SANGRIA A TRUE TASTE OF SUMMER Nothing epitomises Spanish summers like a refreshing glass of Sangria. A cool jug or two of Spain's wine-based cocktail will certainly get you in the mood to dance on the beach - or anywhere else for that matter! What is the history of Sangria? Dating back to 200BC, the Romans enjoyed drinking Spanish red wines and after invading Spain, they actively planted grapes and then cultivated the vineyards for trade. In those days, the water was often contaminated, and it was safer to drink wine and whole families, regardless of age, drank wine instead of water - clearly now, around the world, it's a drink for adults. The first Sangrias were heavily watered-down mixes of wine, water, herbs, and spices and as time passed, various fruits were added to enhance the flavour and eventually the drink became more palatable and more popular. This new wine punch, because of its blood colour, became known as Sangria, from the Spanish word sangre for blood. It is recorded that the Spanish introduced Sangria to the Americas in the 1800s as Spanish pirate ships travelled the Americas, seeking out new territories. Over the years, the popularity of Sangria has grown around the world, with various versions of the original red wine-based Sangria, and Sangria Blanca, made with white wine, being served in high class cocktail bars. In 2014, under European Union Law, the use of the name Sangria in commercial or trade labelling was protected and restricted under geographical labelling rules. Only Sangria made in Spain and Portugal is allowed to be sold as "Sangria". Sangria - sweet or fruity? Recipes for Sangria vary so much, even within Spain where there are many regional variations. The primary ingredient is always red wine (unless you are making Sangria Blanca which is white wine). One key point to remember, just like using red wine in cooking, always choose a quality red wine you would happily drink on its own. Sangria is something you can customise to your taste, adding fresh fruits such as nectarines, peaches, apples, pears, berries, pineapples and limes. You can make it sweet or fruity depending on your taste, by your choices of fruits and whether you decide to add a sweetener such as sugar or syrup. In addition to the orange juice added to the wine and fruit mix, some people add more alcohol such as brandy, or a fruit liqueur, such as Cointreau. Key to making great Sangria Key to making great Sangria is good quality wine and patience! All you need to do is add your sliced fruits into a large jug, cover with a bottle of your favourite summer red wine - maybe a nice Tempranillo or Garnache, add a carton of orange juice, three tablespoons of sugar and a few shots of brandy or Cointreau - stir together.... now the patience! Leave it to chill in the fridge overnight. When ready to serve, add a load of ice cubes and stir in a bottle of sparkling water or lemonade if you like it sweeter. Summer is here. Enjoy!

Cuban King Prawn Enchiladas Unlike Mexican Enchiladas in a corn bread, Cuban Enchiladas don’t have corn bread and follow the Spanish meaning of the word “Enchilada” which means to add chili pepper. You can also make this with chicken or lobster tails. Ingredients 500g uncooked king prawns 2 tbs diced chorizo 1/2 chopped onion 1/2 chopped green pepper 2 large tomatoes chopped 2 cloves garlic, crushed 1/2 cup tomato passata 1/4 cup chopped fresh parsley
1/2 cup chicken or fish stock 1 tsp smoked paprika 1 tsp cumin 1 tsp cayenne pepper 1/2 cup white wine Salt & pepper Juice of 2 limes Dash of olive oil
Method 1. Place raw king prawns in bowl with juice of 1 Lime. Toss to coat well and leave to stand whilst preparing the rest of ingredients. 2. In a heavy based pan, sauté the chopped onion and green peppers in a dash of olive oil and cook until softened. 3. Add crushed garlic, paprika, cumin and cayenne pepper and sauté for 1 minute to release the flavours of the spices. 4. Add diced tomatoes, fresh parsley, and tomato passata and cook for 1 minute. Add stock and wine. Bring mixture to boil and reduce to simmer. 5. In a separate pan, add the chorizo and fry to release the oils from the chorizo. Remove the king prawns from the juice and pat dry. Add to the pan with the chorizo and coat with the chorizo oil. Fry prawns lightly until lightly browned. 6. Add the chorizo and prawns to the tomato mixture and warm through. 7. Add more chopped parsley and season to taste and serve with your favourite rice.
Thai Baked Fish with Lime & Ginger Ingredients 1 whole fish cleaned and gutted – e.g. Dorada/Sea Bass 2 tbsp olive oil 1 tbsp grated ginger 1 tbsp lemon grass 60 ml fresh lime juice 1 tsp finely grated zest of lime 1/4 cup caster sugar
80 ml water 1/2 tsp chili flakes 1 tbsp fish sauce Salt & pepper Fresh chillies Lime wedges Coriander leaves
Method 1. Preheat oven to 200 degrees. Place large piece of foil on a baking tray and top with a piece of baking parchment – making sure both are larger than the fish. 2. Rinse the fish under cold water and pat dry with kitchen paper. 3. Make 4 deep diagonal incisions across the flesh of fish. 4. In a bowl, mix together the olive oil, ginger, lemon grass, 2 tbsp lime juice & rind, salt & pepper. 5. Rub the oil mix all over the fish, getting into the incisions and inside the cavity. 6. Carefully lift the fish onto the baking parchment and tightly wrap, scrunching edges to make sure its sealed. Do same with the outer layer of tin foil and make sure all edges are sealed. 7. Place sealed fish parcel on the baking tray and put in centre of oven and bake for 35 minutes until just cooked. 8. While fish is in oven, put the castor sugar, 60 ml of water in small pan and place on medium heat until sugar is dissolved. Increase the heat and cook until the syrup thickens slightly. Add chili flakes, fish sauce, remaining lime juice and stir to combine. 9. Carefully remove tray from oven, open fish parcel and gently remove the fish to a serving plate. Drizzle with the chili sauce, add sliced chilies, sprigs of coriander and serve with lime wedges.

Crispy Fish Tacos & Pico de Gallo Ingredients 2 fillets of skinned white fish (cod is good option) 1 Packet of small white corn tortillas Quarter of chopped iceberg lettuce 1 cup of plain white flour 2 beaten eggs 2 cups of panko or homemade breadcrumbs 1 tsp ground cumin 1 tsp paprika 1/2 tsp cayenne pepper Salt & pepper Sunflower oil for frying
Pico de Gallo 4 fresh chopped tomatoes 1 finely sliced red onion 1 tbsp jalapeños 2 cloves of garlic Juice of 1 lime Small bunch of coriander Salt & pepper Taco Sauce 1/2 cup of mayo 1/2 cup of sour cream 2 tbsp lime juice 1 tsp garlic powder 1 tsp hot sauce
Method 1. Heat oven to 200 degrees. 2. Cut fish fillets into finger sized pieces. 3. Put flour into bowl and add cumin, paprika, cayenne pepper, salt & pepper. 4. Put beaten egg into a bowl and breadcrumbs into another bowl. 5. Dip the pieces of fish into the seasoned flour, then egg and then into the breadcrumbs and place on a plate and put in fridge while you make the Pico de Gallo. 6. For the Pico de Gallo (tomato salsa), bring together all the ingredients in a bowl and leave to chill in fridge until ready to use. 7. To make the taco sauce, whisk ingredients together and put into squeezy bottle, or bowl until ready to use. 8. To fry the fish, heat the oil until hot and fry the breaded fish in small batches for a couple of minutes until cooked. Place on a rack and keep warm in oven whilst you cook the remaining fish pieces. 9. Bring it all together by putting chopped iceberg lettuce into your corn bread wrap, top with breaded fish and a drizzle of taco sauce. 10. Enjoy with the lovely Pico de Gallo.
Scottish Salmon Fish Cakes Ingredients 300g salmon fillet 300g potatoes 1 tsp olive oil 1 tbs fresh lemon juice Handful of chopped fresh parsley Salt & Pepper
1 tsp paprika 1 cup plain flour 1 beaten egg 1 cup homemade breadcrumbs Sunflower oil for frying
Method 1. Place the salmon fillet on a piece of tinfoil, drizzle with olive oil, salt & pepper, and 1 tbsp of lemon juice. Close the foil to make a little parcel & bake in oven (200 degrees) for 15 minutes. When baked, remove from oven, open foil and allow to cool. 2. Peel potatoes, cut into small chunks and cook in boiling salted water for 10/15 minutes until soft (but not mushy). 3. Drain the potatoes and leave in pan to dry and cool then roughly mash. 4. Add the lightly roasted salmon, making sure to remove any skin or bones, to the mashed potato and add in the chopped parsley and a tablespoon of flour. 5. Roll the salmon and potato mix into balls and place on plate. 6. Put flour with salt, pepper and paprika into a bowl. 7. Put the beaten egg into a bowl and the breadcrumbs into another bowl. 8. Flatten the fish balls to make a patty and then dip in flour, egg and breadcrumbs and put onto a large plate and store in fridge until you are ready to fry. 9. When ready, heat the oil in a deep-frying pan until hot and gently fry your fishcakes turning once to ensure they are golden brown on both sides. 10. Transfer to oven and keep warm whilst you make the rest. 11. Serve with sauce of choice e.g., lemon & parsley or sweet chili.

Easy No Bake Key Lime Pie Ingredients 400g digestive biscuits 200g melted butter 400g full fat cream cheese at room temperature 1 -14oz can condensed milk 100g icing sugar
284 ml double cream Zest of 1 lime 1/3 cup lime juice 1 lime jelly
Method 1. Butter and line a 23cm loose-bottomed tin with baking parchment. 2. Crush digestive biscuits in plastic bag with a rolling pin or use a food processor if you have one. 3. Put the biscuit crumbs into a large bowl, add melted butter and mix until crumbs are coated in the butter. 4. Tip the crumbs into the lined baking tin and press down firmly – using the base of a glass to give a smooth base. 5. Chill in the fridge while you make the filling. 6. Dissolve the jelly in boiling water and set aside to cool. 7. In mixing bowl, whisk the double cream until stiff and leave aside while you prepare the cream cheese mix. 8. Add the softened cream cheese, icing sugar, condensed milk, 2/3rd of zest of lime and lime juice and beat together by hand or mixer until smooth. Gently fold the whipped cream into the cheese mixture and pour into your biscuit base. 9. Put the tin onto a tray or plate larger than the tin and leave to set in fridge for 30 minutes. Very gently pour the jelly onto the top of the cream cheese mix and leave to set overnight in the fridge. 10. Be aware that some of the liquid jelly may escape through the bottom of the tin, hence the need to put the tin on a tray or plate. 11. Decorate with whipped cream and remaining lime zest…..Enjoy!
Summer Fruit Salad with Orange & Vanilla Syrup Ingredients Strawberries Raspberries Blueberries Melon Kiwi Pineapple Oranges Pears Apples
Orange/Vanilla Syrup: 1/2 cup sugar 1/2 cup water Zest and juice of 1 large orange 1 tsp vanilla extract
Method 1. In a small pan, dissolve the sugar in the water over a medium heat. 2. Add the orange juice and orange zest and bring to the boil. Lower heat to simmer for about 15 minutes until liquid thickens a little. Add the vanilla and set aside to cool. 3. Prepare all the fruit, making sure melon, pears, apples are deseeded, cored and cut into small chunks, and put all together into a large bowl. 4. Mix in the cooled syrup and toss until all the fruit is coated. 5. Chill in fridge until ready to serve.

Eaton Mess Ingredients 2 large egg whites 120g castor sugar 1 bag frozen strawberries 300 ml double cream 2 tbsp icing sugar Fresh strawberries or raspberries (or a mix of the two)
Method 1. Heat oven to 120/100(fan) degrees C and line large baking tray. 2. Whisk egg whites in clean bowl until stiff peak stage. 3. Add castor sugar in stages whilst continuing to whisk the egg whites. 4. Put spoonfuls' of mixture onto tray and bake for 1 hour 15 minutes. 5. Leave to cool in oven with door shut until meringues are completely hard. 6. Whilst meringues are baking, make your fruit sauce. 7. Add bag of frozen strawberries (or fresh) to a pan with 1 tbsp of icing sugar. 8. Bring to boil and then reduce to simmer until fruits have broken down and you have a silky sauce. 9. You can blend the sauce and then pass through a sieve if you want to remove any seeds but I personally like the sauce as it is (and it’s less washing up). Leave the sauce to cool. 10. Whip the cream with tbsp of icing sugar until it holds its shape. 11. When you are nearly ready to serve, bring all the chilled ingredients together in layers – i.e. broken meringue pieces, whipped cream, fruit sauce and fresh strawberries. 12. Put into fridge for final chill. 13. Be aware – if it’s in a wine glass for serving, don’t put it in the fridge door section to chill -I did and it fell out and smashed over the floor – so no Eaton Mess for me – but definitely a mess!
Simple & Delicious Chocolate Mousse Ingredients 3 eggs 200g dark chocolate (70% cocoa) 20g unsalted butter 1/2 cup double cream 3 tbsp castor sugar
Method 1. Separate white and yolk of eggs while the eggs are cold. 2. Whisk the egg yolks. 3. Melt the butter and chocolate in a bowl above a pan of simmering water, ensuring the bowl doesn’t touch the water. Set aside to cool. 4. Whip the double cream until cream holds its shape and gently fold in the egg yolks. 5. Whisk the egg whites until stiff and gently add in the castor sugar and give a final whisk. 6. Pour the cooled chocolate mixture into the egg and cream mix and gently bring together – no more than 8 folds. 7. Gently fold the egg whites into the chocolate mix making sure there are no lumps. 8. Don’t over-mix as you want to keep the mixture as light and airy as possible. 9. Divide the mixture into glasses and chill in fridge overnight. 10. Garnish with grated chocolate and whatever takes your fancy e.g., raspberries, mint. 11. Enjoy

HOW TO SURVIVE! Martha Reeves and the Vandellas may have sung "heatwave" - a song about a guy who has a heart "burning with desire" and "going insane" over feelings of love, but if you are struggling with the menopause in the midst of a heatwave, you might be the one who feels like you are burning, but not with desire, and going insane because you can't sleep! The extreme August heat, combined with menopausal symptoms, is brutal. Those hot flushes and unbearable night sweats, two of the most common symptoms, make for sticky, sleepless nights, and days that follow, where you are grumpy and lacking in energy. The NHS UK describes the menopause as the time when hormone levels drop usually between the ages of 45 and 55, when your periods stop. For some people, it can happen earlier if they have had surgery to remove ovaries, or the uterus (hysterectomy), cancer treatments like chemotherapy, or a genetic reason. Perimenopause is when you have symptoms before your periods have stopped. You reach menopause when you have not had a period for 12 months. What are the Symptoms?
Everyone is different and will face different symptoms, some more, some less and if you are lucky like I was, none. General symptoms include: Anxiety Mood swings Hot flushes Irregular periods
Brain Fog Chills Low sex drive Weight gain
Slow Metabolism Sleepless nights Muscle aches and joint pains
What can you do?
Night Sweats: Wear light cotton nightwear / or none Keep your bedroom cool Take a cool shower before going to bed Keep a cool drink of water by your bed to drink when you can't sleep

Mood swings: Hormone changes mean it is common to have mood swings, you are not alone Exercise regularly - boosts dopamine in your brain which makes you feel happier Get involved in relaxing activities - what about that beach walk you keep meaning to take? Rest - it is important to get enough rest especially if you have sleepless nights Talking therapy - talk with a therapist if you feel you need help Manage stress levels - try some meditation or yoga to help you relax General tips: Focus on healthy eating Add calcium rich foods to your diet, like milk or yoghurt which strengthens your bones Include weight bearing activities in your exercise plan Always keep a fan with you to cool down Avoid triggers that will set off your hot flushes, including spicy foods, caffeine and stress Do not smoke Do not drink more than the recommended amount of alcohol Seek medical or professional advice if you are struggling Treatment The main medicine treatment for menopause symptoms is Hormone Replacement Therapy (HRT), which replaces the hormones that are at low levels, although there are other treatments if you cannot, or choose not to have HRT. This is good news because doctors in Spain are generally reluctant to prescribe HRT!
Soy: Symptom: Hot flushes, night sweats Benefit: Soy has isoflavones, which are phytoestrogens (plant oestrogens). Some studies have observed that soy may be effective in reducing menopausal symptoms. However, other studies have found no benefit. Only food forms of soy are recommended, such as soy beans (edamame), tofu, soymilk, soy flour. Soy has been shown to help lower cholesterol, manage hot flushes, and much more. It's also a great healthy food for your diet regardless of whether you have menopause symptoms or not. Some complementary and alternative therapies can also interact with other medicines and cause side effects. Ask your GP or pharmacist for advice if you are thinking about taking alternatives.
HRT involves using estrogen to replace your body's own levels around the time of the menopause. There are different types and doses of HRT including patches, gels, pills, injections, and creams. For some women, hormone medicine may raise their chances of blood clots and have serious side effects. However, for many, using the right dose and type may mean symptoms will improve.

According to website Gov.uk, Parliamentary Secretary in the Cabinet Office, Heather Wheeler said "Women must feel able to talk about their health issues and know that they will be supported". At the highest level in UK Government, regardless of the other chaos they may be facing, there is commitment to raise the profile of women's health issues and they now have the first ever government-led Women's Health Strategy for England which will be published shortly, and the appointment of a new Women's Health Ambassador to raise the profile of women's health issues.
Some of these include: WhatCohosh are the Symptoms? Black Symptom: Hot flushes, night sweats Benefit:: Black cohosh is derived from a species of buttercup. Studies have had mixed results on whether black cohosh is effective in reducing hot flushes. Some studies indicate it may help with mild hot flushes and night sweats for short-term treatment. It may also lower blood pressure as well. Flaxseed Symptom: Hot flushes Benefit:: Flaxseed has omega-3 fatty acids and lignans, which act as phytoestrogens. Results from studies have been mixed, but it may help symptoms in some women. It is also believed to help lower cholesterol. Avoid whole flaxseed because it is difficult to digest. Ground flaxseed - but not flaxseed oil - may also help with menopausal symptoms. Apparently, 40 grams per day may be like hormone therapy for improving mild menopause symptoms.

Las Fallas de Valencia A party that takes place for five days in one of the most beautiful cities in Spain - Valencia. This Festival brings gigantic colorful characters out on the streets. Most of these statues or figures are mostly a result of satire or pop-culture events that have happened throughout the year. Apart from witnessing the Fallas on your way, the major highlights of one of the most popular festivals in Spain 2022 are the spectacular shows and fireworks that take place during the day, and the light show on the last night. Boloencierro This is the modern version of the popular tradition ‘Running with the Bulls’ festival. The celebration replaced bulls with a giant ball weighing 150 Kg and 3 meters in diameter. Instead of being chased by the bulls, you will be running in front of this rolling ball. Children can also enjoy this game with colourful and small balls.

The Semana Grande The Semana Grande is one of the most vibrant festivals celebrated in Spain. This Festival is also known as Aste Nagusis and is celebrated for 9 days in August. Attending Semana Grande gives you a chance to be a part of several fairs, concerts, and theatre performances. This entertaining Festival also sees firework competitions. A giant statue of La Marijaia, the mascot of the Semana Grande is made to float down the river and is set on fire. When: August Where: Bilbao
La Tomatina Out of all the Spanish festivals, La Tomatina Spanish Festival is the most known and famous amidst people from all over the world.
