PORK AND PRAWN DUMPLINGS Serves 2-4 8 gyoza pastry cases 120g pork mince 6 large peeled king prawns ½ inch ginger 3 spring onions 1 tbsp coriander, chopped 2 dry shiitake mushrooms, soaked to rehydrate 1 dry wood ear mushroom, soaked to rehydrate 2 tbsp light soy sauce 2 tbsp fish sauce 1 tsp sugar ½ tsp MSG l Roughly chop your king

prawns into large chunks, and place to one side. l Strain off your rehydrated mushrooms, remove the stalk from the shiitake. Finely chop both types of

mushrooms and add to a mixing bowl. l Add pork mince, ginger, spring onions. Start to mix together with your hand, being quite rough as you want to break down the pork mince as much as possible (a kitchen mixer with a paddle attachment works well for this). l Once the pork mince has broken down almost to a paste, add in your king prawns, fish sauce, soy sauce and sugar, then mix well so it

is all combined. Weigh out the dumpling mixture into 22g portions and place to one side. l To fill your dumplings, make a circle with your index finger and thumb, place a gyoza pastry central to your circle and rub water around the edges. Place a dumpling portion in the centre, then, using your finger and thumb, pinch together the edges to make your desired dumpling shape. Continue with the rest of the mix. l Bring a pan of water to the boil and cook the dumplings for 6 minutes. Strain then serve with crispy chilli oil, crispy shallots and sliced spring onion. www.foodiesfestival.com

PRAWN LINGUINE WITH TOMATO, CHIPOTLE AND LIME Serves 2 200g linguine 300g jumbo king prawns (shell on optional) 50g unsalted butter 2 garlic cloves, finely sliced 2tsp tomato paste 2tsp chipotle paste 250g cherry tomatoes, halved Juice of 1 lime, plus extra for serving if desired l If using shell-on prawns,

remove the shells and set to one side. Heat a pan over medium high heat and add the butter. Once foaming, add the reserved shells and cook in butter until the shells turn pink. Lightly press on the heads and shells to extract more flavour – the butter should turn orange. Remove the shells from the pan and discard, keeping as much melted butter as possible in the pan ready to start your sauce. l De-vein the prawns by making a shallow slit all the way down the back of each prawn and removing the intestinal tract. Keep about 6 of the prawns whole for presentation and roughly chop any remaining prawns. Set these aside. l Bring a large pot of water to a simmer over a medium high heat. Season well – the water should have the same seasoning as a well-seasoned www.foodiesfestival.com

Add the linguine and cook according to packet instructions, minus 1-2 minutes to allow the pasta to finish cooking in the sauce. l While the pasta is cooking, make the sauce by adding finely sliced garlic to the prawn-infused butter over a medium heat. Cook the garlic until fragrant, but not brown, about 1 minute. Next, add both the tomato paste and chipotle paste and cook for another 1-2 minutes. Add the halved cherry tomatoes, season with salt and cook until they begin to soften and break down, approximately 5 mins.

l Just before the pasta is done, add the whole prawns to the sauce and cook for 1-2 minutes or until they are pink. Remove a cup of pasta water from the pot and drain the remaining pasta. Add the roughly chopped prawns to the sauce, followed by the drained pasta, a couple of tablespoons of pasta water and the lime juice. Toss with the sauce, adding more pasta water if required, until the sauce is thick and glossy. Check for seasoning and serve. Make sure to add the whole prawns to the top.

SESAME RAMEN WITH CARAMELIZED PORK Serves 2 For the paste 6 tbsp tahini 1 tbsp Thai red curry paste 2½ tbsp soft brown sugar 2 tbsp light soy sauce 1 tbsp grated ginger (approx. 6cm) For the pork 2 spring onions, finely sliced 1 tsp grated ginger 1 clove of garlic, crushed 1 red chilli, finely sliced 200g pork mince, preferably 15–20% fat content 2½ tbsp honey 1½ tbsp fish sauce For the noodles 2 large eggs 800ml chicken stock 100g tenderstem broccoli, cut into 5cm pieces 2 portions of ramen or medium egg noodles 1 carrot, shredded with a julienne peeler or cut into matchsticks 1 spring onion, finely sliced l Whisk the paste ingredients

together and divide between two serving bowls. Cook the noodles according to instructions then rinse well under cold water. Set aside. l Heat a large frying pan over a medium heat and add 1 tablespoon of oil. Add the spring onions, ginger, garlic and chilli, and stir-fry for 1 minute. Add the pork, turn up 6 foodies

to medium-high and fry for 4–5 minutes, breaking up the meat as you go, until browned and starting to dry out. Mix in the honey and fish sauce and stir-fry for a further couple of minutes. Turn off the heat. Set aside. l Fill a small saucepan with boiling water and bring to the boil over a medium heat. Add the eggs and cook for 6 minutes, then immediately remove and run under cold water for a minute or so. Peel and cut in half.

l Bring the stock to the boil in

a large pan. Add the broccoli and cook for 2–3 minutes, until just done. Remove and set aside. Add the cooked noodles and turn down the heat – you want them to reheat, not cook. Add a ladle of stock to each serving bowl and whisk to combine, then stir in the remaining stock. Add the noodles, and top with the caramelized pork, the halved soft-boiled eggs, the broccoli and shredded carrot. Garnish with spring onions.

ARANCINI WITH PEA RISOTTO 400g carnaroli risotto rice 1 banana shallot 150ml of white wine Olive oil 50 salted butter 2 litres chicken stock (simmering) 50g Parmesan (grated) 300g garden peas 250 ml double cream Salt and pepper Panko breadcrumbs 2 eggs 120g plain flour l Begin this dish a day in

advance of serving. Start with the pea purée - blanche the peas in boiling water for 3 minutes. Add cream, blend and sieve before covering and setting aside. l To make the risotto, add olive oil to a large, high-sided frying pan. l Finely chop the shallots and add to the oil on a medium heat. Cook slowly until translucent. l Add the rice and stir until coated in the oil and slightly translucent (approx 3-4 mins). Increase the heat slightly, add the wine, get it to a simmer and reduce by half. l Add a ladle of stock, stirring gently but continuously. When stock is absorbed add another www.foodiesfestival.com

ladle and repeat. l When rice no longer has a chalky bite to it, remove it from the heat, add the butter and Parmesan. Stir through and put a lid on to rest for 2 minutes. Add the pea puree and stir through. If serving as a risotto add some stock to loosen if necessary. Perfect risotto should have a porridge-like consistency. l For arancini, cool the risotto.

SCALLOP AND BLACK PUDDING WITH POTATO AND GREEN APPLE Serves 4 4 king scallops in the shell 400g black pudding, diced 400g potatoes, diced – good frying potatoes work best Sml bunch flat leaf parsley, shredded 1 green apple, julienned 3 cloves garlic, chopped 25g butter, unsalted l You can get scallops in

the shell from most good fishmongers – they will be happy to shuck them for you. If you fancy giving it a go yourself it is very easy. You will need a table knife and a spoon. You will notice that the scallop shell has a rounded and a flat shell. Insert your knife into the hinge of the shell and twist to pop open. Run your knife along the inside of the flat shell to separate it from the meat. l Once you have the shell completely open, take your spoon and scoop everything out. You now need to remove the white meat and the roe from the skirt. I do this by separating them with my fingers. Bin all excess material so you are left with white juicy meat and roe. Give them a quick clean under cold water. l Pre-heat your oven to 200°C. Place the diced potato into a frying pan and fry until golden and crisp. 8 foodies

Make sure that the potatoes have started to go soft before adding the black pudding. l Add the black pudding and cook until it starts to crisp up, then add the garlic and cook for a couple of minutes. l Put the potato mixture on to a tray and pop it into the oven until the potatoes are cooked. l Meanwhile, give your pan a clean, pop it back on the stove, and once hot add a little oil. l Next place each scallop into the pan. Try not to shake or shoogle the pan, as you are looking to create lots of colour on the scallop before turning it. Once you have coloured both sides of the scallop, reduce the heat and add your butter and a

squeeze of lemon juice. Baste the scallop in the butter and lemon. Once cooked remove from the pan. l Now take the potatoes and the black pudding out of the oven, mix in the shredded parsley and double check the seasoning. l Next fill each of the empty shells with the potato and black pudding mixture. Top each one with a scallop and finish with your apple.

SCALLOP, DASHI, KIMCHI For the scallop brine 1000ml water 50g salt 10g lemongrass 5g kafir lime For the scallop skirt butter 500g butter 250g scallop skirt 1 lemon 8g salt For the kimchi dressing 6 bunches spring onion 1 tub gochujang paste 6 thumbs ginger & 6 thumbs galangal, peeled and chopped 70ml fish sauce 100g spring onion, sliced For the dashi 150g shitake mushrooms 100g kombu seaweed 100g bonito flakes 6L water For the kafir lime oil 100g kafir lime leaf 100ml grapeseed oil To assemble 1 scallop, 60g, brushed with scallop butter 15g spring onion kimchi 40ml dashi 5ml kafir lime oil 5g caviar l For the brine, boil the salt,

water and aromats. Chill and reserve until needed. l Open scallops, remove and wash the skirt – reserve. Remove the roe and rinse www.foodiesfestival.com

Chill In a bowl over ice, then strain through muslin, hang in a piping bag to allow the oil and water to split, drain the water and keep the oil. l To assemble, place scallop brushed with scallop butter in the centre of the dish. Garnish with spring onion kimchi, dashi, kafir lime oil and caviar.

Cook until the butter browns and stop with the juice from the lemon, add the salt then the roasted skirts. Infuse for 60 mins. Strain. l For the kimchi dressing, blend all ingredients apart from the spring onions, then mix in spring onions. Season with salt. l For the dashi, soak the kombu in cold water overnight. Place the soaked kombu and mushrooms in a pan with the water. Warm gently, never boiling, infuse for 30 minutes, strain and add the bonito flakes. Infuse for a further 30 minutes and strain again.

BAKED HAKE, THAI CURRY CRUMB, COCONUT Serves 4 1 large hake fillet For the hake brine 1L water 100g salt 8 sticks lemongrass 10 kafir lime leaves For the Thai green curry paste crumb 3 bags spinach 200g coriander 4 thumb-sized pieces of ginger 12 stalks lemongrass 35 lime leaf 15 green chillies 50ml fish sauce 150ml rapeseed oil 4 spring onions 250g gluten free bread crumbs 50ml coconut oil For the coconut broth 5.8L coconut milk 2 bunches lemon grass 4 thumbs ginger 20 kafir lime leaf 4 thumb galangal 6 green chillies 2 bunches spring onion 50ml fish sauce Salt For the lemongrass oil 100g lemongrass 100g grapeseed oil 10 foodies

l For the Thai basil oil, place oil

Thai basil oil 100g Thai basil leaves 100g rapeseed oil To assemble 4 hake fillets, 120g each 4 portion Thai curry crumb, measured to fish 400ml coconut broth 40ml lemongrass oil 40ml Thai basil oil l For the hake brine, bring

water to boil, dissolve salt and add lemongrass and lime leaves. Chill. Skin the hake, trim the thin tail and belly off. Portion into 120g rectangular pieces and brine for 20 minutes. l For the Thai green curry paste crumb, blitz all ingredients in Thermomix except the breadcrumbs and oil at speed 6, 60 degrees for 5 minutes then speed 10 for 2 minutes. Add the breadcrumbs and coconut oil. Roll between parchment, freeze and portion as per size of fish. l For the coconut broth, bring all ingredients to a simmer, cook for 1 hour. Strain and reserve for later. l For the lemongrass oil, blitz lemongrass in Thermomix at speed 10 until finely chopped, add the oil then blitz at speed 6, heat 70 for 10 minutes.

Preheat the oven to 180ºC. Cut the green Thai crumb to the same size as the hake portions and place on top of each piece. l Place hake on a baking tray lined with parchment paper and a littlWe oil (we use coconut oil) to stop the fish from sticking to the paper. Bake in the oven for 4-5 min until fish is cooked. While the fish is in the oven, bring 400ml coconut broth to a simmer. Once fish is ready transfer from tray to shallow bowl. l Add 40 ml of lemongrass and thai basil oils to the broth, mix vigorously and pour around your fish. Serve immediately and enjoy.

VENISON YAKITORI, SEASONAL SLAW AND DULSE FLATBREAD For the yakitori 300g venison loin Handful diced spring onions Handful crushed, toasted hazelnuts For the yakitori glaze 500ml chicken stock 1 knob ginger, chopped 100ml mirin 1 tbsp sugar 50ml malt extract 50ml dark soy sauce 50ml water For the slaw Third red cabbage, shredded Third Savoy cabbage, shredded 3 tbsp sesame seeds 150g chopped blanched hazelnuts 1 red chilli, diced 20g coriander & 20g mint, picked and chopped Salt & pepper to taste 2 tsp sugar 4 tbsp cider vinegar 1 apple, grated For the slaw dressing 100ml lemon juice 3 tsp honey 1 tsp soy sauce 4 tbs rapeseed oil For the flatbreads 270g white flour 1 ½ tsp baking powder 1 tsp salt 12 foodies

2 tbsp rapeseed oil 1 tsp sugar 175ml water 2 tsp dried dulse flakes l Combine all ingredients for

the glaze in a pan and reduce by half. Dice venison loin into bite sized pieces and marinade for 24 hours in the glaze. l Soak medium sized wooden skewers in water for 10 minutes and skewer the meat. l For the slaw dressing, add all ingredients except the oil to a pan and reduce for 5 minutes, or until thick and sticky. Cool, then mix in the oil. l For the slaw, shred all the vegetables and apples, add the vinegar, chilli and sugar. Stand for 30 minutes and then dress. Mix the dry ingredients well. l For the flatbreads, add the rapeseed oil and water and mix well, the dough should be firm and not too sticky or dry. If too sticky, add a little extra flour. If too dry add a few drops of water.

l Turn out onto a floured

surface and knead until smooth. Roll into a ball and cover with a clean cloth for 10 minutes at room temperature. l Divide the dough into six pieces and roll on a floured surface to make a disc around 1 ½ inches thick. l Add a couple of tsp of veg oil to pan on a medium heat, and cook the flatbreads for 1 minute on either side until brown and fluffy. l Cook the yakitori skewers over charcoal or in a hot griddle pan for 10 minutes, turning regularly. Take off the heat and brush with the remainder of the glaze. Finish with chopped hazelnuts and spring onions.

SQUIRREL RACK, CONFIT JERSEY ROYAL, CARROT PUREE, WILD GARLIC Serves 2 2 squirrel racks – room temperature 2 jersey royal potatoes 1 clove garlic 1 sprig rosemary Goose fat 1 large carrot 50 g butter small diced 2 leaf wild garlic 50 ml oil Salt and pepper l Peel the potatoes and then

gently fry in a small amount of goose fat in a frying pan to add colour, transfer to a small sauce pan. Add the goose fat to cover the potatoes and add the garlic and rosemary. On a medium heat, bring the fat to a simmer, reduce heat and the gently simmer for around 30 minutes or until potatoes are soft and cooked through, yet hold their shape. www.foodiesfestival.com

l Peel the carrot and chop

into slices. Cover with water in a small pan and add some salt. Bring to the boil on a high heat and cook until carrot is soft. Once softened, drain and reserve the cooking liquor. With a hand blender, blitz the carrot with the diced butter. Season with salt and white pepper. Adjust the consistency if required with the cooking liquor, leave somewhere warm. l Blitz the wild garlic with the oil and pass through a fine sieve. Retain the oil for serving. l In a small frying pan take 2 spoonfuls of the potato confit fat and heat until just beginning to smoke. Turn down the heat very slightly, and very carefully add the squirrel racks and baste for

around 2 minutes. Remove the racks from the pan, season with salt and pepper and leave somewhere warm. l Add a spoonful of the carrot puree to a plate. With a slotted spoon, remove potatoes from fat and drain on an absorbent cloth for a few seconds. Season with salt then add to the plate, place on squirrel rack and drizzle with wild garlic oil..
