MUSHROOM STROGANOFF

Serves 4

4 garlic cloves

2 red onions

1kg chestnut mushrooms

3 tbsp olive oil

2 tsp paprika

800ml full-fat coconut milk

2 tsp Dijon mustard

Juice of 1 lemon

Large handful chopped fresh parsley l Firstly, crush the garlic, dice the onion and roughly slice the mushrooms. l Heat the oil in a large, shallow pan and add the garlic, onion, mushrooms, paprika and a decent pinch of salt and pepper. l Cook down for 5 minutes, making sure to stir often. Once the mushrooms have softened, pour in the coconut milk, mustard and lemon juice and stir well. l Cook on a high heat (this helps the sauce to thicken) for 20-25 minutes or until the sauce is the desired consistency. Make sure to stir every 5-10 minutes l Finally, add most of the parsley and stir it into the stroganoff, leaving some to garnish before serving.
