INGREDIENTS 1 thick slice of goat cheese 6 tomatoes 2 sprigs chopped mint 40 ml apple cider vinegar 20 ml water 20 ml Maggi sauce 40 ml olive oil INSTRUCTIONS • Remove the stringy part at the base of the tomatoes with the tip of a knife. Cut them into slices and arrange them on the plate. • Crumble the cheese over the tomatoes. • Sprinkle with chopped mint. • In a bowl, mix the vinegar, olive oil, Maggi sauce, and water. • Emulsify the sauce and pour it over the tomatoes. With this fresh and easy salad, you will find a taste of French summer vacations in St Tropez! With a Rose Wine from St. Tropez, your guests will feel the French touch as never before! Club 55 Saint Tropez, Pampelonne Beach, France Opened in 1955, Club 55 Beach Club is the original of the St Tropez Beach Clubs on Pampelonne Beach in the South of France. This beach “Bazaar,” with its own relaxed yet chic style, has everything that you might need for the beach or elsewhere. There are dozens of restaurants along the beach, but for decades Club 55 has been the place to be. The place where the rich, the famous and the “who’s who of Saint Tropez will be hanging out during the summer months. With a casual style and everything you can possibly want in a beach club. Fishing with
SAM!
Typically I would be up at 5:30 am with food and drinks in a cooler, driving from Key Biscayne down to Matherson Hammock State Park, in South Miami. I would meet Sam at the boat launch area. Even at that early hour, there was already a line to access the park. Multiple trucks with boats lined up along Old Cutler Road, waiting for the park ranger to unlock the front gate. Few are more experienced than Sam at reversing the trailer down the ramp and sliding his 25-foot Contender off the trailer. The boat was well prepared with rods and reels ready to go. In minutes we were off. Passing the line of palms north of the Matherson Hammock Marina. On the horizon, you could catch the first pink and orange glow of a new day. Once through the channel, Sam sped up, and I held on tight, as we flew across Biscayne Bay. Our first priority was getting bait. Sam pulled up next to a bait boat just before the Stiltsville Channel. Sam had a relationship with these guys and he was thoughtful enough to bring them Cuban coffee, and pastries. Typically we bought Pilchards or Ballyhoo and filled the live bait well.

The sun broke the horizon, and we enjoyed the sunrise as we headed toward Fawey Light. There’s always so much activity at that time of day, be it the birds or the constant movement in the water. It’s no surprise that so many fishermen are up early, as sunrise and sunset represent feeding time for so many species of fish. Jenn and I have seen huge schools of Tarpon feeding in Biscayne Bay, in those early hours. Many of them are 5 or 6 feet long. We have also often seen blacktip sharks and stingrays under Bear Cut Bridge. I have seen no one more relaxed than Sam, as he pushes down both throttles, and eases back into his captain’s chair, steering the speeding Contender with his feet, a huge smile across his face. He knows this boat, and these waters better than most and can find you many fish on any day out there. Sam Perna was born and raised in Patterson, New Jersey, and came to Florida in 1991. He first worked at Metro Zoo, until it closed after Hurricane Andrew. He worked as a laborer and became close friends with his boss Joel. They were busy installing new doors after damage from the storm. But any chance they got Joel and Sam would head to Key West to fish the wrecks 60 miles offshore. They would leave Miami at 300am to be fishing as the sun came up. These were Sam’s first experiences with saltwater
fishing, The passion has grown and developed since then. You only have to look at his Facebook page’s pictures and videos from fishing to understand where this man loves to be! Today Sam is the proud owner of “Biscayne Lock and Safe,” https://biscayne-lock-and-safe.business.site, (786) 991-9156, Biscaynelock@gmail.com; a locksmith business that operates throughout Dade and Broward count and on Key Biscayne. This is how I first met Sam, and he became one of my closest friends over the last 15 years. Be it some incredible fishing trips, where I learn so much from him, or our love for the Miami Dolphins, and being diehard fans, or just meeting for lunch as we often do at our favorite restaurant “Jaguar” in Coconut Grove https://jaguarrestaurant.com/ its always great to spend time with him. We may be 40 miles offshore and tempted to head into Bimini for a conch salad or learning about the first Pirates to live on and around Biscayne Bay. Sam always has something to share. I’ve learned more about fishing from him than anyone else. Over the years we have fished the Miami Dolphins “Fins Weekend” charity tournament. Meeting many of the players and coaches and enjoying the “weigh-in” and “after-party” event in the evening. It’s an incredible day that starts early as shared in
Matheson Hammock and goes late into the night. A long day, but so enjoyable, and for a good cause. Sam typically zig-zags across what local fishermen know to be the “drop off” where the depth increases from about 30-40 feet to 600-800 feet. We constantly look for long weed lines (fish hide under them) and we always watch for birds (another sure sign of fish being below the surface). A true find is a large floating log, based on the activity we expect to find under it. I recall one such log, with a huge triple tail under it. Then a dolphin jumped out of the water right next to the boat, as we sped towards Bimini. I use that picture as my screensaver on my home computer. Over the years I have learned a lot from Sam. I’ve noticed how respectful he is of the gulf stream, knowing to only cross it when you know you can depend on great weather. This is a trip he knows well. First to Bimini, then across the Bahama bank to Freeport, Grand Bahama. One trip almost turned disastrous when they tried to return with just enough fuel, but the weather had changed, preventing the boat from coming up on a plane and running efficiently. Twenty-five-knot winds caused a slowdown and burned more fuel going through the high waves. Sam was forced to slow down, and it took five hours to make the crossing. He barely made it on the fuel he had. June 2020 • KB Living

Sam loves to fish for Wahoo, Mutton Snapper, and Black Groupers, mainly because they are the best to eat. But he loves the “fight” of a swordfish and has battled a single swordfish for up to five hours. When I have been with him we have caught everything from tuna, to Kingfish, all types of snapper, reef sharks, and Maui Maui. He has another favorite called the Cubera Snapper which can only be found two months of the year when fishing over wrecks. They can put up quite a fight. We cover incredible distances in any given day fishing. From heading south to “Careysfort Reef Light,” https://en.wikipedia. org/wiki/Carysfort_Reef_Light (great snorkeling), at the northern end of Key Largo, then running northward and all the way

back to Fawey Light. One day we covered 81 total miles trolling offshore. That day we caught many Maui Maui, snapper, and I even hooked a small reef shark about a mile inside Fawey Light! It’s always a long exhausting day. But so well worth it, and so enjoyable! Genesis is sending a strong and clear message to the established luxury brands from Germany and Japan with their exciting product portfolio. This includes the recently introduced G70 sport sedan among others as well as the all-new, three-row SUV called the GV80 summer 2020. It is very clear that the Genesis brand is a new page in the luxury vehicle handbook. The elegant, sinewy design of the Genesis G70 creates a sports sedan that looks and feels right. It’s easy to see that the BMW 3 Series was the bench-mark car that Genesis aimed for and they got it. The new corporate grille is large, bold and makes a statement. Anchoring both front corners are a pair of sleek and modern headlights and turn signals that look like fine jewelry on a beautiful lady. The side silhouette gives an impression of a sleek and elegant sedan, featuring an ornamental chevron in the front fenders. At first, I didn’t particularly care for it, but without it, the G70 would not look complete. So, I changed my mind. The rear of the G70 is equally stylish, offering streamlined taillights and a stylized trunk lid. Below the bumper there are dual, sideby-side exhaust tips on the right edge that complete the look. Once inside, you are greeted by a cabin that’s well-appointed and designed, yet restrained and understated, due to the simple yet contemporary design lines. In the center, there is a large, exposed infotainment screen that looks very BMW-like. Controls are large

and easy to understand and use. Instruments and center screen information is easy to read, offering multiple details on speed, tire pressure, driver alert level, trip distance as well as radio station selection information. Seats have adjustable side bolters and are comfortable, even for the most finicky drivers. Rear seats are surprisingly tight, especially if you have anyone over 5’10” driving and you need to sit behind them. Trunk is a touch smaller than comparable cars in the segment. Our tester had a handy cargo net that worked great holding small things in the trunk. During my week with the G70, several bystanders took notice. Most didn’t know what it was, some thought it was a restyled Lexus, others simply gave the thumbs-up sign and a smile. Genesis is still somewhat obscure in the US market and to most people that ask, you have to add…It’s the luxury brand of Hyundai. Most simply just react with a shrug. Genesis needs to do more consumer awareness events. Our test G70 came with a surprising, optional six-speed manual transmission that I looked forward to trying. Verdict; after a week driving this manual 2-liter turbo sports sedan, it left me wanting a transmission and clutch set up that should be more engaging. It’s not a bad combination but it’s not as dynamic as I expected it to be, especially after driving several manual transmission versions from comparable Japanese and German brands. Acceleration is good from the 2-liter four motor, especially if you go deep into the throttle. Brakes are direct and linear, offering nice feedback, even under heavy braking. Overall, I found it to be great looking, comfortable and easy to park and maneuver in any urban setting. The Genesis G70 is sporty, elegant and looks just right, with great value to boot. Through the donation of our textile waste to DesignLab Give, Nüage Designs has been able to bring together the community through collaboration, sustainability, and giving back. DesignLab Give is a local organization that teaches children and adults how to sew. Made in Broward prepares youth for adulthood by teaching them different crafts. So here at Nüage, we believe small gestures can have a big impact in making a difference! Given your business expertise and the nature of what you do, what advice can you offer to the residents and readers of Key Biscayne? Be selective with the people you surround yourself with - both in business and in your personal life. Having positive and like-minded people plays a huge role in being able to overcome obstacles in times of adversity. We were only able to implement this initiative because we had everyone on board! 100% of the team wanted to contribute! Please tell us a little about your background. What events led up to where you are now? At the age of 18, I moved to Switzerland to study at the prestigious Hotel Management School “Les Roches,” and from there, I took on various assignments with The Ritz-Carlton Hotel Company all over the globe - from Moscow to Key Biscayne and everywhere in between!
Where did you grow up and how long have you lived in the area? I was born and raised in Sao Paulo, Brazil. I moved to Miami in 2001 to join the opening team at The Ritz-Carlton Key Biscayne, where I served as Director of Guest Relations for eight years and fell in love with the key and its charming atmosphere. I now live in Brickell, but in addition to having worked on the key for nearly a decade, I attend church there, so I’m on the island at least twice a week. What is your favorite thing about Key Biscayne? I love the close-knit community, where neighbors still know each other by name and stop for a chat when they cross each other on the street. Having frequented KB for the past two decades, it’s hard to walk into Wynn-Dixie or one of the restaurants without running into someone you know! It’s that small-town feeling that warms your heart. The Art of Adapting
This month we introduce and feature the art of Laura Villarreal. Her artistic talent is immediately apparent. We asked Laura to share with us a little of her personal background and how she came to be where she is today. We know you will enjoy getting to know her and will quickly recognize why her art is featured worldwide. Laura initiated her art studies at the University of North Carolina, the New York School of Visual Arts and the Art Students’ League in NYC. She holds a master’s degree in Analysis and Management of Contemporary Art from the University of Barcelona. She has done residencies in Guatemala, learning Mayan weaving techniques and in Mexico City on fabric dyes. She has lived in Key Biscayne since 2014. What brought you to Key Biscayne?
I moved to Miami with my husband and a baby from NYC. We initially lived in Brickell. As we made Miami our home, we wanted a community where our kids could grow and be close to all the attractions and conveniences of Miami, so we moved to Key Biscayne. I love the sense of community; I love the ocean; the beach is one of my favorite places. From where are you and your family originally?
I grew up in Monterrey, Mexico. I came to the US in 1998 to study and stayed. I have lived in North Carolina, NYC, and arrived in Miami on December 2000. My husband is also from Monterrey, Mexico. We have three boys; the oldest was born in NYC, and the other two here in Miami. Tell us a little about your work and how you got started.
I am a visual artist. I have my studio in Miami’s Allapatah neighborhood, and I work with paint and fibers. I have been using paint as my medium for expression for a long time. Then I reconnected with fibers (I first connected when I was 15). I love to work with anything available to me, but you can consider these two, my means of expression.
I have shown my work at the Instituto Cultural de Mexico in Miami, the Embassy of Chile in Washington, DC, the Centro Cultural Fatima in Monterrey, Mexico, the Mexican Consulate in Los Angeles. My studio is part of the official ART BASEL MIAMI BEACH artist studio visits. I have shown in international art fairs like Aqua Art Miami, Pinta, Chaco Chile, and Art Lima. I was selected to represent Mexico at the Mexican Pavilion in Arteamericas 2010 in Miami, and I am part of the select group of artists that comprise the Mexican Cultural Institute in Miami. I am an advocate for art education in young audiences here in Key Biscayne, through my art program called Dot Art Studio (@dot_artstudio), which I have run for ten years on The Key. Also, I cofounded Rubber Stamp art projects (@rubberstampartprojects), which is an Artist-run project space in Miami, where we promote the work of artists from the US and Latin America. I always loved to draw. I discovered painting as a young adult and started my formal learning when I moved to North Carolina. I continued in NYC and then in Miami. Then I did my masters at the University of Barcelona. I learned every aspect of art, distancing myself from studio art and learning about the other areas of it like curating, critique, gallery management. Since then, I have been working nonstop. I had my first show in 2001. I love it all, creating, curating, teaching, immersing in art history.

Was there a particular person or event in your life that inspired your passion for art?
My first creative moments were with my grandmother in a gift store we owned in Mexico. She showed me how to wrap gifts, make bows, and believe it or not, that sparked aesthetics in me. Just a little thing when I was a child put that little seed inside me. She has been my inspiration through my creative life. What do you love most about your art? How does it impact your life, home, and community?
Art is my life; anything related to it is my passion. It cannot be separated from me. I breathe art. I love to create, to learn, to teach. That is who I am. It lives in me; I feel very fortunate to work in something that I enjoy so much. I don’t feel I work, because I enjoy it so much. Paint and fibers are my mediums of expression; with them, I grasp a piece of my life as a child, creating a sense of longing and rebellion against my perception

of injustice built upon our selves and others. Longing, joy, imperfection, anxiety, love, and fear are some of the forces driving my work.” In the community, here on the island, I run an art program for kids. I started it in 2010. It is called Dot Art Studio. For the last seven years, I have been teaching the program at the Key Biscayne community center. During these times, I am doing an at-home program via zoom. I love teaching kids. Sharing my knowledge and giving them a space for creativity and self-expression is more a gift for me than them. @dot_artstudio on Instagram for more info. I recently finished an initiative titled #hopemask, in which I created a face covering with the message of hope. This was very rewarding. It was my way of giving back during COVID times. Are members of your family involved as well?
We each have our own passions at home, and I like to respect that. But there are some moments where I get them engaged in art, like when I teach the Young Artist Camp. They get to work at the Young Artist Camp with me every summer, or when I have a show in Miami, or I am doing an art fair, they come and help. Art is part of their lives; they live it daily.
The Young Artist Camp is a summer camp I run at the KBCC for the last 10 years. It is a wonderful program for kids. You can find more info at @ dot_artstudio. What advice would you share with someone interested in pursuing art or their own passion?
We are all creative; I think you just have to follow your passion and work hard every day. Things don’t fall from the sky. Be intuitive on what you are good at and exploit that path. That is also being creative, identifying your strengths, and following them. You need to love it and become good at it and work every day for it. Contact me. I love new faces and good vibes.
Art is a way of expressing emotions freely. At this time, it is essential. Creativity is an essential tool to have in this time in which the world is changing, and we need to reinvent ourselves. These are the skills that creativity and art give us in a moment like this—the power to adapt and change fast. &WELLNESS IN CHALLENGING TIMES
I
t’s no secret that the world is changing right before our very eyes. COVID-19 has changed our story in unprecedented ways, and as a humanity, even when life gets back to “normal,” we will never be the same. Instead, our new normal will include social distancing, face masks, and the building of new and existing relationships via Zoom. For example, practicing yoga with my daughter, Lexi, in our living room with the aid of an app has become as routine as it was going to the rec to do yoga. Despite what is happening on a global scale, or in our own backyard, the most significant source of stability still resides within yourself. Yes, we are all citizens of an ever-changing planet, but that doesn’t mean we have to be dictated by its circumstances and much less remain reactive to its volatility. Instead, there’s always a wealth of peace and a plethora of wisdom we often forget to access because we are programmed to live in a constant state of reactivity. In such a state, we remain at the mercy of a world that changes like the weather itself. It is no wonder that the rates of depression, suicide, and addiction are always on the rise. What about the state of being within ourselves that’s impervious to whatever is being aired on the

evening news? Think that’s a long shot only accessible to bearded gurus sitting on a mountaintop or devout yogis? Think again! Mindfulness and wellness belong to each and every one of us to the degree that we see fit in our lives. That’s right! Mindfulness is accessible to everyone. As they say, do what works for you and leave the rest behind. Books and apps about mindfulness, meditation, and wellness abound, and there are no limits to the different styles to follow. Ultimately, mindfulness boils down to listening to the higher wisdom we have possessed since the day we were born. Accessing the power outside of ourselves, however, is what we’ve been trained to do. I am encouraging you to tap the wisdom within instead from here on out. How do you do that? By sitting still for 15 to 30 minutes a day, preferably in the morning right before you rise. Don’t have the time, you say? Make it! Before you grab your phone (outer technology), it is in your best interest to tap into your inner technology first. What happens during the quiet and meditative state is nothing short of magical. You’re thinking, “no coffee yet? No phone?” While that may sound like torture to some, and perhaps boredom to others, quieting the mind before it launches into “to-do list mode” gives you access to the peace and wisdom you’ve been looking for your entire life. How so? Because you are smarter and wiser than you give yourself credit for. Not going to lie, though, like anything else worth pursuing, it takes practice, practice, practice. Before you know it, however, unexpectedly, you become less edgy and less irritable. The answers you seek come easier
to you. Your stress and demeanor change for the better, and ultimately, you become a better version of yourself, and everyone around you reaps the benefits, too. It’s a win-win. There’s a secret ingredient, however, to get the magic flowing and uncovering the wings to this better version of yourself. You can’t buy it on Amazon. It’s not a special coffee flavor at Starbucks. And you won’t find it all over social media. The secret to accessing this state of incredible peace is the removal of self-judgment each and every time you get quiet to meditate. This act of sweet surrender requires you to stop judging yourself, especially when you quiet the mind. Once you do that, the transformation can begin. You start feeling a flood of amazing attributes like love, gratitude, and appreciation like never before. And since our perspective navigates our circumstance (not the other way around), our experiences begin to change as well, all for the better. Before you know it, the person or situation that used to make you furious no longer bothers you, for example. So who wins from this newly discovered you? Not only you but also your spouse, partner, kids, coworkers, neighbors, and even your pet iguana. When that happens, on a vibrational scale, the planet also benefits, and we are all better for it. I liken mindfulness and meditation to that of exercising, which all play a significant part in our overall wellness. During the moment of exercise, you are building muscle and burning calories, for example. What happens after that is markedly transformational. Your metabolism goes up. You make better food choices.
Stress goes down. You sleep better, and so forth. The same occurs when you employ a mindfulness and meditation practice. The bonuses occur daily after you meditate. Your perspective is more balanced, wiser, and more aligned with who you truly are, an amazing human being that has unique gifts and talents to offer and benefit the world. While the medical world works hard to find a cure for COVID-19, the most significant immunity you can give yourself is that of the wellness, happiness, and joy accessible by tapping into that more excellent version of the person you see in the mirror every day. You remain more unshakable to life‘s trials and tribulations and ride the current of life in a much smoother fashion. When people ask you what meds you are taking to feel so good, tell them you are taking a healthy dosage of vitamin “me” every morning.

The last week before leaving was long, and the days seemed to drag out forever. You get to that point where you have already left mentally, and your mind is thinking about the vacation. So it’s hard to focus on work, as you can only think about being on the trip. It adds to the fact that the days drag, but you need to be patient. And eventually, the day arrives! This would be one of those trips that had been discussed and thought about far in advance. And I couldn’t believe the day was finally here. We knew it would be a trip of a lifetime. Strange to return to where your life started (as I was born in Nairobi), and yet in 38 years I had never returned. We were excited and nervous. Neither of us had ever traveled so far at one time, individually or together. We were going somewhere unfamiliar to both of us. We knew this might be our only chance to go while my parents were still there. The one chance to do and see the things my parents had spoken about for so long. It would also be an opportunity to see the estate my father managed. The largest coffee estate in Africa. We were as prepared as we would ever be, with appropriate shoes, clothes, and enough memory on cameras for 3,000 photos. My thoughts kept going back to having been born there, and after all these years I knew I had missed out. By birthright, I was a “Kenya Cowboy.” But other than having a good eye to shoot, I had no other skills to qualify and I couldn’t fly a plane like so many of them do. This was a huge trip for us, to a place so far away. Overnight flights are not fun. Neither of us really slept on that leg of the journey. I always enjoy watching the screen in the headrest in front of us and seeing the airspeed, ground speed, miles from the point of origin, and watching where we are in terms of the journey. I watched as we went up the eastern seaboard, past Halifax, Nova Scotia, over the Azores, down under Cork, and then Southampton.
Strange to be back in England again and hear those familiar cockney accents telling everyone to please form a “queue.” Once in the terminal we bought the UK papers for my Dad (as requested) and enjoyed some bangers and mash (sausages and potatoes) and “John Smith’s Bitter ale,” which was incredibly smooth, tasty, and well worth the long wait. We were misled into thinking our gate was close by. It would only take a few minutes to walk over. In reality, as we learned, there are some gates for which you have to walk another few miles. Our gate was three miles away, (or at least it felt that way) at the end of an alternate walkway that branches off the main terminal. So a couple of pints later, and having weighed myself down further with a plate of bangers and mash, we had to run as fast as we could to catch the plane. I hadn’t run that fast since Caterham boarding school. A British Airways representative yelled at us to run, as the doors closed. “Are you going to Nairobi?” he screamed. Between breaths, I sheepishly admitted “Yes!” and kept running, wife in tow! His response was just “Then Move it! “ I slept a little on the flight to Kenya. We flew over France, Italy, North Africa, over the Sahara, down to Ethiopia, and finally into Kenya. In no time at all, we had our bags and found my parents waiting. Wonderful to see them, as they stepped out from behind the barriers to greet us. We met Michael, their driver, who didn’t say much but was very pleasant. The airport was small. About the size of the one in Newport, Rhode Island. We were both surprised by how cool it felt, but it was nighttime by then, and Nairobi is 5,000 feet above sea level. My parents pointed out some points of interest as Michael drove away from the airport and into downtown Nairobi. The city was quiet, as it was late at night by then. We saw Parliament, some of the downtown hotels, and even a casino. We drove through the city to the “Muthaiga Club,” https://www.mcc.co.ke, where so many movies including Out of Africa have been set.

We were tired but excited. Grateful for all the amenities my parents had bought for us so we would be comfortable that first night. We had a glass of wine and a sandwich, before heading to bed. My mother had thought of everything from toothpaste to pajamas, from mosquito repellant to sweaters! We were so pleased to have finally arrived, as it had been a long day. It took a little while getting used to the mosquito nets. And as I moved in bed, I wrapped it around my head a few times, so I looked like a mummy wrapped in a shroud. But I am glad to say I didn’t strangle myself, and we did not see one mosquito! We did wake early, to the sound of the call to Muslim prayers about 5:15 am. We were soon up, and walking around the club, while the parents slept in. A little later we all had breakfast on the terrace. A hearty cooked English breakfast was one of many similarities we noticed with the UK. Other similarities included all the road signs looking British and many of the children in smart school uniforms, which brought back memories of my days at Sanderstead Junior School. James Sheffield, one of Dad’s managers met us for breakfast, and I was grateful that he ate my black pudding as it looked and tasted terrible. Even Jenn couldn’t eat it, and she is usually quite adventurous. I could just imagine Sandra Bullock, or Prince William eating at the next table. (We heard that they had both stayed there.) The Club was smaller than I expected in terms of the interior but larger in terms of the grounds. As we were leaving that morning we also met Phillip, another of Dad’s managers, the gentleman responsible for overseeing the running of the mill operation. Then it was off to see my parents’ first house in Kenya. Amazingly, I was still standing, after 40 years. It felt very strange for me to think of them having once lived there. And how strange it must be for them to return and see the place in a state of disrepair. I could recall nothing of the place. We had forgotten all 30 camera batteries, we had so carefully planned to pack. So our next stop was to buy some. Then it was off to the Masai market which would prove quite an experience.
