Love and Legacy in a Bottle
When you drink from a bottle of Tequila Ocho, you will be sipping the spirit of a family legacy rooted in the Blue Weber agave fields of Jalisco.
Even before the Camarena family were commercial tequila producers, they were agave farmers. That deep knowledge of agriculture and respect for the land can be tasted in each unique batch of Tequila Ocho.
Ocho co-founder and master distiller is Carlos Camarena, a fifth-generation agave farmer and third-generation tequilero. He and Tomas Estes, a bar and restaurant owner, founded the brand in 2008.
Carlos’s daughter, Fany Camarena, grew up learning about the intricacies of tequilamaking from tagging along with her father. She joined the company officially in 2014 and is now the commercial director.
“When I was a kid, I used to go with my dad to visit the agave fields, and since then, I fell
in love with everything that involves tequilamaking,” Camarena says. “When I was around 13 years old, I started working during school vacations in the bottling area at the distillery, just for a few weeks of the year, but I was always present in learning how to do every process from the ground up.”
Tequila Ocho is made from single-estategrown blue agave. Compared to many mainstream tequila producers, this approach is more akin to a craft-distilling process.
“We plant, grow, harvest or look after all the agave used for Tequila Ocho,” Camarena says. “My father, Carlos, is an agronomist first, tequilero second. Many of the fields are owned by our family, immediate and extended, or tended to by our family and the jimadors.”

This focus on sustainability and a farmto-bottle approach is a commonality that Camarena feels Ocho shares with the Vermont community.
“There is a mutual respect for land and raw ingredients that native Vermonters and our family and everybody at Ocho hold dear to heart,” she says. “Ocho is focused on respecting the great Blue Weber agave, the main ingredient used in tequila, and ensuring it thrives for generations to come.”
Tequila Ocho’s process sets it apart in the industry. Each bottle features agave from a specific field, showcasing the environmental characteristics that make every batch unique.
Tequila Ocho ascribes to concepts more commonly associated with wine-making, like
“Tequila Ocho was created to prove terroir exists in spirits, and more directly, in agave distillates,” Camarena says. “The concept of Ocho was valued by those who really knew and appreciated tequila, from both the consumer and industry side.”
Just as in wine, terroir — the characteristic taste and flavor imparted to a spirit by the environment — brings out the unique character of each field in Tequila Ocho, creating subtle distinctions between batches. Extensive tracking goes into tracking the field, harvest and growth of the agave.
“Tequila Ocho harvests agaves from one field at a time, and we note that field name and its characteristics on the bottle — essentially, a vintage,” Camarena says. “From field to field, there is nuance to be discovered in the profile of the tequila, as the agaves in each field are influenced by that specific terroir, including
microclimate, sun exposure, soil, altitude.”
Tequila Ocho is named for the Spanish number eight, as eight is a repeated part of the Ocho distilling process.

Aside from its distinctive outlook on singlefield harvesting, Ocho has a very slow agave cooking process, still using wood fermenters.
Fany Camarena is responsible for tasting each batch as it comes out of the still and taking the tasting notes that go on the bottles.
“Every time the flavor and aroma are varied with nuance because of the concept of terroir,”

she says. “But we need to make sure the agave flavor is the most predominant characteristic in our tequila.”
Camarena recommends sipping the tequila neat, in a fluted tequila glass, slowly.
“Really allow yourself to taste the tequila and discover those nuances,” she says. All tasting expressions of Tequila Ocho are going to be agave-forward and indicative of the Highlands of Jalisco.
“Our Plata is unaged, bright and crisp, with notes of agave, lively citrus, fresh herbaceousness and minerality,” Camarena says. “Ocho Reposado is incredibly well balanced, featuring notes of cooked agave, butterscotch, sweet spice, cinnamon and vanilla. Ocho Añejo features a complex profile of cooked agave, cacao, dried fruits and caramel. It's a truly delightful sip.”
She says Ocho pairs perfectly with food, from seafood to meat, or desserts.
With simple, straightforward ingredients, the award-winning spirit’s success stems in large part from the care and attention to process and production of the tequila.
“Only three ingredients are used in the making of Tequila Ocho: agave, water and natural airborne yeast. So, those last two ingredients are simply ‘of the land and place,’ “ Camarena says.

1.5 ounces Tequila Ocho Plata
2 ounces grapefruit juice
1/2 ounce lime juice
1/2 ounce simple syrup
2 ounces sparkling water
Use coarse sea salt for the rim. Combine all the ingredients, except the sparkling water, in an ice-filled cocktail shaker, then shake to combine. Strain into a salt-rimmed highball glass filled with ice. Top off the drink with sparkling water and serve.
MEZCAL VAGO OLD-FASHIONED
1 ounce Mezcal Vago Elote
1 ounce Elijah Craig
1/4 - 1/2 ounce rich simple syrup
3 dashes Angostura bitters
Combine all ingredients in an old-fashioned glass. Stir briefly to incorporate.
Add ice and stir for 15 seconds.

A destination for families for generations, there is an array of snowy activities to try out. Smugglers' Notch Resort has Alpine ski slopes across three mountains: Madonna, Morse and Sterling. There are two bases and a snowtubing hill that is located at the base of Morse Mountain. Also near the base of Morse is the Nordic Ski and Snowshoe Center, where you can power yourself through scenic trails or glide along the ice-skating rink.
Tipsy Affogato

Lake Morey is a more than 600-acre lake that offers plenty of recreational opportunities in the summer and is known for freezing solid in the winter, allowing for the creation of a 4.3-mile ice skating trail, plus rinks for pond hockey and night skating. While weather and climate are responsible for the timing of the lake freezing, the trail is generally open from mid-January through February. Resort guests can also snowshoe on the golf course with appropriate snow cover. The lake skating trail is free to access for all.
1 cup ice whipped cream and cherry, for garnish
Blend all drink ingredients in a blender until combined and smooth.
Pour into a dessert cup.
Top with whipped cream, maraschino cherry and maybe a fun straw.
Combine espresso, cognac and bourbon in a small measuring cup and mix. Scoop ice cream into a small mug or tea cup. Pour the espresso mixture on top.
Mad River Valley Trio

For a unique Alpine skiing experience, try Mad River Glen in Fayston. There are several notable features of General Stark Mountain (2,037 feet) that make it unique. It’s one of three natural snow skiing areas in North America that prohibits snowboarding. With challenging and diverse terrain that follows the mountain’s natural contours and ends up at a single-base area, it’s perfect for seasoned skiers and families alike. You can even ride up on the iconic single-chair ski lift. Mad River Glen is owned by a skier cooperative aiming to avoid ski mountain consolidation and homogenization.
Just minutes away is Sugarbush in Waitsfield. There, you’ll ski the slopes of Mt. Ellen (4,083 feet elevation), and enjoy the Mt. Ellen Base Lodge that is connected by a shuttle bus and quad chair lift to Lincoln Peak Village, with ski mountains Castlerock (3,812 feet) and Lincoln Peak (3,975 feet). If that sounds like a lot, that’s because it is. Sugarbush is one of the largest ski areas in New England. The resort encompasses more than 4,000 acres, including 484 trail skiable acres, 53 miles of trails and 16 ski lifts.
If speedily sliding down scenic mountains isn’t your top choice, maybe you’ll find enjoyment at the Skatium. The lighted, outdoor, open-air ice-skating rink welcomes the public in Waitsfield, and touts heated changing rooms. In the fall of 2024, the former rink was removed and volunteers are working to install new boards and backstops. The ice is split for figure skating and hockey practice. When you’re done exploring the snow and ice of the Mad River, you can try one of its locally distilled spirits in an icy beverage.
VERMONT PRODUCT
2.5 ounces Mad River Distillers Bourbon Whiskey
1.5 ounces half-and-half or oat milk
1/2 ounce cane sugar syrup
10 fresh mint leaves
Add mint to a shaker and muddle. Add remaining ingredients to the shaker with ice and shake well. Fill an old-fashioned glass with ice pearls or crushed ice, and strain into a glass. Garnish with mint.
Bourbon Poached Peach Daiquiri
1 cup Straight Bourbon poached peaches (at right)
2 ounces Mad River Distillers Rum 44
1/2 ounce fresh lime juice
1/2 cup crushed ice
In a blender combine all ingredients. Blend until smooth and serve in a chilled glass.
Add a sprig of mint to garnish.
Straight Bourbon Poached Peaches
6 peaches, fresh is best
1 ¼ cups Demerara or white sugar
1 vanilla bean
1/2 cup Mad River Distillers Straight Bourbon
Boil peaches one minute, then cool in a bowl of cold water. Peel and cut into wedges. In a pan with just two cups of water, add sugar and scraped vanilla bean. Bring to a boil, until sugar dissolves.
Add peaches and bourbon and simmer for 10 minutes. Remove peaches and add to mason jar. Continue simmering syrup until reduced by half. Add syrup to jar.
Let cool, and store in refrigerator.
Stowe Mountain Resort

Adventures on snow and ice can be found aplenty at Stowe Mountain Resort. Alpine skiers and snowboarders can ride down Mt. Mansfield (4,305 feet) on 116 ski trails accessed by 12 lifts. It gets an average of 314 inches of snowfall annually, complemented by snowmaking coverage on 83% of the slopes. At Spruce Peak Village, you can go ice skating in the winter. There’s also premier cross-country skiing on both groomed and backcountry trails and snowshoeing.
Cranberry Daiquiri
2.5 ounces white rum
1.5 ounces cranberry syrup
1/2 ounce lime juice
1/2 ounce agave
8 to 10 ice cubes
Lime slices and cranberries to garnish
In a freezer-safe container, combine rum, cranberry syrup, lime juice, and agave, and then freeze overnight.
When ready to serve, combine cocktail mixture in a blender with ice cubes and pulse until smooth.
Pour into a glass rimmed with sugar. Garnish with lime and cranberries.
Cranberry Syrup
4 cups fresh cranberries
1.5 cups sugar 2 cups water
Wash cranberries and place in a medium to large pot with water and sugar. Cook on medium heat until the berries have popped and there’s a thick syrup, about 20 to 25 minutes.
Run syrup through a mesh sieve, pressing all the liquid out. Discard the skins. Refrigerate until ready to use.

In February, celebrate the frozen wonderland of one of Lake Champlain’s bays. North Hero is one of four towns that are part of the Lake Champlain islands, so you can imagine that the water (or ice) makes up a big part of the town’s culture. The Great Ice Festival will be held Feb. 14 to 16 with ice skating, bonfires, dog sled rides, snow-building competitions and more. Visitors can also snowshoe or hike at the nearby Camp Ingalls.
Frozen Hot Chocolate
1 1/2 cups chocolate milk
1 cup dry hot cocoa mix
3 to 4 cups ice cubes
Whipped cream and chocolate shavings for garnish
Add milk, hot chocolate mix and ice to a blender, combine until smooth.
Pour into three or four glasses, top with whipped cream and chocolate shavings.

Atop the summit of Mt. Tom, you’ll be treated to the scenic vista of picturesque Woodstock Village. Lessons and guided tours are available by appointment. Equipment rentals, repairs and tune-ups are also available at the Nordic Center. After your workout, recover with a banana ... frozen cocktail.
Dirty Banana
2 ounces rum
1 ounce banana liqueur
1 ounce coffee liqueur
2 ounces half-and-half
1 banana, slightly overripe, cut into chunks
Banana chunk, with peel, for garnish
Blend rum, banana liqueur, coffee liqueur, half-and-half, banana and 6 ounces of ice in a blender until smooth.
Pour into a Collins glass. Garnish with chunk of banana.

Tucked into a Vermont Land Trust property with scenic views of the Lowell Mountain Range is Eden Dog Sledding. The winter sledding tours include interactions with 30 very friendly Alaskan sled dogs, and learning to harness the “un-chained gang.” Eden doesn’t guarantee wildlife sightings, but it is not uncommon to see deer, moose, bear, hawks, flocks of wild turkeys and a variety of songbirds in the remote country. After you’re done enjoying the evergreen scenery, try this frozen green cocktail.
Grasshopper
1/3 cup crème de menthe
1/3 cup crème de cocoa
10 to 15 ice cubes
4 cups vanilla ice cream
Extra dash of crème de menthe to serve
In a large blender, combine liqueurs, ice and half of the ice cream. Pulse until well blended. Add remaining ice cream, and pulse until creamy.
Divide into four glasses and top with another small glass of crème de menthe. You can also garnish with chocolate shavings or a chocolate-coated cookie stick.

Ingredients:
2 parts Hornitos® Reposado Tequila
½ part fresh squeezed lime juice
2 teaspoons cherry preserves
Splash of ginger beer

Bourbon Hot Toddy
Ingredients:
2 parts Basil Hayden® Kentucky Straight Bourbon Whiskey
1 part honey
2 lemon wedges
2-3 slices of ginger, peeled
4-5 dashes bitters

Garnish:
Blood orange peel
Wet ½ rim of glass with orange wheel or wedge and dip into salt mixture. Combine all ingredients, except Prosecco into a tin shaker. (Muddle jalapeño if using.) Add ice, shake vigorously. Strain into a rimmed champagne flute. Top off with chilled prosecco and garnish.

Ingredients:

6 ounces eggnog
