CHICKPEA & AVOCADO SMASH BURGERS Serves 4 800g tinned chickpeas 1 tbsp smoked paprika 1 tbsp ground coriander ½ tsp garlic granules or powder 2 tbsp tomato purée Juice of 2 limes 1 tbsp olive oil 1 avocado Extras Buns (I use gluten-free) Vegan mayo Lettuce
l Preheat the oven to 220°C. Drain and rinse the chickpeas, add to a large bowl and mash thoroughly with a potato masher or fork. Add the spices, garlic granules, tomato purée, juice of 1 of the limes, olive oil
and a generous pinch of salt and pepper and mix. Shape into 4 patties, place on a baking tray lined with baking paper and bake for 20 minutes. l Meanwhile, peel the avocado and add to a bowl along with the juice of the other lime and a generous pinch of salt and pepper. Mash together with a fork. l Remove the burgers from the oven and allow to cool for 5 minutes (this helps them to firm up). l Serve in buns (gluten-free if you want) with a spreading of vegan mayo, some lettuce and the avocado smash.

PRAWN LINGUINE WITH TOMATO, CHIPOTLE AND LIME Serves 2 200g linguine 300g jumbo king prawns (shell on optional) 50g unsalted butter 2 garlic cloves, finely sliced 2tsp tomato paste 2tsp chipotle paste 250g cherry tomatoes, halved Juice of 1 lime, plus extra for serving if desired l If using shell-on prawns,
remove the shells and set to one side. Heat a pan over medium high heat and add the butter. Once foaming, add the reserved shells and cook in butter until the shells turn pink. Lightly press on the heads and shells to extract more flavour – the butter should turn orange. Remove the shells from the pan and discard, keeping as much melted butter as possible in the pan ready to start your sauce. l De-vein the prawns by making a shallow slit all the way down the back of each prawn and removing the intestinal tract. Keep about 6 of the prawns whole for presentation and roughly chop any remaining prawns. Set these aside. l Bring a large pot of water to a simmer over a medium high heat. Season well – the water should have the same seasoning as a well-seasoned www.foodiesfestival.com
pot of soup. Add the linguine and cook according to packet instructions, minus 1-2 minutes to allow the pasta to finish cooking in the sauce. l While the pasta is cooking, make the sauce by adding finely sliced garlic to the prawn-infused butter over a medium heat. Cook the garlic until fragrant, but not brown, about 1 minute. Next, add both the tomato paste and chipotle paste and cook for another 1-2 minutes. Add the halved cherry tomatoes, season with salt and cook until they begin to soften and break down, approximately 5 mins.
l Just before the pasta is done, add the whole prawns to the sauce and cook for 1-2 minutes or until they are pink. Remove a cup of pasta water from the pot and drain the remaining pasta. Add the roughly chopped prawns to the sauce, followed by the drained pasta, a couple of tablespoons of pasta water and the lime juice. Toss with the sauce, adding more pasta water if required, until the sauce is thick and glossy. Check for seasoning and serve. Make sure to add the whole prawns to the top.

GASPACHO “ARJA-MOLHO”, PRAWNS, PICKLED CUCUMBER AND CROUTONS Serves 4-6 For the gaspacho 1.5kg very ripe plum tomatoes 300g peeled and diced cucumbers, peeled and deseeded 340g grilled red pepper, skinless and deseeded 1 white onion 13g garlic 75ml olive oil 10ml Worcestershire sauce 5 drops Tabasco 6g sugar 6g ground black pepper 5g sherry vinegar 5g salt 10g basil 20g coriander 150g fresh bread, sliced and crusts cut off For the prawns 12 fresh prawns Salt to taste For the mayonnaise 3 eggs 100g Dijon mustard 4 tbsp water 2 garlic cloves 40g white balsamic 400g vegetable oil Salt to taste

For the pickled cucumbers 1 cucumber 100g white wine vinegar 100g water 100g sugar ¼ bunch lemon thyme 2 bay leaves For the croutons: 400g soft white tin bread 150g butter To finish the plate: Good quality olive oil Chopped chives Daterino tomatoes sliced in half – 3 per plate (6 halves) l For the gaspacho, cut all the
fresh ingredients very fine. The smaller they are, the easier they will break down when macerated, and the better result you will achieve. Mix the chopped ingredients with the liquids and seasonings. Macerate for a minimum of 4 hours, and, If you have time, a day in advance. Reserve extra liquid from this process. Blend the ingredients until smooth, then pass through a fine sieve. l For the mayonnaise, separate the egg yolks and discard the whites. Add all
the ingredients in a blender, except the oil, and blend on full speed until you reach a homogenous mix. On medium speed, add the oil gradually to the mix to achieve a thick mayonnaise consistency. Check seasoning and rectify it if needed l Put the gaspacho mix in a manageable bowl and, with a hand blender, blend in 3-4 tablespoons of mayonnaise, until you have a smooth mix. Fix seasoning – sugar, salt, vinegar, olive oil, Tabasco – until balanced. l Chill in fridge, blend again with the hand blender just before serving. l Prep the prawns, removing the shell and de-veining. Cure the prawns in the natural liquid that forms when macerating the gazpacho for 30 minutes. Cut into small pieces. Season to taste. l For the pickled cucumbers, in a medium pan, boil the water, sugar, vinegar, thyme and bay leaf together. Let the liquor infuse until is cold. Peel and deseed the cucumbers and dice them into small cubes (1x1cm). Put the cucumbers in the liquor once it’s cold. www.foodiesfestival.com

l For the croutons, roll the
bread slices flat with the rolling pin. Trim off the crust edges. Dice the bread sheets into equally-sized small cubes. l On medium heat, sauté in a pan with oil, constantly stirring until you start to see some color on the bread. At that stage, add the butter until it foams, toss the croutons until evenly golden www.foodiesfestival.com
Drain the excess fat through a colander, allowing the fat to escape to prevent the croutons to go soggy. Lay them in kitchen paper to absorb any leftover fat l Put some soup bowls in the freezer to ensure they are really cold. On the centre of each bowl put cured prawns, pickled cucumber, Datterino halved tomatoes and croutons
on top. Then pour the gazpacho over and finish with some good quality olive oil.

PAN-FRIED SALMON WITH DILL & FENNEL SALAD AND A TARRAGON & CAPER MAYONNAISE Serves 4 For the salmon 4 salmon portions, 150g each, descaled, and deboned 30g sunflower oil 1 lemon 4g salt For the tarragon & fennel salad 2 fennel bulbs 4 spring onions 5g salt 50g chardonnay vinegar 5g tarragon For the dill & caper mayonnaise 60g egg yolk 15g water 10g dijon mustard 20g lemon juice 15g chardonnay vinegar 5g salt 1g sugar 200g vegetable oil 100g extra virgin rapeseed oil To finish the mayonnaise 50g Greek yoghurt 10g chopped dill 30g chopped capers 30g chopped gherkins

l For the salmon, season each
portion evenly on the flesh side with the salt, then on a medium heat, fry the salmon skin-side down in a non-stick frying pan with the sunflower oil. Fry for 4 minutes, flip, then continue to cook for 2 minutes. Take the pan off the heat, add the zest and juice of the lemon, and set aside to rest until needed. l For the tarragon and fennel salad, finely slice the fennel and spring onions, then chop the tarragon. In a large bowl, mix together the fennel, spring onions, tarragon, chardonnay vinegar and salt then leave for minimum 10 minutes. l For the dill and caper mayonnaise, place all ingredients
(except the oils) in a blender, and blitz until combined. Continue blending whilst gradually adding the oils until thick and smooth. To finish, mix all ingredients into the mayonnaise and set aside in the fridge. l To serve, place a generous spoonful of both the tarragon and fennel salad, and the mayonnaise on the plate. Crown with a portion of salmon, and finish with a drizzle of rapeseed oil, and some dill sprigs. Enjoy!

ASPARAGUS AND ARTICHOKES ‘GRANADA’ STYLE Serves 4 as a tapa 4 globe artichokes ½ lemon 1 bunch green asparagus 50 ml olive oil 3 garlic cloves, thinly sliced 1 tablespoon pine nuts Pinch cumin seeds 10 saffron threads 1 tbsp freshly Chopped mint Sprig of thyme, leaves picked 40–50 ml white wine Salt and freshly ground black pepper l First prepare the artichokes.
Trim the stalks and peel away the outer leaves so you are just left with the artichoke hearts. Scrape away any furry choke with a teaspoon and then run a lemon half over the hearts so they don’t discolour. Trim the asparagus by peeling the bottom of the stalks and snapping off the hard ends. l Bring a large pan of salted water to the boil and squeeze the lemon half into it. Boil the artichokes for 10 minutes, adding the asparagus 2 minutes before the end of the cooking time. Drain and refresh under cold water. www.foodiesfestival.com
l Meanwhile, heat the oil in
a frying pan over a medium heat and gently fry the sliced garlic and pine nuts until light golden. Add the cumin seeds and saffron and very quickly add the drained asparagus and artichokes. Sauté for a couple of minutes, adding the chopped mint, thyme leaves and seasoning as you toss the pan. l Add the white wine and let it reduce until it has almost all evaporated.

LOBSTER AND LEEK TARTLET Serves 2 For the shortcrust pastry 125g plain flour Pinch of salt 55g butter, cubed 2-3 tbsp cold water For the filling Third of a cooked lobster cut into small dice 1 small leek, chopped finely 2 whole eggs, whisked 125ml double cream 100g Emmenthal cheese 1 pinch salt 1 pinch nutmeg 40g chopped chives l For the pastry, put the flour
and salt in a large bowl and add the cubes of butter. Use your fingertips to rub the butter into the flour until you have a mixture that resembles coarse breadcrumbs with no large lumps of butter remaining. Try to work quickly so that it does not become greasy. l Using a knife, stir in just enough of the cold water to bind the dough together. Wrap the dough in cling film and chill for 10-15 minutes before using. 8 foodies
l Roll out the pastry and
press into cases using a spare small ball of excess dough. Using parchment/baking paper place on top of pastry and weigh down with baking beans or dry rice, cook for 10-15 minutes to blind bake. Take out of oven, remove parchment and weight, set aside for filling. l For the filling, cook off the chopped leek in a little butter and a drop of oil to stop it from catching, once this softens remove from the heat. l Place all of the ingredients into a bowl, reserving some chopped chives for the garnish, and mix well. Pour the
filling mixture into the pastry case, transfer to the oven and bake for 10-12 minutes, or until golden-brown. l For a veggie alternative, choose your favourite veg. We recommend roasting or frying off small cubed root veg, sautéing leeks, greens and courgette and adding fresh tomatoes and mange tout.

COD – PEA – LENTILS Serves 4 For the cod 4 cod fillets, 200g each 100ml grapeseed oil Sea salt For the lentils 200g Umbrian lentils 1 litre bottled water 17g sea salt 1 leek, white part only, halved 1 carrot, peeled and halved 1 large shallot, peeled and halved For the peas 800g frozen peas 5 cubes ice Butter Salt For the sauce 1 bottle of lovely Pinot Noir 500ml chicken stock 50ml red wine vinegar www.foodiesfestival.com
l Pour the wine, vinegar and stock
into a heavy-bottomed pan, large enough that the liquid only half fills the pan. Bring to the boil and skim any scum that forms on the surface throughout the process. Reduce until the remaining liquid coats the back of a spoon and then put to one side l Put all the ingredients for the lentils into a large pan, simmer for 20 – 25 mins until just cooked. Cool in the liquid. Once cold drain and put to one side. l Put the peas and ice into a blender and purée until smooth. Put to one side. l To serve, reheat the lentils in a small amount of water with a couple of knobs of butter. Reheat the pea purée with a couple of
cubes of butter. Season with salt to taste. Reheat the sauce. l Heat a non-stick frying pan with the grapeseed oil until very hot and carefully put the cod in the pan. Cook the cod until golden on one side and turn over. The fish is cooked as soon as a knitting needle passes through the fish without resistance. l Arrange the ingredients however you see pleasing to the eye and serve immediately.

CHICKPEA DOSA, ZA’ATAR SPICED PEAR AND CABBAGE, TAHINI SAUCE Serves 2-3 For the tahini sauce 2 heaped tbsp tahini 1 large lemon, juiced, plus a dash of zest ½ tsp vinegar of choice 1 tbsp Dijon mustard 2 tsp soy sauce or tamari 1 tbsp pure maple syrup, or other sweetener of choice Salt and pepper For the za’atar spiced pear and cabbage 2 medium pears (any variety available), sliced in half lengthways, then quartered, seeds removed ½ small cabbage of choice, thinly sliced/shredded, lengthways 2 tsp za’atar spice blend 1–2 tsp olive oil salt and pepper For the dosa 1–2 small carrots, grated 1 small onion, finely chopped/ grated 2 cloves of garlic, crushed or finely chopped 120g gram flour (chickpea flour) 1 large handful of fresh herbs of choice (parsley, dill, coriander, or a combination), finely chopped 1 tsp ground cumin 1 tsp ground turmeric 1 heaped tbsp nutritional yeast Salt and pepper 185–250ml water 10 foodies
Oil of choice, for frying (coconut, olive, avocado, etc.) To serve Approx. 2–4 spring onions, finely chopped Sesame seeds, lightly toasted Olive oil, to drizzle l Preheat your oven to 180°C
fan. Make your tahini sauce first so that it can sit in the fridge and firm up slightly. In a small bowl whisk together the tahini, lemon juice and zest, vinegar, mustard, soy sauce or tamari, maple syrup, salt and pepper. Add a dash of water if you’d like the sauce to have a runnier consistency. Put into the fridge and leave to thicken. l Put the pears and cabbage on a baking tray and sprinkle over the za’atar spice blend. Drizzle over the olive oil and season with salt and pepper. Put into the oven and roast for about 20 minutes. They will cook quicker the softer they are, so be sure to keep an eye on them. Once cooked, remove from the oven and let them cool slightly. l To make the dosa, put the grated carrot, onion and garlic into a bowl and mix to combine. Add the gram flour, chopped herbs, cumin, turmeric, nutritional yeast and salt and pepper, and mix again. Slowly pour in the water and begin to mix. You want the batter to be runny, with no floury lumps. You can add a little more water
or flour if need be. l Over a medium heat, add
a small amount of oil to your frying pan and heat it up, swirling it around the whole pan. Using a ladle, gently pour in some of the batter. You can make the dosa as small or as big as you like, filling the whole pan with one dosa or making a few at a time (this will vary your frying time). Fry for a few minutes on one side, until the surface starts to show bubbles and the bottom is browning. Flip and repeat, frying for another couple of minutes. l To serve, place your dosa on a plate and top with the desired amount of pear and cabbage. Drizzle over the tahini and finish off with some sliced onions, sesame seeds and a drizzle of olive oil. Season with additional salt and pepper if necessary.

ULTIMATE CHOCOLATE CAKE Serves 12 For the sponges (this makes 2, but you’ll want to double it to make 4) 400g plain flour 250g golden caster sugar 100g light brown soft sugar 50g quality cocoa powder 2 tsp baking powder 1 tsp bicarbonate of soda ½ tsp salt 3 large eggs 150ml sour cream 1 shot freshly brewed espresso coffee, cooled 1 tbsp vanilla bean paste 175g unsalted butter, melted, plus extra for greasing 125ml corn oil 300ml ice-cold water For the custard 5 large egg yolks 150g caster sugar 2 tbsp cornflour 250ml milk 250ml double cream 100g dark chocolate (70% cocoa solids minimum), broken into pieces For the icing 180g dark chocolate (70% cocoa solids minimum), broken into pieces 250g unsalted butter, softened 300g icing sugar 2 tbsp chocolate liqueur To decorate Chocolate treats (I like Maltesers, Buttons, Ferrero Rocher…), white chocolate 12 foodies
chips and candy sprinkles, to decorate l To make the sponges,
preheat the oven to 180°C. Grease the cake tins and line the bases with non-stick baking paper. Mix all the dry ingredients together in a large bowl with a hand whisk until evenly combined. l In a separate large bowl, whisk together the eggs, soured cream, cooled coffee and vanilla. l Pour the melted butter and oil into YET ANOTHER bowl and beat together well with an electric whisk. Dribble the measured water into the bowl while continuing to whisk – this will emulsify the mixture (I don’t understand it – ask Nigella). Now combine this oil mixture with the egg mixture and beat again. Finally, add this wet mixture to the dry ingredients and whisk until just combined (make sure to include the pesky bits of flour hiding at the bottom of the bowl). l Divide the batter equally between the lined tins and bake for 40 minutes, or until a skewer inserted in the middle comes out clean. If you are doubling this sponge recipe (which I recommend), then get cracking weighing out your ingredients to repeat the process. Remove from the oven and leave to cool in the tins. l To make the custard, while your sponges are baking,
whisk the egg yolks, sugar and cornflour together in a bowl with a hand whisk until you have a pale paste. Heat the milk, cream and chocolate in a medium saucepan over a low heat, stirring, until the chocolate has melted and the mixture is steaming but not boiling. Pour a little of the hot milk mixture on to the egg yolk mixture and whisk vigorously to combine, then gradually add half of the remaining hot milk mixture in a thin stream, whisking constantly until it is all incorporated. Add the egg yolk mixture to the pan, place over a medium heat and bring to the boil, whisking constantly until thickened to a custard consistency that you are happy with. l Pour the custard through a sieve over a bowl, cover the surface with clingfilm to stop a skin from forming and leave to cool. l To make the icing, melt the chocolate in a microwave-safe bowl in the microwave using the heat, stir, repeat method until smooth, then set aside to cool. Once cooled, put into a food processor with the other icing ingredients and blitz until creamy. If you don’t have a food processor, do it the oldfashioned way, creaming the butter, sifting in the icing sugar and then adding the chocolate (and liqueur if using) before beating together. l To assemble, remove your cooled sponges from their www.foodiesfestival.com

tins and peel off the lining paper. Using the cookie cutter, stamp out a circle from the centre of one sponge if you’ve made 2, or from 2 sponges if you’ve made 4. Crumble up the sponge circles you’ve cut out and set aside. l Place a complete sponge (no hole), base-side up, on a cake board or serving plate. Spread over a layer of icing with a small palette knife and stick a holey sponge, base-side up again, on top. Then fill the hole with custard and some of www.foodiesfestival.com
the crumbled up sponge. Pop some chocolate treats in, too, if you like. If you’ve made 4 sponges, spread another layer of icing on the ring of sponge around the hole, then top with a complete sponge before repeating the process so that you finish with a custard-filled hole as the top layer. Fill with more treats and crumbs. l Decorate the cake with any icing you have left over (use a piping bag and fancy nozzle if you have one) and even more of your favourite treats.

Lemon and blackberry layer cake Serves 12 For the cake 200g caster sugar 3 eggs 200g self-raising flour 225g sunflower oil, plus extra for greasing 150ml milk Finely grated zest of 2 lemons ½ tsp fine sea salt For the compote 200g blackberries, fresh or frozen (defrosted if frozen) 50g caster sugar Juice of 1 lemon 1 tsp arrowroot powder For the buttercream 225g butter, softened 375g icing sugar, sifted 2 tbsp milk Finely grated zest of 1 lemon l Heat the oven to 180°C.
Brush two 20cm loosebottomed cake tins with oil and line with parchment. l To make the sponge, place
the sugar and eggs in a mixing bowl and whisk until they are light in colour and frothy. Add the remaining ingredients. Stir until combined and pour into the cake tins. l Bake for 20–25 minutes until golden brown and the sponge is just coming away from the edge of the tins. Set aside to cool for 5 minutes, then run a palette knife around the inside edge of the tins. Carefully turn the cakes out onto a cooling rack to cool completely. l To make the blackberry compote, put the blackberries, sugar and lemon juice in a saucepan. Bring to a simmer and cook over a low– medium heat for 10 minutes or until the blackberries have broken down. Push through a sieve and return to a clean saucepan. Mix the arrowroot with 1 teaspoon water to form a paste. Stir into the purée and cook over a medium heat, stirring all the time until just

Dairy-free: use a non-dairy milk in the cake such as soya, almond or my favourite, fresh coconut milk. For the lemon buttercream, swap butter for a plant-based alternative (preferably a firm, not spreadable, one). 14 foodies
simmering. Set aside to cool – it will thicken slightly as it cools. l Place the ingredients for the buttercream in a large bowl or the bowl of an electric mixer. Set your mixer to a low speed and gradually increase it until you have a smooth, creamy buttercream. l To assemble, place one cake upside down and spread it with some buttercream. Turn the other cake upside down and spread a generous layer of blackberry compote. Sandwich together. Spread a thick layer of buttercream on the top and sides of the cake, smoothing the edges with a palette knife (for a super smooth finish, dip the knife into hot water before you spread). Finish by swirling some compote through the buttercream on the top of the cake.
