The cleverly designed garden beds mean you might miss the fact there is no grass on the property. “I didn’t really want to mow lawns, so we don’t have any — but we had to put something there to fill the space,” Glenn said. So he found the perfect solution — a built-in synthetic grass putting green in the backyard. “It’s great for the kids and they can play on it as well.” Planting non-deciduous species including magnolias and jasmine keeps maintenance to a minimum, but also brings the area to life.

Above: Amberlee, Ally, Bailey and Glenn enjoy the peaceful outdoor living area. Left: The Cyprus pine timber posts beside the pool were the perfect choice for a feature with a purpose. “There isn’t a house next door, but there will be someday, so I wanted something low-maintenance that would offer privacy,” Glenn said. A glass pool fence allows for unobstructed views of the pool. “It wouldn’t be the same if you had an ordinary pool fence, you would lose the effect.”

IT WAS THE CALL of greener grass that led Glenn and

white walls and natural timber accents.

Amberlee Goodall to shift from their Kialla Lakes home for a fresh start in Shepparton’s Boulevard Estate.

“The colour tones are probably the biggest change from our old house, which was all white flooring with black finishing,” Glenn said.

The block near the golf course was simply too good to ignore, so the couple made the move with their two children: Bailey, eight, and Ally, seven. “We moved here to be closer to the golf course,” Glenn, an avid golfer, said with a laugh. With practicality and a young family in mind, the pair designed their dream home and opted for a simple colour combination. The interior is a clean contrast of dark floating timber floorboards,

“The (new colour scheme) just seems to work and they are nice warm colours, too — which is what we liked.” The pair said the plan of the house was the easy part, and they simply removed a bedroom to make way for a larger alfresco entertainment area and a rumpus room. But creating their own façade was a different story.

The modern kitchen features a white stone splashback and benchtops, and a side laminate feature on the work bench has the appearance of corrugated iron. The burnished wood cupboards are push-open, meaning there are no exposed handles to see, which creates a clean line. Glenn and Amberlee said one of their favourite features of the home was the butler’s pantry. It houses appliances such as the fridge, dishwasher and microwave, and even the sink.

“The timber flooring is just a bit cosier on your feet and it is a bit more modern too,” Amberlee said.

“All the messy stuff is in the butler’s pantry and the main kitchen stays clean — it is the best thing,” Glenn said.

BUTLER’S PANTRY Glenn’s tip “The trick is you need to have it big enough, you can’t have a mediumsized pantry and get away with it, there needs to be enough room for it to be functional.”

Simple decor in the indoor living area allows for easy maintenance and a crisp clean feeling.

Has your insurance premium increased recently? LET US SAVE YOU TIME, MONEY AND WORRY, HAVE YOUR INSURANCE COVERAGE ASSESSED Amberlee said the addition of a children’s rumpus room to the home design was invaluable. “The kids really love this area. One sits on the chair that rotates, and the other sits on the ground spinning it around,” she said. “The timber beam feature wall means the space is not enclosed, so you don’t feel trapped — and if we are in another area of the house we can easily keep an eye on them.”

When arranging insurance, many people take shortcuts without seeking proper advice, understanding the fine print or considering whether you are getting value for money. The high-set window in the mondern designed master bedroom offers privacy.

Glenn and Amberlee altered the plan of the home to make way for a larger alfresco entertaining area. <<< 9 “We spent countless hours getting that right,” Glenn said. The unconventional front of the home does not have any windows, because the couple thought, ‘Who wants to look at the street?’ The picturesque outdoor entertaining area features timber decking and is lined with Boral Blue bricks. Amberlee said the design was functional, and provided shelter from the elements and a place to relax and enjoy the Mediterranean pool. “We spend a lot of time outdoors as a family; this area gets very well used,” Amberlee said. “The pool is solar-heated, and from October to April it gets used every day.”

The children’s bathroom features tiles to the celing and an open-design shower with Metalux toughened frosted glass. “I just liked the design of the shower — it looks better than a square box,” Amberlee said.

Very little was wasted from the demolition of the original home. Weatherboards went to Numurkah Secondary College for woodworking students to use, and some of the windows were used by a local family in their renovation. Bricks have been cleaned and stacked ready for future projects, the red gum frame was de-nailed and stored, and timber flooring was salvaged.

Sustainability was an important component in the design of the new home. Double-glazed north-facing windows allow passive winter sun to flood in while strategically placed eaves block summer sun. The wood heater in the living area has a dual function — it also assists with the hydronic heating system which pumps hot water through pipes in the walls to radiator outlets in each room. Outside, a 10kW/h solar system generates about one-third of the farm’s electricity consumption.

WINTER 2014

THE DECISION TO DEMOLISH their 100-year-old home and replace it with a modern yet rustic family abode was a challenging one that Strathmerton dairy farmers Paula Hansen and Julian Pinnuck agonised over for several years. Initially the couple had plans to renovate the Federation-style property they had called home for 14 years but practicality soon took over. Issues with white ants, a lack of insulation and the house being poorly positioned to capture winter sun were the major catalysts for moving forward with a new build. “Had we gone ahead with the renovation we would still have been left with a home with the same underlying problems, it would still sit on the ground, face the wrong way and potentially be draughty. We used to burn so much wood just to keep warm,” Paula said. “When it came to the crunch, sadly the old house had to go.” The challenge then was to construct a dwelling that suited their family — children Louis, 15, Ruby, 14 and Fergus, 12 — and looked “at home” surrounded by red gum and grey box trees on the 200 ha dairy farm.

The stunning timber entry door has been hand-crafted from recycled red gum sourced from the frame of the 100-year-old home (pictured above right during the demolition phase).

The couple worked closely with Numurkah firm Diverse Builders, and the result is a 25-square home (32 squares including the garage and outdoor entertaining room) which has a mix of external finishes including polished concrete blocks enhanced with river pebbles, stone, Colorbond and spotted gum shiplap cladding. The colour scheme of muted and dark greys, golden stone and rich timber is from the same earthy palette as the surrounding area. In deference to their old home the couple has included elements of it in the new. Ornate pressed tin ceilings were sandblasted and repainted and now adorn the front of the island bench in the kitchen, and the gorgeous red >>> 20

Paula Hansen and Julian Pinnuck chose neutral colours for their home, including half-strength Dulux `Hog Bristle’ and Laminex `Parchment’ kitchen cupboards. The colour scheme allows the black window frames, bamboo timber floors and granite benchtops to shine.

Reclaimed red gum from the original home’s frame was used to construct the joinery in the ensuite, family bathroom and powder room. The results are quality cabinets with rich timber hues.

<<< 19 gum joinery in the ensuite, family bathroom and powder room was crafted from the original home’s frame. “We demolished the old house ourselves and recycled as much of the material as possible. Sustainability is vital and part of that is not wasting items that were perfectly good,” Paula said. The new four-bedroom home has an open-plan living area with a soaring raked ceiling lined with ply and a galley-style kitchen featuring granite benchtops and splashbacks. Bamboo flooring and a fireplace crafted from Beechworth stone adds to the warmth of the room. “We wanted to create a calm, pleasant room for the family to spend time together. there is still much to be done. Julian has plans to use the bricks from the fireplace of the old home to construct an ornate entrance to the property and Paula is dreaming of furniture designs to utilise the reclaimed red gum. v

STORY RHIANNON GAVALAKIS PHOTOGRAPHY JULIE MERCER

LIGHT, FRESH

and pretty JENNA AND JONSE PALMER DECORATED THE NURSERY OF THEIR TWIN DAUGHTERS MACKENZIE AND LOTTIE IN NEUTRAL TONES THAT WOULD STAND THE TEST OF TIME, WITH SPLASHES OF COLOUR TO BRIGHTEN UP THE SPACE.

IT WAS A MATTER of twice the fun when it came to decorating the nursery in Jenna and Jonse Palmer’s Shepparton home. The first-time parents were surprised when they heard the news they were expecting twins, even though Jonse is an identical twin himself. However, the couple decided not to find out whether they were having boys, girls or one of each.

WINTER 2014

“When I had the girls I thought, ‘Yay, how exciting!’” “I kept with the theme I already had planned for the nursery, but I added girly decorations with touches of pink; I wanted the space to feel light, fresh and pretty.”

“It did make it a bit harder to decorate, but we wanted it to be a surprise,” Jenna said.

The one-year-old sisters shared the nursery up until about eight months of age, but when they started teething it was time to separate them.

“People did say, ‘You need to find out what you are having so you can paint the room pink or blue.’”

“They kept waking each other up, so now they have their own nurseries,” Jenna said.

But with a natural flair for decorating, Jenna chose a French provincial theme, with neutral colours that would work for a boy or girl.

“They are best friends already though; they used to just play next to each other, but now they are playing together.”

“I am not a big fan of decorating rooms in Minnie Mouse or Dora the Explorer, I wanted something that would grow with them and that would still look good when they were older,” she said.

Jenna’s decorating tip for other parents is to have fun with it and not be afraid to mix textures and different elements.

“I didn’t want to have to go and revamp the entire rooms in a couple of years because they had outgrown them.”

Our HOME

Jenna was over the moon with excitement when Mackenzie and Lottie were born, having hoped for twin girls.

“I think people get into trouble with decorating when they worry too much about matching everything; they might think if they have dark and light timber that it won’t work — but it can.’’ v

FEATURE ROOM

nursery

Create a one-of-a-kind look in your baby’s nursery with a creative dash of colour. Dulux colour expert Andrea Lucena-Orr said colour, theme and style were key elements in creating an inviting nursery. She said bright colours promoted happiness, while classic white was fresh and offered the perfect canvas for accenting with vivid hues. “Whether choosing a colour scheme in a warm yellow, a calming green, or neutral tones, a nursery with a little personality creates an inviting space for you and your baby to bond,” Andrea said.

Colour psychology

For the creative baby: Yellow is cheerful, creates an inviting and playful room and can promote concentration. For the dreamy baby: Soft whites and warm subtle shades create a relaxing, soothing environment. For the energetic baby: Green can promote health and wellbeing and it is known for its calming effects on mood. For the anxious baby: Soft pinks have a comforting effect, encourage empathy, and help create a peaceful environment.

How to

SPICE UP A RENTAL PROPERTY

WHEN YOU ARE A RENTER FLIPPING THROUGH GLOSSY HOME MAGAZINES AND WATCHING HOME RENOVATION TELEVISION SHOWS, IT CAN BE FRUSTRATING TO SEE DECORATING IDEAS THAT ARE NOT APPLICABLE TO YOU. BUT JUST BECAUSE YOU DON’T OWN YOUR HOME DOESN’T MEAN YOU CAN’T MAKE IT FEEL LIKE YOUR OWN WITH A FEW SIMPLE TIPS AND TRICKS. HERE ARE OUR TOP IDEAS FOR SPICING UP A RENTAL PROPERTY.

Lighting A statement lamp can breathe life into a room and become a focal point. Draw inspiration from modern trends and opt for an oversized style. If you’re looking for a cost-saving option, decorate with lanterns, which also create a relaxing atmosphere.

Garden Overgrown lawns might be the norm with rental properties but keeping things maintained is not only part of the lease, but will add to the overall appeal of the residence. Growing your own potplants is a great way to spruce up an outdoor area, plus you can take them with you when you move residence.

Portraits Family photos are the best way to make a space feel like home and are relatively inexpensive to print. Consider having photos enlarged or printed on canvas, and instead of hanging them on the wall, simply lean them on a shelf.

Colour Landlords love their white or beige paint; but, given colour can affect your mood, it is

important to bring a bit of brightness into your life so you don’t feel washed out. Look for decor items in yellows and oranges to create a positive ambience that is on-trend. Kevin Hicks Real Estate property manager Natalie Ryan said there were a couple of things to keep in mind when decorating a rental home. Natalie said if there were already hooks on the walls it was fine to use them, but if it was stated in the lease that a tenant could not install hooks, including plastic stick-on varieties, then they should steer clear. “The hooks can damage the wall and, in the case that they pull paint off, unfortunately the tenant is liable to patch the hole, sand it back and paint the whole wall,” Natalie said. “It isn’t as simple as just painting that one area, and it can cost upwards of $100 to fix.” However, you can ask the real estate agent to request permission from the landlord to place hooks on the wall. “If permission is granted, it is best to use a stud finder so you can actually find the beam, which is better for heavier pictures to try and avoid damage to plaster,” Natalie said. v

Rachel already owned most of her furniture before the build and bought locally at places including Empire Trading and Plush Furniture.

The kitchen and adjoining butler’s kitchen has a modern streamlined design.

After having a butler’s kitchen once before, Rachel decided against a sink the second time around. “I thought, `I’m not going to complicate things.’ “

Polished concrete covers most of the home’s main floor: “I added green to give it some warmth. It’s easy to clean and long-lasting.”

Rachel’s favourite piece of furniture is her green swivel chair from Plush Furniture: “I love it! It’s just so comfortable.”

INTERIOR DESIGN IS A PASSION for Rachel Scrimmizi, so designing and building a new family home in one of north Shepparton’s smaller estates was a delight from start to finish. Rachel wanted a home to suit herself and her children — daughters Lilly, 12, and Chloe, 10, and son Mason, eight. The end result is exactly that. Having previously renovated a house and built another, Rachel dusted off her notepad and pencil and sketched her new dream home. “I’m good at visualising things in my head,” Rachel said. “I took my drawings to Chris [Barzen Builders] and told him exactly what I wanted.” While the exterior of the two-storey home has an industrial look, something earthier has evolved inside. “Green is my favourite colour,” Rachel said. The main entrance features gorgeous green wallpaper which is a perfect contrast to the Tasmanian Oak floorboards and contemporary wooden decor. Aside from the homogeneous colour scheme, Rachel did not have a particular theme in mind for the home’s interior. Mid-morning sun pours through the long, wide windows, down the hallway and into the spacious open-plan living area. “I hate being closed in and in the dark,” Rachel said. “I like things to be open with natural light — it brings the outside inside.”

The feature wall adds an element of surprise to the front entrance.

<<< 35 Rachel said she wanted an area that could be enjoyed by her friends and family, rather than a garden. “I’m not a gardener, so it’s low-maintenance,” she said. “The hedges along the fence will grow to give more privacy and I’ve got gardenias that will make the house smell nice when they flower.” Rachel utilised every centimetre of the 30-square home with the help of architect Bruce Mactier. “There are no rooms that I do not use. A lot of people have dining rooms and formal rooms — but do they ever really use them?” she said. She didn’t want to take space away from any living area — not even with the main bedroom. “You only sleep in here and I’ve got plenty of room with the walk-in robe and bathroom.” While Rachel said she loved the ensuite’s bath and television, her favourite feature was the sink — an angled Caesarstone bench-top and basin integrated as one. “It’s just so good because, being a girl, there is make-up everywhere — but I can just quickly wipe it down.” Speaking of girls, because having a two-storey home was a request from Rachel’s daughters, their bedrooms take up the second floor and share an ensuite.

Rachel’s two-storey home offers plenty of room for her growing children — Lilly, 12, Chloe, 10, and Mason, 8.

“As they get older it will be their own little retreat,” Rachel said. v

STORY RHIANNON GAVALAKIS PHOTOGRAPY SIMON BINGHAM

Fired up

BY AUTHENTIC ITALIAN COOKING

AT THEIR ARDMONA HOMESTEAD built in 1895, Maria and Mick Ciavarella love to entertain family and friends. The couple has lived at the residence for more than 20 years; they have renovated the entire weatherboard home, and added an alfresco entertaining area. “The house had been done up in the ’50s or ’60s, but by the time we got it, it needed a revamp,” Maria said. With Mick’s Italian background, the outdoor area at the pear orchard wouldn’t have been complete without a classic wood-fired pizza oven. “Mick loves cooking pizza, so I do all the food preparation and he does the cooking — and then he takes the glory for it all,” Maria said with a laugh. However, the oven doesn’t just get used for pizza; Mick said it could be used to cook everything from chicken wings to a Christmas roast. “What we do a lot of the time is make the dough, and then put all the toppings out and then our guests can make their own pizzas,” Maria said.

38 »

homes

“People often comment on the unique smoky taste and we also make our own tomato puree, which creates a different flavour as well.” The brick oven is next to the stacked-stone barbecue area with granite benchtops, and is enhanced by the tranquil ambience of the adjacent pool. Maria said originally they had planned on having a rendered splashback, but opted for tiles with a similar look instead. “Someone said to us you can’t clean rendered walls easily because they are rough, so we went for the tiles,” she said. Maria and Mick have passed on their love of entertaining to their two children, Renee and Paul. At their daughter’s wedding this year, the wishing well at the reception asked guests to put money towards the young couple’s next adventure — and a pizza oven.

A long driveway scattered with autumn leaves is the perfect place for Tayla Beks and her niece, Layne to take a walk.

THE IDYLLIC LIFESTYLE PROPERTY Andrew and Leah Beks created for their children is now being enjoyed by the next generation of their family. The Beks’ granddaughter Layne, four, delights in exploring the 1ha garden, collecting the chook eggs and playing with the family pets, border collie cross Lily, and Macey the cheeky cavoodle. Life has certainly turned full-circle for the couple, who bought a vacant 2 ha block on the outskirts of Mooroopna 21 years ago and set about building a home and garden which is admired by visitors and has been the venue for several weddings. Although they run their own landscape gardening business, they are far from being the stereotypical experts who work on everyone else’s dream garden except their own; in fact the Beks’ garden is their passion and continues to evolve. “Initially we planted conifers everywhere, we were conifer-mad, mainly because they are low maintenance and look good all year round,” Andrew said.

44 »

homes

To that base they have added a driveway bordered by plane trees underplanted with agapanthus, clipped ligustrum hedges, columns of Iceberg roses and plantings of fragrant gardenias which impart their beautiful perfume on a warm summer night. Meandering through the different garden rooms, there are structures as diverse as a formal parterre garden, whimsical summer arbor draped with wisteria and, filling a corner, a trio of red gum timber offcuts topped with a metal kookaburra. There was never a firm garden plan, just the ideas in Andrew’s head which have been augmented by visits to garden shows and flicking through magazines. The latest addition, a pine forest in one corner of the property, was Leah’s idea and reflects her love of family camping trips to Bright. Many of the plants have been transplanted from other gardens and struggling plants are quickly removed and replaced with more hardy species. “Nothing is babied here; if it’s not going to survive, it’s gone,” Andrew said. >>> 46

Layne spends hours playing outside in her grandparents’ garden. One of her favourite chores is collecting the chook eggs.

<<< 44 As the garden has flourished over time the Beks have delighted in seeing blue wrens and finches nesting and blue-tongue lizards taking up residence. The Beks’ children — son Ash, 24, and daughters Lauren, 22, and Tayla, 20 — spent many hours tearing around the garden with their friends as youngsters, the many sections providing great hiding places and backdrops for imaginative games. “There were always other kids here when ours were growing up, they used to ride their bikes from town and go fishing and yabbying in the channel at the back or exploring the neighbouring farms,” Andrew said. As the children grew and embraced Andrew’s love of music a disused tennis court was enclosed with a shed to house Ash’s drum kit and provide a venue for many band practice sessions. Now that shed offers space for the couple’s new pursuits — Andrew restores Kombi vans and Leah is following her mother’s love of quilting.

46 »

After inheriting her mother’s long-arm quilting machine Leah needed a dedicated space to sew glorious comforters for family and friends. She is typical of many crafty people, always perusing fabric samples to add to the vast collection already stored at home. Andrew’s interest in Kombi vans was piqued when looking for a suitable camper-type vehicle for Ash to travel around Australia with. “Plans changed and he didn’t go but I kept looking anyway, I suppose I’ve always been a hippy at heart so I thought I would give restoring a go,” Andrew said. He has now fully restored two vans, almost finished a twin-cab Kombi ute — complete with matching bright green Vespa to travel in the back — and has another run-down van ready to start. “We’ve just participated in the GV Hospice car rally, which was great fun and I used to pick all the girls up from school for netball training in the Kombi. The kids’ friends have been driven to formals and deb balls, they love it,” Andrew said. v

Sow and grow,

THEN REAP THE BENEFITS

GROWING YOUR OWN vegetables can be a rewarding and cost-effective way of contributing to the overall sustainability of your family’s lifestyle. Knowing where your food comes from is becoming increasingly important and many homeowners are often dedicating a small area of their garden to planting healthy vegetables and herbs. And while winter is generally a quiet time in the garden there are a number of seedlings that will thrive in the cooler conditions. Billabong Garden Complex manager Tracy Lamont and her staff compile a list of planting suggestions at the beginning of each season. Now (late June) gardeners should be preparing to harvest crops of broad beans, beetroot, broccoli, cabbage, carrot, cauliflower, kohl rabi, mustard greens, onions, garlic, radish, silver beet and swede. “Once these are harvested people should be looking ahead to the next season, alternating planting positions of previous crops, cultivating the soil, adding soil conditioners and preparing for the spring planting,” Tracy said. “More and more people are planting their own vegetables and herbs and I don’t think it’s entirely about cost, it’s also a lifestyle thing. “Families work nine to five and on weekends they love getting outside with the children and picking their own vegies. “People are a lot more health-conscious too; they enjoy the freshness and taste of their own produce as well as knowing exactly where it has come from and how it has been grown.” Billabong staff members also take advice from their customers, using the feedback they receive to recommend planting ideas to others. “There are so many lifestyle programs on television now, people watch them and are inspired to try those ideas out at home, whether it’s a rural or suburban garden environment,” Tracy said.

CIDERS ARE A LOCAL

success story

Alcoholic ciders are celebrating a growth in popularity. Shepparton wine buff Paul Phillips reviews three ciders which are all bottled locally.

TOO MANY CHIEFS, produced at Shepparton East, has two offerings: pear and apple cider, and apple cider. The pear and apple cider is a soft blend of both flavours with the pear taste very much at the front and the slightly crispy, zesty apple taste at the back of the palate. It’s well carbonated with just the right level of bubble strength which ensures it finishes slightly sweet. The straight apple cider is lighter in colour and taste and is clean and refreshing to drink. Snakes and Ladders crushed apple cider is produced by the Plunkett family of Ardmona, renowned wine-makers for five generations. At this stage they are bottling a straight apple cider. This is a drier cider, also crisp and clean with a true zest about it. It has an almost lemon acidic zest which ensures it is thirst-quenching. Faire Ferments pear cider was inspired by the work of the GV Food Co-op at Kyabram. It has a rich pear flavour and is slightly pink in colour from the skin contact of the fruit. It finishes very sweetly. The varieties of fruit used in the ciders are a trade secret; the makers use a combination which, when blended, produces different flavours. These three boutique bottlers offer consumers a better quality product than is produced by some of the larger international and national companies. They use Goulburn Valley fruit and they simply taste better — and consumers seem happy to support the boutique local products. v

STORY RHIANNON GAVALAKIS PHOTOGRAPHY BIANCA MIBUS

FROM JACKSONVILLE in Florida to country life in the Goulburn Valley, Parklake head chef Thomas Dunlap has enjoyed a well-travelled life. His cooking journey started with peeling prawns and shucking oysters at the age of 13, and it was about the same time that he made his first Thanksgiving dinner for 20 relatives. “I had that turkey mastered,” Thomas said with a laugh. It wasn’t long before he had a job in fine dining restaurant Santioni’s and he has since worked for Carnival Cruise Lines, Crown Casino and Applebee’s in the United States — opening 36 restaurants as a corporate trainer and a regional executive chef.

FRESH IS BEST

But wherever his career has taken him, one thing has remained the same — a dedication to cooking with fresh seasonal produce. “If you are going to work as a chef you have to be able to work with what is good and what is available,” Thomas, who now lives on a farm at Katunga, said. He said designing a menu for the change of season always came back to what was flourishing in the local environment.

ingredient

“In winter we look at comfort foods because the weather is cooler and people can handle richer ingredients,” Thomas said. As the mercury continues to drop, pumpkin, basil, shallots, cherry tomatoes and blueberries are all great items grown in the Goulburn Valley that are good to place in the shopping basket. From hearty soups to citrus desserts, winter produce offers a surprising array of flavours. Thomas said a personal favourite for the colder months was the American-style spicy buffalo wings. “This dish reminds me of home and it is great at this time of year when it is cooler, because it is that little bit spicy,” he said. “The chicken, celery, carrots and salad mix are all locally grown ingredients.” The prawn and pesto risotto is a flavourful dish and showcases the enticing combination of pesto and a touch of cream. “Again this is a hardy meal and when it is served fresh and hot, it is filling — you walk away with that comfort food feeling.” v

Buffalo chicken wings with cool ranch dipping sauce Preparation time: 25 minutes Cooking time: 10 to 12 minutes. Serves: Makes 2 to 3 entrée-sized serves – 10 chicken wings

– 1 tsp Worcestershire sauce

– 1 carrot

– ¼ cup sour cream

– 2 stalks of celery

– ¼ cup whole egg mayonnaise

– Flour or chick pea flour (gluten free)

– 1 tbsp finely minced onion

– 100 g melted butter

– 1 clove of garlic, grated

– 50 ml Tabasco sauce

– 100 ml vegetable oil

– ¼ cup tomato sauce Separate the wingette from the drumette of the chicken wing with a knife by wiggling the knife between the joints so you are cutting through the cartilage, not the bone; follow this method with all 10 chicken wings. Place flour and wings in mixing bowl and toss until lightly coated. Peel carrots and wash the celery, then cut into batons. Place carrots and celery in a bowl with iced water and set aside. Combine the Worcestershire sauce, tomato sauce and butter to make wing sauce. To make dipping sauce, in a separate bowl combine mayonnaise, sour cream, minced onion and grated garlic and season to taste. Pour vegetable oil into a medium frying pan and bring to a medium heat. Cook wings for about 5 to 6 minutes on each side until brown and crispy. Toss wings in the wing sauce, and serve on plate with a small bowl of dipping sauce. Place the carrots and celery on plate and serve.
