RED SNAPPER COCONUT CURRY 5 tbsp vegetable oil 600g red snapper fillets 2 banana shallots, finely diced 3 garlic cloves, finely chopped 3cm piece fresh root ginger, peeled and finely chopped 1 red bird’s eye chilli, finely chopped 10 curry leaves 3 tbsp Mauritian curry powder 3-4 fresh vine tomatoes, roughly chopped 1 tsp tomato purée 200g creamed coconut 600ml hot fish stock 3 tbsp freshly chopped coriander Salt and freshly ground black pepper

Fry for 2 minutes on each side, remove from the heat and set aside. l Drain about half the oil from the pan and reduce the heat to medium. Add the shallots and fry until translucent, about 3 minutes, then add the garlic, ginger and chilli and cook for a further 2 minutes. Add the curry leaves and Mauritian curry powder and cook for 30 seconds before adding the chopped tomatoes and tomato purée. Cook down for 2-3 minutes until softened and the pan
l Add the creamed coconut to
the hot fish stock and stir until dissolved; add to the pan and cook for 15 minutes until the sauce has thickened. Taste and adjust the seasoning before adding the cooked fish fillets to the pan. Heat through for a few minutes, sprinkle over the coriander and serve with steamed basmati rice and mango kutcha.

CITRUS CURED SEA BASS WITH PICKLED RAINBOW RADISH AND CITRUS SALAD Serves 1-2 1 sea bass fillet (skin off) 1 pink grapefruit 1 lemon 1 lime 1 bunch rainbow radish 200g mixed baby salad leaves 500g salt 150g sugar 1 tsp poppy seeds 150ml white wine vinegar 50ml water 50ml olive oil l In a small mixing bowl, mix
together 100g of the sugar with 400g of the salt and the zest of the grapefruit, lemon and lime. Put the sea bass in a small tray, cover with the salt mixture and leave for 1-2 hours in the fridge. l Cut the green tops off the radishes, then cut them into different shapes, such as quarters or rounds. www.foodiesfestival.com
l Take a small pan and add
the remaining salt and sugar and the vinegar with a splash of water (50ml). Bring to the boil, then take off the heat and place the radishes in the pan, making sure they are covered and leave to cool down. l Remove skin from the grapefruit, lemon and lime and segment out the flesh. Place in a small mixing bowl and add the baby herbs, the olive oil and a pinch of salt. Mix thoroughly. l Wash the sea bass under a tap until all of the salt mixture is gone. The fish will have
firmed up and is ready to be sliced into small, thin slices. Drain the liquid from the pan of radishes and dry them. l It’s now time to plate up – take your sliced sea bass and place these on the plate in a circle. Drizzle some olive oil over it to make it look shiny, then place the pickled radishes on top of the sea bass randomly. Add height by using the baby salad leaves and grapefruit to go around the fish then sprinkle the poppy seeds over. Enjoy!

LEMON AND HONEY CHICKEN Serves 4 400g chicken wings 1 lemon 3 tbsp extra virgin olive oil 4 sprigs fresh thyme 1 garlic bulb, cut in half Pinch of sweet pimentón 3 tbsp honey 2 tbsp chopped fresh coriander leaves Sea salt and freshly ground black pepper l Bring a pan of
water to the boil, add the chicken wings and boil for 5 minutes. Remove and drain on kitchen paper for 5 minutes. l Meanwhile, zest the lemon, halve it and squeeze out the juice, but don’t throw the rest of it away. l Heat the oil in a frying pan over a high heat. Add the thyme sprigs, chicken wings, squeezed lemon halves and the garlic and fry for a couple of minutes on each side. Sprinkle the pimentón over the chicken and after 10 4 foodies
seconds drizzle the lemon juice and honey into the pan. Season with salt and pepper. l Continue to sauté the chicken, allowing the liquid to reduce while making sure the wings are fully coated in the glaze. Add the lemon zest right at the end as it turns bitter if added too early and loses its fragrance quite quickly.
l Sprinkle with the chopped
coriander and sea salt before serving.

WASABI-WRAPPED SMOKED TROUT MAKI Makes 1 dish 500g sushi rice 200ml sushi seasoning - can be bought ready made Fresh wasabi leaves and stems Wasabi flowers if available. Otherwise substitute with chopped wasabi leaf Fresh wasabi root Salt Cucumber Romsey smoked trout Teriyaki sauce – can be bought ready made Mango coulis – as above 400g tempura flour

l For the rice, wash until the water
runs clear. Marinate wasabi leaves with a light sprinkling of salt. Put the rice and 500ml of water into the rice cooker for 1 hour. Leave to cool at room temperature. Gently mix the sushi seasoning into the rice by sprinkling on top and ‘folding’ the rice with a flat spatula. l Wash the wasabi leaf until the salt is gone and squeeze the leaf flat between sheets of kitchen paper until dry. l To roll the sushi, spread the wasabi leaves, slightly overlapping, on a bamboo rolling mat. Put 100g of rice on the wasabi leaves and spread flat. Add 5g of thinly sliced cucumber and sliced wasabi stems and 20g smoked trout on top of the rice, across the middle. Use the bamboo mat to roll the sushi, keeping the wasabi leaves on the outside. Cut the roll into 8 equal pieces. l For the tempura, mix the flour
with 400ml water to create the batter. To make your tempura really crispy, keep your batter chilled or use ice-cold water to mix. Mix the wasabi flower with the tempura batter. (If wasabi flower is not available, then you can use slices of wasabi leaf instead.) l Heat some oil in a deep saucepan, carefully drop the wasabi flower into the oil and cook until the batter becomes crispy. l To finish, grate fresh wasabi and sprinkle on top of each piece. Cut the wasabi flower tempura and place on top of each roll. Squeeze teriyaki sauce and mango coulis on top.

CHILLI CHICKEN DRUMMERS Serves 4-6
l First things first, you need
12 chicken nibblets aka drumettes, skin off 2-3 cloves garlic, crushed 1 inch ginger, freshly grated 2 green chillies, deseeded and finely chopped or minced ½ chicken stock cube, crumbled ½ tsp red chilli powder ¼ tsp white pepper ½ tsp sea salt or to taste ½ tsp paprika ½ tsp of roasted ground cumin Juice of 1 lemon or 2 limes 1 small egg, lightly beaten 50g cornflour 100g plain flour Pinch of garam masala Cooking oil for deep frying Any fresh citrusy salad and chutneys to serve
to make the ‘drummers’ out of these nibblets. With a very sharp knife, scrape the meat towards the fat end of the joint until all of the meat is packed up at one end and the rest of the bone is neat and clean. l Put the rest of the ingredients in a large bowl and give them a really good mix until a thick and smooth batter is formed. l Add the drummers into the batter and massage them lightly, until all of them are coated well. Leave them for a couple of hours to absorb all the delicate spices and take up all the flavours. l In a large, heavy-based wok, add enough oil to deep fry and heat it up to 190ºC,

until a breadcrumb thrown into the oil sizzles and floats instantly. Take the marinated drummers one by one, shaping them slightly to resemble a drumstick, then deep fry them in batches, four to six at a time, until nicely brown in colour. Drain on a kitchen towel. l Serve hot, with a wedge of lemon and choice of chutneys, sauces and a light zingy salad if you wish, or they’re equally good on their own.

CHARRED SUMMER VEGETABLE SALSA WITH HALLOUMI Serves 4-6 150g heritage tomatoes 1 garlic bulb 1 large red pepper, whole 1 red onion, cut into rings about 1.5cm thick, unseparated 1 long red chilli 15g basil, stalks included, small leaves picked off and saved 2 tbsp extra-virgin olive oil 225g halloumi cheese Squeeze of lemon (optional) Sea salt (optional) l If using heritage tomatoes,
cut the bigger ones into quarters and leave the cherry ones whole.
l Barbecue or use a grill pan
to roast the tomatoes, garlic, pepper, onion and chilli until they are blackened and charred. Leave the garlic whole; this recipe only needs a couple of cloves but the roasted garlic can be used in many other dishes and kept wrapped in tin foil in the fridge once cooled. l Once everything is blackened remove from the heat and cut the pepper in half lengthways. Using a spoon, remove the pith and seeds. For a milder sauce, remove the pith and seeds from the chilli. If you like it spicy, just cut off the stem. l Place the pepper, onion, chilli and basil with two garlic cloves from the bulb into a food
processor with 1 tablespoon of olive oil and blitz (just one quick blitz is sufficient). Alternatively, finely dice them. l Chop the halloumi into chunks and fry off in a frying pan with the remaining oil until golden and crispy. l To serve, put the charred vegetable salsa on a plate. Place the halloumi on top and spoon over the roasted tomatoes. Sprinkle with the baby basil leaves. l I don’t add salt to this dish as I think the halloumi is salty enough and I wanted the veg flavours to come through. However, feel free to add salt and a spritz of lemon if you feel it needs it.

OCTOPUS WITH OLIVES, HERITAGE TOMATO TARTARE Serves 2 400g octopus, poached 50g black olive mayonnaise 35g chimichurri sauce 1 lemon 120g heritage tomato tartare (see below) 20g kalamata olive oil 20g black, pitted olives 10g pea shoots For the heritage tomato tartare 4 large red heritage tomatoes 50g garlic, finely chopped 2 small shallots, finely chopped l For the heritage tomato
tartare, bring a large pot of water to the boil and prepare an ice water bath. Wash and de-stalk the tomatoes. Score 8 foodies

l To assemble the dish,
l Blanch the tomatoes in
lightly brush the octopus with olive oil and char on the grill until it reaches 75ºC internal temperature. l Heat a pan up, add the chimichurri, and once hot add the octopus and glaze. Serve the heritage tomato tartare on two presentation plates, dressing with the black olives and pea shoots, with the kalamata oil on the side. Serve the octopus on a central plate and dress with the pan juices.
boiling water for 15 seconds, then transfer into the ice water bath. Once chilled, remove the skins, cut into quarters and deseed. Pat dry, then cut into 5mm squares. l In a pan over a medium heat, add olive oil then the garlic and shallots and sauté for 2 minutes, stirring occasionally. Add the tomatoes and cook gently for 6-7 minutes. l Using a slotted spoon, remove the tomato, shallot and garlic mix from the pan, leaving the cooking juice in the pan. Reduce the juices to a syrup. Pour over the tomatoes, season with the salt and pepper and stir well. Allow the mixture to cool and store in a sealed container in the fridge

MINI PORK PIES Makes 12 For the pastry 800g plain flour 200g lard 200g water 1 tsp salt 1 egg yolk, beaten For the filling 600g pork mince (20% fat) 150g bacon lardons 50g fresh white breadcrumbs 1 tbsp fennel seeds 1 tbsp dried sage 1 tbsp pepper 1 tsp salt For the jelly 300ml chicken stock 3 sheets leaf gelatine l In a large bowl, mix the pork,
bacon, breadcrumbs, fennel seeds, sage, pepper, and salt. Put to one side. Preheat your oven to 180°C. l Sieve the flour and salt into a large bowl. Put the lard and water into a pot and bring to a simmer. Once the lard has melted, pour into the flour and work into a pastry. If it’s still loose, add warm water a little at a time until smooth. l Dust a work surface with flour and, working quickly, roll the pastry out until approximately 3mm thick. Cut out 12 larger circles, big enough to line the holes of a muffin tin, and 12 smaller circles for lids. l Line a 12-hole muffin tin with the larger circles. Fill each with a scoop of filling. rims with a splash of water and firmly press the lids to seal. Using a sharp knife, trim the tops. Make a hole in each lid using a chopstick. l Beat an egg yolk, 1 tsp of water, and a pinch of salt in a bowl. Brush the tops of the pies and chill for 15 minutes. Repeat this process one more time. Bake for 30 minutes, or until golden. Remove from the oven, turn out the pies, place on a baking tray, and brush the sides with more egg wash. Return to the oven for another 20-30 minutes until the tops are dark golden-brown. Remove from the oven and cool for 30 minutes.
l Soak the gelatine in cold
water for five minutes. In a small saucepan, heat the chicken stock until simmering. Add the gelatine, stir, and dissolve. Leave to cool for 5 minutes. l Using a funnel or small jug, carefully fill each pie through the hole with the chicken stock. Refrigerate overnight to set.

CARROT AND ORANGE CUPCAKES Makes 12

175g light soft brown sugar 100g wholemeal self-raising flour 100g white self-raising flour 1 tsp bicarbonate of soda 2 tsp mixed spice Zest of 1 orange 2 large free-range eggs 150ml sunflower oil 200g carrots For the fresh orange buttercream: 250g slightly salted butter 500g icing sugar Zest of 1 orange 2 tbsp orange juice l Preheat oven to 180ºC and
line a 12-hole muffin tin with large cupcake cases. l Grate the carrots using a large-holed grater before wrapping tightly in food-grade muslin and squeezing out the 10 foodies
stand mixer, combine your dry ingredients (sugar, flours, bicarbonate of soda, mixed spice and orange zest) and mix thoroughly. l Lightly beat the eggs in a separate jug, before adding them, the sunflower oil and grated carrot to the dry ingredients, mixing by hand until thoroughly combined. l Divide the mixture evenly between the cupcake cases and bake at the top of the oven for around 25-27 minutes (until the mixture stops bubbling or ‘singing’). Allow the cupcakes to cool in the tin for around five minutes before transferring to a wire rack to cool completely. l While your cakes are cooling, make your buttercream. Begin by creaming your butter until pale and smooth. Add in the icing sugar, a little at a time,
ensuring each addition is fully incorporated before adding the next – the orange juice can be added at this point if the mixture is too stiff to work with. Finally, add the orange zest and mix through thoroughly. l When your cakes are fully cooled, use a piping bag with an open star tip to pipe a swirl of buttercream onto each cupcake, before decorating with a sprinkle of freshly chopped pecans. Once the buttercream has set, store in an airtight container for up to three days at room temperature.

VEGAN SMOKED CHEESE AND MARMITE SCONES 225g self-raising flour 3-4 large pinches of salt 75g vegan spread/margarine 2 tsp caster sugar 125g Applewood vegan smoked cheese, grated 2 tsp mustard powder, optional 1 egg replacer Splash of non-dairy milk Splash of lemon juice 2-3 tsp Marmite To decorate: 3 tsp Marmite Smoked salt or sea salt flakes l Preheat the oven to 190°C.
In a jug, mix your egg replacer and set aside. l Blend together the flour, salt, margarine and sugar in the bowl using a blender or your fingers until you have a fine breadcrumb. Add half the smoked cheese to the bowl. Finally, if you have it, add two teaspoons of mustard powder for depth and warmth.

l Add the milk, lemon juice
and Marmite to the jug with the egg replacer. Mix well. l Add the wet mixture into the dry mix and bring it together with a spatula and then your fingers. Roll out to 1 inch thick and, using a medium sized cutter, cut out the scones. You should get around 7 to 8 after re-working the dough. l Now for the messy bit. Transfer the scones to a lightly floured baking tray and get ready for decorating. To add that extra kick take a teaspoon of Marmite and push a small dollop (around a quarter of a teaspoon) on to the middle of each scone using a skewer or cocktail stick. Then take the remaining half of the smoked
cheese and place towering piles on each scone. Finally add a decent sprinkling of salt over the cheese to finish. We recommend smoked salt but if you can’t get that as it is a bit specialist then a good flaked salt will be fine. Bake for 10-15 minutes then transfer to a rack to cool until just warm. l These can also be made as smaller bitesize scones.

CARROT AND ORANGE CAKE For the sponge 510g plain flour 1 tbsp baking powder 1½ tsp bicarbonate of soda ¾ tsp fine sea salt 1 tbsp ground cinnamon 1 tsp ground ginger 1 3 / tsp ground nutmeg 1 3 / tsp ground cloves 6 large free-range eggs 300g caster sugar 225g light soft brown sugar 230g vegetable oil 200g unsweetened applesauce 1 tbsp vanilla extract 500g finely grated carrots 90g orange juice Zest from 1½ oranges 200g walnuts For the frosting 400g unsalted butter 450g icing sugar 600g soft cheese, room temp 2½ tsp vanilla extract To decorate 1 large carrot, peeled and halved lengthways l Preheat the oven to 180°C.
Roast walnuts for 10 mins, turning once. Finely chop once cooled. Grease and line three 9” round cake tins. l In a large bowl, whisk together flour, baking powder, bicarbonate of soda, salt, cinnamon, ginger, nutmeg and cloves, then set aside. l Finely grate carrots then squeeze off liquid. Total weight once squeezed should be 12 foodies
500g. In a bowl add orange juice and zest then set aside. l In a mixer, whisk eggs and sugars until light and fluffy, then stream in oil until combined. Whisk in vanilla and apple sauce. l Add flour mix into egg mix and gently fold in until just combined. Fold in carrot, orange juice, zest and 180g of the walnuts. l Reduce oven to 170°C. Split cake mix evenly between tins. Bake for 35-40 mins. l Leave to cool on a wire rack for 10 mins before removing from the tins, then leave to cool completely. l For the frosting, cream butter in a mixer until light and fluffy. Slowly whisk in icing sugar, scraping down the bowl each time. While whisking, add soft cheese one tablespoon at a time until all added, then add
the vanilla. Mix until fluffy. l Trim sponges to level out
the top, add layer of frosting in between sponges. Add a crumb coat of frosting all over cake and chill in the fridge for 1 hour. l Prepare carrot decoration by taking prepared carrot and peeling thin strips, drawing peeler from top to bottom. Save any imperfect ones to make the bow on top of cake. Lay out strips on kitchen paper to dry out for about 30 minutes. l Add final layer of frosting to cake and decorate with peeled carrots, sugar carrots and leftover 20g of chopped walnuts.
