Travel for me is about one very simple thing: a resolve to live life to the fullest. People, places, experiences and ultimately memories – this is the stuff of existence that you will take with you always. It should be obvious. Carpe Diem. But it’s worth repeating because it’s actually a really big deal. Nothing beats experience, opportunity… a thirst for knowledge. And in these pages over the years that’s exactly what we’ve brought you. That’s what Ryanair brings you. Who wants to be sitting at a desk in a gloomy office when the sun is shining and experience is just a flight away? Not me, and if you’re reading this, not you either. To that end, in this issue you can learn how to go free diving in Tenerife, you can discover the Danish beer that makes you more intelligent, and visit the London bar(s) that used to be public toilets. You can escape from a room full of puzzles in Basel, play football with priests in the Vatican, try your hand at stand-up comedy in Tallinn, or go X-biking down red runs in the French Alps. “Th is isn’t just a job, it’s an adventure,” says Margi Vandoren (pictured), the man who loved Le Comptoir Général so much he started working here. “I’d bring dates along and I think the staff used to wonder ’who is that guy who is always here with all those ladies?’” LCG blurs the lines between customer and staff, and bar and shop. It’s a museum where you can take home the exhibits. But don’t expect shelves of neatly lined-up products with price tags. Everything in the Comptoir’s vast 600m2 space on the Canal Saint-Martin is for sale – the plates in the restaurant, the lamps on the ceiling, the sofas in the bar, even the bar itself. This celebration of African communities calls itself a ‘ghetto concept store’. Treasures

Once an item is sold it is usually replaced with something completely different: the only criteria is that everything must have a story. LCG is run like a department store, with concessions operated by an eclectic bunch of traders. Most of the staff have links with Africa, cross-continental characters who effortlessly mix what they term ‘ghetto cool’ from homelands like Morocco or Togo with Parisian flair to create the kind of edgy street style spotted in New York or London but rarely seen in France’s highly polished capital. Hang on, you’re only 27... Well, I left school at 16 so it’s been a while. On the back of my web series I’ve now opened my own shop and I am building a whole Nomad Barber brand.

Liverpool-born half-Chilean Miguel Gutierrez is the Nomad Barber, cutting hair at exotic locations and posting videos on YouTube amassing over a million views. As he launches his first permanent barbershop (in east London), Ramsay Short jumps in the chair.

Vidal Sassoon for barbering in the 21st century... What’s the key to a good haircut then? A good haircut is all about how you approach it and being realistic about your desired look. From a client’s point of view you should know what you like and what you don’t like from a haircut and the barber can guide you. From a barber’s point of view a good haircut is all about the attention to detail and creating a look the client can maintain at home.

o Makes sense. Key items you take with you when you travel? I always carry my SLR camera, my haircutting equipment, earplugs, eye mask and MacBook. That way I can work and travel but also get much-needed sleep wherever I can.

So Miguel, what’s the Nomad Barber all about? The Nomad Barber is a web video series documenting barbering around the world through my travels. So I‘ll travel to a place, meet barbers, get a shave and trade haircuts in spectacular places, from the hill of the Acropolis in Athens to the Giant’s Causeway in Ireland.

Nice idea. How did you come up with it? I’ve always been a prolific traveller and I wanted a way at my age and point in my career to keep doing that. This enabled me to incorporate the things I love into a unique project combining film, travel and barbering. We’ve got episodes from 20 countries so far, 50,000 subscribers to the YouTube channel and I am now uploading video blogs and tutorials for barbers.

What’s the next stop? Rotterdam’s next, to film a famous barbershop for the show. Then Berlin. I’d love to open a shop there so I’m going to scope it out. There are so many places in Europe I’d love to travel to, even just to photograph barbershops. That’s true. Any final thoughts? I’d love to make the move to a TV show, build a chain of barbershops and get the product line out there – ideally with travel-size bottles for everyone to take on flights. Slowly, my mind re-emerges from a liquidy, meditative daydream. However, with reality comes the realisation that I am sitting on the bottom of a Tenerife swimming pool. As my awareness kicks in, so does a screaming need for oxygen. I force myself to relax by concentrating on my position and releasing any muscle tension. Eventually the need for air overpowers my newly learned techniques and I give in and swim to the surface.

“Th is isn’t just a job, it’s an adventure,” says Margi Vandoren (pictured), the man who loved Le Comptoir Général so much he started working here. “I’d bring dates along and I think the staff used to wonder ’who is that guy who is always here with all those ladies?’” LCG blurs the lines between customer and staff, and bar and shop. It’s a museum where you can take home the exhibits. But don’t expect shelves of neatly lined-up products with price tags. Everything in the Comptoir’s vast 600m2 space on the Canal Saint-Martin is for sale – the plates in the restaurant, the lamps on the ceiling, the sofas in the bar, even the bar itself. This celebration of African communities calls itself a ‘ghetto concept store’. Treasures

for sale are sourced from countries such as Congo or Senegal: painted street signs, postcards or vinyl records. Once an item is sold it is usually replaced with something completely different: the only criteria is that everything must have a story. LCG is run like a department store, with concessions operated by an eclectic bunch of traders. Most of the staff have links with Africa, cross-continental characters who effortlessly mix what they term ‘ghetto cool’ from homelands like Morocco or Togo with Parisian flair to create the kind of edgy street style spotted in New York or London but rarely seen in France’s highly polished capital. The two went on to be best friends, sharing a love of rap and black culture and eventually founding Le Comptoir Général to give something back. “We wanted to use all this ghetto energy, in art, music, but not exploit it. We do it in partnership with the people creating it so we support them.” Étienne says diversity is something his country still hasn’t quite worked out. “Often France tries to make everything the same but we want to celebrate the differences.”

An artist and a musician, she is also in charge of the ghetto concept store’s merchandise. “People say, ‘if you sell all the decorations and furniture, there will be nothing left’. But the idea is to sell objects with a story so when people buy them, it’s like a cultural exchange.”

HOLY FOOTBALL There’s no World Cup or European Championship this year, but what about watching the world’s weirdest football tournament in Europe’s smallest country? The Clericus Cup kicks off this month in that state within a state, Vatican City. It’s an annual competition for soccer-mad trainee priests from around the world. That may sound like something from Monty Python but it’s for real, dreamed up by Cardinal Tarcisio Bertone, a Juventus fan who once

moonlighted as a footie commentator on Italian radio. Played out on a pitch in the shadow of St Peter’s, the matches have a strict code of fair play – you won’t see any diving or swearing at the ref here. There’s even the innovation of a ‘blue card,’ which sends you to a sin bin for five minutes to contemplate what you’ve done, and perhaps pray for forgiveness. “The whole idea,” says Tony Preston, a former captain of the

British team, “is sport bringing the finer qualities out, like humility in victory and graciousness in defeat”. He smiles ruefully: “We’ve got a bit of experience of that.” Matches run from March till May and are open to the public. Big-name Brit standups are playing to packed houses in Estonia

folk – not the ideal characteristics for a comedy audience. “A survey shows that one third of Estonians don’t want to live next door to a foreigner,” Louis tells the crowd, “but then I remembered that 99% of Estonians don’t want to live next door to anybody”. The ‘shy’ audience erupts into loud laughter. “Estonia is a country where public displays of emotion would be frowned upon, if frowning were legal,” Stewart jokingly tells me, “but at the comedy show, all that reserve is left at the door.” I wonder, though, how the locals felt when two foreigners first rocked up and started making jokes about them? “I think as an 'outsider' you get a chance to comment on things from angles a native person couldn’t,” says Louis after the gig. “A lot of my

That’s 'comedy' in Estonian, where the stand-up scene is the in thing in 2015. Comedian Danny Robins went to Tallinn to try his luck. Have you heard the one about the Australian, the American, the Brit and a roomful of Estonian people? Well, it’s happening right now... I’m on stage at a stand-up comedy night in Tallinn, the Baltic state’s capital, performing to an audience of Estonians who, to my relief, seem to think I’m quite funny. The Australian and the American are the reason I’m here; they’re the show’s hosts, Louis Zezeran and Stewart Johnson, founders of Comedy Estonia. Looking around the sell-out crowd lapping up their jokes, it’s strange to think that stand-up didn’t even exist in Estonia before Louis arrived in the country in 2010. “Estonians have a rich history of comic sketches and monologues,” he says, “which was particularly interesting in Soviet days when writers and performers had to be much more subtle, but no, there wasn’t any stand-up scene at all.” Louis met Stewart, an American who’d lived in Estonia since the 90s, and, though neither of them had ever done stand-up before, they decided to book a room and put on a gig. The first thing they had to deal with was the Estonians’ reputation as a shy and reserved

to book stand-ups, like me, from the UK and elsewhere – “Thankfully, comedians love to travel” – and, in the last couple of years, they’ve promoted large-scale gigs in Tallinn with comedy gods such as Eddie Izzard, Bill Bailey, Jimmy Carr and Dylan Moran. Moran has apparently developed a passion for Estonia, coming back four times. The thing they’re most proud of though is the ever-growing Estonian-language comedy scene. “At the start, almost everyone said stand-up in Estonian wasn’t possible,” says Stewart, who’s fluent himself and performs in both languages. “We proved them wrong. There are now several very talented rising stars performing in Estonian.” One of these is Sander Õigus, a 25-year-old hotel chef. “Stand-up is something really personal and honest,” he says. “Doing it in your native language is way more natural.” The bulk of their gigs, however, remain in English, with established overseas comedians rubbing shoulders with home-grown acts in atmospheric venues; the audience a mix of locals and tourists, perhaps looking to learn a bit about Estonia, but mainly just there to laugh themselves silly. comedyestonia.com

MILAN EXPO They claim it’ll be 2015’s largest show on earth. From 1 May to the end of October, Milan’s Universal Exposition is expected to attract 20m visitors from around the world. What’s it about? The future of food. Every three years, the world’s fair introduces us to technology that may just change our lives. London’s Great Exhibition back in 1851 gave us the combine harvester and a prototype fax machine. New York’s World’s Fair of 1939 gave us broadcast television. Based around the theme of ‘Feeding the Planet, Energy for Life’, this summer’s show previews foodie solutions for a rapidly expanding planet, and there’s a lot to see. Some 140 nations share 57 pavilions. And each of these mini-museums – designed by the likes of Daniel Libeskind and Norman Foster – tells a fascinating culinary story. expo2015.org

This summer one-in-six tourists in Croatia will be naked. It’s the country where European naturism started, after all. Our very own practising naturist and regular Istria visitor Tristan Rutherford gives us the lowdown on how to blend in naked. If there’s one thing Europeans do better than anyone else, it’s the nude beach. And Croatians arguably do it best. Vacationing Germans bathed butt naked on the island of Rab in Istria a century ago and their nudey holiday snaps made the newspapers back home. Local vicars warned their congregations to “simply ignore” the images of sun, sand and bare buns. But it didn’t work. Royal wife Wallis Simpson skinny-dipped here in 1936, popularising the all-over tan beloved of Croatians today. What’s the appeal? For me, it’s the chance to swim in the sea in my birthday suit. Try it once and you’ll never look back. And don’t be afraid. No one’s looking at you, honest!

Eventually the need for air overpowers my newly learned techniques and I give in and swim to the surface.

O is for... ONE DEEP BREATH “Three minutes and 20 seconds,” says my instructor Miguel Lozano, stopwatch in hand. I am stunned. This was my first freediving experience and I have comprehensively beaten my previous record of 27 seconds, achieved as a child in the bath. “This first session is where many people get hooked,” says Miguel, the owner of Apnea Canaries Freediving Centre, located just to the south of Tenerife’s capital Santa Cruz. His centre teaches people freediving, the increasingly popular pursuit of diving without the use of any apparatus or scuba equipment. “The students come up and think they have been under for a minute or so,” he continues, “but for most beginners it is usually somewhere between two and four minutes.”

COMPETITIVE APNEA Th e most extreme form of freediving is called ‘competitive apnea’. Here competitors attempt to attain great depths, times or distances on a single breath. ‘Static apnea’ is done in pools and the current world record stands at 11 minutes 35 seconds. ‘Dynamic apnea’ is done in the sea and different categories exist based on whether competitors use fi ns, weights or the rope. In ‘free

immersion’, where the diver is allowed to use the rope, the world record stands at a depth of 121m. Last year Miguel Lozano dived to 122m, but lost consciousness fi ve metres from the surface upon return and was denied the record. In ‘dynamic apnea no limits’ competitors use a weighted sled to descend and infl atable bags to come back up. Th e world record stands at a depth of 214m.

THE STUDENTS THINK THEY’VE BEEN UNDER FOR A MINUTE. IT IS USUALLY BETWEEN TWO AND FOUR

Miguel, one of only three elite freedivers in the world to have dived to a depth of 117m, runs a variety of courses from ‘Discover Freediving’ days to instructor training weeks. I am doing a Level 1 course, which takes two-and-ahalf days and will see me freedive in the Atlantic Ocean, which lies a stone’s throw from the pool. Prior to the pool session there had been a theory morning covering freediving equipment, physiology and safety techniques, but most importantly, breathing. We learn the aim is to reduce your heart rate by using your diaphragm to breathe evenly. Before entering the water you take your final breath to fill your lungs and then submerge. “We don’t think about the past, we don’t think about the future,” explains Miguel. “We are 100 per cent in the moment thinking of the technical aspects of breathing and underwater movement. That’s what allows the mind to travel. It is a form of underwater meditation.” My fellow course mates are primarily scuba divers and spearfishermen who have

travelled to Tenerife from all over mainland Europe. Some want to experience an underwater environment without the cumbersome use of equipment, others want to add to their levels of safety and find ways to minimise their oxygen consumption when diving. I’d heard of big-wave surfers using the training and figured it might help in my much smaller wave surfing. Following on from the static pool session is the dynamic version. Here, along with more breathing training, Miguel trains us in the art of equalisation and using your fins and body positioning to minimise drag underwater. By the end of the session, I am again amazed to find I can swim two laps of a 25m pool underwater. Miguel says I am now ready for my first freedive in the ocean. The next morning we assemble on the paved breakwall next to the centre. “I have travelled the world freediving and what you are

ONE DEEP BREATH looking for is a place with good weather, deep waters close to shore, abundant marine life, easy access, warm water, good visibility and no currents,” says Miguel. “Tenerife, right here, has it all. In my opinion it is the best spot in the world for freediving.” In the bay four buoys, roughly 30m apart, arc out through the clean, blue, reef-mottled waters. We are told the closest one, which lies about half a football pitch from shore, has a taut rope with a weight attached that drops three metres into the sea. The furthest buoy out plunges to a depth of 145m. Thankfully, we will tackle the closest one, although for the Level 1 course most beginners can expect to dive down somewhere between 10m and 20m.

Once out next to the buoy Miguel reminds me of all the pool training, both static and dynamic, before I submerge and use the rope to descend. With each dive you are accompanied by an instructor and on my last dive I reach a depth of 15m. I emerge elated into the bright Tenerife sun and breathe in one of the most delicious gulps of air I have ever tasted. Miguel informs me that I have been underwater for almost four minutes. “It’s a powerful package,” he says. “There is the physical element, but there is the mental side, too. People fight their fears and manage their stress. When they can take the breathing exercises and that mindset back to their real lives, they find it easier to deal with stressful situations.” Only two days later his prophecy comes to pass. Surfi ng the famous La Izquierda (Spanish Left) reef-break wave on the south coast of Tenerife, I wipeout on a large wave and am forced violently underwater. Instead of my usual panic mode though, I simply release the tension in my muscles, relax and wait for the

turbulence to fi nish. I eventually surface with a serenity and calmness I have never had before. If I can take this feeling back to the office, I think, maybe I have a chance at that promotion. PISTES It isn’t well known and it’s far from flash but the Haute Maurienne Vanoise valley in the southern French Alps is an incredible place to ski and do so much more too – says Ramsay Short. We’re not talking Val d’Isere or Chamonix, but unless you’re a superstar skier with bags of spending money, who cares? This valley, made up of three resorts – Val Cenis Vanoise, Bonneval-sur Arc and Bessans – and seven villages on the Italian-French border is picture-postcard pretty and packed with good pistes. But let’s talk about what really makes this place buzz – and that’s the other stuff you can do here. Starting with X-Biking… Four o’clock, the pistes are closing and I’m on the last lift up with Kervin Lemarec, an extreme sports nut and his bicycle/scooter hybrids possessed of huge thick wheels. “Don’t worry. It’s easy,” says Kervin. “Just balance and go.” I may be game for a laugh and helmeted up but that’s all the instruction I get and this is a red run. He jumps on and is off, and with a cry of ‘Geronimo’, I head down behind. And immediately wipeout. There’s no one around and the momentum is pulling the bike down the slope dragging me with it. “Watch out for ice,” Kervin

calls up from somewhere below. Grrr. I manage to get a grip, right the bike and get on again. This time it’s a bit easier, if I use the front brake only and not the back, I can get more control and in fact the faster I go, the easier it is to stay up – but talk about diving in at the deep end. Some falls, scrapes and 40 minutes’ later we’re back where we started just as the sun sets. Next day things get more extreme: ice diving. At a frozen lake in Bessans there’s a wooden hut, a ‘cosmic’ sauna and a man called Fabrice. He orders me to strip down to my thermals, and puts me into a dry suit covering every inch of my body. We plod out to the lake where he’s cut some holes in the ice, put on flippers and tanks, drop in and are off in the freezing water,

nothing but black below, nothing but light streaming through the ice above. It’s engulfing and claustrophobic yet magical, ghostly and unlike any other experience. We stay under for 20 minutes, playing with air bubbles, floating. It’s incredible but the sauna afterwards is almost as good. Another day I try Nordic skiing, which is cross-country walking with skis, and off-road Segway riding (more dangerous than you think) – and plenty more skiing with the slopes at Bonneval sur Arc particularly special. NOMAD BARBER Liverpool-born half-Chilean Miguel Gutierrez is the Nomad Barber, cutting hair at exotic locations and posting videos on YouTube amassing over a million views. As he launches his first permanent barbershop (in east London), Ramsay Short jumps in the chair. So Miguel, what’s the Nomad Barber all about? The Nomad Barber is a web video series documenting barbering around the world through my travels. So I‘ll travel to a place, meet barbers, get a shave and trade haircuts in spectacular places, from the hill of the Acropolis in Athens to the Giant’s Causeway in Ireland. Nice idea. How did you come up with it? I’ve always been a prolific traveller and I wanted a way at my age and point in my career to keep doing that. This enabled me to incorporate the things I love into a unique project combining film, travel and barbering. We’ve got episodes from 20 countries so far, 50,000 subscribers to the YouTube channel and I am now uploading video blogs and tutorials for barbers.

Vidal Sassoon for barbering in the 21st century... What’s the key to a good haircut then? A good haircut is all about how you approach it and being realistic about your desired look. From a client’s point of view you should know what you like and what you don’t like from a haircut and the barber can guide you. From a barber’s point of view a good haircut is all about the attention to detail and creating a look the client can maintain at home. Makes sense. Key items you take with you when you travel? I always carry my SLR camera, my haircutting equipment, earplugs, eye mask and MacBook. That way I can work and travel but also get much-needed sleep wherever I can. What’s the next stop? Rotterdam’s next, to film a famous barbershop for the show. Then Berlin. I’d love to open a shop there so I’m going to scope it out. There are so many places in Europe I’d love to travel to, even just to photograph barbershops. That’s true. Any final thoughts? I’d love to make the move to a TV show, build a chain of barbershops and get the product line out there – ideally with travel-size bottles for everyone to take on flights. A helmet lies on a paving stone in the heart of the square. Beside it a dirty brown motorbike with an eager crowd gathered round. The bike seems to rise in slow motion off the ground. The handlebars lift up, there’s a rider gripping on with one hand, his whole body thrown high off the seat. And then, as if someone has pressed the pause button, he stays there – frozen in mid-air. This isn’t the scene of a terrible accident in central Madrid – this is The Motorider, arguably the capital’s most talented street performer. Someone in the crowd steps forward to throw a coin into the helmet and the rider shifts his body horizontally to move closer to his audience. He turns his neck in robot-like jerks and with his free hand, he gives a thumbs-up. Puerta del Sol is Madrid’s Trafalgar Square. The place is packed with shoppers heading in and out of the country’s biggest department stores, and tourists on their way to the Royal Palace. But there’s another reason people come here: this is the

meeting place for Spain’s living statues. Every day, they engage in a creative competition with one goal in mind: collecting your loose change. Forget the half-hearted clown acts, the dodgy songwriters or the grown men in Winnie the Pooh outfi ts that every tourist trap in the world attracts. Madrid’s

human statues require real skill – the punters won’t have it otherwise. They can hold seemingly impossible poses for up to 12 hours at a time. Every morning, they unpack their handmade sets of cardboard, cloth and foam. From the levitating gurus dressed in gold to the steel snowboarders and the colourful toy soldiers. At the heart of all of them, there’s one man, the elder statesman of the living statues: Fran Pinilla, AKA The Motorider. Colombian-born former construction engineer Fran is famed across Madrid for creating three of the city’s most popular living statues. He’s a man obsessed with originality, who sees his statue-ing as a respectable full-time job. “We’re not beggars or delinquents,” says Fran. “We work hard to make a decent living.” After losing his job as an engineer, Fran tried to start his own business – not once, but twice. And it failed – not once, but

twice. He spent a lot of time walking the city’s streets contemplating his future. When he saw the success of the street performers, he wondered whether he could make a living that way. He spent hours watching the audience drop coins into hats, working out how many hours he’d need to stand in the cold before he’d make a day’s wage. Fran convinced his family to give him a loan to invest in his

S is for... STATUES own living statue: a Charlie Chaplin figure stumbling backwards. After a day in the street, he emptied his hat to discover he’d earned just €8. It was time for Plan B: a man-size golden toy soldier who’d react every time someone threw a coin in the hat. Th is was a mechanical figure, with a bent composition marching forward, creating an impossible angle with the ground. The toy soldier was an immediate hit. “I studied a lot before I chose the soldier,” says Fran. “I recalled Michael Jackson’s video for Smooth Criminal, where the dancers created a spectacular effect bending forward. I discovered how they had created the effect. And I copied it and manufactured the mechanism.” Only a few days after the initial test he expanded his act with another soldier, and the pair became a sensation in the street. Soon, imitations started to pop up around Puerta del Sol: a basketball player smashing a ball into the hoop, a wizard floating on a magic carpet, an invisible man. In total there are around 30 different performers competing for your coins. But what makes Fran’s act so special? Can anyone become a living statue? “It takes dedication and discipline and hard work,” says Fran. “And you have to be prepared to be still for hours.” Early every morning Pinilla paints and restores many of the details of his kit: the uniform and the camoufl age need a lot of maintenance. And he’s always working on the set, trying to make it more and more impressive. He’s already hidden a platform upon which he lies. Next, he wants to add smoke,

lights and sounds to make this a real show (and earn more cash). Fran’s dedication to The Motorider is constant, and he also helps other colleagues with their creations. He supported The Snowboarder, a living statue representing a man gliding up a fake iron hill, with the design

START WITH THE ACT The most original, unique character you can come up with will work best. 2.PRACTISE MOVING IN SLOW-MO Controlled, slow movements are less noticeable to onlookers. Relax and manage your breathing, keeping it slow and steady. 3. COVER YOUR HEAD A helmet, hat, scarf or wig will do. Natural hair can spoil the look. 4. MAKE-UP IS CRUCIAL But keep it minimal and make sure your eyes stand out to have the most impact. 5. REMEMBER A THANK-YOU GESTURE Or have something small ready to give away when people drop notes or coins into your hat. and manufacture of the statue. don’t want to go out with someone who works in the street, so I show them a photo and introduce myself as an artist.” Does it work? He gives a mischievous smile. “An artist never gives away his secrets.” By the time dusk falls Fran’s helmet is full of notes and coins. UNDER A TENNER Marrakesh is one of North Africa’s most colourful, chaotic, enchanting cities. Here are five ways to survive the city and see the sights for less than €10.

TOILETS In the old days, you could be arrested for spending this much time in a public loo. But now, making new friends in one of London’s underground Victorian toilets is all the rage. First, there was The Attendant, in Fitzrovia, a public convenience from the 1890s that had fallen into disrepair. Following a £100,000 refurb, it reopened in 2013 as London’s weirdest espresso bar, the original porcelain urinals having been repurposed as the seating area. You can also spend a penny at WC in Clapham, a former tube station loo (the ‘WC’ now stands for

‘Wine and Charcuterie’), or the Bermondsey Arts Club, a cocktail bar in another former toilet. But the newest – and most exciting – cubicle to launch is Ladies and Gentlemen, in Kentish Town. The bar nearly didn’t happen – residents battled for 18 months to get the facility reopened as a toilet. It’s run by Will Borrell, brother of Razorlight singer Johnny (Will runs a vodka company, so he knows his booze), who’s done a fabulous job. PORTO AVOID The Ribeira riverfront. “The Ribeira area is known by locals as ‘double price’, because everything around here costs more,” says Bruno, “although the bars and restaurants are worth trying at least once.” TRY THIS INSTEAD Pretty much anywhere else in town is guaranteed to be cheaper! AVOID The six bridges boat tour. It only costs €10 per person, and its reviews on TripAdvisor are mostly good, but Marta David, Bruno’s colleague, has a better way of seeing the river. TRY THIS INSTEAD “Take the train to Régua to spend the day exploring the Douro and drinking port,” she says. “Or, in Porto itself, walk along the river from Gaia to Afurada, where you’ll find the tastiest fish.”

LISBON AVOID Mercado da Ribeira (the ‘Time Out Market’). “They did an excellent job of ripping out the soul from one of the oldest markets in the city,” says Bruno. “It’s one of the most trendy tourist traps in Lisbon.” TRY THIS INSTEAD The streets behind the market. “Lose yourself here,” adds Bruno, “in Rua de São Paulo or Calçada do Poço dos Negros, where old restaurants and independent shops are the true heroes of this area’s reinvention.” AVOID Expensive rooftop bars. “Many have opened in Lisbon and a lot have become a must-go place for a drink after work,” says Marta. “They’re overpriced and overcrowded.” TRY THIS INSTEAD Just buy a €2 bottle of beer, make a new friend and enjoy the view for free at one of the city’s many hills. They know how to throw a party in Spain: even the humble sardine, or ‘xouba’, has the honour of its own celebration every summer… Fish lovers should head to Rianxo in July to experience the ‘Fiesta a Xouba’, where over 1,000kg of the delicious little fish are served in a host of different ways: in pies, fried, grilled, marinated, with clams, with mayonnaise, with padrón peppers and more. They taste even better washed down with the local white wine, drunk from a traditional cunca (drinking vessel). Can’t make it in July? Book a table at Restaurante O Grelo (resgrelo.com) in Lugo instead. Perched above the town in a magnificent stone building

with unparalleled views of the surrounding landscape, diners can feast on a gourmet Galician menu featuring an array of local ingredients, with highlights including the regional cheese sampler, rodaballo fi llet and the – yup, amazingly moreish – fried whole xoubas. FISHERMAN’S EGGS Can’t get to Spain but in the mood for sardines? Here’s a delicious, quick and easy dish, made using canned sardines. Serves 4. Heat the oven to 260°C and preheat an ovenproof serving dish for fi ve minutes. Place a can of sardines, a small sliced shallot, a few sprigs of chopped parsley, and two cloves of

finely chopped garlic in the warm dish. Add some black pepper and put the dish back in the oven for six minutes. Remove the dish from the oven, break four eggs into a bowl, and pour them gently on top of the sardine mixture. Season with salt and pepper and put the dish back in the oven for seven minutes, until the egg whites are cooked but still wobbly. Remove the dish and let it sit for fi ve minutes (the eggs keep on cooking even when out of the oven). Serve with toast and hot sauce. Adapted from The Silver Spoon
