Truffle Potato Gratin
INGREDIENTS
» 2 lb. Yukon Gold potatoes » Kosher salt and freshly ground pepper » 1 tbs. olive oil » 1 tbs. white truffle oil » 1 yellow onion » 1 1/2 cup heavy cream » 1 cup shredded Gruyere cheese » 1/2 cup creme fraiche » Finely chopped fresh thyme (for garnish)
DIRECTIONS
STEP 1 Preheat oven to 400 degrees and butter a gratin dish or 9-inch square baking dish. STEP 2 Cut the potatoes into slices about ⅛ inch thick and arrange them slightly overlapping on the bottom of the dish. Sprinkle lightly with salt and pepper. STEP 3 In a saucepan over medium heat, warm the olive and truffle oils. Add the onion to the pan and saute until tender (about 4 minutes). Add the cream, bring to a simmer, and stir occasionally until thickened slightly (about 5 minutes). Stir in ¾ cup of the cheese and cook until melted. Remove the mixture from the heat and stir in the creme fraiche. Season with salt and pepper. STEP 4 Pour the mixture evenly on top of the potatoes and sprinkle with the remaining cheese. Bake until golden brown and bubbly, and the potatoes are tender when pierced with a knife (about 1 hour). STEP 5 Let the gratin rest for 15 minutes. Drizzle lightly with truffle oil and garnish with thyme.
