ou don’t have to be on Okinawa long to realize that some things–such as fruit–are very expensive year-round. However, the high prices of fruit simply reflect the meticulous measures farmers go through to grow the fruit; it’s a long process of trimming and nurturing until all that is left is the perfectly-shaped, delicious gem. The key is quality over quantity. Vines are pruned of excess fruit and foliage leaving only the desired crops. Crops are then able to grow uncrowded on their own vine, and nutrients can be fully concentrated to the single fruit. Each fruit is housed in its own cage and rotated daily to achieve a uniform shape and color. Farmers spend so much time perfecting fruit because in Japan, fruit is considered a luxury product.

inside

Fruit is considered a gourmet gift to give someone– typically on special occasions such as weddings, business transactions and even hospital visits. It is also given to show appreciation, courtesy and to build friendships. The Japanese perception of “quality” of fruit in Japan is deemed to be much higher than fruit from other countries. Fruit is not a dietary staple in Japan, and there is no guideline to eat a certain amount every day. Most fruit in Japan is considered more of a dessert, treat or gift. So next time you’re in a grocery store and gasp at the pricey fruits, just remember how much work, care, and time goes into making sure it is perfect.

Homemade Remedies

hile chicken soup is the cureall comfort food of Western culture, Japan’s equivalent cold remedy is okayu. Okayu is a rice porridge made by boiling rice in either water or dashi (fish stock). Umeboshi (pickled plum) is often added for flavor. A simple remedy is tea—both green and black tea contain antioxidants that kill cold-causing strains of bacteria. Another remedy is eating grated daikon (Japanese white radish) mixed with honey. Eggs contain high amounts of Vitamin B2 that boost the immune system. Tamagozake is a remedy made by cooking egg in sake and adding honey for flavor. To neutralize its alcoholic effects the sake is boiled and cooled before adding the egg. Three foods regarded for their medicinal powers are mikan (tangerine), shoga (ginger) and kokuto (unrefined brown sugar). Even the peel of the mikan is used in one remedy that in-

volves wrapping garlic, mikan peel and umeboshi in aluminum foil and cooking them in a pan over medium heat until the ingredients blacken. One of the most ancient of the Japanese natural cold remedies is shoga (ginger). Ginger is used to treat everything from stomach pain, nausea, poor circulation and stuffy noses. As a sore throat remedy, drink a mixture of grated ginger, hot water and honey. One remedy unique to Okinawa is

kokuto, or kuro-zatô (“black sugar”). Kokuto is processed differently from white sugar so nutrients like potassium and even antioxidants are still present. Many Okinawans swear by its health benefits, which include longevity and memory improvement. So the next time you have a fever, whip up a bowl of okayu and some mikan slices. These simple remedies pave the way to swift recovery.
