CHESTNUT OMELETTES Whisk 4 tbsp spelt flour, 2 tbsp chestnut flour, 400ml milk (or goat‘s milk), 2 eggs, ½ teaspoon of salt and a pinch of galangal and leave to soak for half an hour. Fry thin omelettes in a little clarified butter. Savoury filling: Cube the mozzarella, season with galangal, quenelle and salt and spread over the omelettes and then roll them up. Place them in a gratin dish and cover with aluminium foil. Gratinate at 180°C for around 10 minutes, remove aluminium foil shortly before the end of the baking time. Sweet filling: Quince jam or jelly. Although cherry jam or chestnut rupee also work really well. Tip: Chestnuts strengthen the stomach, liver, heart and immune system.
Recipe for ‘quenched’ wine Bring ¼ litre of good red wine to the boil (add a little cinnamon at Christmastime) until the wine bubbles. Quench with ⅛ litre of cold water and sip while it’s still warm. Promotes sleep.

Food at the Pirchner Hof is always wholesome. Energy-rich, regional and seasonal produce – preferably from our own farm and garden, as well as from regional organic producers – forms the basis for creative dishes with gentle healing powers. ‘The better the ingredients, the more active, satisfied and balanced we feel,’ says long-time chef Dusko Petrovic. The Hildegard diet is all about balance and quality. ‘Of course, our cooking is based on Hildegard von Bingen’s nutritional teachings, and dishes at the buffet or in the menu are marked accordingly. Hildegard classified food as ‘warming’, ‘cooling’, ‘drying’, ‘moistening’ or ‘cheering’ – in the colder season, we naturally tend towards warming and cheering dishes.’

Healing spelt Did you know that spelt can compensate for all diet-related health problems? Read Brigitte Pregenzer, founder of the Hildegard Academy and best-selling author, on the power of this super-grain. Brigitte Pregenzer: What can spelt do better than other cereals? Spelt is one of our oldest cereals and, for a long time, a staple grain in this country. In the 20th century, it was supplanted by bread wheat because wheat can be harvested up to three times a year. This is a result of selective breeding, but it also means stress for the grain and changes to the gluten, which is why wheat intolerance has become so common. Spelt, on the other hand, is well tolerated by (almost) all allergy sufferers, and that’s a main reason for the recent rediscovery of spelt. only they contain the vital growth and cell nutrients as well as all the elements that are essential to a healthy organism – including protein, fats, carbohydrates, vitamins, trace elements and minerals. It is therefore ideal as a staple food and can even compensate for dietrelated health issues. How does spelt affect the body? The effects are complex: Stomach and intestinal problems improve, arthritic joint pain reduces and we experience a greater sense of vitality. Spelt stimulates the process of cell renewal; leads to healthy growth; builds connective and supportive tissues, bones and muscles and helps in the release of toxins. It is an important prerequisite for the healing of skin and mucous membrane conditions and activates nerve cells, thus leading to improved performance and concentration. In addition, spelt’s indigestible fibres regulate bowel movement, thereby cleansing the body. These fibres also bring about a long-lasting feeling of satiety, leading to gentle and steady weight loss, if required, and contributing to the normalisation of blood sugar and cholesterol metabolism. This grain’s botanical substances also act as mood-enhancers and a nerve tonic, having a beneficial effect on overall health. What to do if you are grain intolerant? Unlike other grains, spelt does not cause allergies; it can even reduce the severity of allergies thanks to the special substances it contains. It makes sense, however, to pay attention to our eating habits and cut out certain foods from our diet. Chronic allergy sufferers benefit from a gentle intestinal cleansing based on Hildegard’s teachings as well as making changes to their diet. Eating spelt, fruit and vegetables supplemented by a short period of only eating pear purée is a good way to start. And the beneficial effects of spelt on our bodies and emotions means that it’s easy to stick to these new dietary habits.
Hildegard von Bingen recommended fasting as a remedy. Our ‘gentle Hildegard fast’ includes three small meals a day and can be followed by anyone. It’s enjoyable, effective, enlightening and exciting as it sharpens our perception, sensitises body awareness, and helps us let go of the things that trouble us.
