Seed to Food “Seed to Food� is a conceptual FARM to TABLE zero-waste ideal. Seed to Food introduces and promotes an effective system that best utilizes natural resources across our dining culture. Our Far m offers a var iety of services: we grow seasonal vegetables and fruit for our exclusive members and provide hands-on exper iences that allow members to cultivate, harvest, make utensils with food waste, and cook with healthy organic fresh picks. We are building a world where everyone has access to healthy food and establishes connection with the land. Our aspirational goal is to eliminate waste in the process from Seed to Food. This project showcases how the system actually works.

One of our design goals is to ensure SAFE FOOD: The number of food scandals has risen exponentially in recent years. A series of food safety incidents came to light in 2014; around 80% of Taiwan's citizens express concern. Seed to Food’s approach to food safety covers the entire life cycle of food.

The second goal is to allow effective use of the food already produced and hence reduce FOOD WASTE. One third of the food produced for human consumption every year. Food waste occurs at every touchpoint of the food system: far m, post-harvest, processing, transporting, wholesaling, retailing and consumption. Reducing food waste is environmentally and socially important as it keeps food out of landfills and raises public awareness.

Operation Manner: Our conceptual recreation far m is located in JiaoXi, Yilan. It is divided into seven sections: far m, harvest, central kitchen, self-serving kitchen, restaurant, and composting area.

Selling:

Service Far ming:

Interested consumers can purchase seasonal produce in our store throughout the year. Some of the vegetables and fruits we offer in our store come from local far ms.

We deliver hands-on exper iences to enable members to grow their own food. We also cooperate well with local far mers. We are proud to offer a wide var iety to our customers.

Cooking: There are two kitchens: one is for our exclusive members to cook from fresh picks, the other is the central kitchen for our restaurant. Members can choose to make their own dishes or enjoy the meals we serve in our restaurant.

Organic D.I.Y.: To reduce food waste, we carefully separate the harvest into two parts: edible and inedible. Members attend our workshop and utilize all the remaining inedible component, which are later processed into tablewares and utensils.

Dining: You can simply order from our seasonal menu or pick your own vegetables from our store and let our chef prepare special dishes for you.

Harvest: Our crops take around 50~90 days to harvest. We will notify our members to come harvest with us when their crops are matured via our messaging application. We also provide delivery services.

Composting: In the composting area, all the food waste including our aged and overused utensils, will be handled by professionals to help br ing new life to just planted crops.

Tablewares We use the inedible parts of vegetables and fruits to create unique tablewares. For the foundation of our project, we chose several different kinds of high waste capacity vegetables and fruits, where almost half goes to waste dur ing production. Processing of fruits and vegetables produces solid wastes: peel/ skin, seeds, stones etc. In our design, we give the solid wastes new lives.

We not only offer organic food but also organic utensils, hoping to provide a more natural and organic dining exper ience.

Every piece has a matching copper accessory. We design the accessor ies to be versatile so that they can be reused and apply to new peels.

Rice Bran

STEP 1: HARVEST Rice bran is a byproduct of the r ice milling process. We use bran as the mater ial of our plates.

STEP 2: MIXING We u s e t h e p r o c e s s o f p a p e r m a k i n g m i x i n g t r e e r e s i n with blended natural fibers and drain the compound.

STEP 3: MOULDING We use vaseline as release agent and put the compound on the mould. The bran plate need to be flipped dur ing the baking process to make sure it is completely dehydrated.

Fruit Peel

STEP 1: SCOOPING Scoop out the pulp all the way to the pith without breaking the r ind.

STEP 2: DEHYDRATION We try to make the process as easy and simple as possible by trying all kinds of convenient dehydration methods: sun, oven, dehumidifier, dish dryer, etc.

STEP 3: MOULDING To tur n peels into bowls and cups, they still need to be constrained by moulds. after moulding, they will perfectly match the accessor ies we designed for each fruit.

OBSTACLES & SOLUTION

Shr inking Shr inkage occurs dur ing the dehydration process and causes measurement problems.Consistently fix the peels with moulds till they are half dehydrated, and then carefully remove them. After removing the moulds, cautiously monitor and adjust every 10 to 20 minutes.

Size Differentiation The diameter of matured limes could vary between 4 to 7 centimeters, and shr inkage dur ing the dehydration process is also inestimable. Thus, it’s hard to design a perfectly matched handle for the lime cups. (same goes for the grapefruit and pomegranate bowls and cups) We chose copper as the mater ial for the handles. Copper could be easily bent, and perfectly matches different diameters.

Girly Blender “Girly Blender” is a protable blender that designed for girls who are in love with long-ter m travel. Eating out is much cheaper in Taiwan than in other countr ies. While you are traveling to other countr ies but still want to save some money from meals, you will need my portable blender to deal with ingredients you buy from super markets. Especially you live in a rent house or a dor m that without a kitchen. This protable blender is seperated into six parts in the case.Including motor, holder, blade head, mixer blade, egg beater and cutter. There’s three different blade that help to deal with all kinds of foods. Modular design makes it more suitable to car ry abroad.

Ice Bar “Ice Bar� is a tiny refr igerator which is designed for students who living off campus in Taiwan. My refrigerator is a little bit taller and narrower than common small refrigerator.I consider the place where students live, the food they put in the refrigerator, and the best way to open the door. After analyzing all these details, my refrigerator was born.

Design Features Tiny After investigation, we find out that students who living off campus in Taiwan often rent a house around 4.5 square footage. According to those size of other fur niture, I calculate the best dimension which suits the room very well anywhere.

Drawer After testing multiple ways for opening and closing, I analyze that drawer is the best and most space-saving ways for my icebox.

Food Category After the survey, I conclude my questionnaire that most of students in taiwan who live off campus only put fruits, drinks, milk, and some left meal in the refrigerator.Then, I measure those object in order to calculate the exact size of my icebox.

Nan-Mu Plate These fruit plates are made of chinese cedar tree’s powder. In Taiwan, there’s a plant called’’Nan-Mu”, We also call it chinese cedar tree. We extract the powder from Nan-mu to make chinese incense. This powder is very natural and its fragrance can keep away insects.

Making Process STEP 1: MOULDING I make some mould as a container at first to place the cedar mixture. STEP 2: MIXING Pour some water into cedar powder and stir it until it becomes uniformly viscous STEP 3: DEHYDRATION Put them in the oven until it dries and shrinks.

Wood + Wood After visiting Dong-Shi forest, we find that wood plays an important role in our life. Including tree, log and timber.

We seperate the word “forest” into “wood+wood”. 1.Natural wood/we observe the forest’s natural appearance, and find out some beautiful texture and sign. 2.industr ial wood/we define it as “what people do to the wood”. We use wood to make fur nitures, arts, structures...etc.

Design Features

The bottom part means the original ground of the forest.The gray part contains stone powder and poly, carved with patterns which was found in the forest.

The middle part means transform. I use clear poly to combine the branch and the timber. This part symbols the change from nature to industry.
