VENISON MAN-TATO Feast on this favorite from Mathews HQ

CHEESESTEAK VENISON POTATO SKINS Makes 4 servings //////////////////////////////////////////////////////////////////////////

INGREDIENTS: 4 large russet potatoes Olive oil 1 pound venison, thinly sliced and chopped into small pieces* Salt and freshly ground pepper to taste ½ medium onion, thinly sliced 1 green bell pepper, thinly sliced or roughly chopped 1 (4 ounces) package oyster or small cremini mushrooms, thinly sliced or roughly chopped 8 ounces (2 cups) shredded creamy Havarti cheese 4 ounces (1 cup) shredded Provolone cheese Chopped fresh rosemary or chives, if desired //////////////////////////////////////////////////////////////////////////

DIRECTIONS: Heat oven to 400˚F. Place potatoes on a baking sheet; brush generously with oil and bake 1 hour or until tender. Cool about 30 minutes. Increase oven temperature to 450˚F. Cut each potato in half lengthwise. Scoop out the majority of the potato with a spoon, leaving a ¼-inch layer around the skin. Generously brush the potato skins with oil; season with salt. Place in the oven, skin-side up, for 5 minutes. Turn the potatoes, brush with oil, return to the oven 5 minutes longer or until golden and crisp. Meanwhile prepare the filling. Heat a griddle or cast-iron skillet over medium-high heat. Sauté the onions in olive oil about 5 minutes. Add green pepper and mushrooms and continue to sauté until vegetables are tender. Add the venison to the pan; sauté to desired doneness. Season with salt and pepper. Remove the potato skins from the oven and fill them with the venison mixture. Top with the cheeses. Heat the broiler to low. Place the filled potato skins under the broiler for 3 minutes or until the cheese is melted. Sprinkle with rosemary. //////////////////////////////////////////////////////////////////////////

*TIP: A great trick for thinly slicing steak is to place it in freezer for about 10 minutes or until the meat is just starting to firm up but is not frozen. Slice using your sharpest knife.

al Arnold’s high country Colorado mule deer hunt was pure adventure - 14 days in solitude, living up on the mountain with limited means. Days spent hiking, glassing, and stalking deer - analyzing every move - nights spent revising strategy and recovering from mental and physical exhaustion. The weather worked against him, and the steep terrain pushed him to his limits. On the last day of his hunt, he caught a split second of movement through his scope, finally spotting the needle in the haystack, and proceeded on a six hour stalk. He posted himself 25 yards above his quarry and waited. When the deer finally stood up, he found Cal at full draw.

As backpack bowhunters, our obsession with gear will always remain borderline fanatical. Whether packing for the hunt of a lifetime or just a weekend trip, being prepared can make the difference between cutting a tag and going home empty handed. The correct gear choices will keep you more comfortable, hunting harder and could even save your life. So here are my tips and a basic pack list. My goal is to shed some light on what’s worked for me in the past and help others get thinking about how to dial in a system that works for them. Keep in mind that a pack list can never be written in stone. I’m always learning from other knowledgeable hunters and ultralight backpackers, so even with all the agonizing analysis - pouring over specs, calories-per-ounce and warmth-to-weight ratios - my list is always in flux.

5 GEAR TIPS FOR BETTER BACKPACK BOWHUNTING 1) LESS IS MORE: You’ve heard that “ounces make pounds,” but truly keep this mantra in the back of your mind when developing your mountain hunting gear list. Scrutinize everything. Apart from emergency gear, items should get used nearly every day. 2) DOUBLE DUTY: Lightweight, packable items that have more than one use should earn a coveted spot in your pack over items that don’t. The more items that serve double duty, the more value they bring to the comfort and success of your hunt. 3) PACK SMART: Items should be positioned in your pack efficiently. For example, I try to keep my rain jacket rolled in its hood, and lightweight, “puffy” insulation layers stuffed into their own sleeve when not in use. That way, they take up less space and can be quickly deployed when an afternoon rainstorm hits or you cool off on a glassing break. 4) NUTRITION, NUTRITION, NUTRITION: This is probably the hardest lesson I’ve learned in the field, and I hope you don’t have to. A good rule of thumb is that if doesn’t contain 160 calories/oz., leave it at home. Of course, every rule is meant to be broken, which comes to be true in the form of freeze fried meals or quick burning items like Clif Shot Blocks. Included is all the food I’d bring for one full day in the mountain. For extended trips, I’d simply multiply all food items by the number of expected days. Hydration is just as critical as proper fuel, if not more. I prefer using electrolyte supplements like Nuun tablets in my water bottle. 5) IT’S PERSONAL: The best person to tell you what to bring on a mountain bowhunt is you.
