How can this be? It was 1996 when this outpost opened at the Esplanade. The original opened in 1993 in New York City’s SoHo on Mercer Street. Grimaldi’s Own Wine
The Grimaldi’s team traveled to Italy in 2015 to create a unique blend of Tuscan red wine. The end result was Mille Gradi, an easy-drinking red blend that is light enough to pair with the Kale Chopped Salad or a board of bruschetta, but robust enough to hold up to one of their famous meat-topped pizzas. “This opportunity was something that Grimaldi’s found to complement the authenticity of our brand,” says Executive Chef Cory Lattuca. “Our pizzas are inspired by the Italian classic, so it felt right that we travel to Italy and have an Italian blend to pair with our menu.” Mille Gradi was a joint project between Grimaldi’s and the renowned Rocca delle Macie Estate, owned by Sergio Zingarelli.

Entertaining al Fresco For the best of times, mix pool, patio and people BY BILL KENNEDY
There’s a certain magic to dining al fresco. Think about it: coffee while camping, burgers by the pool, champagne at picnics. Imbued with fresh air and open skies, food and drink sparkle, fill you up, and warm you to the core. So, as we vicinity-dwellers start our long-awaited, arduous climb down the backside of that indomitable hump we call summer, it’s time to revisit those outdoor spaces you have long forgotten. And what better place to start than your own backyard? Lucky for you, the three key components to any outdoor dinner party are the same as those of a great adventure: food, ambience and people. When Brendan McCaskey, local Cordon Bleu-trained chef and craftsperson, is cooking a meal to be enjoyed outside, he prefers food that’s “simple and in season, but still elevated and special.” McCaskey’s preferred starter? The simple crudité plate. “Mixing hot and cold brings depth to a meal,” he explains. “Plus, I love cooking with color, and there’s a ton of colorful vegetables out there.” A couple of McCaskey’s favorites include heirloom carrots, which come in a variety of colors, along with watermelon radishes, which look just like everyone’s favorite summer treat. Watermelon isn’t the only fruit that’s extra sweet in the summer, he adds. “Peaches are tasting great right now, too. Their sweetness gets enhanced when you prepare them in a real summery way.” That’s right, people: McCaskey likes his peaches on the grill. Once cooked, these charred pieces of sunshine mix perfectly with goat cheese, arugula and prosciutto — tossed with lemon juice, olive oil and a drizzle of honey. For a main course, McCaskey likes putting a fresh take on a classic. “I make a barbeque chicken that’s a play on Korean barbeque, which has a spiciness and freshness that is perfect for warm weather,” he says. To a traditional barbeque sauce, the chef combines soy sauce, ginger, chili sauce and garlic. After the bird emerges from the oven, McCaskey covers it with cilantro, mint and scallions, cooling down the spice from the sauce while adding depth to the dish. While knowing what to cook is the main battle, knowing how to prepare a meal for guests without stressing yourself out can still be a challenge, especially for the less experienced cooks out there. McCaskey recommends not overcrowding your grill by doing as much prep as you can ahead of your guests arriving. As for drinks, McCaskey prefers something versatile and batch made, such as rosemary-infused lemonade. “That way,” McCaskey says, “if you want to offer a mixed drink, you can simply add vodka or gin and there you go.” Eating outside is, by definition, a casual affair. But setting the mood can still seem intimidating. “I chalk it up to the Martha Stewart-ification of dinner parties,” says Constance Higley, local photographer and food stylist. Her
advice is to keep it simple. “When I’m serving a meal, I’m all about highlighting the food.” Simple wood platters and neutral-colored plates, like white and gray, ensures what’s being served is the main attraction. She extends this simplicity to table decorations. “Setting a table doesn’t have to be a hassle,” she says. “Take flowers, for instance. Everyone loves flowers, but a lot of times I use the herbs I’m cooking with. Potted rosemary and mint add a touch of green and smell amazing.” Higley’s advice on plating food is similarly practical. “Plating each individual dish is a total time-suck.” Instead, she advises serving everything familystyle, which encourages interaction and camaraderie amongst your guests, especially if they don’t know each other. And to encourage this, McCaskey recommends “conversation lighting.” He explains, “I love decorating my table with scentless candles, which don’t interfere with the food and provide little pockets of light between people to talk and enjoy a meal together.” In the same way that our vicinity is full of natural beauty — edible and scenic — it’s also full of people to take it all in with. In an era when vintage everything is all the rage, furniture retailers in our vicinity stay relevant by giving customers what secondhand stores can’t: custom pieces. “Custom upholstery and wood finishes are definitely where customers are driving the market,” says Kate Clegg, chief

As the rose season comes upon us, it is a great idea to prepare your garden and know a little something about what to do. From full rose gardens to the potted plant, our Vicinity experts Berridge Nurseries can help. Berridge Nurseries is known for its extensive selection of bare-root roses in the winter and container roses throughout the year. While planting doesn’t begin for a while, the preparation is happening at our neighborhood nursery. In the meantime, Berridge Nurseries has many rose varieties for purchase to place in pots and other planters to brighten your patio and gardens this fall. Varieties that do well this time of year include Sheer Elegance, which loves the sun but, here in the Southwest, benefit from afternoon shade.

Each year in late November, Berridge brings in more than 5,000 bare-root roses in more than 100 varieties. The first selection of roses is placed into their bare-root rose bins and are available for purchase in December and January. The remaining new roses are canned up in specially blended rose soil and are offered for sale typically by mid-February.

The creation of two truly passionate industry professionals, Chef Charleen Badman and Front of House Manager Pavle Milic, continues to impress and reinvent with their Old Town Scottsdale eatery, FnB. This well-known hot spot is a culmination of local growers, inventive and flavorful cuisine and beverages that inspire. FnB has long been an evening must for dinner, but it’s also a perfect midday event for lunch. A menu that changes daily means each visit is a new culinary surprise. Some favorites you may find include the Confit Chicken Liver Toast to start, made with egg, pickled beets and pea greens. Richard’s Cold Beef Tenderloin is another great treat. It is made with deviled egg, horseradish and cherries. The Chicken Paillard is just a sample of Chef Charleen’s rustic taste. It is a superbly flavorful dish with chickpeas, summer vegetables, kohlrabi and pine nuts. Some of the other examples of FnB’s culinary excitement are the Alaskan Halibut and Pork Flat Iron. The halibut is prepared with chanterelles,
haricot verts and corn sauce with a hint of tarragon. The Pork Flat Iron is topped with an incredible mixture of corn, peaches, almonds and chimichurri. The atmosphere is intimate, rustic and charming. The great windows accentuate the open atmosphere that is so perfect for lunch, and ads to the romance for evenings. The service is impeccable, with knowledgeable and fun wait staff and a team in the kitchen that will impress not only in taste and presentation but in creation as well. Offering a neighborhood appeal, immediately adjacent is a quaint specialty market where connoisseurs can get a multitude of items from fresh-cut flowers to freshly baked breads, from local produce to gourmet local cheeses.
