When Gabriel and Jamie Pessoa Monteiro first met in New York City, an undeniable fusion of spirits from Gabe's Brazilian culture and Jamie's organic Vermont upbringing came together to create the perfect cocktail for their marriage and business partnership.
Their passion and commitment to their mixology led them to the Brattleboro area, where they have delighted their patrons with their cocktail craft. The former partners of A Vermont Table are currently in negotiations to develop a new project in southern Vermont.
“We're profoundly passionate about the bartending community, and we are thrilled to embark on our new entrepreneurial journey,” said Jamie, who

At the heart of everything they do behind the bar is their commitment to using as many local and organically grown ingredients as possible from either Jamie's farm or nearby farms.
They also incorporate locally grown herbs into their cocktails. "We try to have a little garden for the bar," says Gabe, who served as beverage director at A Vermont Table.
Vermont raw honey is also a vital ingredient, so the couple has made it a
point to participate in the annual Bee's Knees Week celebration since they first came to Vermont in 2016 and worked at various restaurants.
Barr Hill at Caledonia Spirits in Montpelier has staged this event at over 100 bars and restaurants throughout Vermont since 2017. This year, Bee's Knees Week will occur from Sept. 22 to Oct. 1.

Enjoy a cocktail while helping to save the planet. This year, Bee's Knees Week will occur from Sept. 22 to Oct. 1.
"Every year in September, bars, restaurants, spirit stores, cocktail fans and environmental stewards come together to celebrate pollinators and raise awareness about their importance to our planet and well-being,” craft distiller Caledonia Spirits says on its website.
Ten square feet of pollinator habitat will be planted for every cocktail posted to social media using #beeskneesweek at @barrhillgin.

2 ounces Barr Hill Gin
¾ ounce fresh lemon
¾ ounce honey syrup
(2 parts honey, 1 part water)
Shake together with ice and strain into a coupe glass. Garnish with a lemon twist.
Lavender

2 dashes lavender bitters
Dry-shake ingredients without ice. Shake again with ice and double strain into a chilled cocktail glass. Top with crushed lavender.

¾ ounce Campari

“We deeply appreciate the support we've received from community brands throughout our careers, particularly the likes of Barr Hill,” Jamie says.
Jamie says the couple understands and appreciates how much Barr Hill supports the health of bees, a major player in the world's food production.
In the U.S. alone, the bees' pollination activity accounts for 20% of America's food products. Barr Hill's spirits are made with raw honey obtained from Vermont beekeepers.
"I really appreciate what they are doing for the bees," Jamie says, because for every Bee's Knees cocktail shared to social media from Sept. 22 through Oct. 1, Barr Hill plants 10 square feet of pollinator habitat. Last year alone, Barr Hill planted over 200,000 square feet of new pollinator habitat (about 4.5 acres).
Spent lemon shells
Saved pineapple skin
½ cup of granulated sugar
In a medium-sized container, mix the lemon shells, pineapple skin and sugar together and leave it undisturbed for a day. After 24 hours, separate the solid elements and transfer the mixture into a bottle. It can be chilled and stored in the refrigerator for a maximum of two weeks.
Bee's Knees Week is now the largest sustainability event in the spirits industry.
The couple also has a strong commitment to sustainability and prefers to use spirits that reflect this philosophy. For example, Gabe points out they use Novo Fogo silver cachaca, a Brazilian rum made from sugar cane that is re-forested after it is harvested to create these spirits.
Gabe recalls how he spent a great deal of time at his grandfather's farm outside of Sao Paolo, Brazil, where he grew up. Jamie Pessoa grew up in the Brattleboro area, and the couple now lives on her father's farm in Brookline near Putney Mountain.
During Bee's Knees Week, Gabe says they will feature three Barr Hill-inspired cocktails: the Bee's Knees, Jungle Bee, and the Barrel-Aged Negroni.
Jamie explains that while both of them mix drinks, her husband is the mixology star. She says Gabe constantly experiments with different ingredients,
juices, tinctures and pairings to create craft cocktails their patrons appreciate.
Behind every great mixologist is a life partner who is never reluctant to voice their opinion. Gabe smiles when he talks about how Jamie fulfills that role. "She's the first one to criticize my drinks."
The couple also says they put just as much effort into their non-alcoholic cocktails, so they carry the same quality and look as their craft cocktails. "It's all about being inclusive," Gabe says.
Gabe adds that non-alcoholic drinks are growing in popularity, because people who cannot drink alcohol still want to enjoy the experience of having a cocktail as part of their dining pleasure.
They ensure that every detail that goes into every cocktail — the right glassware, presentation and adequately cubed ice — is just right. They understand those details matter greatly to people who want to become loyal patrons.
Gabe recalls that he didn't initially plan to become an expert craft cocktail creator. "I've been cooking pretty much my whole life," he says. After he moved to New York City in his 20s, he said he worked in several restaurant kitchens. While working at Desnuda in Brooklyn, Gabe met Sother Teague, a published bartender.
"He taught me cocktails are mostly cooking with liquids," recalls Gabe.
Jamie had lived in New York for 12 years and met her husband eight years ago in the city. They married two years later after they decided to move to Vermont in 2016. For the next six years, Gabe bartended in different restaurants and at ski resorts. Jamie also worked at some local establishments where she honed her mixology skills.
They know they have succeeded when they see how their customers react to their cocktail creations. "There is nothing more exciting for us to see than people having a great time together," Gabe says.
The couple is excited about their next project.
“This venture will afford us the opportunity to further collaborate with these exceptional brands that form the heart of our community,” Jamie says.

Apple Sangria and Bourbon with Thyme
1 bottle chilled unoaked Chardonnay (750ML)
2 cups fresh-pressed apple cider
½ cup bourbon
2 tablespoons fresh-squeezed lemon juice
1 teaspoon orange bitters
2 medium-sized tart apples
6 sprigs thyme, plus one sprig for each drink
2 bottles Angry Orchard hard cider (12 oz.)
Crushed ice
In a large pitcher, stir together Chardonnay, fresh-pressed apple cider, bourbon, lemon juice and orange bitters. Slice apples (do not peel) thinly, crosswise, to create apple rings. Discard any seeds and then cut rings in half. Add apple slices and six thyme sprigs to pitcher.
Place pitcher in refrigerator to chill and let flavors mingle for a few hours. Just before serving, stir in the hard cider. Fill individual glasses two-thirds full with crushed ice and pour in sangria. Add a few apple slices and a fresh sprig of thyme to each glass for garnish.

Muddle sage and simple syrup in the bottom of a cocktail shaker. Add orange juice, whiskey and ice. Shake vigorously until combined, about 1 minute. Strain over crushed ice and garnish with sage and orange twist.

PUMPKIN SIMPLE SYRUP
1 cup sugar
1 cup pumpkin puree
2 cups water
2 tablespoons pumpkin pie spice
WHISKEY SMASH
1 cup good quality whiskey
1 cup pumpkin simple syrup
¼ cup lemon juice
Ice
In a small saucepan over medium heat, combine the sugar, pumpkin puree, water and pumpkin pie spice. Bring to a gentle simmer and cook for 15 minutes. Strain the mixture and let it cool down completely. It can be stored in an airtight container for up to a week.
In a pitcher combine the whiskey, pumpkin simple syrup (above) and lemon juice. Stir and add ice. Pour into glasses.

Some damaged 802Spirits stores remain closed
July’s catastrophic flooding has severely impacted homes and businesses throughout the state. While the Department did not suffer any damage, businesses across Vermont have experienced flooding including markets, restaurants and bars. Our Londonderry, Johnson, and Montpelier 802Spirits stores sustained major damage and were forced to temporarily close because of the storm. Our team continues to support those and other
impacted locations on their paths to resuming normal operations.
DLL is continuing to work alongside partner state agencies to quickly and accurately share information about recovery resources and to update businesses and customers alike. Flood Resources and Reporting Damages
Vermonters with damaged homes should report those damages to Vermont 211 by visiting the Vermont 211 Homepage at vermont211. org or calling 2-1-1. You can find a full list of flood resources, including individual assistance and opportunities to volunteer or donate at vem.vermont.gov/flood.
