Apple-beignets with Bitter Orange Sauce

and Vanilla Ice Cream



Ingredients: 2 apples For the beignets dough: 2 eggs 3 ½ tablespoons sugar 2 teaspoons vanilla-flavored baking powder ½ cup milk 1/3 cup flour 1/3 cup cornstarch For the sauce ¼ cup sugar 3 orange peels cut into long strips juice from 3 oranges ½ lb. bitter orange jam 4 scoops ice cream drops of orange liqueur powdered sugar



Preparation Instructions: 1. Caramelize sugar in a small pot. Add the orange juice and orange peels. Stir well and add the jam and liqueur. 2. To make the dough, break eggs into a salad bowl. Add sugar and vanilla-flavored baking powder. Add milk, flour, and cornstarch. Beat well until smooth. 3. Peel apples. Core and cut apples into ½ inch slices, then flour. 4. Place apple slices in the beignets dough and fry in vegetarian oil. Drain the beignets on paper towels and sprinkle with granulated sugar. 5. Place the beignets on serving dishes. Pour the orange sauce over them and accompany with a scoop of vanilla ice cream.
