LEMON TART Serves 8-10 500g flour 100g caster sugar 100g icing sugar 200g soft butter 1 egg yolk 2 whole eggs Pinch of salt For the lemon filling: 10 free range eggs 380g sugar 500ml double cream 8 lemons, juiced and zested For the raspberry gel: 400g raspberry purée 5g agar agar 1g citric acid

l For the raspberry gel, bring puree

and agar agar up to the boil. Cool in a container. When fully set, blend in a blender and pass through fine sieve. Store in a bottle. l For the tart case, mix sugar and butter together, then add eggs, one at a time, until fully incorporated into the mixture. Fold in flour and mix very well. Roll into a ball and wrap in cling film. Leave to rest in fridge for 1 hour, then out of the fridge for 15 mins. l Roll out thinly. Carefully place the pastry into your tart ring, then push pastry into edges all the way around. Cover with a triple layer of oven-safe cling film and place baking beans in it to cover. l Bake in oven at 160ºC for about 30 minutes, then check, remove baking beans and place back in

oven for a further 10 minutes. l Meanwhile, make the filling. Bring

double cream and sugar to a boil in a pan. Pour over the eggs, whisking constantly so you don’t scramble the eggs. Add lemon juice and zest to mix. l Pour filling into tart case and bake at 90ºC for about 45 minutes until cooked. Remove from oven and cool. Serve in slices with a drop of raspberry gel.

CITRUS CURED SEA BASS WITH PICKLED RAINBOW RADISH AND CITRUS SALAD Serves 1-2 1 sea bass fillet (skin off) 1 pink grapefruit 1 lemon 1 lime 1 bunch rainbow radish 200g mixed baby salad leaves 500g salt 150g sugar 1 tsp poppy seeds 150ml white wine vinegar 50ml water 50ml olive oil l In a small mixing bowl, mix

together 100g of the sugar with 400g of the salt and the zest of the grapefruit, lemon and lime. Put the sea bass in a small tray, cover with the salt mixture and leave for 1-2 hours in the fridge. l Cut the green tops off the radishes, then cut them into different shapes, such as quarters or rounds. www.foodiesfestival.com

l Take a small pan and add

the remaining salt and sugar and the vinegar with a splash of water (50ml). Bring to the boil, then take off the heat and place the radishes in the pan, making sure they are covered and leave to cool down. l Remove skin from the grapefruit, lemon and lime and segment out the flesh. Place in a small mixing bowl and add the baby herbs, the olive oil and a pinch of salt. Mix thoroughly. l Wash the sea bass under a tap until all of the salt mixture is gone. The fish will have

firmed up and is ready to be sliced into small, thin slices. Drain the liquid from the pan of radishes and dry them. l It’s now time to plate up – take your sliced sea bass and place these on the plate in a circle. Drizzle some olive oil over it to make it look shiny, then place the pickled radishes on top of the sea bass randomly. Add height by using the baby salad leaves and grapefruit to go around the fish then sprinkle the poppy seeds over. Enjoy!

TANDOORI QUAIL WITH CUCUMBER AND COCONUT RAITA Serves 4 4 whole quail For the tandoori spice mix: 1 tbsp coriander seed 1 tbsp cumin seed 4cm cinnamon stick 1 large dried red chilli 2 cloves 2 mace blades 2 tsp turmeric 1 tsp salt 1 tsp black salt, ground 1 cardamom pod ½ tsp saffron powder 20g fresh ginger root, minced 2 garlic cloves, minced 300ml yoghurt Juice and zest of half a lemon

Small handful of toasted coconut flakes ½ clove garlic, crushed Zest and juice of half a lemon ½ cucumber, peeled and deseeded. Fresh coriander and mint to taste l First make the tandoori

marinade. Lightly toast the spices, apart from the saffron, and grind them. Finely grate the garlic and ginger and add to the yogurt along with the spices, lemon juice, saffron and salt and pepper. l Score the quail legs and breast lightly, rub in the yogurt marinade and leave overnight. l To cook the quail, we use a charcoal oven, but you can use a BBQ or your oven set to 250ºC

(or the highest setting possible). If using the oven, place the quail directly on a hot oven shelf with a tray underneath to catch any drips. Bake for 12-15 minutes or until cooked. Rest for 5 mins and serve with cucumber and coconut raita. l For the dressing, slice the cucumber thinly, season with salt and pepper and leave for 30 minutes to an hour to allow the salt to draw out any excess water. Pat dry on paper towels and add the rest of the ingredients.

DUCK BREAST, CONFIT DUCK LEG SAUSAGE ROLL, DUCK FAT POTATO TERRINE AND CHERRY GEL Serves 4 For the duck sausage roll: 1 duck 100g salt 100g sugar 1 bunch thyme 4 oranges (zest only) 1 tbsp juniper berries 2 tbsp fennel seeds 1 pack ready-rolled puff pastry 50g dried cherries 50g pistachios 100g pork mince 1 egg For duck breast, sauce, cherry gel and potato terrine, see foodies.co.uk for recipes www.foodiesfestival.com

l Butcher the duck into two breasts, two legs and the carcass. Ideally do this the day before. Blitz the salt, sugar, orange zest, juniper berries and 1 tablespoon of the fennel seeds in a food processer. Rub this mix over the duck legs and cover with the fresh thyme. Leave for at least 5 hours or ideally overnight in the fridge. Once cured, wash off the salt mix and pat the duck legs dry. Place in an ovenproof dish and cover in rapeseed oil. Place in an oven at 120ºC for 2 hours. Once cooled enough to handle, remove from the oil (reserving for later), carefully peel off the duck skin (also reserving for later), and shred the meat.

l To the shredded duck meat add the pork mince, dried cherries and pistachios. Mix well and fry a small piece to check for seasoning. Adjust accordingly. Once satisfied with the flavour, roll into a log and wrap in the puff pastry. Brush with the egg and scatter over the remaining fennel seeds and salt. Bake at 180ºC for 30 minutes or until the pastry is golden and the filling cooked.

CHILLI CHICKEN DRUMMERS Serves 4-6

l First things first, you need

12 chicken nibblets aka drumettes, skin off 2-3 cloves garlic, crushed 1 inch ginger, freshly grated 2 green chillies, deseeded and finely chopped or minced ½ chicken stock cube, crumbled ½ tsp red chilli powder ¼ tsp white pepper ½ tsp sea salt or to taste ½ tsp paprika ½ tsp of roasted ground cumin Juice of 1 lemon or 2 limes 1 small egg, lightly beaten 50g cornflour 100g plain flour Pinch of garam masala Cooking oil for deep frying Any fresh citrusy salad and chutneys to serve

to make the ‘drummers’ out of these nibblets. With a very sharp knife, scrape the meat towards the fat end of the joint until all of the meat is packed up at one end and the rest of the bone is neat and clean. l Put the rest of the ingredients in a large bowl and give them a really good mix until a thick and smooth batter is formed. l Add the drummers into the batter and massage them lightly, until all of them are coated well. Leave them for a couple of hours to absorb all the delicate spices and take up all the flavours. l In a large, heavy-based wok, add enough oil to deep fry and heat it up to 190ºC,

until a breadcrumb thrown into the oil sizzles and floats instantly. Take the marinated drummers one by one, shaping them slightly to resemble a drumstick, then deep fry them in batches, four to six at a time, until nicely brown in colour. Drain on a kitchen towel. l Serve hot, with a wedge of lemon and choice of chutneys, sauces and a light zingy salad if you wish, or they’re equally good on their own.

FIX ME UP BROTH Serves 2 2 shallots, peeled and finely sliced 1 medium potato, peeled and cubed 1 large carrot, peeled and sliced ¼ small celeriac, peeled and cut into matchsticks 2-3 sprigs thyme 40g spinach 40g frozen peas 500ml good-quality vegetable stock Juice of 1 orange Juice of 1 lemon Sea salt and black pepper Oil 2 Clarence Court eggs, cooked to your liking For the walnut gremolata 1 bunch parsley, leaves only, roughly chopped Zest of 1 lemon 80g walnuts, roughly chopped 1 garlic clove, finely chopped www.foodiesfestival.com

l To make the broth, add a splash

of oil to a saucepan and put it on a medium heat. Sauté the shallots, potato and carrots for around 5 minutes until they start to colour. Add the celeriac and thyme and sauté for 2 more minutes. l Pour in enough stock to just cover the vegetables and bring to a boil. Turn the heat down to low and allow the liquid to bubble gently for around 5-10 minutes. This should cook all of the vegetables. l Remove the thyme. Drop in the frozen peas and spinach.

l Take the pan off the heat. Season well with sea salt and black pepper and pour in the lemon and orange juice. l Divide the mixture between two bowls. Top each bowl with a halved egg and liberal quantities of walnut gremolata.

Roasted bone marrow, fillet steak, celeriac and shallot croquette For the roasted bone marrow 5 beef bones, split lengthways and pre-soaked in lightly salted water 100ml balsamic vinegar 3 tbsp dijon mustard 1 banana shallot, sliced 4 slices white bread 100g salted butter Salt and pepper Mixture of micro herbs 10 spring onions 20 chives For the fillet steak 5 individual fillet steaks, approximately 220g each 100g olive oil or butter 4 tbsp mustard seeds, softened in hot water 2 spring onions 100ml red wine vinegar 2 tbsp caster sugar For the celeriac croquettes 1 celeriac, grated 400g plain flour 4 banana shallots, chopped Panko breadcrumbs 2 eggs 100g Parmesan cheese Bearnaise sauce and parsley vinaigrette – see foodies. co.uk for recipes l For the roasted bone

marrow, pre-heat the oven to 180ºC. Mix together balsamic vinegar and Dijon mustard and glaze the bones. l Roast in the oven for approximately 25 mins, reglazing every 5 mins. 10 foodies

l Dice bread into croutons and

fry with butter until crisp and golden. l Top marrow with breadcrumbs, micro herbs, shallot and chives. l Pan-fry two spring onions and some shallot and set aside. l For the steak, chop spring onions finely into circles. Place in small glass bowl with vinegar and sugar mix. Add mustard seeds. l Season steak and sear in a hot pan until brown. Transfer to oven at 180ºC and cook for 8-10 mins. l For the celeriac croquettes, make a thick batter with flour and water and season well. l Mix together celeriac and shallots, then add to the batter. Shape into small circles. l Dip each circle into flour, then beaten egg, then

breadcrumbs and deep fry at 190ºC until golden. Cook in oven for 10-15 mins. l To serve, place two perfectly pan-fried spring onions together at an angle on the plate and place bone the opposite way. Slice steak. Make a circle with the vinaigrette and place sliced steak on top. Drip Bearnaise sauce on steak, make a circle on the plate and serve extra in jug. Place a circle of vinaigrette at opposite angle. Place a croquette on plate. Dress with shallots, spring onion and herbs.

Halibut with a Parsnip ‘Thai Curry’ sauce, parsley oil, citrus gel, coriander cress Serves 2 2 halibut fillets, 120g each For the parsnip ‘Thai Curry’ sauce: 1 parsnip 1 onion, finely diced 4 large cloves garlic, finely diced 2 thumb-sized pieces of ginger, grated 1 stick lemongrass 2 lime leaves, preferably fresh 1 ½ tbsp tamarind paste 100ml fish stock 100ml double cream Juice from half a lime Salt to taste For the parsley oil 50g parsley 300ml high-quality rapeseed oil For the citrus gel and pea shoot garnish, see foodies.co.uk for recipes

l For the parsnip ‘Thai Curry’

puree, start by gently frying the diced onion in olive oil until translucent (do not brown the onion). Then add the diced garlic, grated ginger and tamarind paste and fry for a further minute. l Deglaze the pan with the stock and mix until combined, then add the cream, lime leaves and the lemongrass stick (bash the lemongrass with a rolling pin so that it releases its flavour but remains intact). Simmer for about 15-20 minutes on a low heat to allow the flavours to infuse. l Whilst this mix is simmering, peel the parsnips and chop into 2cm chunks. Cook the parsnips in a separate pan of boiling water until tender, but not mushy. l Once the cream mix has simmered, remove the lemongrass and lime leaves

and blend until very smooth. Add the cooked parsnip pieces into the blended mix one or two at a time and blend until a nice thick sauce consistency has been achieved (you may not need to add all the parsnip chunks). Once perfectly smooth it’s very important you add salt and lime juice to taste and to bring the flavour to life. l For the parsley oil, heat the oil up to about 50-60ºC (no higher) and then blend thoroughly with the parsley. l For the halibut, heat olive oil in a frying pan on a mediumhigh heat. Sear the halibut on one side until nicely golden brown. Flip the fish and fry until cooked through. DAVID RICKETT was a finalist on MasterChef 2020. PAIN D’ÉPICE For milk infusion 150g milk 3 cloves 1 cinnamon stick 2 whole cardamom 1 star anise 1 vanilla pod For the cake batter 150g milk infusion 2 tsp cinnamon 2 tsp ginger ¾ tsp salt 175g plain flour 1 tsp baking powder ½ tsp bicarbonate 1 pinch ground black pepper 1 pinch nutmeg 95g melted unsalted butter 1 egg 100g any flower honey 80g caster sugar Zest of 1 small lemon Zest of 1 lime

Zest of 1 small orange 50g marmalade (to brush over the cake) l Slice the vanilla pod down

the centre. Remove the seeds and place them into a small pan with the empty pod. Add the milk, clove, cinnamon stick, star anise and cardamom and bring to simmer. Cover and set aside to infuse for at least 10-15 min or longer if you can. l In a mixing bowl, add the cinnamon powder, ginger powder, salt, plain flour, baking powder, bicarbonate, black pepper and nutmeg. Mix well and set aside.

l In another mixing bowl, add

the egg, sugar, honey, melted butter, lime, lemon and orange zest and mix well to combine. l Pour the liquid mixture over the dry ingredient mixture and mix well into a paste. Do not over mix. Fold in the milk infusion, a small quantity at a time, until well combined. Pour the mixture into a floured and buttered 450g loaf tin. l Bake at 190ºC for 35-40 min. Let the cake cool in the tin. While slightly warm, wrap the cake in some cling film and let it rest overnight. l Melt 50g of marmalade and brush over the top of the cake.

VEGAN SMOKED CHEESE AND MARMITE SCONES 225g self-raising flour 3-4 large pinches of salt 75g vegan spread/margarine 2 tsp caster sugar 125g Applewood vegan smoked cheese, grated 2 tsp mustard powder, optional 1 egg replacer Splash of non-dairy milk Splash of lemon juice 2-3 tsp Marmite To decorate: 3 tsp Marmite Smoked salt or sea salt flakes l Preheat the oven to 190°C.

In a jug, mix your egg replacer and set aside. l Blend together the flour, salt, margarine and sugar in the bowl using a blender or your fingers until you have a fine breadcrumb. Add half the smoked cheese to the bowl. Finally, if you have it, add two teaspoons of mustard powder for depth and warmth.

l Add the milk, lemon juice

and Marmite to the jug with the egg replacer. Mix well. l Add the wet mixture into the dry mix and bring it together with a spatula and then your fingers. Roll out to 1 inch thick and, using a medium sized cutter, cut out the scones. You should get around 7 to 8 after re-working the dough. l Now for the messy bit. Transfer the scones to a lightly floured baking tray and get ready for decorating. To add that extra kick take a teaspoon of Marmite and push a small dollop (around a quarter of a teaspoon) on to the middle of each scone using a skewer or cocktail stick. Then take the remaining half of the smoked

cheese and place towering piles on each scone. Finally add a decent sprinkling of salt over the cheese to finish. We recommend smoked salt but if you can’t get that as it is a bit specialist then a good flaked salt will be fine. Bake for 10-15 minutes then transfer to a rack to cool until just warm. l These can also be made as smaller bitesize scones.
