administrative rules, authorizing the use of fine meshed traps or nets to take aquatic life for aquarium purposes,” stated the DLNR news release. “On Wednesday, the Hawai‘i Supreme Court ruled that aquarium collection using fine meshed traps or nets is subject to the environmental review procedures provided in the Hawai‘i Environmental Policy Act (HEPA). The issue has been remanded to the circuit court for further proceedings. In light of the ruling, until further guidance is received, DLNR has discontinued issuance of new aquarium fish permits and renewal of existing aquarium fish permits.”

HAWAII SUPREME COURT SLAPS DLNR ON COMMERCIAL AQUARIUM FISHING
With a massive data breach at the credit reporting agency Equifax possibly exposing an astonishing 143 million Americans to identity theft and fraud, U.S. Senator Brian Schatz, D–Hawaii, has reintroduced his Stop Errors in Credit Use and Reporting (which he shortens to “SECURE”) Act. The bill would help consumers by

For a while now the state’s commercial aquarium fishing trade has been looking pretty solid. Sure, earlier this year both houses of the Hawaii Legislature passed SB 1240, which would have gradually phased out new aquarium collecting permits, but Governor David Ige, following the strong recommendation from the state Department of Land and Natural Resources (DLNR), vetoed it (an action that prompted Robert “Snorkel Bob” Wintner to set up his own Super PAC REEFPAC). But then last week the Hawaii Supreme Court hit the state’s aquarium fishing trade and the DLNR with a major blow. One that puts another win in environmental law firm Earthjustice’s corner. “Today, the Hawai‘i Supreme Court sided with citizens and conservation groups in their fight to protect the State’s coral reefs from the aquarium industry’s unlimited collection and sale of reef fish and other wildlife,” stated a Sept. 6 Earthjustice news release. “In 2012, plaintiffs Rene Umberger, Mike Nakachi, Ka‘imi Kaupiko, Willie Kaupiko, Conservation Council for Hawai‘i, The Humane Society of the United States and the Center for Biological Diversity–all represented by Earthjustice–sued the State Department of Land and Natural Resources (DLNR) for failing to comply with Hawai‘i’s Environmental Policy Act (HEPA) and undertake environmental review before issuing dozens of aquarium collection permits annually. In its unanimous decision, the Supreme Court agreed with plaintiffs, reversed the decisions of the Circuit Court and Intermediate Court of Appeals denying plaintiffs’ claims, and ordered the Circuit Court to grant an injunction prohibiting commercial aquarium collection pending compliance with the law.” According to Earthjustice, the DLNR has long been too friendly with the commercial aquarium industry. In fact, the law firm says the DLNR has argued that HEPA didn’t apply
to the industry because anyone who applies and pays the standard fee can get a permit. “The justices unanimously agree DLNR’s practice of blindly doling out aquarium collection permits without studying environmental impacts is illegal,” said Earthjustice attorney Summer Kupau-Odo in the Sept. 6 news release. “The law demands and Hawai‘i’s people have every right to expect more from the agency charged with conserving our natural resources.” Earthjustice says the aquarium industry has long harmed Hawaii’s reefs and native Hawaiian fishing practices. “The fish we’ve traditionally caught for generations to feed our families are disappearing,” said plaintiff Kaimi Kaupiko in the Earthjustice news release. “Collectors take fish we eat–like paku‘iku‘i (Achilles tang) and kole–and by taking yellow tang, they disrupt the ecosystem so that other fish, like uhu, won’t come in. We mahalo the Hawai‘i Supreme Court for putting the brakes on commercial collection before there’s no fish left for future generations.” For it’s part, officials with the DLNR issued a terse statement on Sept. 7 in response to the ruling, in which they basically say that they had no clue the thing they’ve been doing forever is actually illegal. Here it is, in full: “The Department of Land and Natural Resources (DLNR) has long issued annual commercial and recreational aquarium fish permits, pursuant to HRS §188-31 and
tomers is potentially devastating,” Schatz wrote in a Sept. 11 letter to Equifax CEO Richard Smith. “As a result of identity theft and fraud, Equifax customers now face the risk of having debt accrued in their name. They could suffer long-lasting damage to their credit, and as a result, they could be denied loans, mortgages, employment, or even rental housing. Those approved for loans and mortgages may be charged higher interest rates. To resolve the damage done by this data breach, they will likely spend months, if not years, trying to resolve resulting errors and problems with their financial records.” Schatz says his bill is supported by U.S. Senators Elizabeth Warren, D-MA, Claire McCaskill, D-MO, Richard Blumenthal, D-CN, Bernie Sanders, I-VT, and Jeff Merkley, D-OR. Schatz first introduced his SECURE Act back in 2014, but it quickly died in committee. “Missouri consumers should be able to have quick, secure access to reports about their own credit,” said Senator McCaskill in a Sept. 11 news release from Schatz’s office. “We’re seeing companies take advan-

In light of last week’s Equifax hack, it’s more important than ever we ensure better, safer access to these reports, so that folks can get an accurate picture of their financial health, and hold these companies accountable when there are mistakes.”

Big Brothers Big Sisters of Maui is embarking on a campaign to enroll 25 MEN-tors to be matched with Little Brothers currently on their waiting list. The need for Big Brothers is greater than ever, and the agency is looking
for adult males who are interested in becoming a role model to a keiki in-need. Big Brothers Big Sisters of Maui matches children in one-to-one friendships with trained volunteer mentors based on interests, geographic locations, and personal preferences. The Bigs and Littles enjoy activities in the community twice per month for a few hours each time. Mentors take the time to listen, encourage, and model positive behavior through everyday activities including playing sports, watching movies, enjoying the outdoors, or sharing a meal. It only takes a little bit of time to make a big difference, so if you know someone who may be interested in inspiring youth to reach their fullest potential just by spending time together, email Ccabebe@bbbshawaii.org. “Since 1963, Big Brothers Big Sisters Hawaiæi has helped children facing adversity (Littles) to reach their fullest potential by matching them with caring volunteers (Bigs) in a one-to-one mentoring friendship,” states BBS Hawaii promotional materials. “Every ‘match’ is supported by highly-skilled staff members (Case Managers) each step of the way–assessing, coaching, advising, and guiding. This is to ensure a fun, safe, meaningful, and long-term friendship. Big Brothers Big Sisters Hawai‘i is a statewide organization that serves over 1,400 keiki and mentors each year as Big Brothers Big Sisters of Hawai‘i, Big Brothers Big Sisters of Honolulu, Big Brothers Big Sisters of Kaua‘i, and Big Brothers Big Sisters of Maui.” To learn more and help Big Brothers Big Sisters of Maui reach their goal of 25 MENtors, visit Bbbshawaii.org/volunteer. The MEN-tors campaign will run Sept. 11-30. ■

The People’s Liberation Army Daily, a Chinese state-run military newspaper, has declared on its WeChat account that fewer Chinese youth are passing fitness tests to join the army because they are too fat and masturbate too much, resulting in abnormally large testicular veins. The web article cited one town’s statistics, where 56.9 percent of candidates were rejected for failing to meet physical requirements. China’s military quickly beat down the article’s assertion, saying: “The quality of our recruits is guaranteed, and the headwaters of our military will flow long and strong.”

Police in Osnabruck, Germany, stopped a vehicle on Aug. 19 and found an unusual trove of drugs inside: Plastic bags filled with about 5,000 ecstasy pills, with a street value of about $46,000–all in the shape of Donald Trump’s head. The orange tablets depicted Trump’s signature sweep of hair and his rosebud mouth. An unnamed 51-year-old man and his son, 17, also had a large sum of cash and were taken into custody.

CULTURAL DIVERSITY The Japanese funeral industry demonstrated its forward thinking on Aug. 23 when practitioners gathered for the Life Ending Industry Expo in Tokyo. Among the displays was a humanoid robot named Pepper who can conduct a Buddhist funeral, complete with chanting and tapping a drum. Pepper is a collaboration between SoftBank and Nissei Eco Co., which wrote the chanting software. Michio Inamura, Nissei’s executive adviser, said the robot could step in when priests are not available.
DEATH CONTEST Also at the Life Ending Industry Expo in Tokyo, four undertakers competed on stage as funeral music played to see who could best display the ancient skills of ritually dressing the dead. The Shinto religion in Japan believes that the dead are impure just after death and that dressing the body purifies the spirit. The contestants dressed live human volunteers and were observed by three judges. Rino Terai, who won the contest, said, “I practiced every day to prepare for this competition.”
INEXPLICABLE An Arkansas Highway Patrol officer spotted “an unusual sight” on Aug. 23 on I-30: a black Hummer with a casket strapped to the top of it. When the officer pulled over Kevin M. Cholousky, 39, of Van Buren, Arkansas, he took off and led police on a chase along

LATEST RELIGIOUS MESSAGES Sonogram photos are notoriously difficult to decipher, but one couple in Franklin County, Pennsylvania, are sure theirs shows a man watching over their unborn daughter. “When they gave it to us ... Umm, to me, it’s Jesus. And it looks like Jesus,” said mom Alicia Zeek. She and father Zac Smith have two older children, both born with birth defects, and the image is putting them at ease about their third child. “Once... we looked at the picture, I was like– look, babe, we have nothing to worry about,” Smith said.
LEAST COMPETENT CRIMINALS Jocsan Feliciano Rosado, 22, was driving a stolen car on Monday, Aug. 21, when he stopped off at a Harbor Freight store in Kissimmee, Florida, to pick up a welder’s helmet for viewing the solar eclipse. As he dawdled next to the vehicle, looking up at the sun with his helmet on, members of the Orange County Sheriff’s Office Auto Theft Unit interrupted his reverie and arrested him.
BRIGHT IDEAS Tuffy Tuffington, 45, of San Francisco was walking his dogs, Bob and Chuck, when he came up with a way to respond non-violently to a right-wing rally at Crissy Field on Aug. 26. So he launched a Facebook page asking San Franciscans to bring dog poop to spread in the park in advance of the event. “It seemed like a little bit of civil disobedience where we didn’t have to engage with them face to face,” Tuffington said. Contributors to the project also planned to show up on Aug. 27 to “clean up the mess and hug each other.”
YOUR COLD, COLD HEART A police officer on maternity leave was ticketed and fined 110 pounds after she pulled her car into a bus stop in West London to help her newborn baby, who was choking in the back seat. Rebecca Moore, 31, of Aylesbury, said her son, Riley, was “going a deep shade of red in the face, his eyes were bulging and watering, and he was trying to cough but was struggling.” Moore appealed the fine, but the Harrow Council rejected her appeal, as did the London Tribunals. “The law about stopping in bus stops is exactly the same everywhere in London,” a council spokeswoman said. “You can’t do it.” ■

alvin Kuamo‘o is everywhere. High school volleyball matches, basketball games and swim meets. Hawaiian music concerts at the Baldwin Home and Picnic with Poki shows at Ka‘ahumanu Church. He also films the island’s Friday town parties as well as various community events. His KanakaCam channel on YouTube currently boasts more than 100 videos shot over the last year (you can also see them on Akaku, where he’s a member of the board of directors). Each opens the same, with an extreme close-up of his eyes. Currently living in Kahakuloa, Kuamo‘o is a seemingly tireless citizen journalist. As soon as I heard of him I became fascinated with him, with his motivation to travel so much around the island, film community

events and then post the footage online for all to see (and without compensation for himself). Using a mutual friend as an intermediary, I asked him for an interview, which he immediately declined. But a few days later, our mutual friend said Kuamo‘o changed his mind. On Aug. 22, he dropped by the MauiTime office to talk story. As you’ll see, Kuamo‘o did most of the talking. And while he ultimately answered my question about why he films so many events, he could only do so by talking about his experiences as an infantry soldier with the 75th Ranger Regiment during the Vietnam War. “I remember Calvin well,” said Rick Grimes, who served with Kuamo‘o and maintains an online archive of photos of
the unit’s Vietnam experiences. “He was well-liked and the other Rangers knew they could depend on him in the most difficult situations. A true American hero, a great asset to the 75th Rangers and I was proud to serve with him.”
Q: A:
Thanks so much for stopping by. Let’s start by you telling me when you were last filming something.
I filmed yesterday–a planting ceremony of koa trees. I got there Friday night, and left Saturday evening. I figured they had a lot of camera personnel, so I wanted to get there before everyone else. I knew they would end at six, which made it easy to slide in and say
hello. I wanted to film the property I was on. So I had koa trees dancing around the property. I carried it to different locations– I was trying to enhance our project there.
Q: A:
I saw you have a lot of videos on YouTube. And you’re on Akaku as well?
I’ve been having a hard time putting things on YouTube. I try not to get personal. I download it, learn how to edit, turn it in. Since I’m a volunteer [at Akaku], I fall into different categories. At one point, I turned in 21 projects in one month. They tell me they only have three hours. That’s just nine projects out of 21.
Q: A:
What are your goals?
I’ve been trying to be better than the next person with a camera out there. OC16 has exclusive rights to all MIL sports. I do basketball, water polo, judo, swim meets. I do Hawaiian music series–the one in Wailuku and the one in Lahaina. But the other month I couldn’t participate because there was an Akaku board meeting–they always put those meetings on my game days!
Q: A:
How’d you get started in filming?
When I was a young man, I saw our neighbor doing an 8mm recording. I was really excited about that. He captured my family. In those days, we couldn’t afford cameras. There weren’t too many Hawaiians with cameras then. My first camera was a Kodiak. I had to send in the film to get it processed–that was the only hangup. That was in 1966. I was living in Hawaii. Then I went to Alaska. I went to Alaska on a United States Geological Survey ship. It was the last steamship in the American fleet. I had a 4F [draft status] in high school, but when I went on the ship I got 1C. From then on I knew I could get into the military.
Q: A: Q: A:
So you joined? I entered the military on Jan. 6, 1969, from Pennsylvania. I joined the army. I wanted to get there as soon as possible. Get where?
Over to Vietnam. I knew at some point that the war was going to stop. I heard the news all the way up to Alaska. When they opened up the draft, a lot of folks from Hawaii got drafted. When I was in Seattle in 1968, my classmate said he was going to Vietnam. When I went to Alaska, my cousin also left for Vietnam. Everyone was leaving except for me. So when I got to Pennsylvania, that’s when I signed up.
Q: A:
Were you afraid of being left out?
It was not about being left out. It was about doing what’s right. An undeclared war was a great opportunity for me to learn. I’d been hearing a lot of news about it. I wanted to be there to do a part. I was 21 when I joined. I had just made 21. When I met my recruiting officer, he asked me if I wanted to go to a school. I said I wanted to learn how to jump out of airplanes. He said they’d ask that in the first week of basic training. Basic training was over in South Carolina–Fort Jackson. My AIT (advanced infantry training) was in Georgia–Camp Crockett. And jump school was Fort Benning. I met my cousin in the cafeteria at Fort Benning. He was getting ready to go to Vietnam, and I was going to jump school. It was a blessing for me. I said as soon as I finish, I’ll meet you there. He went to the First Cav Division as a mechanic, and came out a chief warrant officer.
Q: A:
What happened when you finally finished with the schools?
Fourth of July marked the ending of classes. I took a plane home. I met my parents. When it came time to go, I let them take me to Hickam airbase. But my mom didn’t know I was leaving. So before we left, I went into the bathroom and changed my clothes. I thought she was going to have a heart attack. She ran and grabbed a pocket Bible for me. My mom, she was so funny. I waited about 20 minutes at Hickam for my flight. I was the last to board. At the first drop-off, everybody left but one other guy and me. Timothy Russell in the back and me in the front. We had an opportunity to meet the crewmembers. In Vietnam, we first went to our transit position. All soldiers coming in from stateside–you wait for your orders to come down. Timothy Russell and I are airborne, so we’re waiting. Timothy had just gotten married 17 days ago. That’s how we developed a relationship.
Q: A:
So you’ve finally arrived in Vietnam. What happened then?
Across the street were the “legs”– non-airborne soldiers. We were told not to cross the road, but I noticed that they had a swimming pool. At night, I asked Timothy if he wanted to cross. He complained about how illegal it was. But they have movies, a pool, I told him. We all look alike, I said. So we went. We watched the movie. Then came a red alert. But we couldn’t cross the road to get back–they’d shoot us. So I said, “let’s go in the pool.” The pool looked to be in good shape. We took off our clothes and got in the water, but he’s mad at me because we left our station. We were just waiting until the signal changed. When it changed, we got dressed and went to our foxhole. But the sergeant was waiting for us, and told us to report for extra duty.
Q: A:
Extra duty?
He made us burn shit. Boy, was I pissed. Then at lunch, a command sergeant major came in, looking for recruits. He was with the 75th Rangers, and asked for volunteers because they just lost a team. So I raised my arm. I told Timothy, raise your arm. No, he said, they just lost a team! So I knocked his hand up, and that’s how he volunteered. There were no more details! Now, we could really relax. When we were finally sent to a unit, we were attached to the 173 airborne brigade. When we finally got there, our orders were that you couldn’t shoot unless shot at. It was called “pacification.” Then the lieutenant tried to split up Tim and I. “No, no, no,” I said. “Don’t split us up–we’re just waiting for our orders.” So he sent us to the line. There, I was very uncomfortable in a position where I’m the foreigner and they’re fighting for their country. It’s an undeclared war and they’re in rice paddies. A line company isn’t where we wanted to be because they make too much noise.
Q: A:
And you still haven’t even gotten to your actual unit? Finally our orders came and we were sent to Ahn Ke, where we finally went to our unit: Charlie Company, 75th
Rangers. It was way down south. We worked in small groups of five to six. We went to Pleiku, even went to Da Lat. Da Lat is lovely. It’s a French resort. Everybody there speaks French. Even had gas stations, restaurants, spas and an outdoor pond where you could take out peddle boats. That was the first time I had a shishkebab. I was very impressed. As we’re walking around town, there’s an odor that’s very distinct. I told my team about it. To investigate it, I had to drop my weapon and go in a storm drain. It was quite an amazing place. We were underneath the buildings now. They had another city beneath the city. But what was really neat is that we met the enemy there. But we came in peace–we wanted to know what was going on. They had weapons, we had weapons. We were new at this. We had to stay focused. As long as we didn’t fire, they wouldn’t. There was a lot of guessing on our part. There were a lot of high risks to take. But the job we got was also high risk. Fighting in a country where we were the aggressor. But since it’s my country, I gotta stand proud. When I came back, they called me a baby killer, a draft dodger.
Q: A: Q: A:
Draft dodger?
I had long hair. I only had one haircut, when I went in [the army]. The lieutenant called us the Hair Gang. We had long hair, and not-shiny boots. Getting back to your time in the 75th. What were you doing, basically?
Our mission was four days out, three days in. We got dropped off in country, and had to stay there for four days. Then we came back in. The medic was Johnny. He was Chinese. He was picking up a rifle from a dead enemy as a souvenir. As he did, the hand on the rifle slapped him. It was so hilarious. No we know why we don’t go looking for souvenirs. But that was a nice rifle the enemy had! We took a lot of footage. Two of the team members wrote a book. One had everyone’s name in it. They had a camera then, a Nikon. Everybody used it. We took turns. They’d wait for the enemy to come down the trail, then they’d jump up and snap a picture. Next, they’d draw [their weapon].You snap the picture, then you draw.
Q:
Let me make sure I understand this. You were lying in ambush, and when an enemy soldier would come down the trail, one of you would jump up, snap a photo of the enemy at close range, and then draw a weapon and shoot?
A: Q: A:
High risk. But to be in that mode, and to take a camera, was the greatest feeling. The hunt was over now. Damn. Let’s talk about when you finally got out.
Since I left the military, I never looked back. Tim left a few months before me. Everybody did. When I left, I saw family, said hello to my grandparents, found my cousin. They told me my cousin was at my brother’s house. I was just as goofy as before I left. I ran
into Johnny and our team leader, Jim. They were going to hitchhike to Oklahoma from California. Jim and his friend left, and Johnny and I were partners. Johnny was raised in New Mexico, so he wanted to see his family first. We met everybody over there, and then five days later, we went to Sulfur, Oklahoma, and that’s where I got busted.
Q: A:
What happened?
I got called a traitor, a deserter. They had nothing else to do. The town folks had the attitude of guys who wear those choo-choo train hats. The whole place smells like sulfur, and they wanted me to taste the water! I got tossed in jail.
Q: A:
For what?
I was in the cabin, and Johnny and Jim went to town. They came back with the police hot on their tail. I said don’t stop, because I had to eat a pound and a half of marijuana. Then we were pulled over. The police searched the car, but couldn’t find anything because I ate all the marijuana. But the judge said my signature was readable. If I was in the condition that the sheriff had stated, I wouldn’t be that clear. Still, I went to jail. After 120 days I got turned over to the military. They sent me to Fort Bragg, and then shipped me off to the 54th Military Police Company.
Q: A:
What happened there?
What happened was that I taught them compassion. A lot of those folks there had just left Vietnam. They had real people from the war, and they didn’t know how to deal. They didn’t have any compassion. But I got tired of bumping heads, and asked the sergeant major if I could have a break. I was just an E4–there wasn’t too much an E4 could do, because everyone else was higher ranked, more professional. You can only teach them so much, then you have to learn. Their concept was to split the rangers apart, so that we don’t come together to have a chit-chat. It’s a very good strategy if you don’t want to learn anything. I was a mess. How do I manage it? I thought. Coming home, my parents, grandparents, aunts, uncles, cousins all contributed to my well-being. But it was a struggle. I still have a lot of flash memories when I’m walking about. Sometimes, when I’m driving, I have to grab myself and pull over to the side. I’m still dealing with it.
Q: A:
Which, I’m guessing, explains why you film so many community events…
Filming events helps me focus on the here and now. It’s very easy to drift into the past. The mountains look similar, some of the people look similar… But being in the community helps me focus on the here and now. I’m happy Akaku adopted me, for better or worse. Learning how to edit, use cameras, all helped out. ■ editor@mauitime.com + @apignataro For more news articles, visit: mauitime.com/news

tako dish. Sato’s take on fried tako is so rich and interesting. They chop tako, then deep fry it until it’s crispy on the outside and tender on the inside. Then it’s tossed with aioli and garnished with green onion. Most of the dishes are familiar, but Sato likes to put on his own twist, both in the taste and plating. A lot of his dishes are visually impactive as well as delicious. We were crazy about the Fruity Pebbles macaroon ice cream sandwich for dessert. He also makes a mean ramen. “People will come in just for the ramen,” says Sato. “Before, people were complaining that Maui doesn’t have a lot of ramen, or no good ramen spots. So I worked on what my ultimate ramen would be. I make tonkotsu ramen, a pork broth, a bit on the heavier side. I serve it with black garlic and pork belly. I use sun noodle but it is not your average sun noodle. It is a tonkotsu ramen noodle which is made for this type of broth. If you use a regular noodle it will just break up in the broth. The tonkotsu noodle is made to hold

ome places you go are just an instant fit. I think everyone has that feeling when they visit Umi Sushi. It’s one of Wailuku’s newest sushi hot spots. Owner/chef Jayse Sato says his journey to opening this spot wasn’t the usual trajectory. “We opened March 1st,” says Sato. “We are open from Wednesdays through Saturdays and we also do BYOB here. It’s been good. It’s been getting busy. Friday and Saturday are definitely our busiest days.” Umi Sushi is only open four out of seven days of the week, and they share a kitchen with the Soup to Nuts catering company, but that hasn’t stopped their fan base. They don’t take reservations, and often get a line going outside. I visited on a Wednesday evening, and it was still busy enough to have a short wait. Yet Sato didn’t grow up thinking he would be a chef. “I had no idea what I wanted to do,” he
says. “I was even going to nursing school at one point. That is what my mom wanted me to do.” He got his first break at Amasia, with chef and restaurant entrepreneur Alan Wong. “When I got hired at Amasia I had no experience,” says Sato. “They took a chance on me. Alan Wong decided to take a shot. He had hired a Michelin Star sushi chef and that is who I worked with, and he taught me everything I know. He was sort of an outcast when it came to sushi. That is kind of what we are here, what we represent. We are two young guys making sushi–we have a young approach when it comes to our sushi. We have turned tradition on its head. We have a pork belly roll (the lechon roll). We call it sushi, others might not consider this sushi. We like to be creative, take local flavors and make a dish, but it might be something you haven’t seen before.” Umi Sushi’s menu and cuisine is youthful, a reflection of Sato’s style and aesthetic, that he refined for the next few years after his experience with Amasia. “I had another business, called Rua,” says Sato. “I had a partner. I basically ran
the sushi, he did all the hot food. We changed the menu a lot. We did pop-ups. We did that for a year. The reason why we did that was we started up as a catering company. But catering was really tough. Too inconsistent. Our food was good for a restaurant, but not as much for catering. It’s hard to do fancy plate-ups, but that has been my passion. After Amasia, I worked at Nuka. Then we did the catering, that changed into the pop-ups. When my partner at Rua wanted out, I knew I wasn’t done yet, I really loved doing this. So I kept looking for the right place and put together my business plan. At the time I didn’t know I was going to do sushi.” Sato’s experience with his pop-up concept helped him create some of his most popular dishes. “When I did the pop-up we changed the menu every month,” says Sato. “I did that so we could try many things. We did not know what was going to be popular.
The Kochimon Roll
When I was at Nuka, the soy-wrapped roll was a top seller, but when you make that here in Wailuku, it doesn’t sell. I kinda gotta get used to the clientele. When you do the pop-up thing we would do six to 10 rolls in a month and then change it. After a year, I had a better understanding of what the best-sellers were. That is how we formulated some of the menu items.” The Kochimon roll, a shrimp tempura roll with crab, unagi and masago, comes adorned with edible flowers and glowing lights. The soft shell crab bao bun has a crispy whole crab peeking out of a soft steamed bun, drizzled with aioli and flowers, too. I couldn’t resist ordering the salmon ochazuke, because I don’t find it on menus very often. It’s a bowl of rice with salmon and seaweed and a brothy housemade tea poured over the whole thing. It was spectacular. Umi Sushi has a menu and a specials board on the wall. There I found the fried
up and stay dense even with this broth.” Once you start ordering, it’s easy to get hooked. You want to see the other dishes you haven’t tried yet. It’s a fun environment, too. They don’t have a liquor license, but encourage BYOB. Sato says because of the shared kitchen situation, the Liquor Commission says they won’t be able to qualify for one. It’s disappointing for him but he’s focusing on the food for now. “I cater to the locals in Wailuku, the price point is reasonable, but our concept is to give our customers fine dining food but at regular prices,” says Sato. “We have a family vibe here though. My mom is the cashier, my dad is washing dishes. All of us are classmates from Baldwin class of 2006. We are a young crew.” ■ jen@mauitime.com + @jenrusso For more foodie news, visit: mauitime.com/food-drink

MAUIWINE’S NEW LIQUOR LICENSE MEANS BIG CHANGES AT THE WINERY

for a $10 fee,” says Hegele. “Obviously, we reimburse people who purchase six or more bottles and people can split the tastings if they’re not interested in doing the full tasting. We get a lot of couples who come in and are just starting off their morning and heading to Hana, and they just split a tasting. On the other end of things, there are people coming in and tasting five wines and then doing glass pours on the porch and hanging out.” The winery is excited to invite people to hang out longer, enjoy the views, take tours and have a complete experience around drinking their wine at the King’s Cottage. They’ve also added some light fare to the menu, and you can also order mimosas, too. “We’re doing a bunch of fun little cheese and lavosh and charcuterie plates,” says Hegele. “People are spending a lot more time at the tasting room, sitting on the porch, buying a glass of Lokelani and enjoying the environment, which is great. We want people to stay as long as they can. It’s one of those environments where you walk into the winery grounds and for most people, it’s ‘this is a cool place!’ It has a relaxed tone. People want to spend time here. We just needed to give them a reason and things to do. So with more elaborate tastings, offering food, and we have games in the yard. People can hang out.” For those people who want to really get into the wine, they can get into one of their Old Jail Tastings sessions that really go into the production and history of the winery, as well as tasting the special releases. The wines you get in the Old Jail will be different than the wines in the King’s Cottage. “We still have an elevated tasting experience in the Old Jail which is going to be where we are going to do wines that we make 20 cases of or special releases,” says Hegele. “Like right now we’re pulling the 2014 Syrah and doing a library release of our 2012 that we are only offering in the jail. That’s one side of it. We’re offering those tastings in the jail twice a day. When
our harvest,” says Hegele. “We are doing the Chenin blanc sparkling which is really exciting. In 2014 we made a sparkling wine where we harvested the fruit early to make 100 cases and aged it for 30 months. We did that as an experiment, to see what’s going on in the vineyard and see what we can do. We want to make a broader range of wines in a smaller lot to experiment and give people things that are different. The Chenin blanc sparkling was an experiment that was really well received so we did it again this year. That was the first thing we harvested. We brought that in early June. We want it to be really high acid and low sugar for sparkling.” The ups and downs of wine harvesting are just a drop in the bucket for MauiWine. Their philosophy is to roll with the punches to create these unique annual small batch wines. They are especially excited about this year’s crop. “I think the shining star this year is the viognier, in big part because it was a really low crop last year,” says Hegele. “If you don’t know too much about grape growing you would assume rain is great, it’s food for the plants. Rain at the wrong time of year can be like poison falling from the sky. There is disease pressure from rotting. We are not super humid up here but we are not dry, we are not California dry. If we get rain, we’re going to see some rot and lose some tonnage. This year it has not. We’re not getting rain, it’s dusty up here, and perfect. We’re not losing any tonnage to rot for the first time in three years. That’s the beauty of farming–we have different challenges, and that’s the great part about wine. You get to have challenging years and the wines are a reflection of that. Sometimes you have really good years, and this is looking like a good year.” ■ jen@mauitime.com + @jenrusso For more foodie news, visit: mauitime.com/food-drink

aui is home to one of the oldest and most exclusive vineyards in the state. What started off as Tedeschi Vineyards in Ulupalakua has evolved into MauiWine. The company has expanded its wine selection in the last decade from its signature pineapple wines to the Rose Ranch collection and onto Estate, Library and Specialty releases. Now the winery has obtained a new license to grow their wine selection at the King’s Cottage tasting room for the first time in years. Joe Hegele, Director of Sales and Marketing, says the reception has been incredible from their guests. “The new license is awesome,” says Hegele. “We have been working on it for three years, no joke. It’s the first of its kind in the state. It’s one that was created specifically for the craft industry. Garrett Marrero had a lot to do with it. It’s legislation that supported the craft beverage industry and the growth in it. It’s a huge license! It allows us to do a lot. We are not taking advantage of the whole entirety of its capabilities.” The problem they ran into with their old license was that while the sampling was free, you could only get about three tastes, then that was it. For folks who’d visited nearly any other winery on the planet, this kind of manini tasting was unprecedented–and unwelcome. “When people go wine tasting now, there are expectations,” says Hegele. “When they come in, they’re like, Hey, we want to pay for tasting and it has to be substantial. If we want to buy a glass or a bottle afterwards and enjoy it here on property, that’s what we have become accustomed to in this industry. For us, on our old license, it was extremely limited. We were basically offering sampling before. Now we’re offering tastings.” The new license opens up a whole new world at MauiWine. “We’re doing a very normal five different wines at one and a half ounce pours
we made only 10 cases of viognier one year, that needs to be explained. We need to talk about what happened that year and this is what this wine is like, and this is what we did to it, so that people can get a bigger appreciation. For $25, you will taste wines that we have made very little of, and you get to go in the Old Jail.” For the casual tasting that includes several estate wines, there’s a new expanded porch area built with seating built on the King’s Cottage. “The majority of the new offerings are in the King’s Cottage tasting room,” says Hegele. “We redid the history room and added a bar in there, in addition to the big mango bar in the main tasting room. We built out the lanai and added some square footage to it and added some furniture out there. Put some shade on it and tried to make that a comfortable environment for people to stay. We want people to hang out on the porch. We are adding live music. We are going to make that a place where people want to sit down and eat some cheese and wine.” With the small batch wines that MauiWine produces, the menu changes often. “Some things don’t change,” says Hegele. “We have our three pineapple wines. Then we also have our Rose Ranch collection: the Lokelani, Mele, Kula–the new white wine– and then the Lehua is the raspberry dessert wine. Those four wines are blends and we have all of those to taste and by the glass right now. But the big changes in the menu will be in our Estate wines, where we are about to roll from the 2015 Malbec to the 2016. We just moved from the 2015 Chenin to the 2016. Those are changing right now and the jail is also really changing constantly. We print a lot of menus. It’s good–it keeps everyone on their toes.” This year’s harvest is just about completed as well. The exciting news is their Chenin blanc sparkling wine is coming back, and the viognier yield was good, too. “We are 75 percent of the way through

Stephen King's 'It' The only thing we have to fear is… ahhh!! Scary Clowns!!! ★★★★★ Rated R / 135 Min.
F
ollowing decades of being remembered as a massive paperback staple and a well-remembered televised mini-series, Stephen King’s It has finally been made into a proper, R-rated motion picture. Although the setting is now the 1980’s and portions of the novel dealing with the child protagonists as adults has been tossed, this adaptation is faithful, intelligent and lean. In the town of Derry, Maine, children have gone missing. A cluster of kids with a troubled upbringing form “The Loser’s Club” to comfort one another and battle an entity that sometimes materializes itself as “Pennywise the Clown.” The “it” the children battle can transform itself into anything they fear and devours them when they’re at the peak of terror. Like Mr. Dark in Ray Bradbury’s Something Wicked This Way Comes (who also resides in a carnival-like setting), Pennywise is a standin for every adult-induced abuse, betrayal and hypocrisy these kids encounter. The Loser’s Club includes Bill (Jaeden Lieberher of St. Vincent and Midnight Special), whose little
brother has gone missing, quipster Richie (Finn Wolfhard of Stranger Things) and Beverly (played by Sophia Mills), who faces a home life is nightmarish as her male friends. Andy Muschietti’s enthralling adaptation of It plays like a winning cross between The Goonies and A Nightmare on Elm Street, owing a great deal to the latter. There’s even a smart reference to A Nightmare on Elm Street 5: The Dream Child, which also dealt with a young girl struggling with personal demons in the form of a boogeyman. Unlike the nostalgia-soaked Stranger Things and Super 8, It keeps the ‘80s artifacts mostly in the background (except for a priceless running gag involving a pop group). I read It when I was in middle school and preparing for the Tim Curry-led TV adaptation. The durable but clunky 1990 TV miniseries may be dated but, at three hours and 12 minutes, did a better job at telling this story. Yet I greatly prefer this version. This portrait of outsider kids, forming profound friendships and finding the inner strength to face a world of grown-up monsters, hits hard because of its relatability. As a compassionate depiction of kids overcoming school bullies, learning to be empathetic and open-minded about those
If you're so scary and evil, how come you're not in Congress?
who are different from them, It has so much more to offer than just the “scary stuff.” While the recent Annabelle: Creation may be the scarier movie, It is a more important work. Watching these kids face the literal and figurative monsters in their lives makes for a tougher, more visceral and meaningful work than either Stranger Things or The Monster Squad. Because the real things plaguing these kids are so plausible and horrific, the stakes seem higher and their collective bravery so much more rewarding. I really loved these kids and cared about what happened to them. Unlike most horror film villains, Pennywise (played by Bill Skarsgard in a terrific, unhinged performance) is loathsome and impossible to root for. A touch that truly unsettled me: the way Pennywise salivates when he’s terrorizing his prey.
A few of the young performers overact on occasion, but a bigger problem is that some of the characterizations are too slim. The 135-minute running time hits one narrative highlight after another but somewhat shortchanges the quieter character moments. Argentine filmmaker Muschietti made his directorial debut with the Jessica Chastainled Mama in 2013 (based on his effective 2008 short film of the same name, which can be found on YouTube). While Mama has some brilliant moments, the ending is a tonal disaster. With It, he made the wise choice to split King’s 1,138-page into two parts, with The Loser’s Club as children and 40-year old adults getting their own films. As a stand-alone achievement, It: Chapter One is a near-masterpiece, full of soon-to-be-iconic moments. Muschietti has shaped a frightening, funny and genuinely moving film. ■

Horoscope
Sign Language VIRGO (AUG. 23-SEPT. 22)
Take your own advice, damn it! You’re so intelligent and chock-full of wise counsel for your friends, but when it comes to yourself, you sometimes make astonishingly poor choices. I think the problem is you’re reluctant or unable to take the necessary step back from your own situation and view it with the dispassionate eye and perspective that’s necessary to see the big picture. Personally, I think you can separate yourself from the situation sufficiently to give yourself excellent advice, but if you really think you can’t–ask someone to do it for you. Choose the smartest person you know regarding this type of situation and ask them what you should do. Then, by all means, regardless of your mixed emotions, do what they advise. LIBRA (SEPT. 23-OCT. 22)
When a plant thinks it might die, it bursts into bloom. It uses up most or all of its remaining energy to produce flowers, which will in turn produce seeds. I understand that this is a side effect of what it’s actually trying to accomplish–the survival of its species–but I love that the floral response to stress creates beauty. Can you do the same? Try it. The more stressed out you get, the harder you should try to generate some original beauty to share with the world. I reckon that will make you feel a whole lot better; even if it doesn’t, it sure will make life nicer for the rest of us. SCORPIO (OCT. 23-NOV. 21)
I wish I could tie you up and spank you–and not to be kinky! I’m pissed because you know that one of the choices you’re making is really wrong for you. It’s not even that pleasurable, and yet you’re making it nevertheless! Is it a desire for self-destruction? What’s it going to take to make you quit abusing yourself with your own actions? The world is harsh enough without you adding to your own burdens. Can you stop yourself, please? And if you can’t, will you please find someone who will?
PISCES (FEB. 19-MARCH 20)
For someone who’s so indecisive, you sure can be impatient. I’ve known Libras who suddenly decide they want a long-term lover and get frustrated when one doesn’t magically appear. Of course, part of the problem when you’re impatient is you’re not actually doing that much differently than you did before, so the openings through which change could come are few and far between. You want something new in your life, you’ve got to throw open a few big barn doors, put down some bait and see what comes waltzing in. Mostly you’re going to get the neighborhood riff-raff and want to shoo it away with a broom, but if you’re alert and open to possibilities you might just get what you’re wishing for–much sooner than you would, otherwise.

ARIES (MARCH 21-APRIL 19)
It’s just in line with your endlessly complex and selfcontradicting nature that you are usually the most beloved among your friends, and also the one who causes the most aggravation, confusion, or frustration. We can’t help but like you; you’re so sweet and cuddly. But that’s not a blank check to just ride on your cuteness. You frustrate us because you’re the most talented person we know, and you’re doing the least with your talents. Exercise your brilliance or it’ll get soft and flabby. This week, if you can’t summon the motivation to do it for your own benefit, do it for us. TAURUS (APRIL 20-MAY 20)
I don’t know if it’s true, but many of my massage therapist friends talk about how people “store” emotions in different parts of their body, creating isolated tension or even long-term problems. I reckon it’s an idea worth exploring, especially because you Bulls are notorious for holding certain emotions back and not expressing them. Where did they go? This week, turn hunter. Track down your lost and repressed feelings wherever they might be hiding–not to shoot down and kill them, but to capture and release them somewhere they’re free to roam without hurting anyone (especially you).
VOTED BEST
SAGITTARIUS (NOV. 22-DEC. 21)
Tastes change. Yours certainly do. Remember that song you were so gung ho about three years ago? You’re cringing in embarrassment about that now. That bore you dated for so long is someone your friends are forbidden to even mention these days. Of course, some bands and people are in your life for the long haul. It’s just hard to tell in the moment how you’ll feel about them in years to come. Luckily, this week you should have an easier time telling whether whoever or whatever you’re currently enthusiastic about is a short-term fad, or an instant classic.
GEMINI (MAY 21-JUNE 20)
You’ve probably noticed already that sometimes things (both good and bad) happen in threes. You’re especially prone to notice triplets of this kind this week. A smart Gemini might be able to find some way to take advantage of this–by cashing in on the opportunities, or avoiding the negative stuff. You can’t be sure that something you experience will be echoed twice more, or what forms those echoes will take, but why not take a stab at putting yourself in (or out, as the case may be) their path? If you’re lucky, it might be the best thing you do this year.
CAPRICORN (DEC. 22-JAN. 19)
Just because you’ve walked quite a long ways down a certain path doesn’t mean you can’t switch routes. Sure, you should be naturally reluctant to leave all that behind, but you shouldn’t let your reluctance keep you from ultimately doing it. As far as we know, this is your one shot, your one life, your one chance to be happy. One of your strengths is what I call stick-toit-iveness, but that can also be a weakness, if you’re sticking to something (or someone) that makes you unhappy. Go ahead and think long and hard about your options before you give up something you’ve invested time and energy in. But there may come a time when it’s time to jump ship or go down with it. Hopefully you have the guts to do what you’ve got to do. AQUARIUS (JAN. 20-FEB. 18)
The reason you’re likely to obsess over ridiculous emotional bullshit is because you have too much free time inside your head. If you were busy solving the world’s problems, you wouldn’t have the opportunity to make yourself (and some of the people around you) nuts. Your brilliance can and should be put to good use, not this endless mental masturbation about things you can’t figure out or resolve. Ignore your own problems this week, as much as possible. Turn your attention to other people’s, and solving them. They’ll be grateful and feel better, and–weirdly enough–so will you.

CANCER (JUNE 21-JULY 22)
“Solid as a rock,” is an almost meaningless phrase; according to modern physics, even stone is composed of mostly empty space. Most of what we perceive is actually a clever illusion, it turns out, one that our minds interpret in a certain way just so we can make some kind of sense of the world and operate within it. You know this, but sometimes you can let your beliefs in your own self-generated illusions really drag you down and keep you from doing what you really want to do. Come on, Scorpio. You have a talent for cutting through other people’s bullshit, right down to the bone. This week, try slicing through some of your own. Afterwards, you might discover you can walk through walls.

LEO (JULY 23-AUG. 22)
Sometimes a really good email message accidentally gets sorted into your junk mail folder, and you have to sort through all the penis enlargement and Viagra bullshit to find it. That happens to certain people, too. You meet them and for whatever reason, your brain files them in a category where they don’t belong–and one you don’t invest much time in. This week you may have a chance to discover that what looked like a bit of bogus “LOTTERY WINNER” spam, in human form, is actually the real thing. Take a chance and open it up.
