involving drunken and disorderly conduct, drug offenses, assaults and other incidents as well as the camping ground area in particular being unsafe and unsanitary for overnight use.” Of course, the county’s indefinite ending of camping at Kanaha is just one small aspect of their future plans for the beach park. In fact, the county has big plans for the area, and will hold an open house on the future of Kanaha Beach Park this Thursday, Aug. 25 at the Waikapu Community Center. “Kanaha Park is well utilized by families, fishermen, divers, water sports enthusiasts and many others,” Buenconsejo said in a separate, far more positive Aug. 18 news release. “The open house will provide an opportunity for all park users and area residents to learn about the planning process and meet the staff and consultants who are working on the project. During the open house you will be able to share your recommendations to the conceptual draft design” The Waikapu Community Center is located at 22 E. Waiko Rd. The open house starts at 5pm and should run until 8pm. For more information, call the Department of Parks & Recreation Planning and Development Division at 808-270-7931.

COUNTY TO WORK ON KANAHA BEACH PARK Kanaha Beach Park is a wondrous place for those who live for ocean activities. Famous for the winds that attract kite surfers, Kanaha is also great for paddling and swimming. That being said, the park also attracts more than a few homeless people. In fact, you don’t have to scroll too far down the beach’s Yelp page before you find people–and not just mainlanders–calling out the beach’s rough reputation. “Whoa! You probably don’t want to go here. Even during the day,” wrote Matt L. from Chicago. Faye M. of Honolulu, who gave the beach a four star rating, couldn’t help offering a warning to visitors. “There were some vagrants, but they just stick to themselves - so they’re mostly harmless,” she

Let’s start off with something horrifying. Since mid May, suspected arsonists have twice hit the home (in quiet Hana, of all places) of state Senator J. Kalani English, Maui Now reported on Aug. 16. No one’s been injured (so far) but the latest attack caused about $2,500 in damage to the home. “It was a small propane tank lit underneath the house on the joist facing upward burning the floor,” Sen. English told Hawaii News Now the next day. “The backside of my porch is pretty much destroyed into the kitchen and then there’s a big hole in my living room because it was burning from underneath.” English said the home, which he grew up in, originally belonged to his grandparents. As for who’s responsible for the arson attacks, and why, the Maui Police Department is investigating.
wrote. “Just don’t let your guard down!” On Aug. 18, county officials announced that it’ll make some changes at Kanaha–for locals and visitors, sure, but also for nearby businesses. First, starting in September, the county is placing all overnight camping permits at Kanaha on indefinite hold (the county will refund any permits that have already been issued for the period after Aug. 31, 2016). “This is a joint effort by the county and the state to clean-up our park and make the area more secure, not just for park users but for the businesses nearby, including the rental car agencies and Kahului Airport,” said Parks & Recreation Director Ka‘ala Buenconsejo in an Aug. 18 county news release. “This is a well used park and the bottom line is it needs to be clean and safe for everyone.” The news release makes even one-star Yelp reviews look positive by comparison. “Department officials said the clean-up is necessary in order to address the numerous complaints from park users,” states the news release. “The issues range from large items such as appliances and vehicles being dumped in the area, weekly police reports
that the Story of Hawaii Museum had moved. No longer located on the first floor, a few doors down from Ramen Ya, the little museum is now on the second floor, just opposite the elevator and directly above American Eagle Outfitters. Stepping inside, we found museum director Bryant Neal, who promptly showed us around the new set-up. Though the space is smaller than the old location, the new museum makes more sense, as the main room is dominated by a circle of display cases arranged chronologically. Now visitors can start with displays on ancient Hawaii and then progress through history as they walk around the room. Smaller antechambers contain rotating or special displays, like the one Neal is still working on concerning Camp Maui, the massive US Marine base located in Haiku at Giggle Hill during World War II. Neal immediately showed us his newest acquisition: a well-worn copy of the wartime publication Hawaii at War, a black and white magazine packed with large photos from the battles of Coral Sea, Midway and the Solomons, as well as information about military (and civilian) mobilization on each of the Hawaiian islands. Neal’s focus on Maui’s wartime efforts make sense, given that this year marks the 75th anni-

versary of the Japanese attack on Pearl Harbor. But the story of Hawaii is far more eclectic than merely the site of the first American battle of WWII, and Neal was soon showing us a far more sublime display dedicated to the Mad Hatter of Maui, a 1970s-era hat shop in Lahaina Town that offered woven hats that were specially sized to order. Neal first showed us old photos of the old shop, with its towering stacks of hat blanks, then walked us through the process of custom-sizing a hat to its prospective owner. Neal also marveled over the engineering of a round, metal vice-like device that, with the turn of a crank, expanded the hats to the correct measurements. The Story of Hawaii Museum is open seven days a week and is located at the Queen Ka‘ahumanu Center. A new library on wheels hits the streets next month and the Hawaii State Public Library System is celebrating. State Librarian Stacey Aldrich will receive a symbolic key for the “Holoholo Bookmobile” from the Maui Friends of the Library (MFOL) at a Grand Opening and blessing ceremony On Sept. 10, at 10am, at the Queen Ka‘ahumanu Center. The Holoholo Bookmobile is a $300,000, state-of-the-art vehicle that will replace the Library’s 21-year-old bookmobile. The new vehicle–which will be based at Wailuku Public Library –has a capacity of 3,000 books, CDs, DVDs, audiobooks and periodicals; thousands of used books were sold in the MFOL bookstores at Queen Ka‘ahumanu Center, Wharf Cinema Center in Lahaina and in Pu‘unene to raise funds to purchase the bookmobile. MFOL Board Member Richard Buckley will emcee the key-presentation ceremony at the Queen K mall; and Rev. Alapaki “Al” Terry will conduct the blessing. Dorothy Tolliver, past MFOL President and the Bookmobile Committee Chair who spearheaded the project; and current MFOL President John Tryggestad will offer congratulatory messages. Uncle Wayne and the Howling Dog Band and Hawaiian lap steel guitarist Joel Katz will perform. The bookmobile will be on display throughout the day, and free books and refreshments for keiki will be provided at the Friends’ Bookstore near Sears. Tolliver said the bookmobile represents one of the largest projects ever undertaken by the non-profit in its 103-year history. “We are very grateful to our 80 volunteers and customers at our three used bookstores that made this bookmobile possible. Our ‘library on wheels’ will bring much needed services to schools, communities and rural areas throughout Maui that do not have libraries.”
State Librarian Aldrich said the HSPLS is grateful to the MFOL for their support of Maui public libraries. “This new bookmobile will enable us to serve more residents on Maui and provide access to an amazing array of materials and services in a mobilefriendly way,” she said in a statement. The new bookmobile will be staffed by a full-time librarian and a driver; funding for the librarian and driver is coming from the State Legislature. Bookmobile driver Michael Tinker and bookmobile Librarian Jessica Gleason will help patrons find and borrow books and other library materials. Gleason will also familiarize patrons with online resources including eBook downloads, databases, and online learning available through the Hawaii State Public Library System website (Librarieshawaii.org) and provide story hours and special programs to places miles from the nearest library. Also, the public can contact Wailuku Public Library if a sign language interpreter or other special accommodations are needed. For more information, call 808-243-5766.
Maui County that threaten the island environment, agriculture, economy and quality of life; the money also will go to educate the public on invasive species issues. Grantees were selected based on their economic impact within Maui County through business and/or jobs created or sustained. Improvements to Maui County in the areas of environment, agriculture, business, sports, arts and culture were also considered, according to the OED. “These economic development grants are a vital way that our tax dollars help create jobs and sustain our local economy,” said Mayor Alan Arakawa. “Funds have helped preserve our environment and open space, support our small businesses, and share our host culture with residents and visitors. I’m pleased to see how far these funds go toward strengthening our community on many levels.” The third largest grant–$730,000–went to MEDB’s Economic Diversification program which was designed to attract, develop and retain technology and innovation cluster businesses in Maui County. The Maui Arts and Cultural Center was granted $470,000 for Parking & Access Improvement; the funds specifically will help the MACC provide safe public access to 250 parking places in Keopuolani Park. The MACC also was awarded $318,270 to support operational activities that nurture and promote sustainable economic development in Maui County while acting as a gathering place for residents and visitors.

As Americans’ fascination with guns grows, so, too, does the market for protection against all those flying bullets. Texan John Adrain has introduced an upscale sofa whose cushions can stop up to a .44 Magnum fired at close range, and is now at work on bulletresistant window blinds. Another company, BulletSafe, recently touted its $129 baseball caps (with protection against the same bullets, but only in front)–though the company admits the cap won’t prevent concussions. The Colombian suit and vest designer Miguel Caballero offers an array of bullet- and knife-resistant selections, made with Kevlar and Dyneema, which are also used by clothiers BladeRunner and Aspetto (maker of “ballistic tuxedos”).
GOVERNMENT IN ACTION Montpelier, Vermont, has one solution to America’s well-known problem of ignoring infrastructure maintenance (and the high cost of asphalt). While other cities and states merely delay needed road work (though with harsh consequences to drivers), Montpelier has begun to unpave some of its roads, converting them back to cheaper, annoying gravel and dirt (and inevitably, dust). A recent report by Montana State University researchers expressed surprise that so many governments are choosing this option.

Phoenix’s KTAR-TV reported in July that the local sheriff (the notorious “tough on crime” Joe Arpaio) has already cost the government $10.4 million in attorneys’ fees for successful lawsuits filed against him by illegally profiled Hispanics. A judge found months ago (awarding $4.5 million) that Arpaio was deliberately violating the court’s orders, and lawyers have demanded another $5.9 million to bring Arpaio’s resistances up to date. (Unless the court rules otherwise, the $5.9 million will ultimately come from taxpayers.)
NO WONDER ISIS IS SO STEAMED Last year, three million Muslims made the sacred pilgrimage to Mecca for the hajj and another five million for the slightly less sacred umrah, but awaiting them in the Saudi holy city would hardly have been the reverence many imagined: massive modern buildings; housing construction with worksites brightly lit around the clock; glittery, multi-story shopping malls featuring familiar brands peddling opulence–capped by high-rise views of the city’s entire amusement-park-like setting from four- and five-star hotel rooms, where suites during hajj can go for
$10,000 a night. (The malls, like the rest of Mecca, come to a standstill–or kneelstill–for prayers.)
BEST REALIST ART EVER A Fargo, North Dakota, fire official said in July his crew had responded at least twice to alarmed-citizen phone calls to go help a man obviously homeless, covered in a blanket on a park bench, who seemed not to be moving. The First Lutheran Church later explained that the “man” was just a statue–their idea of Jesus as a homeless man–and its Canadian designer said versions of the statue had been placed in several cities, including Toronto and Detroit.
PERSPECTIVE Almost half of all produce raised by U.S. farmers is thrown out before it reaches a consumer’s plate, and though there are several contributing explanations, the most striking is American eaters’ “cult of perfection.” “It’s about blemish-free produce,” said one farmer, e.g., “sunburnt cauliflower” or table grapes not quite “wedge-shaped” enough. America’s “unyielding cosmetic standards,” according to a July report in The Guardian of London, even means that much of the annual $160 billion worth of imperfect food is simply left to rot on the vine, or sent directly to a landfill, because farmers anticipate retailers’ reluctance to stock it.
WAIT, WHAT? In July, the U.S. Fish and Wildlife Service announced plans to keep black-footed ferrets in northeastern Montana from dying out–with drones that shoot peanut butter M&Ms (coated with a vaccine). Before the drones, there were too few ferrets to justify, economically, hand-delivering the candy. And a Japanese researcher (working out of the University of Illinois at Chicago) recently announced a health-improving computer app that would require men to ejaculate on their cellphones. (The researcher’s sophisticated microscope lens would be capable of transmitting a highly detailed photo, able to be examined in a lab, thus freeing shy men from having to visit a doctor’s office.)
ANYONE’S FAULT BUT MINE Lawyer Andrew Schmuhl, 32, ordered to trial in Fairfax County, Virginia, in May, declared that he was not responsible in 2014 when he invaded the home of a man who had recently fired Schmuhl’s wife. Using a Taser, he had held the man and his wife hostage for three hours and ultimately slashed the man’s throat and stabbed the woman repeatedly. However, Schmuhl claimed he should be found not guilty because he was “involuntarily” intoxicated at the time–cluelessly on pain medication that made him oblivious of his actions. (He was convicted.) ■

‘YOU CAN’T DO IT BY YOURSELF’ Talking story with outgoing Maui County Councilmember
GLADYS
BAISA By Ashley Probst
A
s a third generation upcountry resident and former head of the non-profit organization Maui Economic Opportunity (MEO), Maui county councilmember Gladys Baisa has always been passionate about her community. After serving 10 years in the Pukalani-Kula-Ulupalakua area residency seat and as current chair of the Water Resources Committee, Baisa plans to retire at the end of this term. We recently sat down with her to reminisce on the past and discuss her plans for the future.
10 AUGUST 25, 2016
Q: A:
First of all, how long have you been involved in politics?
Actually, it’s a funny story. I had been at MEO for 37 years and I was planning to retire at the end of 2005. About a month earlier, I was invited to lunch with the chairman of the board and he said to me, “What are you going to do when you retire?” I said, “Well, what do people do when they retire? They take trips, they play with their grandkids and they volunteer. Do all kinds of fun things that they’ve wanted to do
for a long time.” He looked me straight in the eyes from across the table and said, “I think that’s a big waste. Think about all you’ve learned here during your years at MEO. You have 37 years of working with the community, finding out what their needs are, creating programs for them, finding funding for it, working with all levels government in order to do that… You should run for county council.”
Q:
And how did you react to the proposition that you should start a campaign?
I said, “No, I don’t think I want to do that because it involves all this fundraising.” And he said, “I wouldn’t worry about it. I think people will help you once they know you’re running.” I went home and I asked my husband what he thought about that idea and he was unhappy because he had just retired from the water department because we had planned to retire at the same time. I said, “I can run but it doesn’t mean I’m gonna get elected. But it definitely means a campaign,” and he said, “I know you really well. If that’s what you’re gonna do, you’re gonna do it and I

used to be $5.” But that’s what’s happening and yet when we tell people, we’re sorry but we have to raise your taxes, they just go ballistic and so meanwhile, the projects that we need to address don’t get done.

I do not regret coming here. It’s been an incredible opportunity. I’m very grateful to the community that’s been so supportive in electing me but I am really ready for a pause here. But if I had to do it over again, I would have done it much sooner than I did. I waited too long but then again, it never crossed my mind before. But I do wish that I had done it at least 10 years earlier because if I had, I think I might have been able to do a lot more and I would have had more opportunities.
Everyone loves a parade
might as well go along with it if that’s what you want. Mom’s happy, everyone’s happy. Go ahead.” Everybody was encouraging, so I filed and that was 11 years ago. I’ve had four more elections and I’ve been very fortunate, I’ve had great support.
Q: A:
Why do you want to retire at this point in your career?
For one, I don’t have a choice. The county charter says that after five two-year terms, you must take a break. There’s term limits and what I could do, and what a lot of people like to do, is they take a two-year term off and then they run again. People ask me a lot about that and I keep telling them that isn’t something I’m thinking about. Actually, I’m kind of looking forward to the break.
Q: A:
When you look back, do you have any regrets?
What have you learned while being on the council?
Q: A:
What are some of your greatest accomplishments since being on county council?
I was able to reorganize and reactivate the Pukalani Community Association, which had not existed for a long time. I felt really bad representing a community that didn’t have a collaborative voice because others have one. It has become active and I’m really proud of the work that’s been done there.
Q: A:
What is the strangest thing that happened to you while being in this seat?
You wouldn’t believe the things people call us about! Everything from a dead dog on the street to, “I don’t have any water. What are you going to do about it?” I get a lot of those calls because I’m the water chair. “My taxes are too high. Why do I have to pay this amount?” Or, “The traffic in front of our school is terrible, it holds us up every morning and every afternoon.”
Q: A:
Q:
Personally, this may sound a bit crazy to you but I happen to be a neat freak. I want to clean out the closet and my files, and I want to organize the photos that are collected in a box. Everyone tells me you’re never going to do it because that never happens when you retire. Then, I’d also like to spend more time with my family and my friends. My family has been wonderful. I’ve been neglecting them big time and they’ve been very gracious about it.They never count on me to be the babysitter or doing anything like that because they know I cannot commit. Also, I think everybody knows I have this affiliation with Mexico and we go there every Christmas, every December, and we love it and we have friends there that are like family. 25 years ago, when we had no agricultural workers and I was at MEO, we brought in several thousand Mexican immigrants to help with pineapple and many of them decided to stay and through them they kept saying, you’ve got to see our country, it’s beautiful and I’d say, no I’ve been to Tijuana and they’d laugh and say, no that’s not Mexico! And so I

Q: A:
What do you think of the candidates who are currently vying for your position?
Q: A:
Do you have any advice for your successor?
I think we have some really great candidates. I am so proud of them and everybody’s been very classy, everybody’s been very on the high road– they’re not putting each other down, they’re not calling out each other’s weakness. They’re talking about their strengths and what they want to do and I’m really happy about that because that’s the kind of campaigning we want to see here. Never mind about your opponent, it’s about you. What do you have to give? What do you have to bring to the table? And I’m really happy because that’s what I see.
Yeah. You prepare to commit your life to this job. If you want to do it well, that’s what it takes. You have to look at it as a mission. You have to be able to express yourself well, you have to be able to be bold, you have to be able to take disappointment, you have to be aware of the fact that the community is always watching and you have to be careful how you conduct yourself because you are a public figure and I think we should be held to a higher standard. ■ editor@mauitime.com For more news articles, visit: mauitime.com/news
What do you think is the biggest misconception about being in government?
There’s a lot of misconceptions about how we’re just throwing money away. There are instances where we don’t spend money well, but isn’t that the truth with everybody? We can all sit there and have buyer’s remorse about the car we bought that was junk or the house we bought that had problems or the dress we bought that fell apart the next time you wore it. We all make stupid money decisions, but you make the best decision you can at the time. People also need to understand that we cannot have our taxes and our rates stay the same year after year–it doesn’t work that way. Tell me, are you paying the same amount for your plate lunch that you paid for it a year ago? I almost fainted the other day, I paid $12 for a plate lunch and I thought, “Oh my gosh, this

That, to me, is the joy about being in this job. It’s what you learn. As a council member, you’re exposed to incredible amounts of information that you wouldn’t get any other way because the items that we look at in county government are so broad. Not only did I meet all kinds of people– I’ve had the opportunity to meet foreign dignitaries, I’ve met kids, I’ve met students, I’ve met constituents of people that like me, people that don’t like me–but I’ve learned more people skills. I also learned that you have to be really careful about promising to change everything. Change in government is very difficult and it’s because it’s a complicated process and you can’t do it by yourself. The mayor cannot tomorrow decide that he’s going to turn Ka‘ahumanu into a toll road, even if he thinks that might be a good idea. I think that’s the part that a lot of people who want to be politicians don’t understand. Most of the time, on the council, you have to have four other people agree with you. If you can’t get the other members to agree with you, you can’t do anything. I would not have had the opportunity
to learn about some of these things had I not been on the council, so I think it’s an education in itself.
Say you could do anything you possibly wanted to once you retire, no restrictions at all. What would be the first thing you’d want to do?
finally took the trip and realized what a beautiful, wonderful country it is. I love to travel. I love different cultures, I love meeting different people. The world is wonderful if you ever have a chance to take a look at it. Of course, I hope to get involved again with the nonprofit sector which is my true love. It’s where I spent the majority of my life and I totally get excited about what the nonprofits do, so I’d like to go back. The problem is, my list is growing and I know it wouldn’t be wise for me to get involved in all that I want to. Now I have to figure out where do I think I can be of the most help? So, I don’t think I’ll just be sitting in front of the TV.

THE STORY BEHIND KOHOLA BREWERY IN LAHAINA
Christine and Ian Elumba

to-10 barrel place–this place has 25 barrels. So it’s pretty big. We just decided to go for it. To start from the ground up and have to ship everything is crazy. And if it breaks, we have to fix it. This place was here for eight years before us, and if something breaks, Garrett knows what we have to do to fix it. He and his wife Melanie have been great.” That’s when the plan for the Kohola Brewery started to gel. “When we were planning this brewery, it started as just a fun conversation,” says Christine. “It was something we would discuss on date night. Then it got serious. Ian started to homebrew. During the process, I would mention it to my friend Susan. Then we needed a business partner and she suggested it to her husband William [Ramirez]. Everything fell into place.” Then William met brewer Justin Brouhard and found their third piece of the puzzle while Ian was meeting with Garrett and figuring out the fourth. Things were going to flow in their brewery idea. Their original plan only involved about five beers so there was some tweaking to do to move into the facility.
add to get specific flavors, like a caramel malt. It’s that last 10 percent of the malt that gives that flavor.” He brewed the Saison with Upcountry lemons, processed by hand. “With the Saison I hand zested 350 lemons and added that towards the end of the boil to get more flavor,” says Brunson. “Our lager is probably one of the only unfiltered pilsners you will try. We aren’t under the production pressures of a lot of other breweries. We don’t have to filter it. We can let it lager naturally–that’s why it’s so awesome.” The brewery tasting room has the Ono Tacos food truck around the corner if you want to grab food nearby. They offer a few tasting flights to sample their beer, and you can also bring it home in their hydro flask growlers. They recently hosted a beerpairing dinner and plan to do more events. Ian is also planning to start brewery tours in September. “I thought at first that all I need to do

raft breweries are on the rise, so it’s no surprise that the Kohola Brewery took over the spot vacated by Maui Brewing Company after their new Kihei facility opened. Kohola’s tasting room in Lahaina is a primo spot to taste all 10 of their beers. They opened about eight months ago, with partners Ian and Christine Elumba, William Ramirez and Justin and Brittany Brouhard. But it’s Ian and Christine who are on the ground and running. “We saw the potential for growth here on Maui,” says Christine. “We really wanted it to be Hawaii because we really wanted to live in Hawaii. The opportunity came to purchase this because Maui Brewing Co. outgrew it. The doors just really opened for us.” “I think this place was for sale for a while, but for some reason or another it wasn’t taken,” says Ian. “Then one day [Maui Brewing Company owner] Garrett [Marrero] replied to my email and said to come check it out. It was bigger than we needed, but it was such an opportunity. Initially we were planning to open a seven-
“A lot of things changed from our original business plan, says Ian. “Originally we thought we would have five core beers. But it’s hard to call a beer your flagship or your core beer because you have to actually see how the public accepts your beer. You just don’t get a second impression on beer. Once somebody tastes your product, if they don’t like it they won’t buy it ever. We have to get them on the first impression. It can’t be too bitter or too sweet.” Christine says they worked on recipes and kept the tropical heat in mind. “So we tried to do four main beers that we sell in kegs,” says Ian. “The Lokahi, our German style pilsner, is a really easy drinking, clean, crisp beer. Then we have an IPA, for those who like a hoppy bitter beer. We call it the Mighty 88 because ‘Kohola’ means ‘whale’ in the Hawaiian language, and 88 Feet is the longest humpback whale measured in Hawaiian waters. We have Talk Story Pale Ale a light medium-bodied beer, really good for Hawaii. Then we have the Red Sand
Craft Flight
Ale. The Red Sand is a more complex, fuller beer, not like most beers you’ve tasted. It’s earthy, goes well with barbecue and pizza. Most places have a lager and an IPA so we felt the Red Sand was unique for us.” Now they sell kegs to over 45 locations on the island. They have 10 beers available: Talk Story Pale Ale, Lokahi Pilsner, Pineapple Lokahi Pilsner, 88 Light Rye IPA, Shoots Extra Pale Ale, Mean Bean Coffee Stout, Smooth Tide Ale, Mighty 88 IPA, Red Sand and the Kai Ala. The Kai Ala Saison is a new Belgian-style beer collaboration with Westin Ka‘anapali Ocean Resort Villas. The Shoots Extra Pale Ale is a recipe by their inhouse brewer Andrew Brunson. “The red ale has higher-kilned malts, like black malt,” says Brunson. “The malt itself is already processed, then I brew it. We have a base malt that comes from Alberta, Canada. The beer is about 80 percent of that. Then we have other malts that we get with different characteristics that we
for tours is talk, but now I need a reservation system so I can work out all of the kinks early on,” says Ian. “We want to grow slowly but grow significantly. We don’t bottle or can yet but we are looking closely at doing that. Canning is the way to go in the future. On the Mainland, they have mobile canning units that come to your brewery and can for you. We don’t have that here. I have to get my own canning operation going. So we have some tough decisions to make.” The Tasting Room at the brewery is open every day of the week, Monday through Saturday, 1 to 9pm, and Sundays from 1 to 7pm. They offer Happy Hour from 5-7pm featuring $5 pints and from 5-6pm they do a growler hour with $5 and $3 off options. Kohola Brewery also serves Vitali-tea Kombucha. ■ jen@mauitime.com + @jenrusso For more foodie news, visit: mauitime.com/food-drink

Mmm... Pie!

WHY MAUI PIE IN KIHEI CAN BARELY KEEP UP WITH DEMAND

on what,” said Ryan. “Since Maui felt like home to us, it made sense that we wouldn’t root ourselves too deep in Michigan. We thought that the best way to get into that dream is to do something that someone else had already done before us that could help us, guide us through it.” After the honeymoon on Maui, they decided to go all in on pie. “We moved in with my parents to do a pie bootcamp,” said Kellee. “We got married in March and moved in to learn pie making in June. We were newlyweds, living with my parents in my childhood room, with our dog. The whole thing was crazy. We were on the clock full time at the bakery as bakers. They have a whole different system, and they have a fast casual restaurant that does sandwiches and stuff, but we just focused on baking the pies.” Ryan had never baked a pie before the bootcamp. “I had always been into food, mostly savory,” says Ryan. “But I felt I needed to know how to bake a pie. Our parents’ recipes were the springboard for our shop. We basically took the idea of their recipes and
Northshore berry and mountain berry in fruit pies. Cream pies included lilikoi, key lime, chocolate, coconut, chocolate haupia and banana. The chocolate pies use Waialua chocolate produced on Oahu. Their pies come in a large nine-inch version and a mini six-inch version. Kellee said the signature little heart in the middle of their pies is reminiscent of Grand Traverse Pie Co. but the pie-making style is all their own. “I feel like we have been guided this way as far as what the island needs and what space we can get and work with,” said Kellee. “Space is a hot commodity. So you know what, let’s start out with what we know and we do really well and that is pie. We also do pie adjacent products, cookies, muffins, turnovers, coffee cake, pot pies and quiche. For the most part, pie is our bread and butter.” Their most popular pie is the chicken pot pie. Kellee said they ate it a lot to sort out exactly the flavor they were looking for. “I don’t know how many months we just ate pot pie breakfast, lunch and dinner,” says

great piece of pie can be like a slice of heaven, so when I stepped into the Maui Pie shop in the Azeka Mauka shops in Kihei, my mouth was watering with sweet anticipation. This cute pie shop in Kihei, sandwiched between Ono Gelato and Taco Bell, has a huge selection of pie. It’s not surprising that owners Ryan and Kellee Houghtaling told me that pie is their passion. “I grew up in my parents’ pie shop, but through my college years I always thought I was going to do my own thing,” said Kellee. “My husband Ryan and I settled near Ann Arbor area. He was doing automotive repair and I was doing marketing for a truck accessories company. Our hearts just weren’t in what we were doing. We were ready for a move of some sort. We had been vacationing on Maui. Ryan proposed to me on Maui. We got married on Maui. Every time we had to leave I would just bawl. We just love this place and the energy it has.” Ryan said the idea of a pie shop kept slipping in. “We were in the process of a big change, but we weren’t completely set
developed it into our own. Nothing is the same, really. We gained about 50 pounds during that process.” The idea to drop everything and go somewhere far away to make pies is not far fetched. It’s apparently in Kellee’s blood. “My dad was working for an aerospace company and my mom was in medical sales living the corporate life in San Diego when they decided to do pies,” she said. “I was 11 when we moved everything to Traverse City, Michigan to start a pie shop called Grand Traverse Pie Co. All of a sudden I had hardcore winters with snow! They started their pie shop in 1996–it was a little shop at first but they kept pushing walls back and getting bigger. They started franchising, and now they have 16 stores.” When they first arrived on the island they were making pie at the Lokahi Pacific kitchen and selling at the swap meet. But they quickly outgrew that. People wanted to pick up pies through the week, not just Saturdays. They had people coming to their home, or meeting in parking lots.
Haupia Chocolate Pie
“We started needing our own kitchen because we were getting people who wanted pies every day,” said Ryan. “But to use the Lokahi kitchen we had to book a few days in advance. So we couldn’t just whip up pie anytime.” They found the little spot that had been a pizza place for less than a year. “We were meeting people at the Foodland parking lot to do pie deals,” Kellee said. “I was thinking this must look strange. I swear I’m only selling turnovers! I loved being at the swap meet. I hope I can get back there this fall. We started thinking, Maui is really going to embrace us.You never know ‘til you know. Then we got this place. It was a pistachio pizza place. It was ‘pistachio’–I found the can of paint. Ryan had to do a lot of the building out. The counter, the paint, all these changes were him.” The Maui pie shop has an incredible selection of pie flavors. The day I was there they had mango strawberry, raspberry peach, apple, blueberry, cherry, strawberry rhubarb,
Kellee. I would still love to have it breakfast, lunch and dinner, but I had to pump the brakes. I have to moderate my consumption.” Ryan said their team of bakers gets to do the tasting for new products now. “Our team gets to do the tasting now,” he said. “They know what we are looking for when we are testing something so they have to taste. The level of freshness, the texture and flavor they know what to look for. We also have some repeat customers we give test products to.” They also make a few flavors of quiche for savory pies. You can pick up what is on hand at the shop, or if you wanted to say, omit the onions, just order one to your specification 24 hours in advance. You can also find their pies on the menu at Da Kitchen, Andaz, Fat Daddy’s and The Market in Wailea. ■ jen@mauitime.com + @jenrusso For more foodie news, visit: mauitime.com/food-drink

Soggy Buns ‘Sausage Party’ will make you hungry… for a funnier movie ★★★★★ Rated R / 89 Min.
T
he opening scenes of Sausage Party establish a tone and look unlike any computer animated feature released this year. As the Shopwell supermarket opens and all the food sings in exaltation, two things are immediately noticeable: the animation is very good and the language is explicitly profane. By now, most know the hard-R rated, filthy and sometimes funny Sausage Party is not for children. Seth Rogen plays an amorous hot dog named Frank and Kristin Wiig is his girlfriend, a hot dog bun named Brenda. They are saving their virginity for each other and awaiting the day when a human selects them to The Great Beyond. Once the food and non-perishable items discover that humans actually eat the food they purchase, an uprising at Shopwell begins. Yes, that is the plot of Sausage Party. To be fair, I laughed a lot but there are also long segments where I grew as quiet as the audience. An explosion of in-theater laughter would be followed by
another bit that doesn’t land. To my astonishment, the screenplay was written by five writers, including Rogen, frequent collaborator Evan Goldberg and costar Jonah Hill. Like Rogen’s “Paul,” this is as an obvious, heavy-handed plea for atheism. The jabs at organized religion would have been more effective if they were funnier. The bit from Toy Story involving “The Claw” (“I have been chosen... goodbye my friends!”) actually has more to say about a religious mindset, but it was also subtle and hilarious. The “logic” of the world depicted is so flimsy, the satire doesn’t entirely register. Unlike the clear cut “rules” of Toy Story, the food characters can move in broad daylight but are only seen and heard by humans who are inebriated... I think. We see hot dogs and can goods good rolling but how could a taco walk around? Could an uprising of food against humans actually work? Why am I thinking so hard about a movie where Bill Hader provides the voice of El Guaco? While Sausage Party has been designed to push buttons and offend every possible audience demographic, there’s nothing here that hasn't already been done in South Park. In fact, the look of some of the characters,

taboo subject matter and relentless vulgarity on hand all but mirrors specific characters and episodes of the ongoing and still potent Trey Parker/Matt Stone TV series. The best jokes are throwaway bits, like Paul Rudd’s hilarious turn as the store’s unruly manager. Gags about mind-altering bath salts are stale. Likewise, the endless parade of ethnic stereotypes, gay jokes and sex puns seem like leftovers from another era and overstay their welcome. Fans of Rogen (myself included) will note how, once again, he seemingly plays himself with the ease of a movie star stoner. Wiig is as bland here as she was in Ghostbusters. Undoubtedly, the character who audiences will walk away remembering with any fondness is the talking douche. Voiced by Nick Kroll as a jocular loudmouth (who ends most sentences with “bro”), The Douche is kind of
hilarious and all too easy to hate as a villain... because he’s a douche. For real, bro. I should mention the food orgy sequence. No, this is not a spoiler. Believe me, there’s a world of difference between reading the words “food orgy” and watching an actual food orgy. Oddly enough, it’s cut in a brisk manner, as though the MPAA ratings board objected to the graphic footage. There’s also a character named “Barry,” voiced by Michael Cera, who is a hot dog with a dented head. Great. I had to go a whole summer with Dinner For Schmucks featuring Steve Carrell’s idiot named “Barry” and now, it’s the name of a wimpy, deformed wiener. Next year’s Justice League features Ezra Miller playing The Flash, whose actual name is Barry Allen. Nice to finally have a cool character with my name. Until then, enjoy Barry the Misshapen Hot Dog. ■

Horoscope
Sign Language VIRGO (AUG. 23-SEPT. 22)
Like you, I’m a major multitasker. I like surfing the Internet while watching television while playing with the dog while cooking dinner while getting dressed while tidying the room. I am always in the middle of at least five books (in three different languages). So I get it. But I also get totally dropping all those balls I’m juggling and losing my brain in a hot bath. That mindless downtime is essential; just because you need less than everyone else doesn’t mean you can go without. This week, find a way to truly lose your busy thoughts and worries, even for just a few minutes at a time, or you will simply lose it. LIBRA (SEPT. 23-OCT. 22)
A while back, I told you your cat would kill and eat you if it could, and that any love you perceived coming from it was simply self-delusion. This struck home because it’s true; if I’d told you your cat was actually a pineapple, you’d just shake your head at the preposterousness of my statement; the only reason to protest (which many of you did, rigorously) is to deny what you know to be true. Facing a difficult reality is unpleasant, yet I urge you to do so anyway; shrugging off illusions is necessary for you to move on to the next chapter. Once you do, there are pleasanter truths to embrace, even about your smelly cat. SCORPIO (OCT. 23-NOV. 21)
Your soul is not a deep, dark cavern filled with massive white spiders, blind crickets with foot-long antennae, and strange rustlings and drippings, as some people imagine. They’re projecting, because this is how the unexplored areas of their minds look. They figure your fascination with death, sex and other heavy shit would make your head much more terrifying, but they’re wrong. You see a dark corner, you rush in to explore it; consequently your interior landscape is surprisingly clean and well-lit. The next time you intimidate someone without meaning to, make a point of inviting them in; they’ll probably be surprised by how at home they feel there. SAGITTARIUS (NOV. 22-DEC. 21)
How, you wonder, do people persist with their petty little concerns when we’re all going to be dead in a few decades, more or less? The answer: Denial. Most people don’t think about this shit, not like you do. It’s not because they have answers you lack, and even if they did, it’s not likely you’d be able to understand or appreciate them. It’s also not easy grappling with nihilism all by yourself, but carry on as best you can with this hard spiritual work. It’ll yield, if not an answer, a better question soon enough. CAPRICORN (DEC. 22-JAN. 19)
Capricorns are vulnerable to logic. Cogent rational arguments can sway you. Try making that same argument to a Pisces or Cancer, however, and you’re usually screwed. You might as well be speaking Mandarin. However, the inverse is also true–they’re much more likely to accept a passionate emotional plea that actually makes no sense. You and your friend are having this problem: even though you’re both talking English, you’re actually speaking really different languages. They’re not in a position to realize this and alter their approach. You are. If you want this conflict to end, it’s up to you to end it.
PISCES (FEB. 19-MARCH 20)
I’m always impressed by your ability to simply take things at face value, without having to figure them out or make sense of them. But it’s a bewildering tendency for those who can’t help taking things apart and seeing how they work. Most people haven’t been around the block as often as you have. They don’t have the kind of spiritual experience that engenders that kind of acceptance. Humor and help them. When you’re presented with a conundrum this week that starts driving them crazy, don’t follow your impulse to just shrug it off and move on, leaving them alone with the puzzle. Roll up your sleeves and help them “solve” it.
The other night I was on a roll. I guessed everyone’s sign within two tries. Alright, I had a one-in-six chance–not so impressive. Still, I never missed. Statistics would dictate otherwise. I’m not trying to convert anyone to this subversive cult of astrology or anything, especially not you Aquarians, who practice skepticism religiously. I’m just looking for a concession from you: you don’t know everything. You can’t explain away or disprove everything, try as you might. You don’t have to believe what other people give credence to–simply please admit that you might not know better.

YOGA & MOVEMENT STUDIO
ARIES (MARCH 21-APRIL 19)
It’s rare when you get overlooked. That’s why it smarts so much when it happens. You’re so shaken and hurt when you find out your friends did something without you, especially if it’s something you might really have enjoyed. It was probably just an oversight, but even if it wasn’t, the fact that your buds wanted to do something that didn’t include you doesn’t mean they don’t adore you. Please understand, and forgive; you take up a lot of space–your friends obviously enjoy it, but maybe they need to shine once in a while, too; and it’s kind of a compliment that that’s not so easy with you around. TAURUS (APRIL 20-MAY 20)
Taureans are notorious couch potatoes. I’m not about to scold you for your TV addiction. But balance is good. You don’t want to lay on your deathbed all fat and prematurely old, with a head full of only twodimensional memories, do you? That means exercise and doing real shit, too. Go ahead and chill in front of the tube, but make sure you end up doing stuff to acquire memories you’ll want to keep for years to come, not forget as soon as the episode’s over. GEMINI (MAY 21-JUNE 20)
Last time I shaved my head it was on a whim. My hair was pretty long, too. As I was doing it, I was trying to channel you and your willingness to just go with spontaneously-made decisions without over-thinking them or second-guessing them once you’re on the path you’ve chosen. Oh sure, you do occasionally double back or over-analyze things, like everybody, but you’re generally more willing to be spontaneous than nearly everyone I know. I could use some lessons, and so could a few of your other friends. This week, dole out the wisdom, and since it’s about being spontaneous, please have fun doing it.

CANCER (JUNE 21-JULY 22)
You’re not in the zone, yet. The thing about being in the zone is you rarely notice you’re in the zone; in fact, once you notice, it’s hard to stay there–it’s like trying to not wake up once you’ve noticed you’re dreaming. The zone is characterized by total absorption in the task at hand; time passes without you even noticing, and that extra concentration yields better than usual results. You can’t force it, of course, but you can set yourself up to get the most out of it once it comes, by smoothing out all the logistics of your to-do list ahead of time–that way, when you hit the zone, you don’t have to spend time buying paper or figuring out exactly how to do something–you can just do it. LEO (JULY 23-AUG. 22)
AQUARIUS (JAN. 20-FEB. 18)
ANSWERS
QUIZ understood
I got tons of hate mail a while back (because I told the Librans an unpleasant truth (that their cats would kill and eat them if they could)). Many people lashed out rather than accept this simple, if distasteful fact, but I’m guessing I’d never have gotten this kind of reaction from you Leos. Your optimism isn’t so easily daunted. You can accept your cat’s carnivorous, wild nature without your whole reality sucking ass. You’re able to look at the bright side of having a companion whose submission can be mistaken for adoration. Consistently looking at the bright side is a skill that’ll come in handy this week. Practice it.
