raditional celebrations are the cornerstone of keeping heritage alive. Now in its 9th year, the Parker Oktoberfest has definitely figured out the combination of doing just that. This year’s Oktoberfest has a new weekend date, and is presented by Colorado’s Council of Arts, Science and Culture, (formerly Parker Arts Council) on September 20 and 21 at O’Brien Park. The festival itself is loaded with what everyone would expect. German made beer and Schnapps, German and European cuisine, live authentic German/Bavarian music and dancers, competitions, an opening day parade lead by Parker Mayor Mike Waid who presides over the tapping of a keg, vendors galore and a children’s playground area. All of this in one nicely appropriated environment provides an energy that makes you stop and take in the sight, sounds and smells of a weekend village. The traditional dancers are an entertainment all in their own. Precision polka, flying partners who sometimes resemble a fun looking human carnival ride that will take you agape with awe. There is no shortage, as the live music and dancing happens from opening to close each day. Enjoy a variety of traditional German, Austrian as well as just plain incredible food delights at this year’s festival. There is a lineup or award winning chefs and bakers that are sure to hit every high note in the palette of taste buds. New this year to the festival is Chef Neuhold, an award winning European trained chef and food savant! Originally from Austria, Chef Neuhold finished a three year apprenticeship in 1973 and virtually cooked across the world from there, even preparing fine meals for a wide range of dignitaries including Pope John II, Queen Elizabeth and former President Ronald Reagan. Worth the visit to his set up for Wienerschnitzel, Apfelstrudel or whatever else may strike your fancy. Walk the rows of vendors for some early Christmas shopping bargains, and make certain to note the added European and German owned businesses that will be sprinkled in to a village named street. It is the direction that a new festival plan is taking us into. More tradition, more excitement and an experience that in the coming years will transform Parker into a German village like that found in old Europe. v

avigating the college entrance process for parents with High School aged students has become more and more complex. This has created a greater need for help with College Planning and all of the steps involved. Many families need a personal coach who will provide an action-plan for each step in the college selection and application process. This will not only help guide the families as to what is best for their student but will also help reduce the overall cost of college education. COMMON COSTLY MISTAKES PARENTS MAKE ABOUT THE COLLEGE PROCESS 1. A ssume they won’t be eligible for financial aid because they make too much money. 2. A ssume only minority students, athletes, and academically gifted students get financial aid. 3. P ick colleges and universities without paying attention to where their student compares to the rest of the student body and assume all schools are created equal and will be able to give them the same amount of money. 4. D o not understand the difference between “includable assets” and “non-includable assets” and have the mentality of, “It doesn’t matter where I keep my money; it’s all counted in the same way.” 5. G o through the college admissions and financial aid process by themselves because it’s “cheaper.”
5 COSTLY COLLEGE PLANNING MISTAKES September 2014
by Ryan Vaughn
TIPS TO HELP MAKE THE COLLEGE PROCESS A SUCCESS 1. F ill out the FAFSA (Free Application for Federal Student Aid). This form is required if you want any kind of Financial Aid! 2. S ubmit the FAFSA as close to January 1st of Senior Year as possible. Financial Aid is awarded on a First Come, First Served Basis. 3. H ave your student complete a comprehensive Career and Aptitude Assessment Test(s). These tests help determine the right career path for your student. 4. S eek guidance from a professional to gain a full understanding of the admissions process, financial-aid and how to best navigate the entire complex college-funding system. PLANNING FOR COLLEGE HAS NEVER BEEN MORE IMPORTANT • The total cost of public four-year institutions has risen by nearly 4% every year since 2002. • The average student attends college for six years to receive a four-year degree. • Student loan debt in America is larger than the credit card debt in the country…OVER 1 TRILLION dollars! v Ryan Vaughn is with The Heartland Institute of Financial Education, a national 501(c)3 non-profit organization whose mission is to promote financial literacy across America. This mission begins with the College Planning Program and helping young Americans obtain a college education. To learn more about the Heartland Institute and how it can help with College Planning please visit www.hife-usa.org/CPP or attend one of the free upcoming classes.

BOOKENDS Me Talk Pretty One Day by David Sedaris
David Sedaris shares essays about his life in this humorous book. Using his funny stories, Sedaris takes readers through his life experiences. The author shares about his life in Paris and his attempt to learn to speak French, his family (especially his father), and many other areas in his life. ***Warning*** This book contains adult language and content. PAM: Becky, this book came highly recommended when I asked around about a funny book. I had never read anything by this author and was interested to see what all the “fuss” was about! I enjoyed the way the book was organized into different short stories. Did you like this arrangement? BECKY: I don’t usually like short stories but in this case it was a good format for this collection of memories from the author’s life. It has great reviews and is a favorite among many readers. What did you think about this unique book? PAM: I was looking forward to reading a “laugh out loud” book after hearing various reviews. However, although some parts of the book were funny, it didn’t tickle my funny bone as much as others’. Did you find this book hilarious or simply amusing? BECKY: I have to go with the later description. There were a few funny chapters that gave me a chuckle. For example, in one chapter he discusses his IQ and I did laugh out loud. Some of the topics were odd, for example a whole chapter on poop was just not something that I find humor in. However, the reviews disagree with us and many people find his style amusing. He is an accomplished author with a number of books. Would you give him and his writing style a second chance? PAM: I believe I will try to keep an open mind and give this author a second chance. There are simply too many reviews that contradict my first impression! I agree that there were portions of the book that I could relate to more than others and that those sections proved to be much more amusing. What is your verdict, Becky? Would you read another book by this author? BECKY: Memoirs are not my favorite genre and his sense of humor is different than mine, so it is highly unlikely that I would purchase another book by this author. However, I like his unique view of situations so I would be interested in a traditional novel if that became available. I did a little research on this author and found that David Sedaris has an interesting employment history, everything from house cleaning to stints on National Public Radio. Do you think his humor would have a better connection for us if we could hear his voice and inflections?
September 2014
PAM: What a great question, Becky! I do think that makes a huge difference in making a connection with a story or the author. Where do you plan to take us next? BECKY: We are going to Mexico! The Distance Between Us by Reyna Grande is a memoir of a little girl and her siblings that is left with unloving grandparents while her parents pursued the American dream. Her father left for California when she was two and now two years later her mother is going to join him in America. This is a story of those that are left behind.v

LOCAL AUTHOR SPOTLIGHT Flight Risk by Duane L. Gentner
E
dmund Floyd had always enjoyed local small airplane flying – when he could afford it. Now, the Great War in Europe was about to offer him all the flying he could handle. Using a bit of ingenuity, he works his way into the Lafayette Flying Corps in France, but as a drive – not as a pilot. His approach is “one step at a time.” Through dogged persistence and diligent observation, he manages to get checked out in one of the squadron’s Spad XIIIs. It’s more airplane than he has ever flown, but he’s convinced it is what he is meant to do. Can he meet the demands of flying and fighting against what appears to be a superior enemy force? That question will be answered before 1918 has run its course. “Flight Risk” is available online at Amazon.com and at AuthorHouse.com
September 2014
Duane Gentner also enjoyed flying – when he could afford it. After spending his entire adult working life with a major U.S. airline, he decided to write a novel just to see if he could do it. The result was “Flight Risk,” published in 2010. Duane’s current writing endeavor deals with Alzheimer’s disease. His beloved wife of 56 years lost her six and a half year battle with Alzheimer’s in December 2013. Duane’s approach is to describe how Carole and he dealt with the many unexpected situations they encountered as the disease gradually took over her life. He will relate his observations of the effects of Alzheimer’s on dozens of people with whom they came in contact during their years together at home and then during Carole’s final two and a half years living in an assisted-living facility.

MILITARY FRIENDLY MEDICAL SCHOOL In Our Own Backyard
September 2014
R
ocky Vista University College of Osteopathic Medicine (RVUCOM) located in Parker, Colo., has distinguished itself in numerous ways since it brought in its first class in 2008. One of its distinctions includes its innovative approach and commitment to educating students to serve their country as physicians in the armed forces. RVUCOM has the highest percentage of students on military scholarship of any civilian medical school in the country. Nearly 20% of the graduating Class of 2014 entered military residency programs. The University is a designated Military Friendly School and also has a special military track for students participating in the Armed Force’s Health Professions Scholarship Program (HPSP). What makes the RVUCOM program truly unique is the use of immersion training which exposes students to real life situations. As Anthony LaPorta, MD, course director of RVUCOM’s military medicine track and retired Army Colonel explains, “Our goal is to make the last simulation no worse than the first true experience our military students encounter in real life situations. We want a seamless transition between practice drills and the care of patients”. RVUCOM students have participated in numerous simulated drills. One of the simulated scenarios involved a Blackhawk helicopter landing on the campus transporting critically wounded troops from the battlefield who were rushed into the makeshift ER where RVUCOM

students performed surgery and other lifesaving procedures. RVU was also the first medical school in the country to use Cut Suit technology to train students. The Cut Suit is a human-worn surgical simulator developed in collaboration with the military to improve training in tactical combat casualty. The Suit contains breakable and repairable skin, bones and internal organs and can replicate numerous wounds, hemorrhages, airway difficulties, and other medical complications. Last May, 21 RVU students traveled to San Diego to participate in a first of its kind week-long intensive skills immersion training event at Strategic Operations on the lot of Stu Segall Production TV/film studio. The students were joined by visiting surgeons and physicians, as well as surgical and ER residents and staff from Balboa Naval Hospital. During the drills, students had to react to numerous trauma situations resulting from overturned cars, active shooters, and improvised explosive devices. Rocky Vista University’s Institute of Surgical Simulation has recently received accreditation by the American College of Surgeons. RVU is the only medical school in the state to receive this distinction and only one out of two schools in the entire Mountain West Region. RVU will host a Military Appreciation Ceremony and Reception on Friday, September 26 to honor its future military physicians and other military dignitaries who will be in attendance. The next large scale simulation will occur on the Rocky Vista University campus on October 15 as numerous emergency agencies will come together for an active shooter drill. v

ancer is a disease of nuances. No two cancers are alike and no two patients are alike. That’s why earlier this year the medical oncologists at Rocky Mountain Cancer Centers in Aurora and Parker decided to take a unique approach to cancer care and create a sub-specialized network that provides patients with care specific to their cancer type. “If you are diagnosed with breast cancer, you will see a breast cancer specialist. If you are diagnosed with colon cancer, you will see our oncologist who is a colon cancer expert. This allows us to better customize your cancer treatment and overall care,” says Shauna Flores, Practice Administrator for the Aurora and Parker clinics.
29 SEARCH PARKER MAGAZINE
Dr. Nicholas Di Bella, one of the founding oncologists of Rocky Mountain Cancer Centers, is no stranger to this type of innovative thinking. “When we started RMCC in 1992 administering chemotherapy on an outpatient basis was a new approach to treating cancer. Over the years, we’ve seen how this approach has benefitted patients and their caregivers by reducing travel time and costs.” Dr. Di Bella believes that moving from general to specialized cancer care benefits both patients and their physicians. “There is a sense of urgency with a new cancer diagnosis. Patients want to know from the beginning that their care is in the hands of an acknowledged expert in their cancer type and physicians want that confidence as well.
Our goal is to have new patients seen within 24-48 hours. Because we are in the community, our patients can remain close to home and their support system, and still receive the latest treatment options available, including access to clinical trials.” New patients calling Rocky Mountain Cancer Centers in either Aurora or Parker will be scheduled with an oncology specialist in their cancer. Both sites offer access to the latest treatments, an extensive research program, and education and support services. More information is available at rockymountaincancercenters.com.

Kneaders Bakery & Café

September 2014
neaders is an award-winning bakery and café franchise that uses only the highest-quality ingredients to create freshly baked artisan breads, delicious sandwiches, homemade pastries, hearty soups and refreshing salads. Kneaders is best known for its European hearth breads, slow-roasted, hand-pulled turkey sandwiches, Chunky Cinnamon French Toast, seasonal pastries made fresh daily, and award-winning gift baskets. Kneaders also provides catering services for groups of all sizes, from business meetings to weddings, and offers a variety of retail products, including holiday-themed decor. Colleen and Gary Worthington are the founders and franchisors of Kneaders Bakery and Cafe. The first Kneaders opened in Orem, Utah in 1997. Shortly after opening, James Worthington and David Vincent joined them and they all continue to operate as the Kneaders franchisor. What makes Kneader’s Bakery and Café’s bread so outstanding is that it is “honest,” artisan bread. The dough base is made from scratch daily with four simple ingredients (levain natural yeast, flour, water, salt—no preservatives), then aged for 20-36 hours depending on the type of bread. The aging, or proofing process, combined with baking at 500 degrees in an Italian hearthstone oven, brings out complex flavors and gives it a sweet, buttery taste. Certain breads have additional fresh ingredients, such as Asiago cheese and hazelnuts. You will not find bread this delicious and fresh anywhere else. The Worthington took years of study, training and research to hone their bread making skills and perfect their European hearth breads. They were pleased with the results and believed in the bread, so much that the original concept was a bread bakery. But due to demand they decided to make Kneaders a bakery and café and began serving a full menu complete with breakfast, lunch and dinner within a year. Kneaders also takes an “honest” approach to every item on the menu, from its slow-roasted, hand-pulled turkey sandwiches, to their ever-popular pumpkin pie that Gary Worthington takes personal pride in. As a fast-casual concept, Kneaders quickly took off. Over the past 16 years, the company has expanded to 29 total locations across five states. Kneaders has received many local awards in its home state of Utah, including the 2013 Utah Valley Business of the Year award, numerous consecutive Best of State awards, and has earned national recognition in “Modern Baking” magazine for the Leadership Award for management. They also earned the No. 8 rating on “Restaurant Business” magazine’s Future 50 list, and a No. 100 rating in the Technomic’s 150 Fast-Casual Sales Growth list. v

In a faraway kingdom turned upside down, things get ugly when an unseemly ogre – not a handsome prince – shows up to rescue a feisty princess. Throw in a donkey who won’t shut up, a bad guy with a SHORT temper, a cookie with an attitude and over a dozen other fairy tale misfits, and you’ve got the kind of mess that calls for a real hero. Luckily, there’s one on hand…and his name is Shrek. http://www.inspirecreative.org
