here have been a number of changes in Ohio liquor law over the past couple of years that have eased or eliminated restrictions that hampered retail license holders. Part of our mission at the Division of liquor Control is to provide resources to help our stakeholders understand and successfully navigate new regulations. We are about compliance and providing the tools necessary for businesses to grow and create jobs. One issue that many retail license holders all over Ohio are learning about and using to further their business is the sale of “growlers.” Selling growlers is a great way to bring in new customers, promote new products, and create more repeat customers. Most of the 105 Ohio craft breweries sell growlers at their facilities and many of those brands are also sold in growlers by retail businesses. it’s our job to make sure you know the regulations and how to do this correctly. By industry definition, “growlers” are simply a glass jug containing draft beer for carry out. Customers pay a small up-front price for the jug in addition to the cost for the draft beer inside and take it home. the same container can then be returned for refills. the problem lies in what type of permit is needed in order to sell growlers. the first thing to remember is that

only beer can be sold in a growler. Holders of any D-class permit that allows carry out sales of beer can sell growlers to go. Beer manufactures (A-1 permit holders) and now craft breweries (A-1c permit holders) can also sell growlers. growlers sold by these permit holders cannot be larger than five and one-sixth gallon. the container must also be sealed by the permit holder filling the growler and properly identify the product and/or product manufacturer’s name. When refilling a growler originally purchased from a diﬀerent manufacturer, it is a best business practice for the permit holder to put a sticker on the container to identify the product being sold. in addition, the proper carry out markup of no less that 25% must be added to the beer contained in the growler. those rules apply to growler sales by beer manufacturers and the holders of D-class permits (except for D-8) that are authorized to sell beer for carry out. in 2012, the law was expanded to allow the holder of a beer carry out license (C-1) to also sell growlers provided that they also hold a tasting sample permit (D-8). to qualify for a tasting sample permit (D-8), the store must have at least 5,500 square feet of floor area and generates more than 60% of its sales in general merchandise items and food for consumption oﬀ the premises. Businesses that hold a permit to sell wine for carry out (C-2) in addition to their beer carry out permit (C-1) can also qualify for a D-8 if wine constitutes at least 60% of the value of the store's inventory. the law set specific regulatory criteria to be followed when selling growlers

under a C-1/D-8 permit. that criteria is as follows: • The beer is dispensed only in glass containers whose capacity does not exceed one gallon and is not sold for consumption on the premises. • The containers have been cleaned immediately before being filled in accordance with rules governing the cleaning and sterilization of beer manufacturing equipment. • The container is securely sealed by the permit holder or an employee of the permit holder before the container is removed from the premises. the container must be secured in such a manner that it is visibly apparent if the bottle has been subsequently opened or tampered with. • The container is stored in the trunk of a motor vehicle or, if the motor vehicle does not have a trunk, behind the last upright seat or in an area not normally occupied by the driver or passengers and not easily accessible by the driver. • The proper beer carry out minimum mark up of no less than 25% is added to the cost of the beer contained in the growler. he Ohio House now has Substitute Senate Bill 173 under consideration. Substitute Senate Bill 173 modifies the manner in which tastings can be done at state agency stores. While this is clearly a benefit for state agency stores, it also benefits on premise locations as well. A more informed customer is not only better able to communicate what they want, but also be more likely to order higher end product. through these tastings, consumers are being opened up to new products that may be a stepup from what they are currently drinking. in addition, the tasting of these products can give you, a bar owner, a sense of what is customers want in your establishment. With ever increasing innovation and new products, having an initial opportunity for the public to try a product before you begin ordering for your bar can help you. the Ohio licensed Beverage Association, Ohio grocers Association and the Ohio Spirits Association have worked directly on the spirituous liquor tastings issues. Anheuser Busch and

MillerCoors also have language that deals with the tasting of their products in oďŹ&#x20AC; premise establishments (which is currently legal). During the Senate process, OSA and the Ohio grocers Association testified before the Committee in support of the bill. the language in Substitute Senate Bill 173 regarding tastings allows for the following: 1. increasing the number of tastings per store from 5 per month to 10 per month. 2. Make corrections on charges for product in tasting process. 3. limiting it to two tasting events per day per location with a minimum of one hour b e t w e e n events; and 10 days' notice of an event to the ODlC

Maxwell's Pic-Pac v. Dehner By DAve RABeR

he U.S. Court of Appeals for the Sixth Circuit released its opinion in Maxwell’s Pic-Pac v. Dehner, and in doing so upheld Kentucky’s long-standing prohibition on wine and liquor sales in grocery stores and gas stations. the court

held it serves a legitimate purpose and doesn't violate the equal protection clause of the Fourteenth Amendment to the U.S. Constitution and that the district court had misapplied the appropriate standard for an equal protection challenge. in siding with the State of Kentucky, the Court found multiple rationales the legislature could have conceived would reduce access to high-alcohol products through such a prohibition. in order to uphold the law the court needed only to find “any reasonably conceivable state of facts that could provide a rational basis for the classification”, something the court found could plausibly exist in the eyes of the legislature. the court cited often from toward liquor Control. in 1933 John D. Rockefeller, Jr. commissioned Raymond Fosdick and Albert Scott to study alcohol regulation

and prepare America for the return of legal alcohol and its regulation. they produced toward liquor Control, which provided guidance to policymakers as they set up regulatory systems for alcohol, and much of that framework still exists today. have written about 75% of this article four times now . . . unfortunately, i am not sure i am any closer to completing an insightful, well written piece than i was when it was a blank piece of paper! And i do recognize your are mumbling to yourself “since when is anything he has written been either insightful or well written!” i want to write about excise taxes and how they are just an awful idea. i am talking about taxes on beer, wine and spirits and on cigarettes and other tobacco products. i am talking about a tax on people that rarely goes to any rationally related service to the product. A gas tax goes to help fund roads or a lodging tax goes towards funding marketing eﬀorts to generate more overnight stays. . . makes sense (without getting into an argument about taxes in general!). But a tax on beer, wine and spirits and cigarettes goes towards . . . . . building sports stadiums or possibly towards giving all Ohioans an income tax cut? let’s face reality: some people drink (roughly 53.5% of Ohioan’s according to the Centers for Disease Control) and some people smoke (roughly 23% of Ohioan’s according to the Centers for Disease Control). Why are we asking these individuals to fund our entertainment or our tax reduction? government incurred costs for these activities are already paid for through the sales taxes that are collected on the sales of these items. www.ohiobeveragemonthly.com

in Cuyahoga County, there is a $0.30 tax on each pack of cigarettes to fund the arts! is there any sort of rational connection to asking less than a quarter of the population to fund a program that is enjoyed by everyone? And in regards to funding “renovations” of sports stadiums, apparently grabbing a bottle of wine to have with dinner is rationally related to the Browns, indians or Cavs. Apparently it makes more sense than just charging more for a ticket! And to be clear, i love the idea of no state income tax; i love that we continue to chip away at it. i do not like the idea that a) i still pay the same amount of money, just at a different time, b) those who do not drink or smoke get a huge benefit; and c) those that can least afford it are being asked to pay more! Some interesting numbers i came across: • According to the American Beverage institute (www.nodrinktax. com) o over one-third of all alcohol consumers come from households having income of less than $50,000. o A 2009 alcohol tax increase in the State of Kentucky actually reduced alcohol tax revenue by 55% one month after the increase went into effect o the 1991 federal excise tax increase on alcoholic beverages resulted in $2.4 billion less than Congress forecasted over the succeeding 5 year period o Direct alcohol excise and sales taxes levied at the federal, state, and local levels account for more than one-third of the shelf price of many popular brands. o government at all levels earns $2 from the sale of beer, wine, and liquor

for every $1 earned by producers, wholesalers, and retailers. o When indirect taxes and fees associated with the production and sale of beverage alcohol are included, the total tax burden accounts for more than half the price that consumers pay for most brands. • According to RJ Reynolds (www.rjrt. com/statemsapayments) and the CDC (http://www.cdc.gov/brfss/) o $2.26 of the cost of each pack of cigarettes is for federal and state taxes; that is $1.25 in Ohio tax and $1.01 in federal tax o 49% of smoking households in Ohio have a median household income of $25,000 the fact of the matter, both of these taxes disproportionately target lower income households. those households are being asked to fund lower ticket prices; they are being asked to lower the income tax . . . sure, the smoker and drinker will pay more, but when 75% of the people don’t smoke and 46% of the people do not drink, it makes it easier to not upset the masses.

f you’re looking for bright spots in the world of Irish whiskey, it’s hard not to find them. The question is where to start. For example, ground has recently been broken in County Carlow for the new 25 million pound Walsh Whiskey Distillery, a venture backed by the Italian makers of Disaronno Liqueur. Meanwhile to the northwest, William Grant & Sons, owner of Tullamore D.E.W., will fire up the stills next fall at their new distillery, the first in a generation for the brand. Those two are just part of the unprecedented Irish whiskey distillery boomlet, to be followed by other new facilities including one at a former Diageo brewery site in Dundalk and another right in Dublin. All this, of course, complements the enormous expansion of the new Midleton Distillery, headquarters of Irish Distillers’ broad portfolio of whiskies, including world leader Jameson. Beam Global’s assimilation of Kilbeggan and other brands formerly owned by the Cooley Distillery continues apace. And among whiskey aficionados, there’s been great enthusiasm for such hard-to-get brands as Greenspot, a legendary Irish whiskey that even competitors have been known to pack when returning from Ireland, and 21 Year Old Red Breast Pot Still Whiskey. These changes are a result of Irish whiskey’s role as the fastest-growing whiskey in the world over the last five years, leaping from 4.4 million cases to 6.5 million since 2008, with analysts expecting that growth to hit 12 million cases in the next five years. In 2012, the last full year for which numbers are available, Irish grew 22.5% in the U.S., according to the Distilled Spirits Council of the United States, with super-premium brands

and extensions up an astonishing 86%. The U.S. is the largest and fastest growing market for Irish whiskey with sales of 2.2 million cases in 2012 and is now a larger category than single malt Scotch here.

RAPID MARKET CHANGE Quite a difference from about 20 years ago, when every major and most minor brands were owned by one company. Yet there’s still a long way to go before Irish gets anywhere near its preProhibition standing as THE imported whiskey in the U.S.

To expand the Irish category, marketers actually encourage retailers to take on competitive brands in order to broaden the selection for curious consumers. “Irish whiskey is still in its infancy,” says Pernod Ricard USA VP Irish & North American Whiskey Paul DiVito. “It’s one of the smallest categories by volume and even though there’s been double digit growth for well over a decade we expect the category to double over the next five years.” The changes in the Irish business and the entrance of deep-pocketed rivals like Beam and Grant is welcomed, he says, to spur on further growth. “In ten years or so, all these new distilleries will be producing some amazing whiskies and we’re going to give Scotch a run for their money a real

changing of the guard,” says DiVito. To expand the category, he and other marketers actually encourage retailers even to take on competitive brands in order to broaden the selection for curious consumers. DiVito points out that traditional markets like New York and California continue to thrive, with states including Texas and Florida presenting huge opportunities for the category. “Whiskey is as popular across all regions of the U.S. as it has ever been and the whiskey consumer is becoming more diverse—younger, female and multicultural,” says Yvonne Briese, VP North American and Irish Whiskies for Diageo. “These new whiskey consumers are more educated and savvier. They seek high quality, crafted products with great stories.”

Adding new dimensions Brand reps see lots of cause for optimism. Irish whiskey drinkers tend to skew younger than with other whiskies, and are showing an openness to exploration beyond standard entry-level blended Irish whiskies. Even the burgeoning flavored whiskey market shows promise: Pernod Ricard, owner of Irish Distillers, recently relaunched Paddy in the U.S. as an entry

Ninety days into the launch, the flavors are “enjoying tremendous success,” says DiVito. That success is no surprise to suppliers of Bushmills, who launched the first flavored Irish in the U.S. a few years ago. “Bushmills Irish Honey has opened up more opportunities with consumers through creating a more approachable whiskey,” says Briese. “Our research shows that flavored whiskey is recruiting consumers from other spirit categories. It is also expanding occasions for our current whiskey drinkers.” Taking an even bolder approach, M.S. Walker is launching Kennedy Irish, an innovative line of an “Original” whiskey plus four 70-proof infusions: Limed, Honeyed, Spiced and Chillied. Handcrafted in West Cork, the line will sell at a competitive $22 price point.

fans among Irish drinkers looking for more spice and fuller flavors. Now at the original 42.3% ABV and non-chill filtered, the brand is being positioned as the next place to go for explorers within the category, says DiVito. In addition, there’s a new Single Pot Still expression, Powers Signature Release, joining the ultra-premium Powers John’s Lane, released last March. Th at sen se of exploration among consumers of Irish has brought most brands to expanded offerings. “Like a lot of whiskey drinkers, a portion of Irish drinkers are becoming explorers, and we find they stay with Irish but want other expressions. Within the category, we’re making those expressions more available as we can, all the way up to Redbreast,” he says. For instance, Pernod now offers four iterations of pure pot still whiskey—Powers John Lane, Midleton, Redbreast and Green Spot. Other suppliers have accentuated single malt offerings, while recently, Grant has offered a variant called Tullamore Phoenix, a 55% ABV limited release. While a broadening range of distinctions mark the Irish category’s current offerings, from a packaging and image standpoint suppliers have remained mostly traditional, with many brands

directly evoking authentic Irish culture and family names. One of the most successful ongoing examples is Michael Collins, named for the legendary hero synonymous with Irish independence. The lightly peated Michael Collins 10 Year Old Single Malt and the recently repackaged Michael Collins Blended Irish Whiskey, imported by Sidney Frank Company, are both available nationwide. Concannon has done well since the 2012 U.S. launch, presenting both a four-generation-family connection to Ireland and a novel twist—aging in Concannon Petite Sirah barrels. Brand new (and naturally just in time for St. Patrick’s Day 2014), the Donegal Estates brand, from Star Industries, is well positioned with a bourbon-cask-aged profile and classical label. Speaking of classics, and also launching this month, here’s an interesting new variation on a beloved theme: Irish Mist, the honeyed whiskey liqueur dating back to 1947, has engineered a sort of reverse line extension, releasing a straight Irish

Whiskey. The only global brand to have the word “Irish” in its name, Irish Mist Whiskey plays off the flavorful base recipe of the original liqueur. A blend of four-year-old whiskies that have been triple-distilled and aged in American oak, the whiskey delivers aromas of raisins, vanilla and soft spice, with hints on honey and toffee on the palate.

Keeping the Flames Burning Sensing they have a proverbial tiger by the tail, suppliers and marketers are ramping up promotions. In order to spur the sense of discovery about their brand, Tullamore has hired a national brand ambassador and six others for local markets. “Whiskey requires more education for consumers and the trade to understand the differences and the back stories of the brands,” says Reilly. “True advocacy can’t come from hoping from city to city. The grassroots approach bears fruit over time, having ambassadors who understand the local markets working there.” Building awareness that Irish is a family of whiskies—blended, pot still, single malt, cask strength, even peated—is the goal of Kieran Folliard, the founder of 2 Gingers Whiskey and Beam’s Irish brand ambassador in the U.S. The 2 Gingers brand has become a phenomenon since

ike with Scotch whisky, the biggest selling Irish whiskies today are blended, a mix that usually includes grain whiskey with some pot still whiskey or single malt whiskey added in varying percentages. At least one brand— Tullamore D.E.W.—is made up of all three styles. But on the growing US market for Irish, a multitude of types —pot still, single malt, grain, blended, cask strength—are being offered. Most blended whiskies are predominantly grain with some 20-30% malted whiskey or pot still whiskey added in. Grain whiskey is just that— whiskey made from wheat or corn or another grain, usually in a column still. It can be made using malted and unmalted barley as well, although that is considered uncommon. Single Pot Still Irish whiskey is today a mix of malted and unmalted barley distilled in copper pots, a style said to have been created as a way around British taxes on malt. Once oats and rye might have been in the mix as well. Single malt, like with Scotch, is a whiskey that comes from only one distillery and not mixed with grain or pot still whiskies.

horse, with it and Kilbeggan showing growth rates above 60% last year. 2 Gingers is in the midst of a national roll-out and Beam’s focus is being rewarded as the brand has surged to second-most popular Irish in some Midwestern states, he says, a result of focus on Irish pubs, sports bars and high volume operations where he targets non-whiskey drinkers for conversion before stepping them up to their other brands— peated Connemara, grain Greenore and single malt Tyrconnell. It’s a model other Irish whiskey companies are emulating. “Most people are entering the category through standard blends and are doing so due to the smooth and sweet taste they deliver,” says Jack Teeling, founder of the Teeling Whiskey Co., now imported by Infinium Spirits. “We think there is an opportunity to build on this taste profile by producing more flavorsome blended Irish whiskies and also allowing them to move up the flavor ladder into the world of Irish single grain and single malts.” Teeling expects to launch in the U.S. this spring and to be distilling in a new facility in Dublin by the end of the year. Those new distilleries are being built with an acute awareness of the changes in the U.S. whiskey-making and drinking market. “We position ourselves as the craft Irish whiskey producer, creating super-premium whiskeys,” says Conor Chase, brand manager of Palm Bay-imported The Irishman, which has among variations a Founder’s Reserve Pot Still Blend, made with 70% single malt and 30% pot still whiskey, a style of Irish more common pre-Prohibition. “Today in the USA there is a huge movement towards craft products, which indicates a clear demand for premium and quality products. This has reopened the door to traditional and different styles of Irish whiskeys, which are currently less common there,” says Chase. ■

on’t look now, but a passionate love affair has broken out between Rhône Valley wine producers and American drinkers. First, the numbers: Among all French wine regions, Rhône wine sales to the U.S. trailed only Bordeaux in terms of volume through the first nine months of 2013. It was third to Bordeaux and Burgundy— both very high-ticket regions—in terms of dollar sales. But the real clincher is that Rhône sales to the U.S. rose an incredible 12.4% during that period while overall French wine sales here decreased slightly by 0.6%. Over the past eight years, Rhône wines sales to the U.S. doubled, reaching about 18 million bottles. “Value and variety are driving Rhône wine sales,” says Shyda Gilmer, chief operating officer of NYC retailing stalwart Sherry-Lehmann. “You can still

get wines for under $20 from Côtes du Rhône, Gigondas, Vacqueyras and other villages in the southern Rhône. People are discovering Rhône today the way they once discovered all the areas of Burgundy.” “The health of the Rhône wine business has never been better,” says Bruce Neyers, national marketing manager for the importer Kermit Lynch. “There have been five to six consecutive good vintages, and there is great customer recognition of quality.” Marsanne, one of the region’s main white grapes, is usually blended with Roussanne and sometimes Viognier, to yield wine in a rich, mouthfilling style.

FAITH IN AMERICA Rhône suppliers say quality-for-price as well as mutual respect are what is driving this love affair. “Our Côtes du Rhône sales are up about 20% over 2012,” says Philippe Marchal, who, as French portfolio manager for Kobrand, handles

he Rhône River cuts a canyon through mountains just south of Lyons. Here, on mostly crumbled granite soils, vineyards cling to steep mountainsides in the colder, wetter, continental climate. The Syrah grape stars in the north, via the CôteRôtie, Hermitage and, increasingly, Cornas appellations. Condrieu, made from Viognier, is the primary great white wine. Northern Rhône wines are made in small quantities, accounting

for less than one-tenth of all Rhône production; not surprisingly, prices skew higher. As the river continues south and begins to fan out as it approaches the sea, there is less rain, more sun and a Mediterranean climate—with plenty of accessible land to grow grapes for red, white, rosé and sweet wines. Here, most of the best red wines are anchored by Grenache grape, and primary whites include Roussanne, Grenache Blanc and Marsanne. The most expensive are the reds and whites of rock-strewn Châteauneuf-du-Pape, although some of the better “village” reds, such as Gigondas, are rising in value. In addition to the village wines (there 18 of them), more-affordable, yet high-quality wines are sold as Côtes du Rhône and Côtes du Rhône Villages and produced in red, white and rosé.

the Château Mont-Redon brand. “It’s a great value at about $12 a bottle.” Michel Chapoutier, who took over his family’s Rhône-based M. Chapoutier wine business in 1990 at the age of 26, emphasizes mutual trust. “Unlike some others, Rhône refused to jump with both feet into the Chinese market,” he says. “We decided not to turn our backs on our original big markets, such as the U.S. We didn’t abandon them. We were faithful, and now they are paying us back.” One might say that Rhône producers were as steady as the rocks of Châteauneuf-du-Pape. As demand has risen, quality has also increased in many established areas, and lesser-known regions are being discovered. “In the Northern Rhône, St. Joseph and Crozes-Hermitage have long been good wines, but not thrilling wines,” Neyers says. “Now they are thrilling. And the same thing is happening in southern Rhône. It used to be only Châteauneuf made great wines. Now you see great wines being made in Gigondas, Rasteau and Vacqueyras.” Importer Robert Kacher agrees. “You have great values of $25 to $35 bottles of wine from, for example, CrozesHermitage,” he says. Kacher also imports wine from Seysseul in the northern Rhône, an area that has seen many new vineyards and great excitement.

PERCEPTION FUELS REALITY “We did an opinion survey in the United States last year of consumers and trade,” says Louise Rasse, export marketing manager for the Inter-Rhône trade group. “The unaided response among wine professionals of what were the important wine regions throughout the world placed Rhône at number 4, behind Bordeaux and Burgundy and just behind Rioja.” In the $10-$20 price range, 93% of trade respondents rated Rhône as of excellent or good quality. Consumers were equally favorable in the survey. Rhône ranked highest among French regions in terms of quality in the $10-$20 category and reported their

purchases of Rhône wines had increased by 4% over the three months prior to the survey.

A FEW CLOUDS Not that everything is lovey-dovey, especially in the northern Rhône. “Southern Rhône gives us our biggest bang for the buck,” says owner John Murray at State Line Liquors in Elkton, MD. “But it’s become a harder sale with Hermitage, Côte-Rôtie and many of the northern Rhônes,” Sherry-Lehmann’s Gilmer agrees: “We sell less and less of Côte-Rôtie and Hermitage, and it used to be something we couldn’t keep in stock. Most of our sales now are to collectors who want to keep their verticals [wine from consecutive vintages] going.” And with the possible exception of Châteauneuf-du-Pape blanc, there is little reported demand for Rhône whites.

An interesting part of the growth in Rhône sales is that many suppliers view the Rhône Rangers in California—winemakers who grow Rhône varieties—as allies, a sort of Rhône outpost in America. “Look at what happened to Burgundy sales after they started making great Pinot Noirs in Oregon,” importer Kacher notes. “I’m proud at what these guys are doing in California with Rhône grapes.” One of these California guys is Jason Haas, who sees both sides of the Rhône varietal business. He heads the family’s winery in Paso Robles at Tablas Creek, co-owned by the Perrin family of Château de Beaucastel, plus the Haases’ Vineyard Brands are importers for Perrin’s Rhône wines. “It’s always been a positive interrelationship between Rhône and the Rhône Rangers,” Haas maintains. “I think on the East Coast, the popularity of Rhône wines opened doors for the Rhône Rangers, while on the West Coast the Rhône Rangers helped increase the popularity of Rhône imports.” Kacher thinks that, in addition to good value, wines from the Rhône— especially the south—are prized for their consistency. “It’s a bit like Napa Valley in that average vintages in the Rhône are better than elsewhere else. Rhône wines are always ripe.” And, as sommelier, wine consultant and restaurant developer Fred Dexheimer puts it, “Because of their variety and value, Rhône wines are always going to be popular in the U.S.” ■

ome of the Rhône’s tastiest and best-priced wines hail from Lubéron and Ventoux— two AOCs that are often mistakenly thought of as part of Provence. The landscape and climate are similar— but their soils are more Rhône-like, and the Lubéron in particular benefits from high-altitude which yields wines of greater acidity. Marrenon, a cooperative of 1,200 different growers, makes the lion’s share of the region’s wines. Offering loads of fruit as well as elegance, these are wines that appeal to New World and traditional palates alike. Orca, a top-tier offering at $19, is a powerful, balanced red that delivers far more complexity than its price suggests.

ore and more Americans are taking their doctor-recommended “apple-a-day” in liquid form. Cider—the you-must-be-21-yearsold-to-purchase cider—is growing fast.

Statistics for 2013 aren’t yet available, but in 2012, sales of the top ten cider brands grew by 62.6% according to Impact Databank, continuing a trend that began several years ago—sales of domestic ciders tripled between 2007 and 2012. Established players saw some of that growth, but the biggest change in the past couple years has been the entry of big players from the world of beer: ABInBev rolled out Stella Artois Cidre, and MillerCoors Tenth and Blake division purchased Crispin, which subsequently doubled its annual volume. Heineken USA’s commitment to the category is clear in the recent makeover for their Strongbow brand, whose point of distinction is usage of both bittersweet and culinary apples in production. On top of repacking the entire line,

Strongbow is relaunching Gold Apple with a new, more refreshing recipe, as well as a new flavor, Honey & Apple. The Boston Beer Company also re-entered the category, retiring the Hardcore Cider brand in favor of Angry Orchard; it went from 40,000 cases in 2011 to 2.2 million the following year, making it the second-largest player in the category after Woodchuck. Explaining cider to customers can be a challenge, though. “Apples hold such an iconic place in the American psyche,” says Kohn. “There’s a flavor people equate with apples, and it’s hard to get over that.” Alcohol, sweetness, and carbonation can also vary greatly. Technically, cider (which is not necessarily labeled “hard” cider) is fermented juice (typically apple). Althougth a natural first reaction is to compare it to beer, cider is arguably

closer to wine in terms of production and end product. Like wine it can range from fruity to earthy to funky, be light-bodied or full, tannic, or sweet, sparkling or still. And appley, but not just like apple juice. Interestingly, the growth in massproduced cider hasn’t left more artisanal brands behind. Oregon’s Wandering Aengus has seen sales double each year since 2005. “The big players aren’t a threat,” says their cidermaker, James Kohn. “They’re more of an opportunity. They’re out there marketing the concept.” Nonetheless, he adds, “There’s a huge distinction in market, industrial cider versus artisan cider. It’s engineered, but it’s still apples.” (Or apple concentrate). He notes that an industrial producer can stretch out 2,000 gallons of cider from 1,000 gallons of juice, whereas a craft producer would end up with under 1,000 gallons.

Science tricks borrowed from kitchens have mixologists concocting brave new drinks BY W. BLAKE GRAY

s bartenders increasingly invade the kitchen, they’re not just foraging for ingredients anymore. They’re taking advantage of the same modern technology as chefs, and sometimes inventing new ways of using it.

Sous-vide (low-temperature waterbath cooking in sealed plastic bags) was invented in the mid-1960s as an industrial food preservation method: remember salisbury steaks? Only in the last decade has it gone upscale, and made a sous-vide vacuum sealer a must-have in many restaurants. Now it’s one of the most popular cooking tools for bartenders to appropriate. Ironically, this “slow” technique can speed things up at the bar. “I use sous-vide for infusions,” says Saul Ranella, bartender at Hi Lo BBQ in San Francisco. “Sometimes those take three weeks, especially if I’m using hard spices like cinnamon and cloves. In sous vide, I can do them in maybe eight hours.”

The method is simple: Put whatever ingredients you want to infuse in the vacuum bag, suck the air out and seal it. While chefs put the sealed bag in a pot of boiling water to cook it, that’s not BANGKOK always necessary for infusions. DAIQUIRI At Pint & Jigger in Honolulu, White rum, lime, Thai basil owner Dave Newman shortcuts Booker & Dax, the two- to three-month process of NYC making barrel-aged cocktails. He puts the cocktail ingredients with Jack Daniel’s smoking chips, made from whiskey barrels, in a sous-vide bag. Newman says the drinks take on the desired woody flavors and silky texture in just three days. He has used this method to make faux-barrel-aged versions of the Boulevardier, Martini, Dark ‘n’ Stormy and Vieux Carré.

At the Cordúa restaurants in the Houston area, beverage director James Watkins uses sous-vide to infuse the flavors of seasonal fruit into Tito’s Handmade Vodka—a popular combination because Tito’s makes no flavored vodkas. Watkins has made house vodkas with black Mission fig, pumpkin and butternut squash. At his previous restaurant, Soma Sushi, Watkins created a big hit with his customers and bartending staff alike by creating a sous-vide Mojito variation. He infused mint, sweet basil, kaffir lime leaves and lemongrass into Bacardi rum, which could then just be poured over ice, saving bartenders the time-consuming work of muddling each drink. Julian Cox, a popular Los Angeles bartender responsible for the drink lists of at least five trendy establishments, has gone beyond fruit and herb infusions. Cox uses sous-vide for fat washing; he cooks a spirit like rum with butter for four hours and then freezes the sous-vide bag. The fat congeals off, giving the rum a rich buttery flavor and softer texture.

Booker and Dax is in the Momofuku empire, so he has access to lots of expensive high-tech cooking equipment. His latest favorite technique for infusions, however, comes from something quite a bit cheaper than a

For many infusions Arnold prefers an iSi cream whipper, about $90 from Amazon. For infusing liquids into solids, such as creating a cucumber filled with gin, Arnold likes the vacuum atmosphere of sous-vide. He also prefers sous-vide for infusing liquids together. But for infusing flavors of a solid fruit or vegetable into a liquid, he prefers the iSi. For example, he might infuse sliced ginger into vodka, or orange peel and Thai basil into rum. “The iSi blows the stuff out in a much more effective way than the vacuum can,” Arnold says. One advantage of the iSi is that the process is very fast, even compared to sousvide. Usually Arnold puts his ingredients together in the iSi for only about one minute. A change of even 30 seconds can make a big change in flavor and color of the finished infusion. It’s either a good or bad point that the iSi is small, so bartenders must test their infusions in small batches. Arnold, who calls himself the black sheep from a family of doctors and

engineers, compares cooking to science because “both need repeatability.” Especially when a beverage director develops a cocktail, he wants his bar staff to be able to create that same cocktail without him present. Hi Lo BBQ bartender Ranella warns that when working with fresh fruit, infusion recipes may not be as repeatable as desired. “It’s hard to follow a formula because the fruit changes,” Ranella says. “I get very different citrus in February than in January. You need to taste and adjust it. The citrus I’m getting right now [in January] sucks. I’d have to use a lot more to get the same flavor.” At most bars and restaurants, housemade seasonal infusions are a selling point on the drinks list, and are used to entice repeat customers looking to taste something novel. But ingredients and techniques are different. At Arnold’s technologically savvy bar, where he says 75% of drinks have some ingredient that has been through a centrifuge, none of the wizardry is listed on the menu. “You’re opening yourself up to getting knocked by people that you’re too fascinated by technology,” Arnold says. “Early on, we made a decision that everybody who works here knows how we do it. They know the techniques. If somebody asks, we’ll tell them how it’s done.” And if not? Don’t think about vacuums: Just enjoy your parsleyflavored gin. ■

Hearty Burgundy Marks 50 Years with New Commemorative Package BY W. R. TISH

he term iconic is not one to be bandied about lightly, but if ever an American wine deserved this status, it is Gallo Family Vineyards Hearty Burgundy. This year marks the 50th anniversary of the humble red wine—a cross-genre blend that captured American hearts and palates long before the current parade of Red This and Red That. Now, five decades later, Hearty Burgundy has been re-addressed with a fresh formulation, and redressed with a commemorative 1.5L bottle. What set Hearty Burgundy apart, and kept it relevant and popular for so long, is its simplicity. Always non-vintage-dated, it was—and is—a generously flavored, smoothtextured red wine at a bargain price (the current 1.5L retails for $8.99). Hearty Burgundy helped put wine on America’s dinner table—and literally put California on the map during an era when spirits led the market. In 1972, Hearty Burgundy graced the cover of TIME magazine; in a feature on the booming California wine industry, critic Robert Lawrence Balzer called it “the best wine value in the country today.” VP of Marketing Stephanie Gallo— who now oversees the brand but was born nearly a decade after the wine was born— presented the commemorative bottling at a press luncheon in New York City. “What’s great about Hearty Burgundy is the stories people tell,” she shared. “So many people say, ‘I got into wine because of Hearty Burgundy.’”

Approachable & Affordable Harkening back to the original blend, the golden anniversary bottling was crafted with input from the blend’s original winemakers. Although the exact varietal components have varied over the years, two grapes have always played a prominent role: Zinfandel for its brambly berry notes and Petite Sirah for its depth of dark fruit.

FUN FACTS HEARTY BURGUNDY ✪ Applying “Burgundy” to California wine is no longer allowed, but Hearty Burgundy was grandfathered in at the time when the U.S. agreed to restrict the use of European regions on American labels. ✪ The original bottling sold for around $1.50 (750ml) and displayed the words pastoso and scelto, translating to full-bodied and specially selected. ✪ Hearty Burgundy’s status as a non-vintage wine was based not on production considerations, but rather perception; back in 1964, Gallo’s marketing people feared that vintage dating would confuse people. ✪ In the 1960s, more than half the fruit in the blend came from Napa and Sonoma. ✪ One factor in Hearty Burgundy’s easygoing style is its modest alcohol of only 12.65%.

(Note: while only the 1.5L will sport the special packaging, Hearty Burgundy is also available in 750ml and 187ml bottles.) At its press debut at classic Italian restaurant Carbone in New York, Hearty Burgundy was poured alongside the Gallo 2010 Signature Series Napa Valley Cabernet. And it held its own quite well, complemented fittingly by spicy rigatoni. Stephanie Gallo noted that the wine was her grandfather Ernest’s favorite, adding that Hearty Burgundy was designed “to be enjoyed with Italian foods, around the dinner table, with family and friends.” Mission accomplished, then as now. Practically synonymous with California wine, E. & J. Gallo Winery has been family-owned and operated since 1933. Amid a portfolio diverse in wine types, origins, styles and pricing, Hearty Burgundy has remained true to its original mission of approachability and affordability. Its $8.99 tag for a magnum stands out as remarkable, especially given the spate of California wines hovering in the $10-$12/750ml range. It’s a tasty reminder that it’s not so unusual to produce a small quantity of great-tasting wine; but releasing a lot of well-made bargain-priced wine is a real achievement. ■
