apan has an artistic history as deep and rich as any in the world, covering an array of media such as pottery, woodblock, silk, paper and ink. Traditional Japanese art is renowned for its distinctiveness, but a more modern form of Japanese art is also gaining admiration. The medium deviates from tradition and is always unique to the person for whom it's created. Sadly, these works of art are only temporary, always getting chipped away by the hands of time. To many, this only adds to the style’s allure, much like the fleeting beauty of the Japanese cherry blossoms. This artistic style is commonly known as “nail art.” Beginning in the mid-1990s, Japan’s nail-care and nail-art industry had an estimated market size of ¥201.5 billion. In 2010 it nearly doubled. What began as a day at the salon has morphed

inside

into a serious art form complete with exhibitions and competitions. This impulse to adorn is clearly exhibited in nail art with designs ranging from trendy to downright outrageous. At times the dangerously long and intricate nail designs render your hands useless for all intents and purposes. Fortunately, there is a whole other industry dedicated to inventing gadgets to help nail art aficionados do things like open cans, wear gloves and use their cell phones, all while protecting their masterpieces. On Okinawa, you would be hard-pressed to find a nail salon that doesn’t offer nail art. Toenail art is also popular and often included in the cost of pedicures. Two popular salons among Americans are Dulce (located outside of Camp Foster’s commissary gate), and Cocok (located on Route

f you’re a newcomer to Japan, eating sea urchin is something you may not have considered. The roe of the strange beast is found in sushi and many cuisines of the world. Sea urchin roe is more frequently called uni and is not roe at all—it is the organs that produce the roe. In other words, it’s the ovaries. Although uni is often referred to as erizo de mar in other countries such as Korea and Chile, the manner in which this delicacy is consumed remains the same: raw. Apart from domestic consumption, Chile and some other countries import sea urchin from Japan to meet its demand. Although uni is an acquired taste, it continues to be in high demand around the world, which is reflected in its price. Gathering the roe from a sea urchin requires an intense process that

dissects each of the five lobes in the urchin. Harvesting roe is a delicate procedure with obstacles that constantly threaten the consistency of the meat. Uni ranges in color from rich gold to pale yellow with a creamy texture. When shopping for fresh uni, you should look for the brightest color-

ing. Bright yellow is ideal, but bright orange is equally as good. The pieces should be firm and fresh. Uni is a seasonal item with December as the peak month for quality uni. As it begins to emerge in restaurants and San As, be brave and give it a go.

If you have any burning questions about Japanese culture, please send them to OLW@okinawa.usmc-mccs.org.

o matter who you are or what life you lead, we are all joined together by one aspect that gives us some form of structure in our days, sequence, social fabric and color: mealtimes. However, the terms "breakfast," "lunch" and "dinner" have become more of an institution, nuance and otherwise forgettable tangent than daily dips into your private epicurean. Why, food is a carnal pleasure in life, a ritual we are invited to every day and yet we forget who we are: simple primates with simple brains that light up like bugs when we relax and enjoy a meal. It’s something easily forgotten but much more easily retained under the right circumstances, and there is no better place to enjoy the ritual and revelry of food than at Tori x Shin. Once you slip off your shoes, received by the faint warmth of the coal you’re transferred to a differ-

ent atmosphere. You leave your job, your relationship, your broken AC and your melanoma looking mole in your shoes. Inside Tori x Shin only a couple things matter—good eats and good times. Take time to remember what you really are by losing what you think you need. Tori x Shin specializes in fresh-

off-the-grill meat and first-rate kushiyaki (grilled meat on skewers). The best meals are simple dishes that are executed with a touch of mastery, that clandestine relish that can remind you that you’re still not so civilized. Just try any of their pork, beef or chicken dishes to know what we mean.
