FOCUS ON The Viper’s Cave In the heart of the quarter of Sant’Avendrace stands the Viper’s Cave. This ancient tomb was sculpted in a cave in the 2nd century AD by Lucius Cassius, a noble Roman exiled to the island, for love of his wife. Cassius had it built to commemorate his wife Atilia Pomptilla. In memory of the great love which bound them, two entwined snakes stand watch over the portal. The cave is next to Tuvixeddu, the largest Phoenician necropolis in the Mediterranean basin.

A pick of the best beaches

FOCUS ON The Pink Flamingo This much-loved and much photographed bird has chosen Cagliari for a nesting site. Over the years many colonies have set up home at the Santa Gilla Lagoon and the Molentargius Wetlands. Santa Gilla lies to the east of the city and includes several small salt pans still in operation. The best views of the lagoon can be had from the terrace of Santa Croce or Porta Cristina, in the Castello quarter: at sundown or on days with a balmy breeze, the sight is breath-taking.

chef’s recipe Burrida Cagliaritana Ingredients (6 servings): 1.5 kg of dogfish (or, alternatively, smooth hound) 100 g of white onions 1 dl of extra-virgin olive oil 1/2 l of white wine vinegar 80 g of shelled walnuts 2 cloves of garlic A few bay leaves, salt and pepper Wash and remove skin from the dogfish, gut it and remove innards, but set aside the liver. Cut the fish into thin slices and dip in boiling salted water; when the fish changes colour, drain and leave to cool. Peel and chop the onions and brown gently in a pan, add the fish liver after chopping and simmer on a low flame. Then chop finely the nuts together with the garlic and add to the sauce. Continue cooking on a low flame for a few minutes, stirring continuously to ensure all ingredients blend well. Then add the vinegar, raise heat and cook for another few minutes. In a serving dish pour a layer of the sauce, add the slices of fish, decorate with the bay leaves, then cover with the remaining sauce. Cover the dish, leave to cool and then place in the refrigerator for 24 hrs before serving.

The sand is snowy white and slopes down gradually into the shallow sea, making it one of the safest beaches for families with kids.
