ou may have seen those plastic food replicas in display cases of restaurants. Each plastic food dish is created by a plastic food artisan with secret techniques and ingredients used in each of their craft. Much like master chefs, artists who make faux food attend school for a number of years to learn the craft. The kitchens look like those in any other culinary institute, but it’s the ingredients that are quite different. Instead of noodles and cheese sauce, artisans are working with silicon or wax. Kitchen paring knives and other utensils are used to give chopped ingredients authentic lines. The food replicas are expensive since orders are custom designed to each restaurant. Simple items range from $30 to $40 per piece. A piece of sushi can cost $70. The displays must be updated with menu changes, or about every five years as sunlight will damage the replicas and fade their colors.

Okinawan Health and Diet

kinawa has a reputation for being one of the healthiest places on Earth. The term “healthy,” of course, encompasses a wide spectrum of components. Not only is the average life expectancy 80 to 90 years old, Okinawa also has an unusually high percentage of centenarians and significantly low counts of age-related diseases such as cancer, Alzheimer’s, cardiovascular disease and dementia. The peaceful elders of Okinawa are often impressively active for their age. While genetics do play a small role in their successful aging game, the real secret to learn consists of five key parts: an antioxidant-rich diet, a virtual-

ly stress-free lifestyle, small caring communities, constant physical activity and a lot of spirituality. Generally, their diet is one heavy on fish and vegetables and light on

meat and dairy. Some of the most health benefit-wielding foods in a traditional Okinawan meal include: sweet potatoes, goya, konnyaku (a root vegetable), shiitake mushrooms, umibudo (sea grapes),

gobo (burdock root), hechima (a gourd), seaweed (like wakame and mozuku), ucchin (turmeric), fuchiba (mugwort leaves), hihatsu (a pepper) and ichoba (fennel). Many Okinawans also follow the ancient concept of hara hachi bu, or eating until you are 80 percent full. Not a particularly common practice in the west, hara hachi bu is an extremely healthy form of calorie restriction that can aid in digestion as well as weight control. At the end of the day, it all comes down to eating less of the unhealthy foods, including meat and dairy, and more vegetables and fish, no matter which diet you choose to follow.
