12 large scallops
l To serve, place three slices of pear on to each plate and in the centre of each pear put a touch of the lime cream. Sear the scallops in a smoking hot pan. When the scallop is hot to the touch and nicely coloured it will be cooked. Place a scallop in the centre of each pear and then add a little of the pear puree, if using, to each plate. Gently pour on a little of the vermouth and finish with lime cream and micro herbs.

Cooking live at Foodies
Any trimmings of pear could be cooked with a little sugar and water until soft and then puréed smooth. Bring the red wine and sugar to the boil and then add the pear slices and discs. Bring back to the boil and, depending on the ripeness of the pears, cook for a minute or two. Once cooked if left for up to 24 hours the pears will take on a lovely burgundy colour.
l For the sauce, in a pan cook together the chopped shallot and vermouth. When almost dry, add the fish stock and reduce again, then add the double cream and vanilla. Bring to the boil and leave to simmer gently until the sauce is of a good consistency. Pass through a fine sieve and season.

l Peel and slice the pears with a mandolin to get 12 good long slices, and, with the smaller slices, cut out 12 x 3cm discs. With the same 3cm cutter remove any seeds and core from the long slices.

l Add a drizzle of oil and put the chicken thighs skin side down into the pan. You are looking for a nice crispy skin here. When the skin is crispy, flip the chicken over so the skin is facing up.
ingredients for the sauce, bash the garlic clove so that you can get the skin off but it stays whole and add that to the sauce mix.
l Choose a medium saucepan that will fit both chicken thighs in quite snuggly, you don’t want a large pan as the sauce will not coat the chicken thighs. Put this on a medium heat to preheat.

l When the chicken is ready you can pull the chicken in the sauce mixture (discard the bone) and mix into the sauce. If your sauce is too thick or has reduced too much you can add a splash of water to loosen it up.

l In a pestle and mortar or small food processor, bash together the cumin seeds, oregano, dried chilli and salt, then coat the chicken thighs with this mixture.
l Simmer for 30 minutes (approx). To test that the

l Whisk together the egg yolk, mustard and cider vinegar in a bowl. Slowly drip in the rapeseed oil, whisking as you go. Slowly increase the flow of the oil as you whisk, to form a firm mayonnaise. Season with salt and pepper and stir in the double cream.
l Pour generous portions of the sauce into bowls dividing up the sea vegetables evenly, followed by the Jersey Royals and pieces of hake. Finish with a drizzle of extra virgin olive oil and twist of black pepper.

l Place this mixture into a
small saucepan and set over a low heat and stir. Add the stock bit by bit, whisking as you go, until all the stock is incorporated. Heat until warm but not boiling then add the chives, gherkins, capers, chives and sea vegetables. Set aside in a warm place.
l For the pickled cucumbers, in a medium pan, boil the water, sugar, vinegar, thyme and bay leaf together. Let the liquor infuse until is cold. Peel and deseed the cucumbers and dice them into small cubes (1x1cm). Put the cucumbers in the liquor once it’s cold.

l For the gaspacho, cut all the fresh ingredients very fine. The smaller they are, the easier they will break down when macerated, and the better result you will achieve. Mix the chopped ingredients with the liquids and seasonings. Macerate for a minimum of 4 hours, and, If you have time, a day in advance. Reserve extra liquid from this process. Blend the ingredients until smooth, then pass through a fine sieve.

l Prep the prawns, removing the shell and de-veining. Cure the prawns in the natural liquid that forms when macerating the gazpacho for 30 minutes. Cut into small pieces. Season to taste.

l For the croutons, roll the bread slices flat with the rolling pin. Trim off the crust edges. Dice the bread sheets into equally-sized small cubes.

l On medium heat, sauté in a pan with oil, constantly stirring until you start to see some color on the bread.
