In today's societies, we must collaborate to build a world where we aspire to forge a strong bond with people who have been long segregated and close the gap by getting to know each other in different perspectives. Our students will have the opportunity to work with their counterparts from the other school and will actively take part in the project, thus, having a chance to discover how similar we are to people from different countries and cultures through gastronomy. The teachers Ali Mulcar (Turkey) and Antonio Rosales (Spain) have encouraged their students to achieve this goal and work together from the distance to put together and share all they know about the gastronomy of their country and the feelings about working with people belonging to a different culture. The result is this recipe book, which has also been developed through videos and photographs in the blog of the etwinning site along the academic year 2014-2015. Meatballs Ingredients: ½ kg minced meat

1 onion

Crumbs of 2 slices of bread


Yolk of an egg

A pinch of salt

A pinch of black pepper


A pinch of cumin

6-7 branches of parsley

Vegetable Oil


How to prepare it: Put the minced meat in a bowl

Put the chopped onions in the bowl

Put the crumbs in the bowl


Put the chopped parsley in the bowl

Add black pepper, cumin, salt and egg to the mixture

Knead them for 3 minutes


Lump the mixture as big as a walnut and press a little bit on it to thin it down

Put the oil in a pan and heat it for 2-3 minutes. Then put the meatballs in the hot oil and fry both sides for 4-5 minutes.

Meatball is ready to be served! Bon Appetite!


ÇILBIR Ingredients: 50ml. Vegetable oil

3 cloves of garlic

Two eggs

A coffee spoon of salt

½ kg of yoghurt

A coffee spoon of red pepper flakes


How to prepare it: Boil 2 glasses of water in a pot.

Add salt in boiling water and crack the eggs in the water. Then close the pan lid and continue cooking in low heat.

Crush the garlics.

Add them to the yoghurt


Heat the oil in a soucepan and fry red pepper flakes for 20-30 seconds

Take the boiled eggs out and put them in a bowl.

Pour yoghurt with garlic on the boiled eggs.

Pour fried red pepper on yoghurt and your Çılbır is ready to be served… Bon Appetite!


EkĹ&#x;ili KĂśfte Ingredients: 1 kg minced meat

5 potatoes

4 grated onions


1.5 glass of fine cracked wheat (bulghur)

4 - 5 spoon of rice

2 spoon of red pepper paste


1 coffee spoon of red pepper flakes

4-5 carrots

Half packet of butter


2 spoon of parsley

2 spoon of salt

1 egg


How to prepare it: Put minced meat in a tray and add grated onions in it

Add cracked wheat (bulghur) in it

Add rice in it


Add 2 spoon of parsley in it

Add red pepper paste in it

Crack the egg and add it in the mixture


Add half packet of butter in it

After adding all the ingredients knead them in the tray for 3 minutes

After kneading, lump the mixture as big as a walnut


Pour flour on a tray and put the balls on it in order to avoid them to stick each other

Melt a half packet of butter in a pan

Add carrots in it


Add potatoes

Add red pepper paste

Add two litres of water on them


After the water begins boiling, add meatballs in the boiling water

Cook them for 25-30 minutes. EkĹ&#x;ili KĂśfte is ready to be served. Bon Appetite!!


ÇİĞ KÖFTE (Steak Tartar A La Turca) Ingredients 1kg. Fine Bulgur / Burghul (Cracked Wheat)

4 branches of chopped green onion

6 cloves of garlic (crushed)


2 heads of dry onion (chopped)

A handful of parsley (Chopped)

400 gr. Red pepper paste


100 gr. Chipotle red pepper flakes

4-5 pinches of Cumin

100 gr. Red hot chili pepper flakes


5-6 pinches of black pepper

Salt

Half a glass of Sour Pomegranate Syrup


A glass Olive Oil

400 gr. Nerveless and fatless minced meat (have it minced for at least 6 times)

4 tomatoes

Plenty of lettuce


How To Prepare it Çiğ Köfte is not a usual food for Turkish people and culture. It is a social food. In the evenings people get together occasionally in a party atmosphere. They have chat with each other and play Turkish national instrument saz and sing Türkü (traditional songs) while some of them is preparing Çiğ Köfte. This food brings the masses together and strenghtens the bond between people. You are going to be reading “kneading” verb a lot in this recipe. For this reason, in order to prepare this delicious but also very hot food you will need very strong arms and a person to wipe your sweat from your forehead. You have been warned.  P.S. (Best consumed with Lettuce, Lemon and Ayran. In order to prepare Ayran, mix water and youghurt and add some salt in it.) At first, knead chopped onions and bulgur (cracked wheat) together for at least 34 minutes to deaden the onions.

Then add minced meat in it and knead it for 5 minutes.

Add red pepper paste, cumin, red hot chili pepper flakes, chipotle red pepper flakes, black pepper and salt to the mixture. Then knead it for 9-10 minutes.


Add 3 tomatoes and squeeze it with your hand and continue kneading for 4-5 minutes (if the mixture is too dry add 1 more tomato)

Add half a glass of Sour Pomegranate Syrup to the mixture and knead it for 2 minutes.

Add a glass of olive oil to the mixture and knead it for 3-4 minutes.


Add chopped parsley, green onion and crushed garlics into the mixture and knead it for 6-7 minutes. (If the mixture is too dry to be balled, add very little warm water to the mixture. )

Kneading ends here. Wait for 10-15 minutes so that the mixture could absorb all the spices and other ingredients. Finally, chip a little piece from the mixture and squeeze it in your hand and make a meatball shape as seen in the pictures below.

Voila!! Your Çiğ Köfte (Steak Tartar A La Turca) is ready to be served.


MANTI (Turkish Ravioli) Ingredients:

500 gr. Minced Meat

2 kg. flour

1 egg


4 onions (chopped)

5 gr. (half a spoon) Sugar

10 gr. (a spoonful of) Salt

10 cloves of garlic (crushed)


A spoonful of black pepper

250 gr. Butter

A spoonful of tomatoe paste

A spoonful of red pepper paste


1 kg. Yoghurt

How to prepare it:

At first, put minced meat, chopped onions, salt and black pepper together in a bowl and knead them.

Then, put flour, sugar, salt, egg in another bowl and add water to the mixture. Consistency of mixture should be as thick as an earlobe. Knead the dough for 3-4 minutes. Split the dough in 6 or 7 pieces.


Roll out the dough pieces with a rolling pin.

Slice the phylloes in square shape as seen in the pictures.


Take pinches from the minced meat mixture and put them on the square shaped phylloes. Then seal off the square shaped phylloes by folding and pressurizing the edges.

Here is an example of folded phyllo.

Sprinkle some flour on a tray and put the folded pyhlloes on it in order to avoid them to stick to tray or each other.


Boil water in a cooker and add a spoonful of salt in the water. When it begins bubbling, pour the folded phylloes in the water.

Boil the phylloes until they soften. Duration of boiling depends on how much heat you give to the cooker. (It is generally about 15-20 minutes.)

Then filter the phylloes in a colander. (Tip: Do not throw away the boiling water of Mant覺. It is highly recommended you to use it to prepare a delicious soup.)


Heat the butter in a pan and add tomato and pepper pastes in it to roast them .

Add crashed garlics and some salt in yoghurt and mix them.


Finally, pour yoghurt with garlic and tomatoe sauce on Mant覺. Bon Appetit!!


MĂœCVER At first we need 3 courgettes.

Peel the courgettes.

Grate the courgettes.

Add two eggs to grated courgettes.


Add half a teaspoon of red pepper flakes, thyme, black pepper and a teaspoon of salt.

Then mix them together.

Add a packet of baking powder.


Add a glass of flour.

Put a glass of vegetable oil in a pan and heat it for 2-3 minutes.

After the oil is heated enough, take a spoonful of the mixture and pour it in the pan.

Rotate the frying mixture every two minutes.


Bon Appetite! Mücver is ready to be served…


ZEYTİNYAĞLI SARMA (Stuffed vine leaves with olive oil) Ingredients:

A glass of olive oil

100-120 green vine leaves

3 chopped onions


A spoon of tomato paste

500 gr. rice

A spoon of dried mint, a coffee spoon of powdered paprika, a tea spoon of pimento, black pepper and cumin


A spoon of currant

A spoon of pine nut

A coffee spoon of salt


A spoon of sugar

Half a bundle of parsley

Half a bundle of dill


How to prepare it: Heat the olive oil for 2 minutes in a pan

Fry the onions until they turn to pink

After the onions turn to pink add tomato paste and fry them together for 2 minutes more.


Add rice in the pan and mix them

Add dried mint, powdered paprika, cumin, pimento, black pepper, currant, pine nut, salt and suger in the mixture mix them.


After cooking them together for 2 minutes, add chopped dill and parsley and 1,5 glass of water in the pan.

Mix them well and cook them for 5 minutes.


Put 1,5lt water in a pan heat it until it boils. Then put the green vine leaves in groups of 15-20 into the boiling water. Boil them for maximum 1 minute. Take the leaves out as they turn to yellow. If you boil it too much it will make it impossible to roll the leaves as they will shatter.

Rolling (The hardest part) ď Š Put the rice mixture on the leaves. Fold the leaves from both left and right sides and roll them tightly as seen in the next two pictures.


After rolling the vine leaves, lay 5-6 empty leaves on bottom of the pan in order to avoid burning the meal. Then pile the rolls on the leaves in the pan. Then add water until it reaches to the surface of the rolls. Put a porcelain plate on the pile reversly to make the rolls tighter. Then, cook them for 30-35 minutes in low heat until all the water in the pan shrinks or evaporates. (Note: Check the pan every 45 minutes after 25 minutes in case of burning.)

Stuffed vine leaves are ready to be served. Bon Appetite!!



Pisto

Ingredients Green pepper and red pepper

1 kg of ripe tomatoes

-

1 onion


-

Olive oil

-

Salt

-

one egg

How to make a PISTO:

1. Cut the pepper in small pieces (dice)


2. Put the olive oil in the pan and wait for it to warm

3. Put the dice of pepper in the pan and stir

4. Cut the onion in dice

5. And add the onion


6. Cut the tomatoes in pieces

7. And put everything in the pan

8. And stir all

9. Crack one egg and add it as a side dish


10. Here it is

11. And eat it!

GAZPACHO ANDALUZ Ingredients: 1/2 kilo of red tomatoes

- 1 redpepper

2cucumbers


1 onion

Olive oil

White winevinegar


Salt

Cold water

Recipe for four people 1. Chop the tomatoes


2. Chop pepper

3. Chop the cucumber

4. Chop the onion


5. Pick up the bowl of the mixer and add all the vegetables in

6. Now that all vegetables are in thebowl of the mixer, operate it and leave running until there are no pieces of vegetables

7. Now add salt to taste 8. Add oil

11. Finally put it into the fridge and serve very cold with little dice of vegetables


Arroz con leche (Rice with milk) Ingredients A glass of milk

Cleaning of a lemon (4 slices)

Cinnamon in powder

100 grams of sugar


200 grams of rice

How to make the recipe: First, spilt 3/4 of the milk in a ladle and put to average heat

Meanwhile, add the sugar, the branches of cinnamon and the cleaning of the lemons.


When it has started to boil the fire stoops in order that it boils one more minute, because it’s important that the mixing of milk, lemon, cinnamon and sugar does to itself well.

Later add the rice with average heat, and stir slowly and constantly To verify the quantity of milk that is staying, as the rice is absorbing it, it will be thickening, you must avoid this because it must remain rather liquid, not a paste. So add more milk while the rice is still boiling. You must try the sweetness and the hardness of the rice every little time. Finally, serve in several not very big containers, taking with a dipper some milk and a bit of rice, which will have remained deposited in the bottom of the ladle.

To decorate, add also to the bowl a chunk of the cleaning lemon and a branch of cinnamon, if you like.


Let it cool to room temperature in order that the rice absorbs more milk. Then, put it in the fridge to consume in the following days.


Potato omelette (also called Spanish omelette) Ingredients for four people 5 potatoes

5 eggs

1/2 olive oil

Salt


Elaboration: Peel the potatoes in thin slices

Pour some oil in the frying pan

Add the potatoes to the oil

Beat the eggs


Mix the potatoes with the eggs

Add a pinch of salt

Put everything in the frying pan until the omelette curdles and turn it round with the help of a plate
