Champagne Laurent-Perrier LP
17
We were lucky enough to be invited by Laurent-Perrier to Champagne in France to learn all about the famous sparkling wine that we supply to our guests. From start to finish, the journey physically as well as the historic journey was something quite special. Landing in Paris, first thing was first – Champagne. Muddling through the iconic streets and taking a seat in quaint brasseries and authentic cafes, tasting various glasses of what we’d come here to explore, the range of Champagne available is rather fascinating. From where the vineyard location is and therefore the type of grape planted and grown, to the physical material that the sparking wine is fermented in, the processes that is entailed to achieve the crisp bubbly tipple that we all love, is frankly outstanding. On the day that we embarked on the journey to the famous Champagne house, we were spoilt with panoramic views of the country’s countryside. Unspoilt, natural beauty. Knowing that we were embarking on something quite special made the experience more warming. Hidden away from the public eye, we turned in to what looked like a townhouse, but behind the immaculately decadent walls was a new world. The world of Champagne. Greeted by our guide, we were shown around the house, learning all about the history of the family and how the Laurent-Perrier name that we know and love to this present day came about. The house is not open to the public and tours are on strict invite only so lapping up the impressive story was a privilege and therefore high on the agenda. We headed into a room of impressive stainless-steel tanks where the wine fermentation process takes place once the grapes have been pressed. We were told that the switch from wooden barrels came in the 1970’s and revolutionised the Champagne making process. The stainless steel keeps the liquid fresh, at a low temperature of 16 degrees and therefore allowing purity, resulting in the finest Champagne possible. The juice stays in the tanks for a few weeks and the wine maker tastes each day, until he is satisfied that the famous taste of LaurentPerrier has been created. Next, we headed into the darken cellars, lit only by low lighting where hundreds, upon hundreds of the famous bottles were on show. Our guide explained that each bottle was placed in wooden racks at certain angles, ready for manual daily rotation to ensure sedimentation was minimal. Having learnt the making process, it was then time to try the Champagne…

Tasting four out of the Champagne house’s collection alongside a light lunch, the Ultra Brut, La Cuvée, Grand Siècle and Cuvée Rosé were poured perfectly by the house sommelier. Each individual wine has its own blend consisting of a different variety of grape, alongside different characteristics; almost giving each blend a personality. The flagship La Cuvée is named “the perfect balance” with the wine coming from the purest grape juice and embarking on a long ageing process; it’s the perfect apéritif and partner for poultry and the finest fish. A newfound knowledge for the sparkling wine allows a newfound knowledge of food pairings, serving occasions as well as the history behind such an iconic brand and a Champagne that is stocked in our beach-side hotel. A once in a lifetime trip enables a large step into better educating our guests on what they are drinking during their visit; something that we’re proud to be able to do. Birth The House of Laurent-Perrier was founded in 1812 by André Michel Pierlot and took the name Vve LaurentPerrier when Mathilde Emilie Perrier, the widow of Eugène Laurent, combined the two-family names after she decided to expand the business. Eugénie Hortense Laurent, her daughter, inherited the House in 1925 and sold it to Marie-Louise Lanson de Nonancourt in 1939. Rebirth During WWII, Marie-Louise Lanson de Nonancourt ran the business while two of her sons, Maurice and Bernard, joined the French Resistance. In 1945, Bernard de Nonancourt began an exacting apprenticeship, learning every aspect of winemaking from vine to cellar, before his appointment in October 1948 as Chairman and Chief Executive. At that point, the House was employing around 20 people and shipping 80,000 bottles a year.

Expansion Fired by a passion for champagne, a respect for traditional values and, most importantly, for people, Bernard de Nonancourt inspired Laurent-Perrier with his independent spirit and creative audacity. He established privileged working relationships with the grape growers and cleverly combined innovation and tradition. He created the signature Laurent-Perrier style of freshness, lightness and elegance and developed a unique range of champagnes which are today exported to more than 160 countries worldwide. The Founders A former cooper and bottler in Chigny-les-Roses, André-Michel Pierlot settled in Tours-sur-Marne in 1812 as a négociant in the wines of Champagne. It was in this village, on plots named Les Plaisances and La Tour Glorieux that he founded what was later to become Laurent-Perrier. His son, Alphonse Pierlot, succeeded him and, not having any heirs, he subsequently bequeathed the House to his cellar master, Eugène Laurent. Following his accidental death in 1887, Eugène’s widow, Mathilde Emilie Perrier, took the helm of the business and combined her own patronymic with that of her husband, naming the business “Veuve Laurent-Perrier”. With her strong character and reputation for integrity, she developed the business, restored its finances, and masterfully kept the House going throughout the Great War. In 1920, she paved the way for the international expansion of the brand by entering a partnership with Sir Alexander Fletcher Keith McKenzie to invest in the British market. Eugénie-Hortense Laurent succeeded her mother in 1925. Hard-hit by the economic crisis between the Wars and heavily in debt, she sold the estate to Marie-Louise de Nonancourt in 1939. The Builder Bernard de Nonancourt dedicated his life to a single passion: Laurent-Perrier. His courage, convictions and energy transformed a small Champagne House purchased by his mother in 1939 into a global brand. Bernard de Nonancourt and his elder brother Maurice joined the French Resistance. Only Bernard survived and joined the Maquis underground, where he met the founder of the Emmaus movement, Abbé Pierre. Later on, he was assigned to General Leclerc’s 2nd Armoured Division (2ème DB). When he returned, his mother insisted he undergo an apprenticeship to fully understand the business, being a vines labourer, cellar and office worker, and a sales representative. In October 1948, aged 28, he was appointed Chairman and Chief Executive of Laurent-Perrier. He was one of the rare
owners of a Champagne House to have done all the jobs of his future employees. Bernard de Nonancourt injected a dynamic momentum into the business. Keen on innovation, strongly attached to champagne traditions and to quality, he forged the commercial culture of Laurent-Perrier and created a renowned brand with a range of unique champagnes. Up until his death on 29 October 2010, he made his vibrant stamp on the House of Laurent-Perrier, which will remain forever. The Cellar Master A message from Michel Fauconnet, Laurent-Perrier’s third Cellar Master. “I was fortunate enough to be accepted as a trainee for a Champagne House with great ambitions and scope for expansion. I found the job fascinating: from the raw materials–grapes – you obtain a bottle of champagne. Forty years later, this transformation still enthrals me! I got my experience from working from the bottom upwards over several years. I know every stage of production from having worked there: I was a cellarman from 1974 to 1976, a supervisor in 1977 and a foreman in 1981. I learned a lot about the technical side in the winery and have been Cellar Master and Production Manager since 2004. I took over from Alain Terrier, whose assistant I had been since 1983. The job has changed enormously. The Cellar Master used to be the man who made the wine. These days, he also takes care of supplies. So he is responsible for the wine from vinification to bottling. I have spent my entire career at this House and share its passion for champagne, and its values of exacting standards and perfectionism. My job is to make those vins de plaisir that are perfectly attuned to the spirit of the House of Laurent-Perrier.” The Estate In 1881, when Cellar Master Eugène Laurent inherited the Alphonse Pierlot Champagne House, he provided it with the essential foundations required to produce great champagnes, namely the houses and land to create a fully-fledged estate. He purchased vines in the very best terroirs of Bouzy, Tours-sur-Marne, and Ambonnay, excavated 800 metres of cellars, and set up a tasting laboratory. That is how the Domaine Laurent-Perrier (the Estate) was anchored in Tours-surMarne. This picturesque village is ideally situated at the crossroads of the three main wine growing areas of the Marne département: the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs. It is also part of the 17 Champagne villages ranking in the prestigious ‘Grand Cru’ area.

TOP 5 TIPS
TO SURF LIKE A PRO
We all want to look like we are conquering the waves so we thought we would compile as few tips to make it look like you know what you’re doing in the water. Practice your pop-up It may look dorky, but take a few minutes on the beach to work on popping up on your board. Lay your board in the sand (dig a little hole for your fins to sit in so they don’t break off) and lay down on it. The key to standing up on a wave is a quick and fluid pop up — think of it as a real quick, yet controlled, pushup. Perfect the motion on the beach, and it will come to you much easier when you’re in the surf. Take that extra paddle This is a tip that can be applied to surfers of all levels. When you’re paddling for a wave and feel the energy of it start to lift you into it, take one more strong paddle. The extra velocity will make it so you’re not stuck at the top of the wave, making the drop much easier.
22
Bend the knees, not your back When you do get to your feet on a wave, make sure to bend your knees, as opposed to hunching your back over. You have way better balance with your knees bent and absorbing the energy of the wave. Plus, back bent and knees straight is plain bad style. Find that sweet spot when paddling You always see beginner surfers paddling too far back on their boards, making it do a wheelie and the going slow. On the flip side, some beginners paddle too far up on their boards, making the nose poke underwater. What you need to do is find that sweet spot in the middle, mark it with a piece of wax and make sure to paddle in that position. Book a lesson Surfing isnt easy! It can take much longer to correct a bad technique rather than perfect it from the start. Go speak to Quiksilver Surf School, they have lessons for all abilities to help you ride like a pro.

MEET YOUR
therapists.
Introducing two of our therapists at Fistral Spa, Leeanne and Sophie who are both core members of the treatment team, who alongside their fellow therapists, create a journey of true relaxation that will nurture and nourish body, mind and spirit.
What do you love most about working at Fistral Spa? L: Ensuring our guests have a full experience, with total relaxation. I feel accomplished knowing a guest has left feeling at a place of peace and happiness. S: I enjoy enabling for our guests to start their day well. If I am able to nurture a client with a treatment to relax them ready for the day ahead, I feel fulfilled and content too. Tell us about your best or most memorable treatment experience? L: I had a lady who had lost her son. I felt honoured that she could open up to me about this. I would like to think I had helped her, even just for the hour she was with me. Knowing I can give a treatment that will contribute to their wellbeing, even just a little bit, is so rewarding.
26
What’s your morning routine before beginning a day of treatments? L: I have quite an organised, efficient morning. I start with a refreshing shower, helping to release any tension before my day. It’s then a breakfast with my family, before dropping the children to school for their day. S: Recently, I have started getting into Newquay early in the morning. I like being able to go for a jog or a swim before I start my treatments, it gives my mind and body a chance to awaken and feel prepared for the day ahead. How do you take care of your wellbeing? L: A balanced healthy diet I feel is key to my wellbeing. I find when you look toward the options for eating healthy, the variety for recipes really expands. I also like to ensure I have a good amount of sleep, feeling fresh and prepared for each day. S: Personally, since I am working inside for the majority of daytime hours, I choose to supplement this with Vitamin D tablets, maintaining my energy. I of course also enjoy my morning activities alongside this.

Do you have any wellness/skincare secret tips you could share? L: A good time to feel relaxed completely is listening to music. Finding your taste, exploring new genres and just enjoying how music can move you emotionally and physically. Fresh air is also important, venturing out onto the Cornish coast, visiting places with a breeze through your hair is a wholesome love of mine. How long have you been working at Fistral Spa? L: I have been working at Fistral now for 8 to 9 years. S: I have been working at Fistral for 3 years. How did you come to working in spa? L: I decided, when in Sixth Form, to take a course in Hair and Beauty. I absolutely loved it; this began my career journey, and so I continued studying, eventually finding myself as a spa therapist. S: I began studying hairdressing. I did this for two years, I then got persuaded to do beauty treatments and makeup for prom packages. I found myself thoroughly enjoying beauty, and so pursued this to become a therapist.
Treatments at Fistral Spa are available everyday 10am - 6pm Late night treatments available on Friday and Saturday until 8pm
"Fresh air is also important, venturing out onto the Cornish coast, visiting places with a breeze through your hair is a wholesome love of mine." What treatment do you specialise in? L: I partake in a majority of the treatments, I think it is very hard to choose just one, as they vary so much from each other, and so each encapsulate a different feeling or atmosphere. S: Massage seems to be my best treatments. I do not have a specific treatment I specialise in, however I retain a lot of positive feedback from clients having received a massage from myself. What is your favourite to perform? L: My favourite treatment to perform is facials, they each vary slightly, but I find it a soothing experience for the mind and body. S: I especially like to do manicures and pedicures. You can really see an incredible transformation in them, I am pleased when a client feels revitalised and luxurious!

SHAKE , MIX AND POUR
C O C K TA I L C L A S S 1 0 1
Cocktails have been a favourite tipple for quite a while; more specifically since the 1800’s (and we can see why.) Legend has it that the world’s first cocktail was invented by apothecary owner Antoine Peychaud in New Orleans in which he decided to name the cocktail after the drink’s main ingredient: Sazerac French brandy. Rich in history, the “alcoholic drink consisting of a spirit or spirits mixed with other ingredients, such as fruit juice or cream” is one that’s mixed it way through variations upon variations over time. The shakers and stirrers out there might even be aware that before the invention of bitters, cocktails were known as “slings,” which comes from the German word “schlingen,” meaning to swallow quickly. The years of swing, glitz and glamour 1920’s jazz era spun the cocktail into a light of their own, with the likes of the French 75 and Sidecar are still on cocktail menus around the world. Fast forward to today and the “coolest” drink on the menu has the perception of somewhat complication, with effort for different elements to be churned and flown in the air before a sip can be taken. The real
32
story? Simple. A cocktail is realistically made from three components; the base spirit, such as gin, vodka, whisky or rum; the modifier, such as egg white, cream, fruit juice or syrup to give flavour and smoothness; and a garnish, such as fruit or herbs. Here at the Bay Bar, we’re rather passionate about cocktails, so much so that we offer guests a way into the world of our favourite beverage with our fun masterclasses. Starting of course with a welcoming cocktail, our resident mixologist takes the lead in showcasing how to make three Fistral classics, before handing over the reins to the ever-wondering novice to muddle, shake and mix. Throughout the lesson, a Cosmopolitan, Mojito and Rose Garden take shape before the all-important taste test is taken out. NEED to KNOW Aspiring mixologists can book a cocktail making masterclass for £29pp or make a night of it by adding on a three-course meal at Dune Restaurant with a “cocktail making and dine package” for £54pp. Book online or call 01637 852221.
I S A M O J ITO YO U R DRI NK O F CH O IC E? Sir Francis Drake was hailed across England as a hero, and was knighted by Elizabeth I after helping defeat the Spanish Armada. But to the Spanish, he was a ruthless pirate known as El Draque. It is said that a mojito-like drink was invented after Drake found himself near the city of Havana. Called El Draque, the cocktail had aguardiente (early rum), sugar, lime and mint. Originally, the drink was used for medicinal purposes, to help treat scurvy and dysentery. When the aguadiente was replaced with rum, the mojito was born.

Introducing Daniel Kerr, our new Head Chef taking the reins in the kitchen. Daniel’s first cooking role started almost 16 years ago in Kenilworth, Warwickshire where his love of food started. A swift move onwards, Daniel set his sights on Michelin Star Tom Aiken’s Kitchen where his role as a commis chef release the passion for producing creative, seasonal dishes. Other roles throughout the chef’s career include working for The Lugger in Portloe, as a pastry chef for The Idle Rocks and at gastropub The Bear and Ragged Staff, where he achieved his first rosette. With an ever-growing love for bringing locally produced food to the table, we welcome his ethos with open arms and in the latter of 2019, Daniel set his sights on producing a completely new flavour for Fistral. “Choosing quality meat, fish, dairy and vegetable products is key to my menu” Daniel says. “The more that we can shout about the quality of the food and where it has come from, the better our guests’ understanding of what they are choosing to eat when dining at Dune Restaurant is.” We pulled Daniel away from the kitchen for a moment as we wanted to get to know him a little better and unearth the roots of the newest Chef on the block…

Cliché, but what is your favourite dish on the current Dune Restaurant menu and why? Pork belly starter. Inspiration was taken from a holiday in Greece when I had a stunning chargrilled pork belly that had clearly been slow cooked for a long time as the texture and taste were amazing. It came with sweet potato, coriander and a sharp dressing. We cure the belly with spices and salt for 12 hours, then we slow cook it for 18 hours, then it is pressed overnight. Finally, pan fried to give that lovely texture. Served with sweet squash puree, raw plums for acidity and salty crackling. Such a satisfying eat. What’s the best dish you’ve ever eaten? Crab tortellini (which was just one giant tortellini), served with the best shellfish bisque I have ever eaten, infused with basil. I had it with a Picpoul de Pinet while in the south of France. One piece of advice that you can give an apprentice chef in their first kitchen role? To embrace kitchen life, eat out on your days off, read up about new recipes, try them at home because food should excite you, if it doesn’t it’s tough to commit to this job… and most importantly, make mistakes, just make new ones every day, that’s how you learn!

“I feel that food that grows together goes together.” Why is local produce so important to you when creating a new dish/menu? I feel that food that grows together goes together (as cheesy as that sounds) and food that is in season now always has much more flavour than something that has been shipped for miles or forced to grow. I love to be produce led, if you start with a great product, you’re able do less to it to get the best flavour. I think chefs sometimes try too hard to compensate for sub-standard produce. This can be harder in the hunger gap like we are in now, but when it gets to Spring and Summer, there is no excuse to let the produce do the talking. How does sustainability play a part in your kitchen? I think we should all buy food with sustainability in mind, if not we are being very selfish. I keep in good contact with fish suppliers to ensure we’re always ordering in line with this. I try to order from day boats for the market fish dish, which is entirely driven by what the fish monger has to sell me.
Who inspires you? I find inspiration from lots of people both industry and non. I admire chefs in the world who aim for perfection such as my old head chef Tom Aikens or Daniel Humm (the head chef of the once best restaurant in EMP). I think you can chip away each day, bit by bit to try and achieve a realistic goal. A birdie told us you’re a lover of cheese...what’s your top 3 favourite chesses, in order? - Tunworth - Per las - Godminster Cheddar and I adore French so : Pont Leveque, Fourme D’dambert , Reblochon de savoie Let us in on your favourite tipple: I love single malt, Balvinie 15yr is my treat to myself. Chateux Mussar is my favourite wine and Moretti is my favourite beer for after work. What made you want to become a chef? I sort of fell into the career! I used to play football and go to a sports college studying sports and exercise science (while working part-time in a pub) but managed to attain a few sporting injuries. I decided to apply for some great kitchen jobs in London and was lucky enough to get a commis job at Tom Aiken’s Kitchen in Chelsea. Ever since then I haven’t looked back. Your number 1 dinner guest? Daniel Humm, simply because I have so many questions to ask him.

Whether it’s the envious location and panoramic ocean views, luxurious suites complete with a private balcony and bubbling hot tub, or the mouthwatering cocktails and seasonal menu in the Dune Restaurant; Fistral Beach Hotel & Spa is at the top of everyone’s list when it comes to beach-side holidays in the UK’s surfing capital, Newquay. Renowned for being one of the world’s top surfing destinations, Fistral Beach is backed by high cliffs and sand dunes, making it the perfect natural playground for its visitors. After a day in the surf, you’ll be looking for a little relaxation, so let me let me show you around Fistral Beach Hotel’s amazing spa and tell you a little bit about my visit… Feeling very smug that we had the pool to ourselves, my fiance and I were passed fluffy white robes and a pair of slippers before we were given a tour around the spa. After a quick change and shower, we headed straight into the pool area…and relax. One of the first things you’ll notice is the high ceiling with the most beautiful lighting. Swim here in the evening and I am sure it will feel like you have a blanket of stars glistening above you. If you’re thinking of coming here for a romantic weekend away, then be sure to find out how you can enjoy exclusive use of the pool after hours with a glass of bubbles for you and your partner (choose from 9pm - 10pm or 10pm - 11pm for £50). After swimming a couple of laps (we were here to relax after all) we jumped into the hot hub where we indulged in some well needed ‘us’ time, discussing our future wedding plans and the all important honeymoon. With the spa still empty with just ourselves, we soon hopped out the tub and moved onto the next facility… Ah the sauna. Is it just me or do they always seem to smell incredible? Saunas are great for leaving us feeling invigorated, reducing tension in the joints, relieving sore muscles and of course they help us to relax. Fistral Spa also boasts a steam room, perfect for clearing the skin, removing toxins and reducing stress. By now I was already floating on cloud nine, I couldn’t have felt anymore relaxed… Until we we’re showed up to the relaxation room before our treatment.

"D O I R ECOMMEND THE T WO HOUR O CEAN GAIA R ITUAL ? AB SO LUTELY ! I THINK MY F IAN CÉ AG R EES, CONSID ER IN G HE F EL L ASL EEP AS SO ON AS THE MASSAG E B EGAN . " Say hello to the relaxation room at Fistral Spa, complete with the most comfortable beds, selection of flavoured water and herbal teas, magazines and Gaia skincare products which guests are welcomed to try out. Inspired by Gaia the ancient Greek Goddess known as Mother Nature, Gaia Natural Skincare products are handmade in Britain using traditional production methods. Find out more about the products here. After a 30 minute chill time, we were more than ready for our two hour Ocean Gaia Ritual. The therapists collected us from the relaxation room leading us to our individual treatment rooms where the rooms were already prepared for our pampering. This AMAZING two hour ritual is described as a deeply therapeutic ritual to release tension and stress bringing the mind and body into harmonious balance. Sounds great right?

“BY N OW I WAS A LR E A DY F LOAT IN G ON CLOUD N IN E , I COULD N ’ T H AV E F ELT A N YM OR E REL A X E D …”

The treatment began with a Foot Ritual using the Gaia Awakening Body Oil and Scrub, followed by a full body exfoliation and application of the nourishing Gaia mud. I then jumped in the showered, before a Gaia blend of body oil was poured warmly onto my body for a muscle-easing massage. Choose your own oil and the therapist will ask you how soft/firm you would like the massage and which areas you would like them to concentrate on. It doesn’t end there…I was then spoiled with a scalp massage (who know how amazing this was, I could have an hour of just this) while wrapped in warming towels. Last but by no means least, the ritual was brought to an end with the Gaia rejuvenating face treatment (using Gaia’s cleansing balm, toner, face serum and lip balm) leaving a natural feeling of well-being, whilst my skin is left smooth and replenished.
lunch and glass of bubbles at Dune Restaurant. Feeling ever so sleepy, we stayed in our robes and were seated in the beautiful restaurant surrounded by white drapes with a backdrop of the Atlantic rollers and golden sands of Fistral Beach. Dune Restaurant serves breakfast, lunch and dinner. We both opted for the antipasti as a starter which came with a selection of meats, bread, pickled onions, sun dried tomatoes, peppers stuffed with cream cheese, olives and a homemade houmous that was to die for. For a girl that has eaten many antipasti sharing boards, I can assure you this was the best one yet. I am already planning my trip back to The Dunes restaurant in the hotel.
Do I recommend the two hour Ocean Gaia Ritual? ABSOLUTELY! I think my fiance agrees, considering he fell asleep as soon as the massage began. Treatments were then followed by a two course
Big thank you to Fistral Beach Hotel & Spa for inviting me for the most incredible spa day. Check out their spa offers and start planning your trip, you won’t be disappointed.
Then came the main course, a creamy crab linguine which was just enough to fill us up and also very delicious.

GAI A JA D E FAC I A L A healing facial massage that’ll leave the skin feeling rejuvenated and glowing as Gaia’s natural skincare products are softly massaged deep into the skin, using healing Jade crystal wands to stimulate both lymph drainage and blood flow. A warming mask with honey extracts is applied during the treatment to help close the pores whilst an invigorating scalp massage ends this detoxifying treatment.
