T

he Division of Liquor Control once again achieved a record year for dollar sales of spirituous liquor in 2012. Total sales were $849 million, an increase of 7% over 2011. This exceeded last year’s total by $55.3 million. This achievement is due in part to the continuing tread of customers trading up and buying more of the premium products as tastes are becoming more sophisticated. Better product selection and improved inventory management are key to meeting the needs of our consumers, without encouraging increased consumption. Strong wholesale sales indicate positive growths

in Ohio’s economy as Ohioans are again patronizing restaurants and entertainment businesses. For the second consecutive year, wholesale dollar sales (liquor purchased by retail permit holders such as restaurants, bars and clubs) showed strong growth. Total wholesale sales in 2012 reached $257.8 million, an increase of 5.7% over last year.

TOTAL SALES WERE $849 MILLION, AN INCREASE OF 7% OVER 2011. THIS EXCEEDED LAST YEAR’S TOTAL BY $55.3 MILLION Dollar sales grew at a higher rate than consumption in 2012. The Division sold a total of 11.9 million gallons of spirituous liquor through its 464 Contract Liquor Agencies, an increase of 4.2% over the previous year. The following were the top 10 selling brands of spirituous liquor in Ohio for 2012 (by gallons sold):

1. Kamchatka Vodka – 364,914 gallons 2. Jack Daniels Tennessee Whiskey – 355,068 gallons 3. Bacardi Superior Light Rum – 287,378 gallons 4. Absolut Vodka – 281,898 gallons 5. Crown Royal Canadian Whiskey – 281,295 gallons 6. Captain Morgan Spiced Rum – 279,512 gallons 7. Smirnoff Vodka – 271,204 gallons 8. Jagermeister – 256,526 gallons 9. s Bruce Stevenson reported in his column, Ohio had yet another year of record sales of spirituous liquor. As the economy begins a (slow) comeback, people are starting to have disposable income again and part of this disposable income will be spent on hospitality. It’s not just retailers that will see the added benefit from the increased sales; these sales will be the catalyst to ensure that Jobs Ohio is funded through the sale of spirituous liquor backed bonds. We should consider ourselves to be partners with the State of Ohio because our sales are giving investors the confidence to invest in Jobs Ohio . . . in short, the State of Ohio has a vested interest in seeing us do well beyond the simple sales tax we collect and remit! Those of us in the alcohol

programs. This will have no negative impact on the Industry at all; in fact, increased revenues for Jobs Ohio will come from increased spirituous liquor sales. C. All pricing still decided by the Division of Liquor Control. D. All decisions on Agency Store operations and site selection are made by the Division of Liquor Control. So, Jobs Ohio causes no direct change in the way you conduct business. Indirectly, it encourages the sale of spirituous liquor to ensure it receives the necessary funding and that the money JobsOhio receives is put to use marketing the state to bring more jobs and more customers. When you serve a customer, let them know that we are part of the solution. . .Jobs Ohio.

10TH APPELLATE DECISION Those Seeking Permits Be Aware By Dave Raber

T

he Tenth Appellate District issued a decision on December 28, 2012 that all permit holders and persons seeking liquor permits should be aware exists. The decision is Downtown Cronton, Inc. v. Liquor Control Comm. and involves an objection to a transfer of a class D5 permit. Procedurally, the City of Cleveland objected to the transfer and the Division of Liquor Control sustained the objection. On appeal, both the Liquor Control Commission and the Common Pleas Court affirmed the objection.

The basis of the City of Cleveland’s objection centered on a tavern that operated at the premises until 2007. The tavern became a “very troubled spot” under the former operator due to “drug and gang related activities.” The premises closed in 2007 due to a homicide which occurred on the premises. Also opposing the transfer are a newly established community based facility which offers treatment and rehabilitation for low level offenders and a women’s pre-release center that has been in operation for twenty years, located across the street from the proposed premises. The Applicant for the D5 permit seeks to open a familystyle restaurant in this heavily industrialized area of Cleveland. The evidentiary record established that the current Applicant for the transfer did not have any involvement with the former permit holder or any of its operators. Moreover, the evidence showed that the Applicant operates other permit businesses all within the requirements of Ohio’s Liquor Control Act. The Liquor Commission’s affirmance of the transfer rejection was based upon two grounds: 1) disregard for laws; and 2) transfer would substantially interfere with the peace, good order and sobriety

of the neighborhood. The Court of Appeals quickly overruled the first ground as the record on appeal was completely devoid of any evidence establishing that the Applicant has operated a permit business in a manner which demonstrates a disregard for the law. However, the Court of Appeals did offer a lengthy analysis on the second ground which is commonly referred to as “environmental grounds.” The Court stated: “the evidence consists of general and speculative concerns that are neither based upon nor constitute reliable, probative, and substantial evidence.” Although a Cleveland police detective did testify that five years previously there were “habitual complaints about and a number of arrests made at the premises,” none of the testimony concerned the current applicant and “the record contains no evidence that the problems associated with that business would return with the granting of the sought permits.” Regarding the women’s prerelease center, the evidence established that the center had been in operation for a number of years when there was a licensed premises across the street and the record contained no evidence of “any ill effects from the co-existence of the pre-release center and the liquor establishment operating on the proposed permit premises.” While there was testimony concerning the negative effects a permit premises would have on the newly established community-based facility, it only showed a “general concern for a potential effect on *** residents” and did “not demonstrate with specificity how the proposed premises is so located with respect to the neighborhood that substantial interference of public decency, sobriety, peace or good order would result from the issuance” of the permit. (Emphasis by Court). Holding a liquor permit in Ohio is a privilege, not a right. However, your local legislative authority shall not deny your right to renew or apply for a new permit without first establishing “good cause” for such an objection. Do not let your local authority take away your livelihood or your opportunity to commence a new business without exercising your rights.

CONSISTENCY IS THE KEY TO SUCCESS

Are You Making Sure You're Consistent? By Chef Brian duffy

T

here are many things that we can control in this business. But how much can we control that has a direct correlation to our sales? We spend so much of our time looking at the newest trends for booze and liquor, the hottest varietal of wine and style of beer, we are always asking what we can do to build sales. When was the last time that you spent the time, the physical time to sit at your bar, order a few cocktails and look at the consistency, watch the barkeep pour the signature and classic cocktails? Order some food from the kitchen, order some signature food and classics from your menu. Now... Is this what you expected? Drinks

1. Does the drink look the same? 2. Does the drink have the same garnish each time? 3. Does the drink have a beverage napkin? 4. Does the drink come in the same glass each time? 5. Is the bartender presenting the drink and naming the drink to the guest? 6. Has the bartender reused the same glass for your 2nd round? 7. Finally.... Has the bartender been trained in all of these things? Food 1. If a burger was ordered did the server ask you how you wanted it cooked? 2. Was it cooked correctly? 3. Are the sides correct, hot fries, cold salads, melted cheese, hot bacon? 4. Is it served on the same plate? 5. Is the roll toasted? 6. Is the lettuce, tomato and onion served the same way each time? 7. What is the time from order to

delivery? 8. Did the server stop back after two minutes to check on the food? This is not a one day process, this needs to be done over a period of time, but what we all need to remember is this: If we don't discuss our expectations, standards and need for consistency to our staff - how can we ever receive a consistent product?

Our guests come into our establishment to receive a few things, quality food, quality beverages, great service and a consistent product There are so many variables that we encounter in the business each day, the delivery truck was late, the server is hungover, the bartender had car trouble, the chef's significant other is angry at him for working too much... But what it all comes down to.... The guest doesn't care, they don't need to know any of this. The guest has an expectation, and it is our job to EXCEED their expectations. Our guests come into our establishment to receive a few things, quality food, quality beverages, great service and a consistent product. Always remember if your guests order something on a Tuesday and then come back on a ready with the family and they don't receive a consistent product, they will tell everybody "it was good... but not very consistent". That my friends is the check of death!!!

Some people simply need to know their overall sales, costs and profit; hence the Income Statement. Some people need to know how much the assets of their business are; thus we use the Balance Sheet.

elcome back to the last call! This month’s article is on analyzing your financial and operational numbers and “What’s a good number?” What numbers should you be looking at? people generally are measuring either their level of profitability for either their overall business or a specific category or department, such as food, beverages, labor, rent, etc. Or they are measuring their growth or loss of business to a prior period of time for their overall business or a particular category. So, if you are trying to understand your level or degree of profitability and the corresponding expenses, you will usually end up with ratios as the numbers you are evaluating, such as a 30% cost percentage. Or the absolute dollars; such as $15,000 in sales. If you are looking at growth trends or losses you will usually take those percentages or dollars and compare the differences between a past number and the current number. What are you trying to accomplish? If you are trying to price out a product, then you need to look at the unit cost and use your target cost percentage. If you are trying to see your overall profit percentage before taxes, you would use your net revenue before taxes and sales. If you are trying to calculate your labor costs, then use 10 OhIO BEvErAgE mOnThly fEBruAry 2013

I believe it’s useful on a regular basis to generate a weekly income statement, but monthly is ok. On a weekly basis, it’s good to review your sales and product costs and to review your labor costs. These are your variable expenses that are dependent on your level of sales. As your sales go up and business increases it stands to reason your costs for labor and inventory should also increase. Over the longer term you would compare your current numbers to your budget for that period of time. comparing your current numbers to your previous numbers for sales and costs for the same time period the year before is also useful. It’s good to understand how your business is trending over the longer term. plan like your business will be around forever and act like you have no tomorrow. A sense of urgency is always a good thing. how do you calculate them? you should use a bookkeeping software program and a spreadsheet program. most variable expenses should be a ratio of their cost to the sales as they will vary based on sales. keep your check book current and balanced. What is a “good number”??? I get these questions all the time. The big one is level of profitability. I think a great number for profit after expenses, but before taxes is about 25%. It’s achievable. maybe a tad higher…the lower acceptable

range would be 15% for your net income percentage. That would include your owners pay and profit distribution for a small business. labor is usually in the high 20’s to low 30’s. rent/lease should be under 10%. Overall beverage costs should be in the mid 20’s for most concepts…..for gentleman’s clubs, the percentages usually are in the mid teens. The lower 20’s for night clubs, the upper 20’s to low 30’s for neighborhood taverns and campus bars. liquor is usually in the low 20’s, bottle beer is usually in the high 20’s to mid 30’s, draft beer is usually a little lower, but recently it’s increasing due to the higher sales of craft/micro beers. Wine runs all over the board, depending on the amount of sales of wine by the glass versus the bottle. But you are usually looking at the low 30’s. food should be in the mid 20’s to low 30’s, depending on the product mix and concept. fine dining will be higher and pizza places will be usually lower. however, all of your pricing is subject to the competitive market your business exists in. how do you use the numbers? Well, I only have so much space here. To be brief and to state the obvious; there is an old saying. “To manage something, you need to measure it”. That is so true. you should have goals, both short and long term. you use the numbers to determine how well you are managing your business and how well your staff and you are doing in trying to achieve your goals. By using the numbers you can usually identify issues that are happening that are preventing you from maximizing your profits. Simply having enough cash in the bank is not enough!! Farm Fresh Sidney Frank Importing Reaps the American Harvest By cARA McIlwAIne

A

mid a powerful culinary movement fueled by artisanalcrafted food and drink, American farmers are finding themselves in the limelight, industrious champions of fresh-from-the-earth local ingredients. Sidney Frank Importing Company unveiled American Harvest Organic Spirit, the first USDA Certified Organic product in its portfolio, as a celebration of the American farmer and of sustainable agriculture. American Harvest launched in eight states in 2011 and expanded into thirteen additional states in 2012. The brand is expected to be available nationally by mid-2013. Handcrafted in small batches using a continuous column distillation process in its Rigby, ID-based distillery, American Harvest is made with organic winter wheat sourced from a single purveyor: farmer Steve Rhodes. “He’s everything you imagine an American farmer to be—hardworking, dedicated and passionate,” points out Julie Byrne, American Harvest’s marketing brand manager. “Made-in-America is a major component of the brand,” she continues. “Thus far, consumers and trade have been extremely receptive to our AllAmerican and organic messaging.” To complement the Idaho wheat, American Harvest also uses water from an aquifer of the sprawling Snake River. At an SRP of $23.99, American Harvest is quite competitive for the organic market.

The Alternative Vodka At first glance, American Harvest may seem to have a lot in common with vodka, yet Byrne points out that de-

spite the similarities, American Harvest is decidedly different: “It is organic vodka to which a proprietary blend of organic ingredients has been added, creating a truly unique vodka specialty. It’s a revolutionary way to look at the vodka category. elebrity endorsement of wine and spirits is not exactly new. Orson Welles famously assured TV viewers back in 1980 that Paul Masson would “sell no wine before its time.” But the past decade has seen significant shifts both in the frequency of celebrities aligning with wine and spirits brands and in the nature of the endorsement. Some are spokespersons, some are brand owners, some have licensed their names and images. Some appear in ads or at promotional events, radiated online. In general, celebrity-brand relationships have become more of a two-way street—not to mention one with more lanes. As more celebrities want in to this relatively glamourous world, more wine and spirits marketers appear eager happy to bring them along for the ride.

The e Power r off Pe ersonalit ty (& Credibiilit ty) Few celeb-brand connections have proven as effective as P. Diddy (Sean Combs) and Cîroc. Annual sales of the vodka hovered around 120,000 cases when Combs came on board in 2007; now it’s a million-case brand, with much of the success is attributed to the artist himself appearing in TV ads and the well-known entertainer promoting the brand actively via appearances, both formal and informal. P. Diddy’s success came with a young brand. Stars can bring juice to established ones as well. Tanqueray Gin partnered with actor and DJ Idris Elba in 2011 for “Tonight We Tanqueray,” a platform that included events, videos, a downloadable song and even new drink recipes. “We were looking for partners who could bring to life the style and sophistication of Tanqueray,” says Brand Director Matt Pechman for Tanqueray. “Idris was a perfect match.” Before launching a celebrity brand or partnering with a celebrity there are a few considerations, says Dave Karraker, director of public relations for Campari America. “First we look at the celebrities themselves—who is their demographic

and does that demographic match a hole in our portfolio that we have to fill?” he says. Just as important: “The person has to have credibility to be associated with that spirit.” Campari recently showcased Oscarwinning actress Penelope Cruz in an evocative 2013 calendar. Entitled “Kiss Superstition Goodbye,” the calendar shows Cruz indulging in superstitious acts—breaking mirrors, walking under ladders, opening umbrellas indoors, etc.— all while looking fabulous in Camparired outfits and holding Campari-based cocktails. The calendar project, shot in Milan this year by fashion photographer Kristian Schuller, has been done annually by Campari for more than a decade.

THE SPORTS SCORECARD umerous pro athletes have been lured by the call of wine country. Pitching great Tom Seaver makes highly acclaimed Napa Valley Cabernet Sauvignon. Ditto Super Bowl–winning football coach Dick Vermeil, once nicknamed the “Calistoga comet” during his playing days in the region. Hall of Famer Joe Montana partnered with former Beringer winemaker Ed Sbragia in the late 1990s to make Montagia Cabernet Sauvignon. Former quarterback Drew Bledsoe makes wine under the label Doubleback in Walla Walla, Washington, where he grew up. Green Bay Packer Charles Woodson owns TwentyFour Wines in Napa Valley (he caught the wine bug when, as an Oakland Raider, he trained in Napa). Retired Packer/ Jet/Viking Brett Favre makes three wines, sold only within Wisconsin and in his restaurant. Even teams (Jets, Chargers) have collaborated on wines. Racing legend Mario Andretti founded Andretti Winery in Napa in 1996. A couple of hundred cases turned into a full-fledged business, with a tasting room and 16 wines. Lewis Cellars (Randy Lewis), Bernardus (Ben Pon) and Bennett Lane (Randy Lynch) are also wineries owned by former race car drivers. Hockey’s Wayne Gretzky produces wine under the No. 99 label. Golfers with their own wine labels include Greg Norman, Ernie Els, Arnold Palmer and Annika Sörenstam. Fuzzy Zoeller has an ultra-premium vodka: Fuzzy’s, naturally. Tennis great Roger Federer, known for serving aces, is now serving up Moët & Chandon Champagne as their brand ambassador. And Emmywinning sports commentator Jim Nantz teamed up with Deutsch Family Wine & Spirits to create The Calling wines. Mario Andretti

REAL HOUSE-WINES? eal Housewives of New York star Bethenny Frankel struck gold with her Skinnygirl readyto-serve cocktails. She sold to Beam Global in 2010 and the brand has since expanded way beyond the original low-cal margarita. Now, branded wines/ spirits seem practically contagious among the TV housewives. In the case of Frankel’s RHONY costar Ramona Singer, her relationship with a type of wine preceded her connection to a brand. The transition was quite natural, explains Claudia Cogan, brand manager at Opici Wine Company. “Ramona Singer became synonymous with Pinot Grigio, regularly seen sipping it on the show,” says Cogan. “Fans would approach her asking if she preferred a specific one, but she never really had an answer. She saw this opportunity and seized it, coming to Opici with a proposal.” Over in New Jersey, Teresa Guidice launched Fabellini, a pre-mixed Bellini in two flavors; and Kathy Wakile launched Red Velvet Cosmo, a pre-mixed cos-

And, naturally, celebrity power is increasingly being tapped for new product launches. One recent example is LeSutra. Grammy-winning producer Timbaland is an owner of the line of sparkling liqueurs, and his high-profile support is intended to draw some of the attention going to rival brand Nuvo, whose rapper-backers include T-Pain, Jeremih, Wale, Pusha T and Lloyd Banks. In a blend of established brand and new product, Usher was a partner for the launch of Belvedere RED in 2011. Similarly, R&B crooner Ne-Yo helped launch Malibu Red—a fusion of rum and tequila; the collaboration included a custom song and video, supported by social media.

In LA, Vicki Gunvalson and Tamra Barney went a different route, starting a wine club, “Wines by Wives.” Will these housewives put up numbers approaching Skinnygirl? Maybe not, but they can be solid sellers. With a Pinot Grigio released in 2011 and red blend in 2012, Ramona has become a 15,000case brand, distributed nationally.

And Jim Beam Bourbon tapped into the passionate fan base of live music by sponsoring a series of six concerts in 2012 (Kid Rock, Daughtry, David Gray, Darius Rucker, Bush and Train). In addition, Beam collaborated with Kid Rock on several projects, raising funds for Operation Homefront, which provides support for families of American troops. TY KU Saké has taken aim at multiple audiences, enlisting diverse support from Bravo’s “Millioinaire Matchmaker,” Patti Stanger; Intenet gossipmonger Perez Hilton; and well-known singer and The Voice judge CeeLo Green. “The perception of saké is that you can only drink it in certain locations or specific ways,” says brand co-owner CeeLo. “It’s my mission to show how saké is a progressive cocktail

Erin Harris, EVP of marketing and ppublic relations for Voli Spirits, notes that FFergie and Pitbull each bring something ddifferent to the table: “Fergie—who stays fit and owns the social scene—knows how to balance all aspects of life and represents the Voli brand perfectly,” says Harris. “Pitbull, with his charisma and musical sense, is a force within the Latin market and has a large female demographic.” Perhaps a taste of more to come, ad campaigns featuring multiple celebs have picked up just within the past year. Hennessy’s “Wild Rabbit” campaign features Martin Scorsese, Erykah Badu and Manny Pacquiao. Each person’s “wild rabbit” is what inspires them, keeps them motivated and drives them. The campaign consists of print ads, billboards, installations, QR codes and Web marketing. Johnnie Walker’s “My Label is Black” is both an ad campaign and outreach program designed to celebrate the Hispanic community and inspire men to achieve their true potential. The ads feature Don Omar, Jorge Posada and Alex Sensation; events and charitable partnerships are set in key markets such as New York, Miami and Los Angeles. Dressed as a mermaid at a Halloween party she hosted, Kim Kardashian’s turn as a spokesperson for Midori got plenty of play via print and social media.

STARSTRUCK No Coo okie e-Cu utt ter Molds To put the recent explosion of celebrity wine/spirits endorsement in perspective, it is important to realize that there are no standard formulas for how the star-brand relationship will be defined or promoted. The degree of involvement can range from select promotional appearances— such as Kim Kardashian hosting a Halloween party for Midori—to full-blown ownership. Some bottles are designed by the stars themselves; others don’t even mention them. But if there is one commonality, it’s that marketers are taking cues from what made the stars stars when considering how best generate publicity. Musician Dave Matthews has (quite quietly) owned Blenheim Vineyards in Virginia since 2000 and recently worked with Constellation Brands to create The Dreaming Tree wines with winemaker Steve Reeder. “As part of our 2011 launch strategy, we targeted loyal fans of Dave Matthews, who include consumers ranging from 30-50 years old,” says Sarah Pearson, marketing manager for the brand. “We felt this grassroots approach

was in line with how Dave Matthews rose to popularity and was a great way to honor the fans. After serving his fans first, the wines were made available everywhere.” One recent collaboration to watch is Enrique Iglesias with Atlantico Rum. Aleco Azqueta, who launched the line in 2008 with partner Brandon Lieb, explains that the new business relationship was entirely organic: Enrique loved the rum before he even met the founders. Azqueta notes, “A lot of brands developed for a celebrity are gimmicky. This one started with a product that had already won awards and gained respect.” The partnership works, he says, because of its authenticity: “Atlantico is a lifestyle brand that celebrates Carribean sophistication—and that’s his brand, too.” The Spanish singer-songwriter has given the brand mass exposure through placement in his videos and live concerts.

Pas ssio on Pla ays The example of Enrique Iglesias and Atlantico highlights the reality that the more hands-on a star is, the more leverage a brand gains in the market. Actor Dan Aykroyd has teamed up with winegrowers in his native Canada to create a line of varietal Niagara wines, but here in the U.S. he invests time and sweat into Crystal Head Vodka, a brand he launched in 2008. “He is involved in every major decision and also a number of smaller decisions, whether it is production, sales or marketing,” says Kristina Arnold, marketing manager for Crystal Head. Hands-on tequila-making success stories include rocker Sammy Hagar (Cabo Wabo) and singer-actor Justin Timberlake (901); and country music’s Toby Keith, who created Wild Shot Mezcal. To create 901 (the brand name is based on the Memphis telephone area code), Timberlake and co-owner Kevin Ruder scouted distilleries in Mexico and helped develop the flavor profile. Carlos Santana is now a brand owner of Casa Noble Tequila, and his album covers are featured in packaging. Tequila has also served as insipiration for some high-profile advertising, notably Lollapalooza founder Perry Farrell for Dobel and The Sopranos’ Michael Imperioli for 1800. Down in Santa Barbara, Fess Parker in 1987 established a successful family-run winery more than a decade after starring on TV as Davy Crockett and Daniel Boone. The Smothers Brothers make serious reds at Remick Ridge in Sonoma Valley. Actor Danny Glover is also a grower in Sonoma. TV star Adrian Grenier and film producer Peter Glatzer help blend their Paso Robles red, SHFT, marketed by Domaine Select.

STARSTRUCK Actor Sam Neill owns Two Paddocks estate winery in Central Otago, New Zealand. Italy’s Bocelli family, known worldwide for the opera success of tenor Andrea, has actually been making wine in Tuscany for more than a century; their wines just recently debuted in the U.S. Italy was also the origin for an eponymous line of wines by Oscar-nominated actress Lorraine Bracco. And Ben Flajnik, perhaps better known as The Bachelor, turned the celebrity-wine formula inside-out— he and two partners created Envolve in Sonoma before he became a reality TV heart-throb. So many celebrities have gotten into the wine/spirits act that it has become hard to keep track. Mötley Crüe frontman Vince Neil has produced wine (Vince Vineyards) as well as Tatuado Tequila and Vodka. Other bands/musicians going the wine route include Mick Fleetwood, Kiss, Bob Dylan (Planet Waves), Simply Red’s Mick Hucknall (Il Cantante), Lil Jon (Little Jonathan), Tool’s Maynard James Keenan (Caduceus), Train (Save Me, San Francisco), even Elvis Presley and Jerry Garcia. Celebrity fashion icons are tossing their hats into the wine or spirits ring, too. And why not? Great-looking bottles will never go out of style. Jean-Paul Gaultier designed a “corset” bottle for PiperHeidsieck. Gianfranco Ferré dressed up Frescobaldi Brunello for the Millennium.

Co-founded by music Grammy-winning super-producer Timbaland, LeSutra is a line of four 15% ABV sparkling liqueurs, launched just last September.

Christian Audigier licensed his tattooesque Ed Hardy brand for a line of wine. Roberto Cavalli now has his own vodka. And John Varvatos designed a special bottle stopper for Patrón Tequila. Of course, no roundup of celebrity wine would be complete without mention of Marilyn Monroe, whose iconic beauty and fortuitous adopted surname posthumouosly made Marilyn Merlot a fan-driven collectible. Will there ever be another? Probably not. But Hollywood stars now seem more inclined than ever to test their wine chops. Witness Drew Barrymore and Fergie. Both are acutely cognizant that their names needed to be part of the package, literally. The red blend from Ferguson Crest is called “Fergalicious.” And Drew’s first wine, a Pinot Grigio from northern Italy, features the Barrymore family crest on the label.

SELLING STAR POWER o, now that the wine and spirits industry is getting accustomed to the idea of celebrity endorsement in multiple categories, the question becomes how best to translate star power into sales. Here are some points to keep in mind:

Know what’s what even if you don’t know who’s who. Celebrity culture is powerful but not universal. Different generations, different ethnicities and different interests determine which “stars” sparkle for different individuals. While it makes little sense to stock every available celebri-brand, it is imperative that when you do, the whole staff should be aware of the relevant connection (because it’s not always on the bottle). ✩

Signage can help move product. Some marketers are ready and able to support celebrity-linked brands with POS material (ask your distributor). If not, especially in cases where the star behind the liquid is not apparent, you can and should create your own signage. It may help spur impulse sales among shoppers who are fans of certain stars/genres but were unaware of the links.

Eye candy is stil still important. Some bottles act like stars in their own right. For example, bottles of Patrón Tequila featuring the guitar head bottle stopper designed by menswear mogul John Varvatos are just screaming to be displayed. Catchy bottles in a front window can grab the eye of folks who may not necessarily want that wine or spirit, but will be enticed inside by the display.

orthern California finally enjoyed a bountiful crop in 2012 after two years of underwhelming harvests. Does that mean California wine prices are going to go down? Actually, the opposite appears to be true. Get ready for higher prices on many Napa and Sonoma County wines, even though winemakers were scrambling for extra tank space just a few months ago. This may seem to contradict the principle of supply and demand. But the 2012 California harvest is just a tiny piece of a global puzzle.

Global undersupply is a new phenomenon, and it affects everything. From 1979 to 2007, global wine consumption never exceeded production for more than one vintage, and even then only slightly, according to OIV (the International Organization of Vine and Wine). But in 2007 and ’08, global wine consumption jumped far ahead of production, and the world’s biggest wine companies—most with properties in California—still haven’t caught up. Undersupply wasn’t obvious for California wines, after a big 2009 harvest, but it is obvious now. Even if there will be more 2012 premium California wine eventually, the 2010s and ’11s are what’s hitting the market now, and those are in short supply.

ALLOCATION SITUATION Tim Persson, CEO at The Hess Collection, says his winery’s flagship Cabernet has been on allocation for the past year. Hess had been making 7,500 cases annually of Hess Collection Cabernet Sauvignon but could only manage 5,000 cases in both 2010 and ’11. “That enabled us to take price increases and we’ve seen little effect on demand,” Persson says. “We’ve been able to increase our case FOB by about $20 in the last year and a half. It’s closing in on a 10% increase that we’ve been able to take over the last year.” It’s not pure profiteering from wineries, though, because northern California growers demanded—and got—more money for their grapes this year after suffering through consecutive small, lesser quality harvests in 2010 and ’11. “In some places on the North Coast, the Cabernet price [for 2012] was as high as anyone had seen,” notes Nat DiBuduo, president of Allied Grape Growers. “All the wineries wanted them, and the crop was not expected to be as big as it was. It got a little competitive. I had people calling me and saying, ‘I want to buy the grapes I buy every year, but if Joe Blow winery doesn’t want to buy his grapes, then I want them, too.’” Industry analyst Barbara Insel of Stonebridge Research says even without higher prices for grapes, wineries had been putting off price increases because of the soft economy. “Last year, the smarter wineries did things to hang onto their prices…to keep moving the volume,” Insel says. “Strong brands are going to want to increase pricing this year.” One factor keeping prices down has been the proliferation in recent years of “overnight brands”—brands created quickly to take advantage of quality grapes that were available on the bulk market. If those brands spring up like weeds, the small 2010 and ’11 harvests were like Roundup.

But like weeds, the overnight brands will eventually be back, though not until after this year’s price increases. “In 2011, there was no Cabernet to be had,” Insel says. “In 2012, there’s going to be a healthy supply of grapes for negociant wines. This is going to be a big harvest. People are comparing it to 2005.” It’s important to remember that California is huge, with a bigger change in latitude from north to south than France, so a good harvest in one region doesn’t mean everywhere enjoyed the same conditions. For example, Santa Barbara County vintners said their 2010 and ’11 vintages were perfectly good while the North

Coast was plagued with rain and mildew. And in 2012, while Napa and Sonoma vintners were celebrating, farmers in the San Joaquin Valley—which supplies 85% of the grapes in California, according to Bronco Wine Company CEO Fred Franzia—were enduring an off year. Franzia points out a simple reason that Napa Valley’s harvest dominates the news. “Napa has 500 public relations workers,” Franzia says. “In the San Joaquin Valley, I think Gallo has one. That’s how they get all the press. They work harder at it. Napa has carved out a PR niche with 500 people pretending the whole universe of wine moves around them. It’s a myth.”

THINKING GLOBAL In fact, globally minded Napa wineries will be paying attention to prices elsewhere. The 2012 harvest across Europe was down about 15%, according to OIV. That could lead to higher prices for European wines that will make Napa wine price increases seem less onerous. “If you look at global wine supply versus consumption, there’s a global 3% undersupply,” says the The Hess Collection’s Persson. sending shiploads of Malbec, was down more than 20% in 2012. “There seems to be a worldwide shortage of the varieties that are most desirable,” says Joel Peterson, a senior vice president at Constellation Wines. “Everybody brought in bulk wines from various places, whether it was Malbec from Argentina or stuff from southern France. Quantities are down, and that forced up prices for grapes. Those prices are more likely to be reflected in bottle prices for smaller wineries than in larger wineries. The strategy for larger wineries will be to work on market share.” Peterson doesn’t foresee many private labels this year, though he says if 2013 is another large California harvest, that may “open the floodgates.” However, he does expect the trend of new brands from big companies like Constellation to accelerate. “Every large winery has decided that much of the growth in the market is coming from NPD—new product development,” Peterson says. “As a consequence, you’re seeing more new brands that are in the $10 to $12 range. That will continue because they’re looking for the next Cupcake, they’re looking for the next Apothic Red. This isn’t necessarily tied to available volumes [of grapes]. They can shift volume from less successful products to more successful products.”

Treasury Wine Estates just announced a major “Project Uplift” intiative, including buying more vineyards, to take more of its wines into those price brackets. Persson says that owning vineyards allows larger companies to ladder their wine pricing much the way Detroit once priced automobiles, with the Cadillac above the Buick above the Chevy. “We control the fruit that we use, so we can control the quality,” Persson says. “That incentivizes us to get consumers to trade up. We want to increase the

percentage of revenue we get and the way to do that is to increase the percentage of higher-end wines.” And he’s not worried about consumers being there. The task for larger wineries is to build brand loyalty; capitalizing on it will take care of itself. “In the last five years we’ve seen consumers seeking more value for money,” Persson says. “But with the recovery of the economy, you’ll see people trading up. They may use the same consumer tendencies they’ve used over the last five years, but they will trade up.” At the very high end, though, most experts expect that this is not an era for $75+ wines from little-known California wineries. Consellation’s Peterson expects that $30 to $40 is the price ceiling for new wines from smaller wineries. Insel says, “Smaller brands have had a hard time getting traction in this market. It’s a very conservative market. If consumers are going to pay $75, they want to know what they’re getting.” In that price bracket, Napa Cab remains the king, according to Insel. “If they can’t get something from Caymus or some other known brand, they’ll look for another Napa Cab rather than something else, because they know Napa,” Insel says. “Every time we do any wine research, the only wine region people really recognize is Napa. t’s only natural: As long as people have had questions about wine, people have had questions about what wines go with what foods. Perhaps as an exercise in verbal shorthand, wine professionals have come to define some wines as “food wines,” denoting that some types of wine are more tailored to enhance food than others.

With the proliferation of available wines in recent years, it makes sense to revisit the concept of wine and food pairing. The best “food wines”—whether the liquid is dry or sweet; still or sparkling; white, pink, orange or red—share certain characteristics: Q Q

These attributes render wines more flexible with food pairings. Additionally, these factors must work together. Overall balance is a critical component. Over-use of oak is the number one disqualifier. A lavishly oaked Chardonnay or Sangiovese may make for interesting sipping, but often not for good food matching. Furthermore, some wine styles may make good “food wines” but be fairly restricted in their pairings. Amarone for example, complements a raisiny dessert or a blue cheese, and that’s about it.
