l To fill your dumplings, make a circle with your index finger and thumb, place a gyoza pastry central to your circle and rub water around the edges. Place a dumpling portion in the centre, then, using your finger and thumb, pinch together the edges to make your desired dumpling shape. Continue with the rest of the mix.

l Bring a pan of water to the boil and cook the dumplings for 6 minutes. Strain then serve with crispy chilli oil, crispy shallots and sliced spring onion.

l Add pork mince, ginger, spring onions. Start to mix together with your hand, being quite rough as you want to break down the pork mince as much as possible (a kitchen mixer with a paddle attachment works well for this).

l Once the pork mince has broken down almost to a paste, add in your king prawns, fish sauce, soy sauce and sugar, then mix well so it is all combined. Weigh out the dumpling mixture into 22g portions and place to one side.

CURRIED UDON NOODLES

Juice of ½ a lime To serve (optional) Pink pickled ginger Aonori (dried seaweed powder) or shredded nori Toasted sesame seeds l Heat the wok, then add the oil and onion and fry to soften. Add the shiitake, mange tout, bok choy and spring onions and cook for 5 minutes more over a medium–high heat, stirring frequently. Add the garlic and cook for just a minute longer. l Untangle the noodles into the wok then toss through the sesame oil, curry powder and a generous grinding of black pepper. Add the mirin and soy sauce and let the noodles warm through and soak up most of the sauce. Spritz in the lime juice and remove from the heat. l Portion into bowls and, if using, scatter with the toppings.

Turn the heat back up to high, cook for 8–10 minutes, adding a little boiling water if anything sticks. The pan should be quite dry to begin with, before the juices from the chicken start to be released, so wait a while before adding any.

l Make a roux with the butter and flour, stirring all the time, and gradually add the stock until a thick béchamel is achieved. Add Parmesan, anchovies and garlic, then transfer to a blender and blitz until smooth. Fold through the parsley and chopped chicken and season to taste with salt. Transfer the mix to a tray and set in the fridge. When set, divide into 12 balls and refrigerate. l Prepare three bowls for crumbing: one with flour, one with egg wash and one with breadcrumbs. Roll the croquettes through each bowl, ensuring that the croquettes are completely covered by breadcrumbs. Store the croquettes in a tray of breadcrumbs until needed. l Preheat the vegetable oil in a deep saucepan or deep fryer to 180°C. Once the oil is up to temperature, fry the croquettes for 2–3 minutes until golden.

l To make the Caesar dressing, blend the egg, vinegar and the mustard until smooth. Add the anchovy, then slowly add the olive oil in a steady stream while whisking, as if you were making a mayonnaise.

l To serve, add 3 croquettes per portion and a dot of Caesar dressing. Garnish with lettuce leaves, shaved Parmesan, cress and anchovies.

10g unsalted butter

Serves

4 tbsp chicken stock 4 tbsp whipping cream 1 tbsp chopped tarragon Sealeavessalt and freshly ground black pepper

l Heat a large, non-stick frying pan over a high heat. Add 30g of the butter and 1 tablespoon of the oil and when the butter is foaming, add the mushrooms and sauté for 4-5 minutes until they have released all their juices and are just golden. Remove and tip onto kitchen paper to dry. Wipe the frying pan, then return it to a medium heat, add another 30g of the butter and 1 tablespoon of the oil and when the butter is foaming, add the chicken breasts, skin-side down. Cook one side only over a medium heat for 5 minutes until the skin is golden, then remove them from the pan and put, skin-side up, on a board.

l While the chicken is cooking, blanch the cabbage in the boiling salted water for about 3-4 minutes until only just tender, then drain well and pat dry. While the chicken is resting, heat a further 30g of the butter and 1 tablespoon of the oil in the frying pan over a medium heat and when the butter is foaming, add the blanched cabbage. Cook for 2-3 minutes, then add the remaining cooked mushrooms and the chestnuts and toss for a further 2-3 minutes until heated through. Transfer to a warm bowl, cover and leave to one side.

l Once the chicken has rested, remove the cling film and pour any cooking juices into a small pan over a medium-high heat. Add the stock and cook for 2-3 minutes until reduced by half. Whip the cream until soft peaks form, add it to the pan and let it melt into the sauce, without stirring. As soon as the sauce starts to simmer, remove it from the heat. Season to taste, then stir in the tarragon. Meanwhile, heat the frying pan over a medium-high heat. Add the remaining butter and oil and fry the chicken, skin-side down, for about 3 minutes until crisp and golden. Quarter the chicken rolls and serve on top of the braised cabbage with the sauce spooned over.

l Cut the chicken breasts horizontally through the middle and three quarters of the way through so that you can open them out like a book. Spread half the mushrooms over the bottom half of each breast, season with salt and pepper, then fold the top half back over to make a chicken mushroom sandwich. Tightly wrap each chicken breast in cling film to make a sausage shape. Twist and secure each end with a knot, pushing out any air. Put a large saucepan of water on to simmer, with a steamer insert on top, and bring another saucepan of salted water to the boil. Put the chicken parcels in the steamer, cover and cook for 12 minutes until cooked through. Remove and leave to rest on a plate for 6 minutes.

For the salmon, season each portion evenly on the flesh side with the salt, then on a medium heat, fry the salmon skin-side down in a non-stick frying pan with the sunflower oil. Fry for 4 minutes, flip, then continue to cook for 2 minutes. Take the pan off the heat, add the zest and juice of the lemon, and set aside to rest until needed.

First, brine the chicken supremes. In a saucepan, bring water, salt, garlic and rosemary to the boil and then chill completely. Once cooled, add the brine to the chicken so that it’s covered and leave it for 12 hours.

l For the tomato fondue, in a separate pan add the shallot and garlic on a low heat to sweat down. Add the chopped tomatoes and a pinch of salt to the pan and cook on a medium heat until the tomatoes are like a thick puree. Add balsamic vinegar, sugar and season.

l Heat through the chicken jus in a pan. Heat the tomato fondue in a separate pan and then place in the tartlet case. Add thinly sliced courgettes for decoration on top of the tart. Assemble on a plate and finish with the chicken jus.

For the basil tart

l For the basil tart, using a food processor, add all ingredients and blitz together until you achieve a breadcrumb consistency. Add a tablespoon of water to help bind the mixture together. Roll the entire mixture into a firm ball and refrigerate for 1 hour. Preheat your oven to 180°C. l Sprinkle flour over a dry surface. Roll pastry out to a 0.5cm thickness and line each tart case about 12cm wide. Pop the tarts into the preheated oven and blind-bake for 12 minutes. Take out of the oven and leave on the side to cool.

l Preheat the oven to 180ºC. In a large frying pan, melt the butter on a medium-high heat. Add the potatoes, carrots and onion to the pot and cook for 10 minutes, stirring regularly. l Meanwhile, roughly cut the mushrooms into quarters. Add them to the pan with the peas, chicken-style pieces, gravy granules, water, salt and sage. l Cook for a further 5 minutes, stirring regularly. Add more water as necessary to keep the sauce at a consistency you like. l Pour the filling mix into a large ovenproof dish and spread it to the edges. Sprinkle the crumble mix evenly over the top. Finish with a topping of nutritional yeast. l Bake for 20-30 minutes, until the top has turned golden.

l Cut the carrot and potatoes (leaving skin on if preferred) into cubes of approximately half a centimetre. Dice the onion.

l Whilst the veg is frying, make the sauce. Mix the rice wine vinegar, soy sauce, sweet chilli sauce and tomato ketchup along with a splash of water. l Pour it into the pan and stir well. Let it bubble over a medium-high heat for 2-3 minutes until it starts to look sticky. Add the beef back into the pan and coat in the sauce. l Cook the noodles as per packet instructions. Dish up the noodles, spoon the crispy chilli beef over the top. Finish with the remaining sliced chilli and spring onion. CHILLI

l Heat the sunflower oil in a frying pan or a wok, add the beef and fry until crisp and golden. l Remove the beef from the pan and place it onto kitchen paper to soak up any excess oil.

l Get rid of most of the oil from the pan so there is only a little bit left. Add the red pepper, one chilli, two thirds of the spring onions, the beansprouts, the garlic and ginger into the pan and stir fry for 3-4 minutes.

l Cut the sirloin steak into thin strips. Place in a bowl then add the cornflour and Chinese five spice. Mix to completely coat the beef.

In a large mixing bowl, whisk together the milk, egg and yeast with a balloon whisk until the yeast has softened. Add the flour, salt, honey and orange zest, then mix with a scraper until the mixture starts to form a rough dough. Add the butter and dimple it into the dough with your fingertips.

l Dust the work surface lightly with flour and roll the dough out with a rolling pin into a 15cm circle. Sprinkle 75g of the blueberries evenly all over the dough right to the edge, then press down with your palms to stick them to the dough.

Makes 1 large plait 115g warm milk, 25–30°C 1 medium egg, plus 1 egg, beaten, for glazing 14g fresh yeast, crumbled, or 7g fast-action dried yeast

l Turn your dough out onto a clean work surface and knead for 10 minutes.

l Line a large baking tray with baking parchment. Working one at a time, flatten a dough sausage and roll it up into a sausage again, then roll it with your palms on the work surface until it's about 40–45cm long. At this point some blueberries might burst, but do your best to be delicate but firm enough to roll your sausages out nice and long, dusting any sticky patches as you go.

l Roll up your dough into a loose sausage, then turn it 90º, press it flat with your fingertips and roll up again into a short sausage. Shape the dough into a ball and place it back in the bowl. Sprinkle the top with a little flour, cover with an upturned bowl and rest at room temp for 1½–2 hours.

l As soon as it’s cool enough to handle, transfer carefully to a wire rack. Place the lining paper underneath to catch any honey. Drizzle the top generously with honey while hot, then use a pastry brush to brush it all over and sprinkle over some pearl sugar nibs.

l Cover your plait loosely with cling film dusted with flour and rest for 1 hour. Towards the end of resting, preheat your oven to 180°C fan with a deep tray on the oven floor. Half fill a kettle and boil it. l Stud the plait with the remaining blueberries. Place your tray gently on to a middle shelf and carefully pour the hot water into the tray below. Bake for 30–35 minutes. Slide a knife underneath and lift to have a peep at the underside. If it’s golden, it’s done, but if it’s a little pale in the middle, bake for another 3–5 minutes at a time until it’s ready.

l Line up the 4 strands vertically and pinch the tops together to join them. Working with the strands in 2 pairs and starting with the right pair, fold the right strand over the left. Repeat with the left pair, folding the right strand over the left. Next, take the 2 strands now in the middle and fold the left over the right. Repeat to the end. Press the ends together to stick and tuck them underneath the plait. Place on your lined tray.

l Cover the dough with a clean cloth and rest on the work surface for 5–10 minutes or so.

l Dust the work surface lightly with flour and use your dough scraper to turn the dough out upside down onto it, sticky side up. Use your fingertips to flatten the dough gently into a circle. Cut it into 4 equal-sized wedges. Starting at the pointy end, roll up each wedge of dough into a loose sausage. Cover with a clean cloth and rest for 10 minutes to relax the dough ready for the next stage.

l Pour the melted butter and oil into YET ANOTHER bowl and beat together well with an electric whisk. Dribble the measured water into the bowl while continuing to whisk –this will emulsify the mixture (I don’t understand it – ask Nigella). Now combine this oil mixture with the egg mixture and beat again. Finally, add this wet mixture to the dry ingredients and whisk until just combined (make sure to include the pesky bits of flour hiding at the bottom of the bowl).

l Pour the custard through a sieve over a bowl, cover the surface with clingfilm to stop a skin from forming and leave to cool.

To make the custard, while your sponges are baking, whisk the egg yolks, sugar and cornflour together in a bowl with a hand whisk until you have a pale paste. Heat the milk, cream and chocolate in a medium saucepan over a low heat, stirring, until the chocolate has melted and the mixture is steaming but not boiling. Pour a little of the hot milk mixture on to the egg yolk mixture and whisk vigorously to combine, then gradually add half of the remaining hot milk mixture in a thin stream, whisking constantly until it is all incorporated. Add the egg yolk mixture to the pan, place over a medium heat and bring to the boil, whisking constantly until thickened to a custard consistency that you are happy with.

l To make the icing, melt the chocolate in a microwave-safe bowl in the microwave using the heat, stir, repeat method until smooth, then set aside to cool. Once cooled, put into a food processor with the other icing ingredients and blitz until creamy. If you don’t have a food processor, do it the oldfashioned way, creaming the butter, sifting in the icing sugar and then adding the chocolate (and liqueur if using) before beating together.

In a separate large bowl, whisk together the eggs, soured cream, cooled coffee and vanilla.

l Divide the batter equally between the lined tins and bake for 40 minutes, or until a skewer inserted in the middle comes out clean. If you are doubling this sponge recipe (which I recommend), then get cracking weighing out your ingredients to repeat the process. Remove from the oven and leave to cool in the tins.

l To make the sponges, preheat the oven to 180°C. Grease the cake tins and line the bases with non-stick baking paper. Mix all the dry ingredients together in a large bowl with a hand whisk until evenly combined.

l To assemble, remove your cooled sponges from their

l Place a complete sponge (no hole), base-side up, on a cake board or serving plate. Spread over a layer of icing with a small palette knife and stick a holey sponge, base-side up again, on top. Then fill the hole with custard and some of the crumbled up sponge. Pop some chocolate treats in, too, if you like. If you’ve made 4 sponges, spread another layer of icing on the ring of sponge around the hole, then top with a complete sponge before repeating the process so that you finish with a custard-filled hole as the top layer. Fill with more treats and crumbs. l Decorate the cake with any icing you have left over (use a piping bag and fancy nozzle if you have one) and even more of your favourite treats.

20g DeZaan Terra Rossa l In a heavy based pan, bring the cream to a rapid boil. Add the trimoline and chocolate to a mixing bowl and pour the boiled cream over. Allow to stand for 5 minutes, then whisk together to combine. Crush the sea salt and stir into the truffle mixture.

20g cocoa powder

l Put all ingredients into a big bowl. Mix and knead swiftly with your hands until the dough holds together well. Make a ball, wrap in clingfilm, and let it rest in the fridge for at least 2 hours.

l Once the dough has rested, preheat oven to 175C fan. Roll out the dough to a sheet, about 5mm thick.

l Using the big cookie cutter cut out as many biscuits as possible. Transfer half of the biscuits onto lined baking sheets. Using the small cutter, cut out the centres of the remaining biscuits. Place one of those biscuits neatly on top of each complete biscuit on the baking sheet. l Fill the cut-out centre of the stacked biscuits with raspberry jam. l Glaze the biscuits (not the jam) with egg yolk, if desired. Bake at 175C fan for 20 minutes. Watch the colour of the rim, it should be brown, like milk chocolate. l Let cool on a wire rack. Sprinkle with icing sugar. These biscuits taste great fresh, but they improve greatly over time, stored in an airtight container in a cool place.

First, make the dough. In a mixing bowl, stir together the flour, sugar, yeast, salt and orange zest. Make a well in the flour and crack in the eggs and egg yolk, then add the milk and rum, brandy or amaretto, if using. Mix until there are no visible patches of dry flour. Spoon in the butter, raisins or choc chips, mixed peel and Next,cranberries.knead the dough. We recommend using a stand mixer fitted with a dough hook as it’s a sticky dough. Mix for a good 8-10 minutes or until the dough comes clean away from the sides of the bowl. Leave in a warm place to prove for 1½ hours or in the fridge overnight (this’ll give it a much richer depth of flavour). Tip your dough onto a lightly floured work surface and chop it into 12 equal pieces. Shape each piece into a little round and place on one or two baking trays lined with parchment paper, spacing them 5cm apart. Pop a damp tea towel over the top and prove in a warm, cosy place for at least 2 hours or until doubled in size. Preheat the oven to 200°C/180°C fan/gas 6. Meanwhile, make the topping. In a small bowl, whisk together the ground almonds, sugar and egg white. Brush a thick layer of the topping over your buns and then scatter the flaked almonds on top. (You can freeze any leftover topping for the next time you bake these Bakebuns.)in the hot oven for 15-20 minutes or until golden and crisp. Transfer to a wire rack and leave to cool. Dust with icing sugar, if you want.
