MEADMAKING PROCESS
SERVING TEMPERATURE
Best served chilled (48-55 °F / 9-12 °C). The best way to chill a bottle of mead is to place the bottle in a bucket of ice and water and allow it to chill for about 20 minutes.
AERATING
By allowing Flor Blanca mead to mix and mingle with air, the mead’s aromas will open up, the flavor profile will soften, and the overall flavor characteristics will improve. To aerate, simply pour the mead into a decanter or wine glass and let it sit for 10 to 15 minutes. Alternatively, you can use a wine aerator.
SHELF LIFE AFTER OPENING
7 - 14 Days. To store an opened bottle of mead, you should recork it with the tightest fit possible (we recommend using VacuVin stoppers) and place it in the refrigerator.
CELLARING
3 - 5 Years. It is best to store bottles of mead cool, dark, still and sideways.
TASTING NOTES
Brilliant golden color. Delicate aromas of Costa Rica wildflower honey, passionfruit, and pink grapefruit with a soft, off-dry light-to-medium body and a crisp, refreshing, green apple accented finish.
PAIRING
Flor Blanca mead pairs very well with spicy foods and foods with acidic content such as ceviche, shrimp with lemon, or pasta with tomato sauce. Its crisp, refreshing flavor goes well with warm weather and casual meals. Seafood: Raw oysters, shrimp, fried fish Meat: White meats like chicken , turkey, pork Sauces: Citrus, vinagrettes
We blended unfiltered, raw honey from our apiaries in Santa Barbara de Heredia with honey harvested in the mountains of San Gabriel de Turrubares and mixed it with spring water. We did not heat the must in order to preserve the essence of the honey and the floral sources that it represents. Specially selected wine yeasts were used to inoculate the must, and primary and secondary fermentation proceeded for two months. The mead was bulk aged for six more months before being bottled in February, 2013.
STORY OF MEAD
Mead (honey wine) is an alcoholic beverage created by the fermentation of water and honey. Mead’s alcohol content can vary greatly between mild and strong, and it can range between still and sparkling. Similar to grape wine, mead can be dry, semi-sweet, or sweet. Mead is quite possibly the oldest alcoholic drink in history and may have been accidentally discovered when old tree stumps serving as homes for honey bees were flooded during the rains and the fermentation process took place naturally, only to be found and enjoyed by the people traveling through. It went on to become the preferred drink in the Mediterranean during the Age of Gold. In fact, the word “drunk” in classical Greek translates to “intoxicated with honey”. Honey itself has been held as a sacred food for thousands of years. For centuries, honey wine has been renowned as an ‘aphrodisiac’ (agent which heightens sexual drive) and the word “honeymoon” is believed to be derived from the ancient European custom of having newly-weds drink honey wine for a whole moon (month) in order to increase their fertility and therefore their chances of a happy and fulfilled marriage. Honey wine is also taken as a health tonic drink as it has a good level of antioxidants from honey.
