HOLIDAY SEASON T’WAS THE NIGHT BEFORE CHRISTMAS

T’was the night before Christmas when all through the house not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, In hopes that Saint Nicholas soon would be there. The children were nestled all snug in their beds, while visions of sugarplumbs danced in their heads, and Mamma in her kerchief and I in my cap had just settled down for a long winter’s nap. When out on the lawn there arose such a clatter, I sprang from my bed to see what was the matter. Away to the window I flew like a flash, tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow gave a luster of midday to objects below, When, what to my wondering eyes should appear, but a miniature sleigh, and eight tiny reindeer; With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, and he whistled, and shouted, and called them by name: “Now, Dasher! now, Dancer! now, Prancer! and Vixen! On, Comet! on Cupid! on, Donner and Blitzen! To the top of the porch, to the top of the wall! Now, dash away, dash away, dash away all!” As dry leaves that before the wild hurricane fly, when they meet with an obstacle, mount to the sky, so up to the house-top the coursers they flew with a sleigh full of toys, and St. Nicholas, too. And then in a twinkle, I heard on the roof the prancing and pawing of each little hoof. As I drew in my head, and was turning around, down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, and his clothes were all tarnished with ashes and soot; a bundle of toys he had flung on his back, and he looked like a peddlar just opening his pack. His eyes how they twinkled! his dimples how merry! His cheeks were like roses, his nose like a cherry. His droll little mouth was drawn up like a bow, and the beard on his chin was as white as the snow. The stump of a pipe he held tight in his teeth, And the smoke, it encircled his head like a wreath. He had a broad face and a little round belly that shook, when he laughed, like a bowl full of jelly. He was chubby and plump, a right jolly old elf. And I laughed when I saw him, in spite of myself. A wink of his eye, and a twist of his head, soon gave me to know I had nothing to dread; he spoke not a word, but went straight to his work. And filled all the stockings; then turned with a jerk, and laying his finger aside of his nose. And giving a nod, up the chimney he rose. He sprang to his sleigh, to his team gave a whistle, and away they all flew like the down of a thistle. But I heard him exclaim as he drove out of sight, “Happy Christmas to all and to all a good night.”

Frosty the Snowman is a fairy tale, they say, He was made of snow but the children know, How he came to life one day. Merry Christmas May your holidays be Safe & Filled with Great Memories

GRANDMA GOT RUN OVER BY A REINDEER Grandma got run over by a reindeer. Walking home from our house Christmas eve. You can say there’s no such thing as Santa, but as for me and grandpa we believe. She’d been drinking too much eggnog, and we begged her not to go. But she forgot her medication, and she staggered out the door into the snow. When we found her Christmas morning, at the scene of the attack, she had hoof-prints on her forehead, and incriminating Claus marks on her back. Now we’re all so proud of grandpa, He’s been taking this so well. See him in there watching football, drinking root beer and playing cards with Cousin Mel. It’s not Christmas without Grandma, All the family’s dressed in black and we just can’t help but wonder: Should we open up her gifts, or send them back? Send them back!! Now the goose is on the table and the pudding made of fig and the blue and silver candles that would just have matched the hair on grandma’s wig. I’ve warned all my friends and neighbors better watch out for yourselves, they should never give a license to a man who drives a sleigh and plays with elves.

Tissue Paper Wreath WHAT YOU’LL NEED: • • • • • • • •

Poster board or light cardboard (heavier scrapbook paper works too) Glue Disposable foam paint brushes Green, red and white tissue paper Scissors Piece of yarn or string Paper plate (to use as a template) Small circle and bow template

HOW TO MAKE IT: Trace the paper plate onto a piece of poster board. Position our small circle template inside this outline and trace around it. Cut out the circles so that you are left with a ring. Tie the string around ring so that you will be able to hang it up later. Cut green tissue paper into strips that are 1-2 inches wide and about 6 inches long. Crumple them up. (Note: we tried doing this with smaller squares and it takes forever to make enough pieces to cover the whole circle. Our daughter lost interest before we got halfway around and it was hard for her little hands to crumple the small squares. This method using strips was much easier for her to do. She had a lot of fun and it allowed the craft to go quick enough to hold her attention!). “Paint” the poster board ring with glue so that it is evenly spread and then place the crumpled tissue paper on to cover the poster board. Tear off small pieces of red tissue paper and crumple them tightly. Glue randomly around the wreath. Trace our bow template onto a piece of poster board and cut it out. Cut out strips of red tissue paper and crumple as above. Tear off a small piece of white tissue paper and crumple it tightly into a ball. Cover the bow piece with glue and add the red tissue paper with the white ball in the center of the bow. Glue your finished bow onto the bottom of the wreath.

Styrofoam Santa Craft MATERIALS: • • • • • • • • • • •

Medium sized styrofoam ball Cotton balls Craft paint: white and flesh colored White and pink pom poms 2 googly eyes 1 full sheets of red felt Glue Scissors Tape Paint brush Serrated knife

HOW TO MAKE IT: Use the serrated knife to cut a small portion off one end of the ball so that it sits still. Paint the majority of the styrofoam ball white. Paint a portion of the ball flesh-colored in a “U” shape for Santa’s face. To make the hat, grab a corner of the felt piece and loosely wrap the sheet of felt into a cone. The base of the cone should be large enough to sit on Santa’s head (with enough excess felt to allow you to glue it securely to the styrofoam ball). Glue a white pom pom to the tip of the hat. Glue a line of white pom poms along the base of the hat. Glue cotton balls around the “face” portion of the styrofoam ball. Continue gluing cotton balls around the entire ball. Glue two googly eyes on the face. Cut a cotton ball in half and glue each half over one eye as eyebrows. Glue on a pink pom pom under the eyes as a nose. (*Tip: I found that the pom pom was a little too big and fuzzy to be the nose on it’s own. I cut away some of the fuzz of the pom pom and it ended up looking a bit better). Stretch out a cotton ball and glue it under the nose as a mustache.

FAMILY HOLIDAY RECIPES

Appetizers CREAM CHEESE PENGUINS Recipe by: Valerie Lynne Just imagine a cute display of penguins, made with black olives, carrots and cream cheese! You can add scarves and hats by using fresh red pepper strips, or canned pimentos cut into different shapes. Use frilly toothpicks if you can. 18 jumbo black olives, pitted 1 (8 ounce) package cream cheese softened 18 small black olives 1 carrot

Cut a slit from top to bottom, lengthwise, into the side of each jumbo olive. Carefully insert about 1 teaspoon of cream cheese into each olive. Slice the carrot into eighteen 1/4 inch thick rounds; cut a small notch out of each carrot slice to form feet. Save the cut out piece and press into center of small olive to form the beak. If necessary cut a small slit into each olive before inserting the beak. Set a big olive, large hole side down, onto a carrot slice. Then, set a small olive onto the large olive, adjusting so that the beak, cream cheese chest and notch in the carrot slice line up. Secure with a toothpick.

BACON WRAPPED DATES STUFFED BLUE CHEESE

Recipe by: WINEANDCHEESE Dates are stuffed with blue cheese, wrapped in bacon and baked until crisp. These are delicious and very easy to make for a party. You can serve them at room temperature, so it is okay to make a few hours in advance!” 1 pound sliced bacon cut in half 1 pound pitted dates 4 ounces blue cheese Preheat the oven to 375 degrees F (190 degrees C). Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease. Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

GARLIC BREAD WREATH 1/4 cup shredded Parmesan cheese 1 loaf (1 pound) frozen white bread dough (from 3-pound package), thawed 1 tablespoon olive or vegetable oil 1 small clove garlic, finely chopped Grease cookie sheet. Spray outside of 6-ounce custard cup with cooking spray; place upside down on center of cookie sheet. Sprinkle 2 tablespoons of the cheese over flat surface. Roll bread dough in cheese into 24-inch rope. Place rope on cookie sheet and form into circle around custard cup; pinch ends to seal. Make cuts in dough at about 1 1/2-inch intervals from the outer edge of the circle, cutting two-thirds of the way through, using kitchen scissors. Lift and turn every other section of dough toward center of the circle. Cover and let rise in warm place 2 to 3 hours or until double. (Dough is ready if indentation remains when touched.) Heat oven to 350°. Mix oil and garlic; brush over dough. Sprinkle with remaining 2 tablespoons cheese. Bake 25 to 30 minutes or until golden brown. Remove custard cup.

Entrées TURKEY MERCEDES 3 heads garlic, peeled 1 tablespoon black pepper 1 tablespoon ground cumin 1 tablespoon dried oregano 2 tablespoons salt (or to taste) 2 cups fresh lemon juice 1 cup dry white wine 1/2 (12 fluid ounce) can frozen orange juice concentrate, thawed Crush the peeled garlic cloves, and place into a large bowl. Season with pepper, cumin, oregano, and salt. Pour in lemon juice, wine, and orange juice concentrate; whisk together until well mixed. Using a sharp paring knife, pierce the turkey breast, thighs, and legs; creating holes for the marinade to penetrate. Pour the marinade over turkey, and into the holes. Finally, stuff garlic pieces into the holes. Cover the turkey well, and refrigerate overnight to marinate.

Roast turkey in the preheated oven until the internal temperature of the thickest part of the thigh measures 180 degrees F (80 degrees C), about 5 hours. Baste the turkey every 30 to 45 minutes. SALMON WITH CRANBERRY PISTACHIO SAUCE CRANBERRY PISTACHIO SAUCE 1 pound fresh cranberries 1 cup sugar 1 cup orange juice 1 jar (10 ounces) red currant jelly 1/2 cup chopped pistachio nuts SALMON 2-pound salmon fillet 2 tablespoons fresh lime juice 2 tablespoons butter or margarine, melted 1/2 teaspoon salt Chopped pistachio nuts, if desired

burst, 30 to 40 minutes. Remove from oven. Using a slotted spoon, transfer fruit to a shallow bowl; cover with foil, and set aside. Ladle juices from pan into a medium saucepan. THREE-BEAN CHRISTMAS CHILI 1 can (28 oz) whole tomatoes, undrained 1 can (15 oz) dark red kidney beans, drained 1 can (15 oz) garbanzo beans, drained 1 can (15.5 oz) butter beans, drained 1 can (15 oz) tomato sauce 3 small red, orange or yellow bell peppers, cut into 1-inch pieces 1 Anaheim or jalapeño chile, seeded, chopped 1 to 2 tablespoons chili powder 2 teaspoons ground cumin 1/4 teaspoon pepper 1/2 cup sour cream 3 tablespoons Thick ‘n Chunky salsa Chopped fresh cilantro, if desired Into 4-quart Dutch oven, pour can of tomatoes; break up tomatoes with spoon. Stir in remaining ingredients except sour cream, salsa and cilantro. Heat to boiling; reduce heat. Cover and simmer 30 to 35 minutes or until bell peppers are tender. In small bowl, mix sour cream and salsa. Serve chili with sour cream mixture. Sprinkle with cilantro.

6 large potatoes 1/4 c. crushed garlic 1 c. chicken broth ½ c. sour cream 2 tbsp. butter ½ c. parmesan cheese Olive oil Salt and pepper Boil potatoes in broth with garlic and butter. Once cooked, mash using some of the liquid. Be careful not to use too much (about one-third cup). Beat in sour cream, butter salt and pepper until fluffy. Place in a casserole dish, sprinkle with cheese and olive oil. Bake at 350 F about 25 minutes.

dough. Use the leftover dough to fill in any thin spots around the wreath. 5 Spread the pizza with sauce and then sprinkle with cheese. Add the arugula and diced red and green peppers. Sprinkle with a little more mozzarella cheese and then add the salami slices. 6 Bake for 25-30 minutes or until the cheese is melted and bubbly. While the pizza is baking, cut slices of the remaining red pepper in strips and arrange them in the shape of a bow. 7 Garnish the pizza with fresh arugula and Parmesan cheese. Place the pepper bow at the top. Serve with balsamic vinegar, ranch dressing and extra pizza sauce if desired.

1 (13 ounce) can Pillsbury™ refrigerated pizza crust 8-9 cheese sticks 1 (25 ounce) jar tomato basil pasta sauce 2 cups shredded mozzarella cheese 2 cups baby arugula 2 red bell peppers, 1 diced and 1 sliced 1 green bell pepper, diced 2 ounces spiced salami, thinly sliced 1/2 cup grated Parmesan cheese Sauces for dipping and serving (ranch dressing, balsamic vinegar, pizza sauce, etc.) Preheat the oven to 400ºF. 2 Unroll the pizza crust dough and shape it in into a ball. Allow the dough to rest 5 minutes and then roll it out into a large circle. 3 Slice the cheese sticks in half lengthwise and place them around the edges of the pizza dough. Roll the edges up and over the cheese, pinching the dough to seal in the cheese. 4 Using a large 4-1/2 inch circle cookie cutter or a sharp knife, cut a circle out of the middle of the

Desserts JOY’S PRIZEWINNING TRIFLE CAKE 1 (12 ounce) container frozen whipped topping, thawed 1 (8 ounce) container sour cream 1 (9 inch) angel food cake 1 (3.4 ounce) package instant vanilla pudding mix 3 kiwis, peeled and sliced 1 pint fresh strawberries, sliced 3 bananas, peeled and sliced 1 (15 ounce) can crushed pineapple, drained 1 sprig fresh min In a medium bowl, fold sour cream and unprepared pudding mix into the whipped topping. Cut the cake into thirds, horizontally. Line a large trifle or other glass serving bowl with kiwi and strawberry slices, reserving two whole strawberries and two kiwi slices. Place one layer of cake in bottom of bowl, top with 1/3 of bananas and pineapple, and 1/3 of whipped topping mixture. Repeat layering until all ingredients are used. Make fan garnishes of whole strawberries by slicing from just below the stem. Garnish assembled trifle with fanned strawberries, reserved kiwi slices, and a sprig of mint. Refrigerate until serving.

CANDY CANE FUDGE

1 (9 inch) pie shell 3/4 cup white sugar 3/4 cup light corn syrup 3 eggs, beaten 1 teaspoon vanilla extract 1 pinch salt 1 cup chopped pecans

2 (10 ounce) packages vanilla baking chips 1 (14 ounce) can sweetened condensed milk 1/2 teaspoon peppermint extract 1 1/2 cups crushed candy canes 1 dash red or green food coloring

Preheat oven to 350 degrees F (175 degrees C). Prick pastry shell in several places with a fork and bake in preheated oven for 5 minutes. Remove and allow to cool. In a large bowl, combine sugar, corn syrup, eggs, vanilla, salt, and pecans. Mix well, then pour into pie shell.

Line an 8 inch square baking pan with aluminum foil, and grease the foil. Combine the vanilla chips and sweetened condensed milk in a saucepan over medium heat. Stir frequently until almost melted, remove from heat and continue to stir until smooth. When chips are completely melted, stir in the peppermint extract, food coloring, and candy canes. Spread evenly in the bottom of the prepared pan. Chill for 2 hours, then cut into squares.

Bake in preheated oven for 45 minutes. Check after 30 minutes; if crust is getting too brown, cover edges with aluminum foil. When done, pie will be a little loose in center, but will set as it cools; do not overbake.

Cookies FROSTED REINDEER COOKIES 1 pkg (510 g) Pillsbury* Refrigerated Sugar Cookies 1/4 cup (50 mL) flour 1 tub (450 g) Betty Crocker* Creamy Deluxe Frosting (any white or vanilla variety) 64 small pretzel twists 64 semi-sweet chocolate chips (about 1/4 cup/50 mL) 16 gumdrops, cut in half 1 Heat oven to 350°F (180°C). In large bowl, break up cookie dough; work flour into dough until well blended. Shape roll of cookie dough into triangle-shaped log. (If dough is too soft to cut, place in freezer 30 minutes.) 2 With thin sharp knife, cut dough into 32 (1/4-inch (6 mm) thick) triangular slices; place 2-inches (5 cm) apart on ungreased baking sheet. 3 Bake 7 to 11 minutes or until set. Cool 1 minute; remove from baking sheet to cooling rack. Cool completely, about 15 minutes. 4 Frost cookies with frosting. Place 2 pretzel twists on each triangle near corners for antlers. Lightly press 2 chocolate chips into each cookie for eyes and 1 halved gumdrop for nose. Store between sheets of waxed paper in tightly covered container.

MAKE A COOKIE LOOK LIKE AN ORNAMENT 20 vanilla wafer cookies 1 box Fruit Roll-Ups® chewy fruit flavored snacks 20 (3-inch) pieces string licorice Coarse sugar, if desired Line cookie sheet with waxed paper or cooking parchment paper. Unroll and remove paper from Fruit Roll-Ups. Cut each in fourths. Making a loop for ornament using string licorice, and attach to back side of cookie, securing under fruit snack as you wrap fruit snack around cookie. Decorate with sugar, or cut pieces from remaining fruit snack to decorate. Place on cookie sheet.

SWIRLY CHRISTMAS TREE COOKIES

EASY GINGERBREAD COOKIES 1 (6 ounce) package butterscotch pudding mix 3⁄4 cup butter 3⁄4 cup brown sugar, firmly packed 1 egg 2 1⁄4 cups flour 1 teaspoon baking soda 1 tablespoon ground ginger 1 1⁄2 teaspoons ground cinnamon

Pillsbury® Refrigerated Sugar Cookies Miniature candy-coated chocolate candies, if desired Green decorator sugar crystals, if desired 1 Heat oven to 350ºF. In large bowl, break up cookie dough. Stir or knead in 1/4 cup all-purpose flour until well blended. Divide dough in half; wrap each half in plastic wrap. Place in freezer 10 minutes. 2 Shape half of dough into 1-inch balls. With fingers, roll each ball into 10-inch rope, about 1/4 inch wide. Break off small piece from each rope for tree trunk. Carefully place ropes on ungreased cookie sheet. 3 With each rope, starting at top, twist rope back and forth into tree shape, gradually making larger at bottom (rows of dough should touch). If rope breaks, press dough together. Place small piece at bottom of each tree for trunk. Repeat with remaining half of dough. 4 Decorate trees with candies to look like ornaments or lights. Place candy at top of each tree for star; sprinkle with sugar. Bake 9 to 13 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.

Cream pudding mix with butter and sugar; add egg, and blend well. Combine flour, baking soda, ginger, and cinnamon; blend into pudding mixture. Chill dough for 1 hour or until firm. Roll dough on a floured board to about 1/4 inch thickness and cut with cookie cutter. Place on greased baking sheets; use a straw to make a hole in the top of the cookie for hanging on the tree, if desired. Bake at 350F for 10 to 12 minutes. Remove from oven and cool on wire rack. Decorate if desired.
