CRISPY SKIN SALMON WITH GOCHUJANG ROASTED FENNEL Serves 2 2 skin-on salmon fillets 2 medium bulbs fennel 1 tbsp gochujang 1 tbsp honey 1 tbsp rice wine vinegar 1 tbsp soy sauce ½ tsp minced garlic ½ tsp minced ginger ½ tbsp sesame oil ½ tbsp sesame seeds 1 handful dill Salt Neutral oil for cooking

l Preheat the oven to 180ºC l In a small bowl, add gochujang,

honey, rice wine vinegar, soy sauce, garlic, ginger and sesame oil. Whisk until fully combined. l Slice fennel in half and then cut into ¼ inch strips. Add the fennel to a baking dish. l Pour gochujang mixture over the sliced fennel and toss to coat before putting into the oven. l Roast for 30-40 minutes until the fennel is tender and the sauce has reduced. l Towards the end of cooking the fennel, season the salmon fillets all over. l Place salmon fillets skin side down in a cold pan with a

tablespoon of neutral oil. Place the pan over a medium heat. l Cook the salmon skin-side-down for 5-6 minutes until the skin is crisp. Once the skin is crisp and you can see the salmon cooked two thirds of the way through, flip the salmon and cook on the other side for 1 minute. Remove from the pan and allow to rest for 5 minutes. l Serve the salmon alongside the roasted fennel. Garnish with sesame seeds and dill.

CITRUS CURED SEA BASS WITH PICKLED RAINBOW RADISH AND CITRUS SALAD Serves 1-2 1 sea bass fillet (skin off) 1 pink grapefruit 1 lemon 1 lime 1 bunch rainbow radish 200g mixed baby salad leaves 500g salt 150g sugar 1 tsp poppy seeds 150ml white wine vinegar 50ml water 50ml olive oil l In a small mixing bowl, mix

together 100g of the sugar with 400g of the salt and the zest of the grapefruit, lemon and lime. Put the sea bass in a small tray, cover with the salt mixture and leave for 1-2 hours in the fridge. l Cut the green tops off the radishes, then cut them into different shapes, such as quarters or rounds. www.foodiesfestival.com

l Take a small pan and add

the remaining salt and sugar and the vinegar with a splash of water (50ml). Bring to the boil, then take off the heat and place the radishes in the pan, making sure they are covered and leave to cool down. l Remove skin from the grapefruit, lemon and lime and segment out the flesh. Place in a small mixing bowl and add the baby herbs, the olive oil and a pinch of salt. Mix thoroughly. l Wash the sea bass under a tap until all of the salt mixture is gone. The fish will have

firmed up and is ready to be sliced into small, thin slices. Drain the liquid from the pan of radishes and dry them. l It’s now time to plate up – take your sliced sea bass and place these on the plate in a circle. Drizzle some olive oil over it to make it look shiny, then place the pickled radishes on top of the sea bass randomly. Add height by using the baby salad leaves and grapefruit to go around the fish then sprinkle the poppy seeds over. Enjoy!

DUCK BREAST, CONFIT DUCK LEG SAUSAGE ROLL, DUCK FAT POTATO TERRINE AND CHERRY GEL Serves 4 For the duck sausage roll: 1 duck 100g salt 100g sugar 1 bunch thyme 4 oranges (zest only) 1 tbsp juniper berries 2 tbsp fennel seeds 1 pack ready-rolled puff pastry 50g dried cherries 50g pistachios 100g pork mince 1 egg For duck breast, sauce, cherry gel and potato terrine, see foodies.co.uk for recipes 6 foodies

l Butcher the duck into two breasts, two legs and the carcass. Ideally do this the day before. Blitz the salt, sugar, orange zest, juniper berries and 1 tablespoon of the fennel seeds in a food processer. Rub this mix over the duck legs and cover with the fresh thyme. Leave for at least 5 hours or ideally overnight in the fridge. Once cured, wash off the salt mix and pat the duck legs dry. Place in an ovenproof dish and cover in rapeseed oil. Place in an oven at 120ºC for 2 hours. Once cooled enough to handle, remove from the oil (reserving for later), carefully peel off the duck skin (also reserving for later), and shred the meat.

l To the shredded duck meat add the pork mince, dried cherries and pistachios. Mix well and fry a small piece to check for seasoning. Adjust accordingly. Once satisfied with the flavour, roll into a log and wrap in the puff pastry. Brush with the egg and scatter over the remaining fennel seeds and salt. Bake at 180ºC for 30 minutes or until the pastry is golden and the filling cooked.

FIX ME UP BROTH Serves 2 2 shallots, peeled and finely sliced 1 medium potato, peeled and cubed 1 large carrot, peeled and sliced ¼ small celeriac, peeled and cut into matchsticks 2-3 sprigs thyme 40g spinach 40g frozen peas 500ml good-quality vegetable stock Juice of 1 orange Juice of 1 lemon Sea salt and black pepper Oil 2 Clarence Court eggs, cooked to your liking For the walnut gremolata 1 bunch parsley, leaves only, roughly chopped Zest of 1 lemon 80g walnuts, roughly chopped 1 garlic clove, finely chopped www.foodiesfestival.com

l To make the broth, add a splash

of oil to a saucepan and put it on a medium heat. Sauté the shallots, potato and carrots for around 5 minutes until they start to colour. Add the celeriac and thyme and sauté for 2 more minutes. l Pour in enough stock to just cover the vegetables and bring to a boil. Turn the heat down to low and allow the liquid to bubble gently for around 5-10 minutes. This should cook all of the vegetables. l Remove the thyme. Drop in the frozen peas and spinach.

l Take the pan off the heat. Season well with sea salt and black pepper and pour in the lemon and orange juice. l Divide the mixture between two bowls. Top each bowl with a halved egg and liberal quantities of walnut gremolata.

LEMON AND HONEY CHICKEN Serves 4 400g chicken wings 1 lemon 3 tbsp extra virgin olive oil 4 sprigs fresh thyme 1 garlic bulb, cut in half Pinch of sweet pimentón 3 tbsp honey 2 tbsp chopped fresh coriander leaves Sea salt and freshly ground black pepper l Bring a pan of

water to the boil, add the chicken wings and boil for 5 minutes. Remove and drain on kitchen paper for 5 minutes. l Meanwhile, zest the lemon, halve it and squeeze out the juice, but don’t throw the rest of it away. l Heat the oil in a frying pan over a high heat. Add the thyme sprigs, chicken wings, squeezed lemon halves and the garlic and fry for a couple of minutes on each side. Sprinkle the pimentón over the chicken and after 10 8 foodies

seconds drizzle the lemon juice and honey into the pan. Season with salt and pepper. l Continue to sauté the chicken, allowing the liquid to reduce while making sure the wings are fully coated in the glaze. Add the lemon zest right at the end as it turns bitter if added too early and loses its fragrance quite quickly.

l Sprinkle with the chopped

coriander and sea salt before serving.

Halibut with a Parsnip ‘Thai Curry’ sauce, parsley oil, citrus gel, coriander cress Serves 2 2 halibut fillets, 120g each For the parsnip ‘Thai Curry’ sauce: 1 parsnip 1 onion, finely diced 4 large cloves garlic, finely diced 2 thumb-sized pieces of ginger, grated 1 stick lemongrass 2 lime leaves, preferably fresh 1 ½ tbsp tamarind paste 100ml fish stock 100ml double cream Juice from half a lime Salt to taste For the parsley oil 50g parsley 300ml high-quality rapeseed oil For the citrus gel and pea shoot garnish, see foodies.co.uk for recipes

l For the parsnip ‘Thai Curry’

puree, start by gently frying the diced onion in olive oil until translucent (do not brown the onion). Then add the diced garlic, grated ginger and tamarind paste and fry for a further minute. l Deglaze the pan with the stock and mix until combined, then add the cream, lime leaves and the lemongrass stick (bash the lemongrass with a rolling pin so that it releases its flavour but remains intact). Simmer for about 15-20 minutes on a low heat to allow the flavours to infuse. l Whilst this mix is simmering, peel the parsnips and chop into 2cm chunks. Cook the parsnips in a separate pan of boiling water until tender, but not mushy. l Once the cream mix has simmered, remove the lemongrass and lime leaves

and blend until very smooth. Add the cooked parsnip pieces into the blended mix one or two at a time and blend until a nice thick sauce consistency has been achieved (you may not need to add all the parsnip chunks). Once perfectly smooth it’s very important you add salt and lime juice to taste and to bring the flavour to life. l For the parsley oil, heat the oil up to about 50-60ºC (no higher) and then blend thoroughly with the parsley. l For the halibut, heat olive oil in a frying pan on a mediumhigh heat. Sear the halibut on one side until nicely golden brown. Flip the fish and fry until cooked through. DAVID RICKETT was a finalist on MasterChef 2020. MINI PORK PIES Makes 12 For the pastry 800g plain flour 200g lard 200g water 1 tsp salt 1 egg yolk, beaten For the filling 600g pork mince (20% fat) 150g bacon lardons 50g fresh white breadcrumbs 1 tbsp fennel seeds 1 tbsp dried sage 1 tbsp pepper 1 tsp salt For the jelly 300ml chicken stock 3 sheets leaf gelatine l In a large bowl, mix the pork,

bacon, breadcrumbs, fennel seeds, sage, pepper, and salt. Put to one side. Preheat your oven to 180°C. l Sieve the flour and salt into a large bowl. Put the lard and water into a pot and bring to a simmer. Once the lard has melted, pour into the flour and work into a pastry. If it’s still loose, add warm water a little at a time until smooth. l Dust a work surface with flour and, working quickly, roll the pastry out until approximately 3mm thick. Cut out 12 larger circles, big enough to line the holes of a muffin tin, and 12 smaller circles for lids. l Line a 12-hole muffin tin with the larger circles. Fill each with a scoop of filling. Wet the 10 foodies

rims with a splash of water and firmly press the lids to seal. Using a sharp knife, trim the tops. Make a hole in each lid using a chopstick. l Beat an egg yolk, 1 tsp of water, and a pinch of salt in a bowl. Brush the tops of the pies and chill for 15 minutes. Repeat this process one more time. Bake for 30 minutes, or until golden. Remove from the oven, turn out the pies, place on a baking tray, and brush the sides with more egg wash. Return to the oven for another 20-30 minutes until the tops are dark golden-brown. Remove from the oven and cool for 30 minutes.

l Soak the gelatine in cold

water for five minutes. In a small saucepan, heat the chicken stock until simmering. Add the gelatine, stir, and dissolve. Leave to cool for 5 minutes. l Using a funnel or small jug, carefully fill each pie through the hole with the chicken stock. Refrigerate overnight to set.

VEGAN SMOKED CHEESE AND MARMITE SCONES 225g self-raising flour 3-4 large pinches of salt 75g vegan spread/margarine 2 tsp caster sugar 125g Applewood vegan smoked cheese, grated 2 tsp mustard powder, optional 1 egg replacer Splash of non-dairy milk Splash of lemon juice 2-3 tsp Marmite To decorate: 3 tsp Marmite Smoked salt or sea salt flakes l Preheat the oven to 190°C.

In a jug, mix your egg replacer and set aside. l Blend together the flour, salt, margarine and sugar in the bowl using a blender or your fingers until you have a fine breadcrumb. Add half the smoked cheese to the bowl. Finally, if you have it, add two teaspoons of mustard powder for depth and warmth.

l Add the milk, lemon juice

and Marmite to the jug with the egg replacer. Mix well. l Add the wet mixture into the dry mix and bring it together with a spatula and then your fingers. Roll out to 1 inch thick and, using a medium sized cutter, cut out the scones. You should get around 7 to 8 after re-working the dough. l Now for the messy bit. Transfer the scones to a lightly floured baking tray and get ready for decorating. To add that extra kick take a teaspoon of Marmite and push a small dollop (around a quarter of a teaspoon) on to the middle of each scone using a skewer or cocktail stick. Then take the remaining half of the smoked

cheese and place towering piles on each scone. Finally add a decent sprinkling of salt over the cheese to finish. We recommend smoked salt but if you can’t get that as it is a bit specialist then a good flaked salt will be fine. Bake for 10-15 minutes then transfer to a rack to cool until just warm. l These can also be made as smaller bitesize scones.

CARROT AND ORANGE CUPCAKES Makes 12

excess liquid. l In a large mixing bowl or

175g light soft brown sugar 100g wholemeal self-raising flour 100g white self-raising flour 1 tsp bicarbonate of soda 2 tsp mixed spice Zest of 1 orange 2 large free-range eggs 150ml sunflower oil 200g carrots For the fresh orange buttercream: 250g slightly salted butter 500g icing sugar Zest of 1 orange 2 tbsp orange juice l Preheat oven to 180ºC and

line a 12-hole muffin tin with large cupcake cases. l Grate the carrots using a large-holed grater before wrapping tightly in food-grade muslin and squeezing out the 12 foodies

stand mixer, combine your dry ingredients (sugar, flours, bicarbonate of soda, mixed spice and orange zest) and mix thoroughly. l Lightly beat the eggs in a separate jug, before adding them, the sunflower oil and grated carrot to the dry ingredients, mixing by hand until thoroughly combined. l Divide the mixture evenly between the cupcake cases and bake at the top of the oven for around 25-27 minutes (until the mixture stops bubbling or ‘singing’). Allow the cupcakes to cool in the tin for around five minutes before transferring to a wire rack to cool completely. l While your cakes are cooling, make your buttercream. Begin by creaming your butter until pale and smooth. Add in the icing sugar, a little at a time,

ensuring each addition is fully incorporated before adding the next – the orange juice can be added at this point if the mixture is too stiff to work with. Finally, add the orange zest and mix through thoroughly. l When your cakes are fully cooled, use a piping bag with an open star tip to pipe a swirl of buttercream onto each cupcake, before decorating with a sprinkle of freshly chopped pecans. Once the buttercream has set, store in an airtight container for up to three days at room temperature.

CARROT AND ORANGE CAKE For the sponge 510g plain flour 1 tbsp baking powder 1½ tsp bicarbonate of soda ¾ tsp fine sea salt 1 tbsp ground cinnamon 1 tsp ground ginger 1 3 / tsp ground nutmeg 1 3 / tsp ground cloves 6 large free-range eggs 300g caster sugar 225g light soft brown sugar 230g vegetable oil 200g unsweetened applesauce 1 tbsp vanilla extract 500g finely grated carrots 90g orange juice Zest from 1½ oranges 200g walnuts For the frosting 400g unsalted butter 450g icing sugar 600g soft cheese, room temp 2½ tsp vanilla extract To decorate 1 large carrot, peeled and halved lengthways l Preheat the oven to 180°C.

Roast walnuts for 10 mins, turning once. Finely chop once cooled. Grease and line three 9” round cake tins. l In a large bowl, whisk together flour, baking powder, bicarbonate of soda, salt, cinnamon, ginger, nutmeg and cloves, then set aside. l Finely grate carrots then squeeze off liquid. 500g. In a bowl add orange juice and zest then set aside. l In a mixer, whisk eggs and sugars until light and fluffy, then stream in oil until combined. Whisk in vanilla and apple sauce. l Add flour mix into egg mix and gently fold in until just combined. Fold in carrot, orange juice, zest and 180g of the walnuts. l Reduce oven to 170°C. Split cake mix evenly between tins. Bake for 35-40 mins. l Leave to cool on a wire rack for 10 mins before removing from the tins, then leave to cool completely. l For the frosting, cream butter in a mixer until light and fluffy. Slowly whisk in icing sugar, scraping down the bowl each time. While whisking, add soft cheese one tablespoon at a time until all added, then add the vanilla. Mix until fluffy.

l Trim sponges to level out

the top, add layer of frosting in between sponges. Add a crumb coat of frosting all over cake and chill in the fridge for 1 hour. l Prepare carrot decoration by taking prepared carrot and peeling thin strips, drawing peeler from top to bottom. Save any imperfect ones to make the bow on top of cake. Lay out strips on kitchen paper to dry out for about 30 minutes. l Add final layer of frosting to cake and decorate with peeled carrots, sugar carrots and leftover 20g of chopped walnuts.
