Bacon, Egg, and Cheddar Empanada 4 slices Sysco Classic thick-cut bacon, diced 6 Wholesome Farms Classic eggs 2 Tbsp. Wholesome Farms Classic butter 3 oz. Casa Solana Classic shredded cheddar cheese 4 green onions, thinly sliced 2 Pillsbury dough pot pie 6.7-inch crusts, thawed Salt and freshly ground black pepper, to taste

DIRECTIONS

Red Velvet Pancakes with maple cream cheese syrup

Prep Time: 40 Minutes Cook Time: 10 Minutes Servings: 1 Gallon of Batter

8 oz cream cheese, softened 2 cups maple syrup ½ cup unsalted butter, softened 2½ lbs Baker’s® Source pancake mix 3 cups buttermilk 2½ cups water ¼ cup unsweetened cocoa powder 2 Tbsp. red food coloring

DIRECTIONS 1. In blender, blend cream cheese, maple syrup and butter until smooth. Makes about 3½ cups. 2. In large bowl, prepare pancake batter with pancake mix, buttermilk and water as label directs; whisk in cocoa powder and food coloring until combined. 3. To serve, preheat griddle to 325°, spray flat top and 3½ to 4 inch heart-shaped heat-proof cookie cutter(s) with pan spray. Place cutter(s) on griddle and ladle batter into cutter(s). Cook until air bubbles have developed; flip and cook 2 minutes. Serve pancakes topped with Maple Cream Cheese Syrup.

1. Preheat oven to 425 degrees. 2. In a skillet over medium heat, cook the bacon, stirring occasionally, until well browned and crispy, 10 to 12 minutes. 3. While the bacon is cooking, whisk the eggs in a medium bowl with salt and pepper. 4. Once bacon is cooked, remove from the skillet with a slotted spoon and drain on a paper towel. 5. Melt the butter in a medium saucepan over medium heat; once the foaming subsides, pour the eggs into the skillet. Cook the eggs, stirring constantly, until they begin to set but are still loose. 6. Turn off the heat. Fold in the cheddar cheese, green onions and crumbled cooked bacon. 7. Spoon about 3 tablespoons of the filling into the center of each thawed pot pie crust. 8. Fold the pie dough in half to form a half-moon and gently seal the edges with your fingers. Then twist and fold the edges of the empanadas with your fingers. 9. Cook in oven until golden-brown, for 12 to 15 minutes.

4 oz. tomato cocktail 1 drop of Worcestershire sauce 2 drops of habanero pepper sauce 1 12-oz. bottle of beer Strips of bacon Ice 1 slice of lime SPICY SALT MIX 4 tbsp. salt 2 tsp. chili powder lime juice

DIRECTIONS

DRINK 1. In a cocktail glass with ice, mix the lemon juice, tomato cocktail, Worcestershire sauce, and habanero pepper sauce. Shake well to cool. 2. Serve in a tall glass with ice and a rim dusted with salt and fill it up with beer. 3. Garnish with the slice of lime and bacon strips. SPICY SALT MIX FOR DUSTING THE RIM OF THE GLASS (OPTIONAL) 1. Combine the kosher salt and the chili powder on a small plate. 2. Pour the lemon juice on another small plate. 3. Dip the rim of a glass in the lemon juice and then carefully place the rim on the plate with the spicy salt mix.

Located in Knoxville’s historic Old City, the Southern Grit Kitchen & Bar brings southern and low country inspired cuisine to the area. Inspired by his family’s recipes, B.G. Dehart the owner of Southern Grit, designed a menu with comfort food and coastal flare. THESOUTHERNGRIT.COM

We spoke a few minutes with B.G. about his brunch menu: QUESTION: How did you create your brunch menu? B.G.: We opened Southern Grit in November 2019 and did not originally introduce brunch until about mid-January. Knoxville is a strong brunch area and we started off keeping the menu simple. Our menu is based on southern comfort foods; we introduced a few items at a time and played around with different ingredients. QUESTION: What are your top items on your brunch menu? B.G.: Our biscuits have been our top sellers. The top three are Everett, “Big Dan”, and Penny McGill. We have been very creative with flavors and toppings.

B.G.’s Sysco Sales Consultant, Thad Harshbarger, shared with us that Sysco had done a business review, helped with costing out the menu, designed and printed menus along with helping get new items to keep the menu up to date with the changes through Covid.

We had been completely closed down from mid-March to midMay; we opened up in May for curbside only. We had lines waiting around the corner. QUESTION: What tips can you give us on starting a brunch menu? B.G.: Concentrate on three main things: quality product, good customer service and affordable prices. This not just for brunch, but for all the business.

HOW TO BEST PACKAGE YOUR TAKE-OUT AND DELIVERY

How can we help ensure your food arrives at its destination in the same condition as it leaves your restaurant?

How to best package your take-out and delivery: HOT / COLD

Separate hot and cold items. Use different compartments or delivery bags based on product temperature. This showcases your thoughtfulness and integrity of your menu items. Good packaging will help control temperature and ensure customer satisfaction.

PLACEMENT

Test your takeout packaging, place your top-selling items and beverage in your current packaging. Close the takeout bags and boxes as if it was ready for pick-up. Set it on the counter and let it sit for at least 20 minutes. Open it up and make a judgment call on the quality. Is it fresh? Do you see room for improvement? Consider making adjustments to your packaging or menu item. Be sure to use perforated sections on the packaging for ventilation to allow steam and moisture to escape. If you do not have this type of packaging, cut holes and retest. If it improves your quality, consider purchasing ventilated packaging. Ventilation is important for crispy items like fries and chicken tenders.
