Smooth yet complex, Mermaid blends fresh organic lemon zest and peppery grains of paradise, with a hint of sea air from wild-foraged, fragrant rock samphire. Mermaid’s name was inspired by its lead botanical rock samphire, known locally as ‘mermaid’s kiss’. This aromatic succulent clings to the cliffs surroundingthe island. Like the kiss of a mythical mermaid, saving sailors lost at sea, rock samphire signalled to shipwrecked sailors and smugglers that they were safe from the raging seas.
Our column stillswith multiplerefluxingoffer a smoother spirit. The slow distilled gin is rested for seven days to let the botanical flavours and aromas mellow and marry together, then cutback with island springwater.
Rock Samphire,Elderflower and Boadicea Hops are locally foraged. Therest of our botanicals are sourced by a father & son partnership who visitfamilies and farmers around the world. Thisgives us the peace of mindthat we select the best quality,ethically traded botanicals.
