The Secrets of Bauli’s Confectionary Art Baking Italian Specialties Since 1922 That’s when Ruggero Bauli began as a baker’s boy in Verona. After miraculously surviving a shipwreck in 1927 during a move to America, Ruggero spent the next ten years working hard at mastering the confectionery arts. He then returned to Italy and opened his own shop, where he perfected large-scale techniques to faithfully produce his artisanal recipes. The growing family bakery eventually became the most popular purveyor of Italy’s classic holiday cakes, the Pandoro di Verona and the Panettone, a Christmas bread that originated in Milan. Now one doesn’t have to wait for the holidays to indulge in Bauli’s sweet treats —we have applied over half a century of baking experience and current technologies to our line of croissants and other treats. They have already become everyday favorites in Italy for breakfast and snack time.

The Secrets of Bauli’s Natural Leavening
A Commitment to Quality
ike Bauli’s holiday cakes, the Bauli croissants are made using a “mother dough.” Water and flour are progressively added to this nucleus to create a croissant dough with natural yeast instead of chemical additives, allowing it to rise naturally. After 18 hours of leavening —requiring great skill and care— the croissants have the softness, flavor and an unique aroma. They also stay fresh for much longer than regular bread or cakes, without any preservatives inside. This long fermentation makes a huge difference, ensuring a long shelf life, and making them easier to digest —and surprisingly delicious!
Safety Over 500 tests a day certified by the Food Technology Institute, the Institute of Microbiology at the University of Milan, and the Institute for Biotechnologies at the University of Verona.
Research & Development Bauli and its R&D Team took their baking expertise, researched what people loved, and developed new technologies for these popular confections.
Controls Over 160,000 control tests are done each year on our raw materials, manufacturing processes and final products.
