the adjacent Zillertal cycle route offer extensive biking trails in the Inn Valley. At only 100m altitude and 20km in length, the circular valley route is one of the most popular road racing options in the Inn Valley. At over 700m above sea level and covering a distance of almost 30km, the circular Brandenberg route is somewhat more demanding.


RECIPE Raspberry vinegar Vinegar aids digestion, has a disinfectant and astringent effect, and is a very good preservative. To make a bottle of raspberry vinegar, you will need a handful of fresh raspberries, organic apple or white wine vinegar (unpasteurised) and an untreated organic lemon. Put the fresh raspberries in a screwtop jar with two slices of lemon. Fill the jar with vinegar. Close the jar and leave in a cool, dry place to steep for three to four weeks. Then strain the raspberries and lemons and pour the raspberry vinegar into a bottle. Store in a cool, dark place.

All hail the berry Hildegard von Bingen had very clear ideas on what is good for us and what isn’t. She snubbed some berries while placing great value on others. Read on to find out which she recommended, and how to preserve them for use in the colder seasons. And remember – when we go out berry picking, we strengthen the element of earth within ourselves. Raspberries Raspberries contain vitamin C, potassium, magnesium and calcium, and they stimulate the secretion of saliva and gastric juices with their slightly acidic and refreshing taste. Hildegard von Bingen recommends raspberry water with galangal to help with fever and viral infections. Get your morning off to a good digestive start with a breakfast of porridge made with spelt flakes, raspberries, ground almonds and cream, sweetened with honey. ‘When the mind is empty and the complexion poor, eat almonds frequently. Your mind will fill, and your face will return to its rightful colour.’

RECIPE Blackberry elixir Great for coughs, congestion, bronchitis, pleurisy and catarrh 30g pellitory, 25g blackberry leaves, 20g hyssop, 15g oregano, 500g honey, 4l wine Boil the herbs and honey in the wine for around 5 minutes. Sieve and pour into bottles while hot. Take 1–2 tablespoons of this blackberry elixir after a light meal, or 1–2 liqueur glasses after a heavy meal. Blackberries Blackberries stop maturing as soon as they are picked, so only pick or buy ripe berries. 100g of blackberries provides a third of our daily vitamin C intake. They also contain large quantities of folic acid and iron. Two teaspoons of blackberry leaves boiled in hot water produce a delicious tea that helps against gum inflammation, fever and hoarseness. Blackcurrants Blackcurrants are among the oldest medicinal plants in traditional European medicine, although redcurrants were


RECIPE Blackcurrant syrup 2kg blackcurrants, 400g sugar Remove the berries from their stalks before washing and then squashing them down with a fork. Place them in a pan, cover with water and bring to a brief boil while stirring. Sieve the blackcurrant juice through a fine sieve or cheesecloth. Then stir in 400g sugar and bring to the boil again. Pour into sterilised bottles while hot.

Friendship week preferred until the Middle Ages. Hildegard von Bingen was the first to recommend blackcurrants as a remedy. She praised their ability to strengthen the effect of other medicinal plants, something now confirmed by modern phytotherapy. They contain up to five times more vitamin C than lemons and have the highest potassium content of all berries (300mg) – they help to reduce blood pressure and are highly effective at eliminating fluid. They also contain minerals such as magnesium, calcium, phosphorus and iron, as well as antimicrobial agents and antioxidants. Stimulating anti-inflammatory hormone production in the adrenal cortex, blackcurrants are popularly known as herbal cortisone. New scientific findings also show what herbal medicine has long

known: the gamma linolenic acid in blackcurrant seeds is as effective as that found in evening primrose oil. The acid strengthens the skin barrier damaged by neurodermatitis. Thanks to their antibacterial properties, currants are also used to treat throat inflammation, to reduce fever in cases of inflammation,

colds and influenza, and, when heated up, to alleviate coughs. The abundant flavonoids and secondary phytochemicals in blackcurrant juice can protect blood vessels against arteriosclerosis and reduce the risk of cardiovascular diseases and high blood pressure.
