Preface As per UID curriculum, all the final yea students have to undergo a graduation project which is a full scale design project that could either be a personal intervention or could be done in the industry. The project is expected to be of four to six months time-line. The project is targeted to generate professional design skills and achieve an outcome with application and implementation capabilities.
Understanding the project, helps the student to understand the role of a designer in the industry. Not only does it help to understand all the aspects surrounding the design like time management, communication skills, practical constraints, pitching the ideas but also helps to discover themselves by knowing their strengths and weaknesses.
This project in the professional world of design, intended to put the students in a real life situation of working in the industry. It also makes the students aware of the industry’s constraints and limitations. The student is required to understand the company in all the aspects of creating a design, to pitching an idea to a client to finally delivering a tangible outcome. After understanding these, the students are required to generate a design, satisfying the company’s needs and utilizing the company’s strengths and design sensibilities within the boundaries of time and viability.

This research-based, designintensive major prepares you for careers in which you create comfortable, imaginative, and intelligently designed interiors. You work with faculty, peers, and outside professionals designing interior environments that reflect an understanding of sustainability, cultural differences, and human need for comfort and well-being. It guides you through the study of materiality, 2D and 3D form and space. Studio sequences introduce interior and architectural issues of increasing complexity, with a focus on product design, lighting, colour, and textile. Designs are developed using hand drawings, physical models, collage, and digital renderings.

This course enables you to develop critical, innovative, technical, and managerial skills with respect to interior design of residential, hospitality, commercial, and retail environments and exhibition amidst shifting identities, sensibilities, values, and socio-cultural systems.

ABOUT ME I am Megha Agarwal, a student from Unitedworld Institute of Design, Ahmedabad studying Bachelor of Design in Interior Design. Believing in variety, the design process has always been enjoyable for me, it’s like a puzzle which i try to piece together using my innovative solutions. My software skills include - Autocad, Sketchup, basic lumion, Photoshop, Indesign and Keynote. My general skills include - Sketching, model making, hand rendering. I completed my 6 months of internship and 4 months of Graduation Project from KREATIV DIZAIN firm, where i learn about the practicality of designs and about the budgeting and quotation and also got an opportunity to deal with the real clients.

The Knowledge i gathered in the past years has helped me while working in this project. Studying at Unitedworld Institute of Design has brought out the best in me by giving an opportunity to learn as well as create better place in the society.
ABOUT INTERNAL GUIDE She has done graduation in Architecture from D.C.Patel, School of Architecture, Vallabh Vidyanagar, Gujarat in 1994 and Masters in Urban Planning from HNGUniversity, Patan, Gujarat. She had started her architectural career working at ‘Sangath’ , Ahmedabad in varied projects/research/documentation work.
She has presented paper at a National Conference, held at Vidhyanagar, Gujarat,on “Present Status of Architectural Education in India”. she has mentored graduation projects from various design colleges.
Later ,she was associated at Vastu Shilpa Foundation, as a research associate for the book authored by Yatin Pandya & published as “Elements of Space Making”. She has written many articles in newspapers for awareness in Interior Sector. During her professional career she was associate architect for “Interior-renovation of few cells at IIM campus, Ahmedabad. She has presented a paper on “Aesthetics in Indigenous Architecture” at International Conference at Calicut, THANIMA 2.

ABOUT EXTERNAL GUIDE Riya Mukherjee, a owner of prestigious and a blossoming Interior Design firm named KREATIV DIZAIN in Kolkata, West Bengal. She completed her designing ccourse from EX-IN Delhi in 2013. She started practicing her profession since 2013 itself from Kolkata. She educated students of Urdu Academy, West Bengal. With passage of time she started exploring her profession, she worked under various large Architectural companies and designer in Kolkata to sharpen her knowledge. With a good reputation and high cliental base, she laid the foundation of her firm in 2015. Where after she worked for various projects like ILSS Club, ABP News Channel and Friends Fm (91.9). Just to innovate herself and renovate people house, she even went to do various residential project in and out of Kolkata. She has also designed various cafes and offices for JK Copier India Ltd , Reliance Jio Tv cable office etc.

PROJECT BRIEF & PROPOSAL The project is about a fusion of dhaba + modern concept restaurant. The restaurant is designed keeping in mind all the requirements of the client as well as the functionality of the space . Not only the theme but the materials used are also kept in mind , mostly all the materials like the chairs, tables, partitions, sofas etc used inside the restaurant are eco-friendly. The old sofas from clients site is being used for the design by changing the fabric. For the lighting, terracotta hanging lights are used which are made by the local artisans of Kolkata, a lot of greenery is added inside and outside the restaurant to connect the inside space with the nature and give a relaxing vibe.
Scope: to design a space that represents the fusion of modern and dhaba look and feel , as well as space planning according to the theme. Limitations: 1. fixed budget of the client . 2. small space floor and the clients requirement. 3. existing electrical and plumbing lines. 4.transformer outside the building facade. 5. fixed timeline for completion of design for the client. Area: the site building is G+ 4, the ground and first floor along with the outside area of the building is the actual site area (3500 sq ft).
Aim: to preserve and encourage the village art and culture to get today’s generation closer to the roots with dinning as well as entertainment. As well as a space where everyone get the feel of that culture. Objective: objectives are geared towards providing a satisfying customer experience that includes enjoyable food and a relaxing atmosphere. And also to increase the sale of the restaurant and to fulfill the requirements of the client.

People at restaurants conduct business communications and negotiations, meet with friends, hold a variety of celebrations etc. Therefore foodservice areas are actually complex integrations which meet different requirements.
CONCEPT
The concept of restaurant takes priority over everything else, influencing the architecture , food, music, and overall feel of the restaurant designed tp provide customer not only meal but also entertaining experience. The restaurant designed has a fusion theme of modern and dhaba look.

The term Dhaba refers to a roadside restaurant which is famous for the food quality at a very low price. The interior of a Dhaba is very raw and gives a very homely and welcoming ambiance. Dhabas are characterized by mud structures and cots to sit upon( called chaarpai in Hindi) while eating. Entering a Dhaba gives you a warm feel away from the hustle of the city and gives a village feel.

Understanding Commercial Restaurant Introduction Restaurant have been established as a staple of society in industrialized nation throughout the world. While many may overlook the impact of the restaurant on the society, there is no doubt that its contributions have been large. Restaurant and cafes offer a pick-me-up before work, a reward after a long day, a stimulating environment for creativity and thought, or simply a place to relax and spend time with friends. Types of Restaurant 1. Fine Dining • Formal dress code and fine dining etiquette. • High-end decor and a formal atmosphere. • Staff members are generally more attentive and follow certain etiquette for serving meals. • Menus may feature exotic or interesting dishes and ingredients. • Some fine dining restaurants have sommeliers to help you with food and wine pairings.

Importance of Interior Design in Restaurants Restaurant interior design is an essential part of the restaurant marketing strategy since the way the restaurant looks will be crucial for the branding. Interior design is the first thing that the customer will notice as he/she walks through the doors. This first impression will dictate how they perceive the brand, what level of service they expect, what kind of time they anticipate, and if they want to come back again. Thus, the importance of interior design cannot be underplayed. Here are some reasons why restaurant interior design is so important. • Shabby or very bright interiors will form a negative impression on the customers and potentially make them leave even before they eat. An ideal restaurant interior idea would be to use natural light to its fullest to make sure the place is more Instagrammable. • In the age of Instagram, interior design is your restaurant’s silent salesman. Everybody wants to post where they have been all day.

• Restaurant Interior design in restaurants is crucial to the branding strategy. The way a restaurant looks impacts how the customers perceive the restaurant concept and if they consider it a good enough place to eat at. • Most importantly, interior design in restaurants impacts customer psychology. You can make your customers order more, eat fast, drink more, stay less, etc. all using interior restaurant ideas.
Restaurant Market Analysis People go to restaurants not only to dine, but also to conduct social and business activities. As more and more restaurants emerge, competition among eatery operators increases. Favorable interior design is a significant element beyond food and service to promote customer retention.
• Entertainment themed restaurant-desi lane, Bengal dhaba, cricket café etc are example of such trend.
TREND :
• Neighborhood feel- people do business with people they know and like it. It is same with restaurant. According to restaurant interior design it is important to let customer feel they belong.
The restaurant market is expanding. Nowadays most people prefer to eat outside specially on weekends to lighten up their mood and enjoy their family time. At the same time, in order to meet different requirements, there are trends emerging that are depending on location, target customers, food style, and other certain elements. According to some research there are four trends :
• An exhibition cooking area where the chef is visible. If the chef is famous it is a good marketing tool for the restaurant.
• The upscale but casual design trend delivers spirit of modernism, fashion and luxury.

Elements of Restaurant Interior Design Architecture & Design : How spacious the restaurant will feel, how claustrophobic it will get during rush hours, and how comfortable it will be to walk around without bumping into people or crashing into tables, all of this is dependent on the restaurant layout. Restaurant floor plan considerations are :
Restaurants are spaces for food and beverage service and preparation. Organized differently depending on the type of food service model, restaurant layouts attempt to optimize seating arrangements, group sizes, circulation patterns, waiting areas, and degrees of comfort and privacy. Fine dining: 18 to 20 square feet per customer.
• Building codes. • Accessibility. • Budget.
Full-service dining: 12 to 15 square feet per customer. Counter service: 18 to 20 square feet per customer.
• Efficiency. Fast food dining: 11 to 14 square feet per person. • Aesthetic. • Square footage per customer.

Lighting : Lighting is an essential part of your restaurant’s interior design. Technically there are three types of lighting- Ambient, Task, and Accent lighting : • Ambient lighting
• Task lighting
• Accent lighting
Defines the overall look and feel of the restaurant. Fine dining restaurants usually use dim ambient lighting to create a relaxing mood and aura. As they serve customers in a way that pushes them to linger, and so order more, this atmosphere is perfect. QSRs, on the other hand, must be well lit. The idea for them is for customers to come, eat fast and go. Bright lights induce that behavior, so the customers don’t keep lingering around. Exampleschandeliers, pendants, wall fixtures, track lights and recessed fixtures.
Task lighting is the light used for performing tasks. These are the lights that enable servers to work and customers to read the menu and order. Can use it to highlight pathways or incorporate it by putting it on some unique features like sushi bars or minibars to highlight them. Examples - floor and desk lamps, under cabinet light, pendant and track lights.
Accent lights are lights used for that extra touch but mostly decorative purposes. Most wall lighting in this area is received better than overhead lighting. We can use these lights to reinforce the colors of the brand as well, but shouldn’t overdo it, or else it will kill the purpose. Examples- wall lights, recessed lights, landscape lighting.

Colour : The main thing that impacts what colors one must use in the restaurant is the target clientele. Different colors trigger different emotions and set different moods. Warm colors like red and orange are considered potent stimulants, and so a lot of restaurants try to use red in their interior. Yellow is a bright color and can bring out people’s appetites by giving a lively feeling to the place. Fine dining restaurants aim for a mood where customers would want to linger as opposed to QSRs and so it makes colors like blue or turquoise ideal for them. QSRs, on the other hand, need customers to order more and eat fast, thus making warm shades suitable for them.

Seating is another unnoticed part of restaurant interior design. The type of seats you use impact your customer’s psychology and the experience as well. McDonald’s and Subway have seats that are comfortable but not exactly the type we would want to keep sitting on. At the same time, they give a very light feeling. All this impacts the customers to be fast eaters and not stay. Starbucks has comfortable seats, recliners, and sofas that are heavy and cushioned. This prompts customers to stay longer and keep ordering more coffee. The same can be said for fine dining restaurants. Standard dimension between the tables

Scent and Acoustics :

Depending on the type of vibe and the customer experience we want to create in the restaurant, we can choose from a variety of smells.
The entrance of the restaurant casts the first impression of the restaurant on the customers. The entry gives a preview of the type of space a patron is going to enter. A well designed restaurant design plan should ideally provide ample space that is welcoming and should evoke curiosity in the customers to come in and dine. The restaurant entrance should be:
When the lid is removed, and the customers are hit with the same scent, it increases their appetite. It also makes other diners want to order more. Music does more than just fill the gaps in a restaurant. For a high-end restaurant, instrumental works best. For restaurants that are not exactly fine dining but not QSR’s as well popular, trending music is the right choice. Use faster beats for rush hour and relaxed, slow tempo beats for off-hours.

Casestudy 01 (Terracotta Restaurant) LOCATION: Ghandhinagar, Gujarat AREA : 2700 Sqft STUDIO: The Grid Architects Style : Fusion of Modernity and Medieval India Project Note The main challenge of this project – a 2,700-square-foot space that had to be made into a restaurant with a thoughtful blend of the old-world and the contemporary – was its low budget and 45 days completion time challenge.

The overall feel of the space is seamless as there are minimal barriers that exploit the idea of the Indian jaali: thin 2-mm Corten steel lasercut screens create visually semi-permeable partitions that connect and delineate spaces at once. Lighting Soft pools of light from perforated terracotta pendants over individual tables engender a feeling of intimacy and seclusion, while the rest of the space stays immersed in soothing semiillumination.

The central mocktail island is efficaciously placed. The restaurant zone is free from the service pathway. All service including the restroom and kitchen and banquet access are artfully planned so as not to disturb the food sector.

Flooring
The low ceiling has been partially covered with timber panels of recycled wood to camouflage the AC and electrical conduits, besides creating visual grandeur. The same material, as finger-jointed batons, creates tops for all tables, whose frames are rendered from recycled MS. Wood also makes an appearance as panelling and detailing of the windows.

Artifacts and greenary The unglazed earthenware makes its appearance as lamps, pottery and installations. Paints All painted surfaces feature water-based non-toxic environment-friendly paint. The largely earthy colour scheme is punctuated by wall expanses painted in red ochre and bright red upholstery of the chairs.
The coming together of all elements – materials, craftsmen, the way the layout has been resolved — has resulted into an ideal of spaces, culminating into a visual statement. There is adequate spacing between the tables for movement and walking. And has terracotta lights on top of each table.

Waiting Area In the waiting area two designs are highlighted the most one is the partition and the other is the wall design with clay bowls design. The artifacts such as pots and green plants are used to give an organic feel and to match the overall theme of the restaurant. In the waiting area 5-6 people can sit comfortably. The colours used are earthly tone.

Mocktail counter Recycled wood for the wall paneling, The design of the mocktail counter is very simple and is ergonomically very comfortable to person serving and also for the customers. On top of the display rack LED screen is placed. The overall design of the mocktail counter matches the theme of the restaurant.

Casestudy 02 (Kake Di Hatti) LOCATION: Ahmedabad, Gujarat AREA : 2300 Sqft STUDIO: Amogh Archidesign Style : Punjabi fine-dine Kake di hatti is an authentic Punjabi fine-dine restaurant. Word Punjabi instantly reminds us of dhaba style or a flamboyance visuals. But this restaurant interior defy stereotype image of Punjabi fine-dine. Instead it has an approach which is more intangible and make space speak for itself.

As you enter you see the reception and the waiting area , on the left side of the reception you enter the fine-dine area which follows a balanced and clean furniture layout.The spacing between the tables and also the walking space is sufficient . Left side sitting arrangement have 4 seater seating’s , on the right side it’s a semi private seating space for groups for celebrating birthdays , or any special occasional parties . On the back side they have the kitchen along with that they have a live tandoor area which adds an additional point in the space. KDH- Ahmedabad is spread across 2300 sqft area which can accommodate up to 75 guests at a time. A vibrant colour door with geometric outline stands still to take us for a journey. As you step inside, an alley of round arches welcomes you. Vintage wooden frames hanged on wall of fame on right side of entry, displays the legacy of restaurant.

As wall screens the dine area, it builds a sense of curiosity in customers eyes making him urge to peek inside. Natural wooden floating ceiling complementing arch structure in the alley guides us to reception desk. Multiple rustic colour arches on the reception wall gives 4th dimension to the waiting area. Copper chandelier made in house is eye catching.
A cozy fine dine with back drop of rustic tone arch , elegant pinjara chandelier with soft light and salmon couch creates a perfect ambiance for diners to enjoy their food. Centre arch wall is accentuated with an unusual brass mural of spoons varying in scale. Rustic brick wall framing live tandoor area is adding life to the space.
As we move further along with the scale, character of space also changes, series of brass frame mirrors used in bifurcation of space magnifies the elegance. A brush of handmade tile in between seamless concrete flooring breaks the monotonous character of space just like the pinch of spice in food.
Wooden jail frame like partition is designed which not only serves the purpose but also acts as an element. Rustic table pieces are designed to demarcate a line between arches as well as for storage. Overall dinning layout is divided by round arches breeding seclusion to the diners.

Case study 02 :
First case study is about the fusion design of a space in which they have used green elements, which is very similar to my concept, from this case study i learn that how we can combine 2 different design styles and make a fusion which doesn’t look too chaotic and creates an overall balance in the space.
Second case study is more about the “dhaba theme”. From this case study i learned about creating a balanced and neat layout, spacing between chair and table, learned about the walking space for smooth functioning of a restaurant, also learned about the different type of wall treatment and colours that we can use to achieve certain look and feel in a space.
Also, i learn about the green elements and how we can implement those green elements in our design. Like adding more natural light into the space, adding greenery inside the space, using junk/scrap, recycled materials, buying materials that are locally available and giving the local craftsman the opportunity to show their skill.
Both the case studies have really helped me in designing the restaurant “ KAKE DA DHABA ” by using key elements from both the case studies i was able to create a space where one can feel the fusion concept of modernism and dhaba style along with the natural and refreshing vibe of the green elements.
Using green materials not only helps to design a space within a reasonable budget but also help to create a healthy, fresh and welcoming vibe in the space.

The site is located near the Teghoria bus stand , Kolkata. It’s a G + 4 building, earlier the building was known as the Golden Park. The ground floor and 1st floor is a bar and the 2nd and 3rd floors are office and the top floor is kitchen. Now the existing design is getting removed and the ground and 1st floor is going to be a themed restaurant, 2nd floor will be a gaming room 3rd floor will remain the same only the laminates and interior will be changed and the top floor is going to be a roof top sitting area. The site is situated just 5 mins from the airport , 2 mins walk from Charnock hospital , the location is the prime advantage. Nearby shopping center’s , tourist spots, eco park , prime pubs etc in the area offering great connectivity.

In 1st floor the washroom area is extended from outside to make it accessible.

City : Kolkata, near Teghoria bus stand. Existing Space : 7000sq ft , G + 4 Building + outside area.
First Floor Requirements : Space to be designed : An existing 2 floor bar into a themed restaurant. Theme of the restaurant : Fusion of Dhaba and modern design.
30-35 seating capacity, a mocktail counter, semiprivate area for parties and special occasions, four seater’s and couple seater’s. Outside Requirements :
Clientele : College going youngsters, family, couples, for business meetings, birthday parties and special occasion. Cuisine served : Indian, Chinese, Mexican, Italian and beverages and shakes.
An outside counter, a waiting area, outside sitting area which are fixed to the ground or easily movable to avoid any thievery. Parking space for atleast 5-6 cars . Client’s Budget : 15 lakhs ( for 2 floors )
Purpose of opening a restaurant : 1. it’s a profitable business, 2. providing an outstanding patron experience, 3. Creating a brand. The client insisted for a design that surrounds within the nature of the business. The materials used should be of low maintenance and moderate budget.

Design Brief Designing a commercial space especially a restaurant is not merely about aesthetics and ambiance but choosing the right materials and techniques that would not cause harm to one’s health.
Characteristics of the space :
Concept : creating a space where modernity meets the traditional dhaba style , along with the green approach in mind.
• Glass facade that lets in ample natural light, help cut down on extra light fixtures and electricity.
Aim : by fusion of two style i aim to provide the patrons a unique feeling where they feel connected to their roots of rural dinning habit in an urban setting.
• Use of lighter paint shades on exterior and interior walls which helps to reflect back 80% of solar radiation.
Objectives : to design an Eco- friendly or green restaurant, using sustainable materials and techniques that are less harmful to our health and our surroundings. Why Green restaurant design approach? • It increases brand awareness & loyalty.
• Openness and lush green surroundings. • Warm, Welcoming, stress-free environment.
• Using recycled wood , and bamboo for furnitures. And reusing old sofas by changing the fabric for the restaurant. • Colourful and entertaining space. • The design follow a minimalistic design approach with warm colors and earthy material palette.

The pathway should be unobstructed and well illuminated. There should be a standard gap of 3 feet between the tables so that a person can move freely.
