CHICKPEA & AVOCADO SMASH BURGERS Serves 4 800g tinned chickpeas 1 tbsp smoked paprika 1 tbsp ground coriander ½ tsp garlic granules or powder 2 tbsp tomato purée Juice of 2 limes 1 tbsp olive oil 1 avocado Extras Buns (I use gluten-free) Vegan mayo Lettuce
l Preheat the oven to 220°C. Drain and rinse the chickpeas, add to a large bowl and mash thoroughly with a potato masher or fork. Add the spices, garlic granules, tomato purée, juice of 1 of the limes, olive oil
and a generous pinch of salt and pepper and mix. Shape into 4 patties, place on a baking tray lined with baking paper and bake for 20 minutes. l Meanwhile, peel the avocado and add to a bowl along with the juice of the other lime and a generous pinch of salt and pepper. Mash together with a fork. l Remove the burgers from the oven and allow to cool for 5 minutes (this helps them to firm up). l Serve in buns (gluten-free if you want) with a spreading of vegan mayo, some lettuce and the avocado smash.

SMOKED BACON, CARAMELISED ONION & RED LEICESTER TART Serves 4 – 6 150g smoked bacon lardons 150g red onions 150g Red Leicester cheese 2 tbsp balsamic vinegar 1 tbsp caster sugar 1 tbsp olive oil Salt & pepper 180ml whole milk 180ml double cream 3 large eggs 1 pack shortcrust pastry l Heat an oven to 180°C fan.
Line a loose bottom tart tin with shortcrust pastry. Top with baking paper and baking www.foodiesfestival.com
beads and blind bake for 15 minutes or so. Remove the paper and beans and cook for a further 15 minutes until light golden brown. l In a frying pan over a medium heat, cook the bacon lardons until cooked through but not crispy. l Finely slice the red onions. In a saucepan over a medium heat, gently sweat the red onions in olive oil, with a pinch of salt, for 15 minutes. Add the balsamic vinegar and sugar, and simmer on low for a further 10 minutes until sweet and sticky.
l Whisk together the eggs,
whole milk, and double cream. Season with a pinch of salt. Scatter the cheese, bacon, and onions over the tart base, and then cover with the egg mixture. Bake at 180°C fan for 20 to 25 minutes, or until set.

BOBBY BEANS WITH SMASHED ROASTED TOMATOES, RED ONION, CAPERS & BASIL Serves 4 6 tomatoes, halved across the equator 4 tbsp extra-virgin olive oil, plus extra to dress 1 red onion or 2 Tropea onions, finely sliced Bunch of basil, leaves picked 30g capers 500g green beans, topped 3 tbsp red wine vinegar Sea salt flakes and black pepper l Preheat the oven to 160ºC.
Arrange the tomatoes cutside up on a baking tray. Season with salt, pour over 2 tablespoons of the oil and roast for 1 hour. They should be juicy but the flavours concentrated. I normally do a bigger batch of these as they keep well in the refrigerator and can be used in many different ways. l While the tomatoes are cooking, add the onion to a mixing bowl along with the basil leaves and capers. l Once the tomatoes are done, blanch the beans in salted boiling water for 3–5 minutes until tender. They should be cooked through but not overly floppy; test one when you feel they are almost done. I like to refresh them briefly in cold water to stop 6 foodies
the cooking but keep them at room temperature rather than ice cold. Drain. l Add the beans to the mixing bowl with the remaining olive oil. Crush the tomatoes either with your hand, if cool enough, or with the back of a wooden spoon and add to the
bowl. Season with vinegar to taste, start with a tablespoon and add to your taste. Stir everything around a few times to combine with a couple of coarse grinds of black pepper. Arrange on a serving plate. Drizzle with extra olive oil if you like.

SAVOURY CRUMBLE Serves 6 For the topping 75g plain flour 75g oats 100g stuffing mix 100g vegetable/baking butter spread ½ tsp salt ½ tsp black pepper For the filling Knob of vegetable/baking butter spread 1 large onion 1 large carrot 2-3 large potatoes (500g) 100g mushrooms 75g peas 100g chicken-style pieces 1 tbsp onion gravy granules 250-300ml boiling water ½ tsp salt 1 tsp sage Nutritional yeast l In a medium bowl, mix all
of the topping ingredients together until resembling breadcrumbs. Set aside. l Cut the carrot and potatoes (leaving skin on if preferred) into cubes of approximately half a centimetre. Dice the onion. l Preheat the oven to 180ºC. In a large frying pan, melt the butter on a medium-high heat. Add the potatoes, carrots and onion to the pot and cook for 10 minutes, stirring regularly. www.foodiesfestival.com
l Meanwhile, roughly cut the
mushrooms into quarters. Add them to the pan with the peas, chicken-style pieces, gravy granules, water, salt and sage. l Cook for a further 5 minutes, stirring regularly. Add more water as necessary to keep the sauce at a consistency you like. l Pour the filling mix into a large ovenproof dish and spread it to the edges. Sprinkle the crumble mix evenly over
the top. Finish with a topping of nutritional yeast. l Bake for 20-30 minutes, until the top has turned golden.

BLUEBERRY, ORANGE & HONEY PLAIT Makes 1 large plait 115g warm milk, 25–30°C 1 medium egg, plus 1 egg, beaten, for glazing 14g fresh yeast, crumbled, or 7g fast-action dried yeast 250g strong white bread flour, plus extra for dusting 1 tsp salt 35g honey, plus extra for glazing Grated zest of 1 orange 35g room-temperature unsalted butter, broken up into pieces 100g blueberries Pearl sugar nibs, for sprinkling l In a large mixing bowl, whisk
together the milk, egg and yeast with a balloon whisk until the yeast has softened. Add the flour, salt, honey and orange zest, then mix with a scraper until the mixture starts to form a rough dough. Add the butter and dimple it into the dough with your fingertips. l Turn your dough out onto a clean work surface and knead for 10 minutes. l Cover the dough with a clean cloth and rest on the work surface for 5–10 minutes or so. l Dust the work surface lightly with flour and roll the dough out with a rolling pin into a
15cm circle. Sprinkle 75g of the blueberries evenly all over the dough right to the edge, then press down with your palms to stick them to the dough. l Roll up your dough into a loose sausage, then turn it 90º, press it flat with your fingertips and roll up again into a short sausage. Shape the dough into a ball and place it back in the bowl. Sprinkle the top with a little flour, cover with an upturned bowl and rest at room temp for 1½–2 hours. l Dust the work surface lightly with flour and use your dough scraper to turn the dough out upside down onto it, sticky side up. Use your fingertips to flatten the dough gently into a circle. Cut it into 4 equal-sized wedges. Starting at the pointy end, roll up each wedge of dough into a loose sausage. Cover with a clean cloth and rest for 10 minutes to relax the dough ready for the next stage. l Line a large baking tray with baking parchment. Working one at a time, flatten a dough sausage and roll it up into a sausage again, then roll it with your palms on the work surface until it's about 40–45cm long. At this point some blueberries might burst, but do your best to be delicate but firm enough to roll your sausages out nice

and long, dusting any sticky patches as you go. l Line up the 4 strands vertically and pinch the tops together to join them. Working with the strands in 2 pairs and starting with the right pair, fold the right strand over the left. Repeat with the left pair, folding the right strand over the left. Next, take the 2 strands now in the middle and fold the left over the right. Repeat to the end. Press the ends together to stick and tuck them underneath the plait. Place on your lined tray. l Cover your plait loosely with cling film dusted with flour and rest for 1 hour. Towards the end of resting, preheat your oven to 180°C fan with a deep tray on the oven floor. Half fill a kettle and boil it. l Stud the plait with the remaining blueberries. Place your tray gently on to a middle shelf and carefully pour the hot water into the tray below. Bake for 30–35 minutes. Slide a knife underneath and lift to have a peep at the underside. If it’s golden, it’s done, but if it’s a little pale in the middle, bake for another 3–5 minutes at a time until it’s ready. l As soon as it’s cool enough to handle, transfer carefully to a wire rack. Place the lining paper underneath to catch any honey. Drizzle the top generously with honey while hot, then use a pastry brush to brush it all over and sprinkle over some pearl sugar nibs. www.foodiesfestival.com

LINZER BISCUITS 240g cake flour 20g cocoa powder 200g unsalted butter, cubed, cool 175g caster sugar 200g ground nuts (hazelnuts or almonds, with skin on) 1½ tsp ground cinnamon ¼ tsp ground cloves 1 medium egg 1tbsp kirsch 400g raspberry jam Egg yolk, for glazing l Put all ingredients into a big
bowl. Mix and knead swiftly with your hands until the dough holds together well. Make a ball, wrap in clingfilm, and let www.foodiesfestival.com
it rest in the fridge for at least 2 hours. l Once the dough has rested, preheat oven to 175C fan. Roll out the dough to a sheet, about 5mm thick. l Using the big cookie cutter cut out as many biscuits as possible. Transfer half of the biscuits onto lined baking sheets. Using the small cutter, cut out the centres of the remaining biscuits. Place one of those biscuits neatly on top of each complete biscuit on the baking sheet. l Fill the cut-out centre of the stacked biscuits with raspberry jam. l Glaze the biscuits (not the
jam) with egg yolk, if desired. Bake at 175C fan for 20 minutes. Watch the colour of the rim, it should be brown, like milk chocolate. l Let cool on a wire rack. Sprinkle with icing sugar. These biscuits taste great fresh, but they improve greatly over time, stored in an airtight container in a cool place.
