Every single address was subtly designed with a view to striking a harmonious balance between relaxation and technology, providing a design-conscious yet welcoming setting that would simultaneously offer local and international artists a platform for their work. For instance, this is the case of artist Raphael Hefti whose volcanic artistic performance marked the opening of the Pullman Liverpool where his work is now on display. He looks set to be in very good company too, with Pullman having recently launched "Artist Playground", a global Art Corner Concept, promising a whole host of exciting exhibitions sure to delight art novices and connoisseurs alike. BORDEAUX’S

CITÉ DU VIN

naugurated in May 2016, the magnificent Cité du Vin in Bordeaux will open its first two temporary art exhibitions in a 700 square metre-space in January 2017. As one designer explains: “When the wine enthusiasts first arrived in Bordeaux, there was no place to meet their expectations.” This is now taken care of. With its impressive, decanter-like shape—evoking the knotted vine stocks, wine turning

in a glass, or just the swirls and eddies of the neighbouring Garonne River — Cité du Vin attracts visitors from all over the world. With 450,000 people expected annually, there is little doubt that Bordeaux is well on its way to become the global capital of wine tourism. Is there a better place to turn the camera than the magical city of Miami? Right here—between the business center, South Beach, and the Art Deco Historic District—the scene is set for the first Global Nomad Video City Guide; a collaboration between hotel chain Pullman and lifestyle magazine Wallpaper*. This short video features two minutes of allure and rhythm from a selected destination, where we follow a connected and sophisticated modern man, whose life is divided between business and leisure, a balance of efficiency and personal wellbeing. The idea? “To take Wallpaper*’s readers—modern urban explorers—on a journey of lifestyle discovery through the architecture, design and culture of a city insider,” explains Matthew Johnston, bespoke manager of Wallpaper*. Starring its first hotel in the US, it is also an occasion for Pullman to present the brand to its trusted and future guests. Featured on social networks as well as on wallpaper. com and AccorHotels.com, the short film is only the first in a long series, promises Matthew Johnston: “With Pullman’s vast portfolio, only the sky is the limit!”

He is a key 20th-century artist of more than 300 textile designs (for American furniture designer Herman Miller, among others), fabulous concepts from corporate building interiors to everyday industrial objects, logos and brand identities for major companies ( John Deere, the legendary Braniff International Airways), and much more. His first extensive retrospective, A Designer’s Universe, revisits the work of a most remarkable and versatile artist—especially his prolific period from the 1950s to the 1970s, as well as his intimate passion for colours and folklore. An El Dorado for pop art enthusiasts, the exhibition includes a broad selection of the celebrated textile, furniture and interior designs, as well as many never before shown. PLACES AND PEOPLE TO LOVE

This summer, the vibrant Italian-Dutch artist Selwyn Senatori packed up palette and brushes and set his atelier in the Cuypersroom at Pullman Eindhoven, which functioned as joint working space and pop-up exhibition during his two-month residency. The neo-pop, Amsterdam-based painter is originally from Italy, but has the world as his playground, hence his mantra, It’s not a job, it’s a way of life. And what a dolce vita that is! His work’s recurrent themes are food, fi ne wines, Italian roots, traveling, music and cinema, women, cities and design. “Out of Office Forever” is the title of this pop -up exhibition in audience, as the public had the unique opportunity to visit the workshop and witness the artist

working live during his June-July residency. Playfully filling canvasses with his half- com ic, half-graffiti colorful designs, but also carpets, walls, couches—in fact, any paintable surface was put into play, leaving no inventory shortchanged for a dash of his fun and carefree charm. Several of the artworks completed will remain permanently exhibited at the Pullman Eindhoven for the enjoyment of current and future guests. hat if Pullman hotels became unexpected art galleries or artists’ studios? Challenge accepted! With its new concept, “Artist Playground by Pullman”, the brand already so strongly committed to design and contemporary art hopes to go even further in supporting the art world and being involved in the cultural life of the countries where it is established. How? Simply by putting their space at the disposal of young, local artists, such as painters, sculptors and designers—as a new permanent exhibition and context for promoting their work. A sure way for them to get noticed and for hotel guests to get interested in local arts and culture! The very first was launched in Hong Kong on September 27, and an other one was inaugurated in Aachen, Germany, on october 5th. AUCKLAND CELEBRATES THE ARTS

It is New Zealand’s most significant cultural event and thus an outstanding occasion to discover the archipelago’s abundant artistic life. From March 8 to 26, 2017, the Auckland Arts Festival has announced a top-notch program for almost three weeks of dance, music, theatre, cabaret, visual art and performances. With a number of global premieres among the 50-plus booked acts, leading international performing arts companies come here to rub shoulders with the cream of New Zealander production. For the opening in 2016, the fired-up alchemists from French company Carabosse had lit the Auckland sky. We bet the 2017 edition will be just as magical and we foresee white nights across the city! It will also be the last with Artistic Director Carla van Zon behind the wheel, who is passing the baton to Jonathan Bielski (former long-time Director of Programming at the Sidney Opera House) after six exciting years, which have seen the festival take on an annual pace, while gaining a strong reputation based on international merit.

STAR WARS IN CALIFORNIA

Another adventure series for George Lucas, father of the Star Wars saga: that of his age-old ambition to create a “Museum of Narrative Art.” While the initial idea was to locate it in Chicago, the museum suddenly changed location in June 2016 and is now finally confirmed by the Lucas Foundation to open in California. Although the battle still is not settled between San Francisco and Los Angeles, the first seems in favour, and John King, San Francisco Chronicle’s urban design critic, expects to have the verdict out “anytime before the end of this year.” Dedicated to the various aspects of storytelling, the museum will delight fans of Luke Skywalker and Indiana Jones alike. Almost more importantly, the director’s private collection of popular art, including illustrations by Norman Rockwell, films, comics, photos, as well as animation and digital art will also be on display. Furthermore, young filmmakers-to-be will have the opportunity to attend in-house screenings, master classes and workshops in 2018. All in all, we sure have not heard the last from the Star Wars saga. One thing is certain: San Francisco will soon have its very own and first Pullman Hotel. DESIGN

Among her monumental endeavours is the new Beijing Airport terminal building, which tops the Guardian’s list of seven wonders-to-be in the modern world. Preliminarily planned for completion in 2018, Zaha Hadid Architects and ADP Ingeniérie—the joint design team in charge of its concept design—have now announced its inauguration in 2019. And the project already impresses in scale: a ground area of 700,000 square metres allowing for an annual capacity of 45 million passengers expandable to 72 million, as well as 2 million tons of cargo. HARBOURING A FASCINATION FOR THE POTENTIAL OF INDUSTRIAL PROCESSES – AND WHAT HAPPENS WHEN THEY GO AWRY – RAPHAEL HEFTI MANIPULATES AND TRANSFORMS MATERIALS, OBJECTS AND SUBSTANCES, PLAYING WITH FIRE TO FASHION MOLTEN METAL. STAGING PERFORMANCES WORTHY OF A MODERN-DAY HEPHAESTUS, HE CHOREOGRAPHS DRAMATIC TRANSFORMATIONS, PRODUCING SCULPTURES AND IMAGES THAT CAN ONLY BE DESCRIBED AS UNPREDICTABLE, UNEXPECTED, POETIC… TEXT NICOLE CHAVRANSKI PHOTO NICK MIZEN

It will come as no surprise to learn that this Swiss artist-performer, born in 1978, has been trained in electromechanics… Part alchemist, part mad scientist, Raphaël Hefti plays around with glass, iron and photographic paper, subjecting them to intense experimentation in a radical and participative form of art: his exploration of materials, pushed to the extreme, is always performed in conjunction with scientists, engineers and workers… often in an industrial setting. Born in the watchmaking city of Biel, Hefti initially studied photography at the Ecole Cantonale d’Art de Lausanne (ECAL) before going on to graduate from London’s Slade School of Fine Arts in 2011. His early experimentations focused

16

PULLMANHOTELS.COM

on photographic processes, creating intriguing photograms with the help of Lycopodium spores, or "witch powder", traditionally used in pyrotechnics and homeopathy… The artist, whose works have been exhibited all around the world, is also one of the co-founders of an artists’ collective known as Library +. His approach is based on uncertainty and surprise: "a mixture between control and casualty. The objects themselves are not that important; it is more about the process, the experimentation and experience”, he explained in an interview with Dazed magazine. CREATIVE FUSION To mark the opening of the Pullman Liverpool in May 2016, the artist

and his team took to the Liverpool docks to perform a spectacular live casting of a sculpture, employing a thermite welding technique originally developed to mend rail tracks – a perfect tribute to the city’s prestigious industrial and maritime heritage. A crowd of spectators watched with bated breath as lava-like f lows of molten metal poured down an 80-tonne pile of sand, a process that was also filmed using a high-definition camera capturing 2,000 images per second, simultaneously creating a unique work of digital art.

" It’s about understanding the process and pushing it to extremes. " INTERVIEW JULIETTE MICHAUD

And you filmed the performance? Except that documenting this type of process is usually impossible. It’s so hot, 2400 degrees, and so bright that your eyes start to see only a white line, there is no more color or structure. So we brought this 70 kg, 4k resolution, ultra-highdefinition camera from Hollywood to Liverpool. It captures 2000 frames per second so we were able - I had a crew of ten people - to capture the 3D steel transformation and turn it into a 2D film. The hotel guests could then “fall” into this film on the television of their rooms when they turned on the channel with the performance, for a striking element of surprise.

How would you define yourself, and your artistic path? Raphael Hefti : I'm an artist who is always interested by the transformations of materials from our everyday life, materials that we take for granted, such as steel, but that are in my view the backbone of our society. How does this backbone work, that’s what gets me interested. To analyze that, I talk with specialists in the industry and with craftspeople in factories, who help me experiment in different fields. So, what I do is not about magic or alchemy. It’s about collaborations, it’s about understanding the process and pushing it to extremes. For instance, if you cool down liquid steel too quickly, it can break like glass: how crazy is that? Tell us about your live artistic performance at the Liverpool Docks. The docks of Liverpool are so important in the history of England’s industrialization and the steel industry. I always try to respond to a place. The idea here was to give people the possibility to experience steel production really up. Next to the Pullman hotel, there was this empty space, a former construction site. It became our set. We brought tons of sand – if you work with steel you need sand because it doesn't melt and allows shaping - to cast our thermic sculpture, using the technique of thermite welding, a process devised in the 19th century that is still used in the assembly of high-speed railway tracks.

The pedestrianized streets between Largo de São Bento, Largo de São Francisco and Praça da Sé form the historic old town where the now-rare vestiges of the city’s colonial past, dating back to the 16th century, rub shoulders with a mismatched selection of imposing art deco buildings, hinting at the district’s former vibe. Dotted here and there are the towering skyscrapers that marked the onset of the city’s upward expansion, symbolising the ascent of its thriving migrant populations, starting with the Italians: the Martinelli, the Altino Arantes and the Itália... Just a stone’s throw away is shopper’s paradise, 25 de Março, originally the cradle of the Syro-Lebanese population and now the place to which everyone flocks to snap up bargains from the lively street market. Further north, Luz railway station (1901), built in the architectural style of Westminster (it even boasts its own Big Ben!), bears testament to the downturn in the coffee trade, one of the mainstays of the region’s economy until the 1930s. It was here that European workers travelling in from the port of Santos would get their fi rst taste of the city. Bustling and buzzing by day, the area rapidly becomes deserted by night, with the exception of a few prestigious cultural venues such as the Theatro Municipal or the Sala São Paulo, along with a handful of bars and restaurants known only to the select few.

communities together. Further west, Bixiga and Bela Vista are where the majority of Italian immigrants have set up home, their influence omnipresent in the sing-song Paulista accent echoing the peninsula’s many dialects, and in the continued celebration of Catholic festivals, such as the San Gennaro festival in Mooca and the Santa Achiropita festival in Bixiga. Numerous eateries along two of the local streets - Treze de Maio and Rui Barbosa – serve polenta, lasagne and polpettone, not to mention a whole host of other Italian specialities. This working class, bohemian neighbourhood is also home to one of São Paulo’s oldest samba schools: the Vai-Vai.

THOUGH THE MIGRANTS OF YESTERYEAR CAME FROM ASIA AND EUROPE, TODAY THEY MAINLY ARRIVE FROM THE CONTINENT.

Head further south and experience a radically different vibe on strolling beneath the archway into Rua Galvão Bueno. The Liberdade District is home to São Paulo’s Japanese population, estimated to stand at 1.6 million – the largest Japanese community in the world. In April and July, the traditional Flower Festival and Star Festival bring all the asian

No cosmopolitan tour of São Paulo would be complete without taking in the Parque Ibirapuera, designed by Niemeyer and Burle Mar x. The park is a true celebration of the Paulista cultural melting-pot, with its Afro-Brazilian Museum, Japanese Pavilion and monument to the Bandeiras, a huge sculpture honouring the formidable and intrepid mixed-race settlers whose entrepreneurial spirit Paulistas recognize in themselves. T he park is also home to the city’s contemporar y and modern art museums.

Though the migrants of yesteryear primarily flocked to São Paulo from the other side of the Atlantic, today they mainly arrive from the continent. The Italians and Jews who traditionally lived in Brás and Bom Retiro are gradually being replaced by Nordeste and Bolivian workers, bringing with them their costumes, celebrations and cuisine. The Immigration Museum in Brás documents all these important cultural shifts that make São Paulo what it is today. Because above and beyond its diversity, what makes São Paulo more special than ever, is its outstanding power of assimilation, ensuring it constantly evolves whilst nonetheless remaining true to its roots.

Guardian, Stern, Vanity Fair or Focus. After being wounded in Afghanistan whilst covering a story, he spent his convalescence wisely, concocting a brand new publication whose ingenious blend of content covered geopolitics, design and lifestyle: Wallpaper. The magazine, launched in 1996, soon met with resounding success, rapidly winning readers as well as a strong reputation. Brûlé sold the magazine to Time Warner just one year later for 2.3 million dollars, but nonetheless remained at its head… until falling out with the new owner. That's it. Deprived of his editorial plaything, he poured his energy into setting up an advertising agency, Winkreative. But in 2007, unable to resist the magnetic pull of the press, he launched yet another monthly publication alongside his new activity: Monocle. There were no two ways about it - Tyler Brûlé had hit the bullseye once again, his brand new opus serving up a potpourri of content worthy of The Forbes, Architectural Design or the National Geographic, all with his own unique spin, of course. A pared-down layout, generally structured around three columns, flowing texts printed in tiny fonts, unique illustrations and photos, in-depth reports and, above all, the desire to keep

readers on their toes by focusing on unexpected topics or locations. Even causing Tyler and his team to be labelled paragons of snobbery at times. This is a man who leaves no-one indifferent. Time to ask a few questions. W hat is the secret behind Monocle magazine’s success? Tyler Brulé : Monocle’s success largely stems from the fact it is a global magazine. We don’t adapt any of the content, instead choosing to publish the exact same version in more than 60 different countries. Secondly, it is a magazine we’d never dream of giving away free. An annual subscription costs 140 dollars, a price tag that remains the same whether you are in the deepest depths of the Australian bush or in Paris or New York. That guarantees us a premium and strong readership base, which c ur rent ly st a nd s at 12 0,0 0 0 subscribers. Lastly, ours is a hybrid publication that really is pretty unique: 60% of the content is dedicated to news or business-related topics, whilst the remaining 40% focuses on style, design and fashion. Who is your typical reader? In terms of profile, I’d say a 35 to 40-year-old male working in

If it’s geographical location you’re interested in, that’s pretty hard to pin down as our readers are extensive travellers. That said, we sell the most copies in the USA, Great Britain and Australia. In the delightful Italian port of Trieste, nestled alongside the Adriatic Sea, the distinct aura of a bygone era still lingers in the air, evoking memories of days gone by when the city was part of the now-defunct Austro-Hungarian Empire. It was in this very spot that bean-laden ships docked from Africa or Brazil. Right here that in 1933, Francesco, Andrea’s Hungarian-born grandfather who had also spent time in Vienna, another city with a thriving coffee culture, set up the Illy dynasty, inventing the first ever espresso machine.

Illy pays special attention to training their coffee producers in excellence.

Illycaffè is present in 143 countries around the world and 7 million cups of its coffee are served each day, notably in Pullman hotels. Having spent his formative years s u r r ou nd e d by co f fe e, A nd r e a eventually joined the firm in 1990, starting out in quality control and rising to the rank of CEO just four years later. But he is by no means the only family member to be involved in the family business, with everyone playing a part to play at some point in their lives. Even Riccardo, the politician of the family, once mayor of Trieste and President of the Friuli-Venezia Giulia Region. Faced with fierce competition from agribusiness multinationals, not to mention from Starbuck’s, Lavazza, Segafredo and the like, Andrea Illy

made the strategic decision to focus on the premium market niche. "Quality is our obsession – there is no room for compromise": philosopher, scientist, highly driven… this is a man as intense as his coffee. Only the highest grade Arabica beans meet Illycaffè’s exacting standards. In the year 2000, the firm opened its ver y own training centre run by agriculturalists and experts, the Università del Caffè, paving the way for excellence: Illycaffè is involved at ever y step in the chain, from production right through to the coffee actually being poured into the cup. “These are exciting times”, exclaims Andrea Illy, reflecting on the “radically new scenario” that is sweeping through his industry, aware of the challenges raised by the current economic model’s lack of sustainability

RIMOWA

BACK IN THE GROOVE THEY RULE TODAY’S ROADS AND SKIES, HAVING WON THE COVETED CROWN OF GLOBETROTTERS’ MUST-HAVE THANKS TO THEIR ICONIC DESIGN AND PHENOMENALLY ROBUST CONSTRUCTION. WHO? THE SUITCASES PRODUCED BY GERMAN BRAND RIMOWA, CRAFTED FROM EITHER TRADITIONAL ALUMINIUM OR FROM ULTRA-LIGHT POLYCARBONATE INTRODUCED IN 2000, AND ALWAYS FLAUNTING THE TRADEMARK GROOVES INSPIRED BY VINTAGE AIRCRAFTS. I

t all began in Cologne at the turn of the 20th century when a certain Paul Morszeck decided to set up a wooden travel trunk business. Belle Epoque high society soon fell in love with his wares, but it wasn’t until 1937 that things really began to take off. It was in that year that Richard, the founder’s son, launched the first ever aluminium trunk, then innovating still further in 1950 by introducing the duralumin suitcase. Made with an alloy of aluminium and copper,

the case featured an aircraft-inspired grooved design that was to end up becoming the firm’s trademark, even going on to inspire its slogan: "the original luggage with the grooves”. Today, Ri-mo-wa (from Richard Morszeck Warenzeichen) continues to be a family affair: the current CEO, aviation enthusiast and pilot Dieter Morszeck, Richard’s son, has already been at the helm for more than 40 years. Adopted by jetsetters, businessmen

and airline pilots alike, Rimowa luggage is nowadays crafted from ultra-light polycarbonate and comes in a vast range of zingy hues. Take, for example, one of the newest additions - the Bossa Nova range (Dieter Morszeck is madly in love with Brazil). All the items in this particular range are green in both hue and function, with a portion of every sale going to an NGO that funds Amazonian rainforest conservation projects. Rimowa luggage is also

a firm favourite amongst journalists and film crews, as its super-resistant watertight shell is renowned for withstanding the most extreme climates, be they tropical or polar, offering the best possible protection for the precious equipment nestled within. The most recent innovation, following hot on the heels of spinner wheels and the TSA-approved integrated lock (endorsed by the US civil aviation authorities), is the smart suitcase, developed by Rimowa in conjunction with Deutsche Telekom and Airbus and whose 2.0 “e-tag” allows increasingly hurried travellers to check-in and track their suitcase via a mobile app. An innovation Rimowa chose to test in partnership with Lufthansa, keen to protect its image of excellence by working solely with the biggest brands. In 2012, Dieter Morszeck embarked on an exciting new project, which

although dubbed hare-brained by some was nonetheless based, as always, on solid technological research: bringing the iconic Junkers F13 back to life and back to the skies, freeing it from an existence that had long-since been restricted to the confines of a handful of museums. An exciting prospect for the world’s first all-metal passenger aircraft, whose lightweight construction, eye-catching design and outstanding reliability had revolutionised civil aviation when originally introduced back in 1919. Unveiled in 2015, the F13 Rimowa’s inaugural flight was scheduled for September 2016, a stylish way of taking Rimowa back to its roots and telling a sensational story, a kind of modern-day tribute to the brand’s historic DNA. Could it be that the firm’s one-way ticket from planes to luggage is about to be swapped for a return?

PERSONAL SHOPPER,

Kristen Stewart confronted to fashion and ghosts in Olivier Assayas' very scary Personal Shopper. Initial release date: Belgium, October 2016.

ou have been work ing so much lately! Kristen Stewart : Those past two years, I did five movies. Thanks to Olivier Assayas’ Clouds of Sils Maria I received the César for best supporting actress, which was surreal! I was at this year’s Cannes film festival with two major films, Woody Allen’s Cafe Society and Olivier Assayas’ Personal Shopper ; I shot the gorgeous Chanel campaign for eye-makeup... (She pauses). Wow!

Do you think Olivier Assayas understands you better than others? After the success of the Twilight saga, I appeared like a commercial commodity to people. There was all this fervor, yet I just wanted to work. Just by having me playing opposite veteran Juliette Binoche, Olivier Assayas allowed me to be complex, and to shine. He changed my trajectory.

TRAVELING IS ONE OF THE PERKS OF MY JOB AND I LOVE IT.

Personal Shopper, your second collaboration with French director Olivier Assayas, is an unexpectedly scary ghost story set in the fashion world... At first look, you might think that it’s the sequel to Clouds of Sils Maria. This actress' assistant is now a personal shopper living in Paris. Personal Shopp er i s ac t ua l ly a ter r i f y i ng existential film about a girl who wants to communicate with her dead brother. The movie deals with the meaning of life, with the void, and was very anxiety-inducing to shoot. But I’ll do anything for this genius artist. 58

W hat do you remember about starting out in show business? I was raised i n L os A ngeles, my dad’s a stage manager, my mom’s a script advisor, and so I always view this world as kind of blue collar. My parents were not so pleased with me wanting to be an actor, but I have been drawn to that energy since I can remember. What surprised me most was how, progressively, every molecule of my being said, "I love this so much, I want to do it forever".

Like Jodie Foster and Sean Penn, you’re interested in directing. I’ve wanted to direct movies since I played Jodie’s daughter in David Fincher’s Panic

KRISTEN STEWART WITH JESSE EISENBERG in Woody Allen's homage to Hollywood and lost love, Cafe Society.

What surprised you the most in working with Woody Allen? I always loved his films and could not have dreamt I’d end up in Cafe Society, with my old pal Jesse Eisenberg, playing this light and buoyant secretary in the golden age Hollywood, wearing those exquisite costumes from the thirties. On the set, for somebody who makes movies with such a particular tone, Woody was really casual, almost nonchalant, just letting you do the job. A treat.

How would you define your style ? My style is a little edgy and different. I love to reinvent myself and show off my personality. I feel more confident that way. But in my closet, you’ll find mainly sneakers, lots of them, and T-shirts.

You are Balenciaga’s and Chanel’s muse. How important is fashion in your life? It’s all intertwined. Chanel was involved in both Cafe Society and Personal Shopper, which means I got to sit in fittings and go: “Oh, I love this,” “I hate that,” “Okay, can we do this…” as if I was Coco Chanel herself, whom I did portray once for Karl Lagerfeld (Laughs). In Personal Shopper, my character has a conflicted relationship with clothes. I’m like that. Sometimes clothing inspires me and I adore it, sometimes I find it too on the surface. I’m not ashamed of it, but I also need to find a deeper level in fashion. In the meantime, representing a perfume for Balenciaga, or becoming the face for Chanel is beyond luck – it’s stunning.

Do you have certain rituals when you travel? My bright orange beanie (Laughs)! Traveling is one of the perks of my job and I love it. For Equals, Drake Doremus’ beautiful sci-fi love story with Nicolas Hoult, the filming took place in Japan and Singapore for two months. Fascinating. Where do you live now? I am still an L.A. girl. I live on the east side of the city, and I really don’t know where I would live in LA if I hadn't found that little neighborhood because you can walk around. It’s super hip but in a good way, like the Brooklyn of California.

room. I was nine. Sean Penn, who gave me my big break with Into the Wild, was also rather a mythical mentor. At the end of the Personal Shopper shoot, I was drained. I stepped way back to develop for the screen a poem that I wrote. The result is a script called Come Swim, and by the time this article will be published, I will have shot it! Jodie Foster’s piece of advice for me when I told her about my directing project was: “The first thing you’re going to learn is that you don’t have much to learn and that you’re totally ready.” That’s an incredibly affirming thing to hear out of that mouth.

Single-Product Stores DOUGHNUTS, ECLAIRS, TRUFFLE, POPCORN: ALL AROUND THE WORLD, CONCEPT STORES SELLING JUST ONE KIND OF MERCHANDISE ARE SUDDENLY ALL THE RAGE. "SINGLE-PRODUCT" STORES PROMISING "MULTIPLE TASTE SENSATIONS". WE TAKE A CLOSER LOOK AT A PHENOMENON GUARANTEED TO TICKLE EVERYONE’S TASTE BUDS. TEXT VALÉRIE DEFOURNIER-SMITH

We’re in the Public Market district of Boston, where crowds have gathered outside a tiny shop, one of the most popular in the city. People flock from far and wide just to get their hands on its doughnuts. But these aren’t your average doughnut – they’re Union Square Donuts. What makes them so special, you may ask? They come in 1001 different varieties. This concept store has given the humble doughnut a resolutely gourmet spin, coming up with some pretty astonishing flavours: h i bi s c u s - c h e r r y, c ho c ol at e chipotle and even a savour y creation: maple-bacon. In the USA, specialist doughnut stores are a runaway success. They go by the name of Blackbird Doughnuts or Kane’s Donuts, each more enticing than the next. Yet this Americanborn phenomenon, known as a “single-product strategy” in marketeer speak, is by no means restricted to Boston – it has spread its wings and gone global. The basic principle is simple: concentrate on just one type

of product, but roll-out endless ver sion s. It i s a t rend t h at captures the imaginations of fearless ent repreneurs, who invest everything they have in a single niche market, then proceed to adopt a differentiation and segmentation strategy to make their businesses more competitive. In today’s hyper-connected world, where the choice can at times be overwhelming, consumers who yearn for a unique experience and a certain level of expertise find exactly that. AN AMERICAN-BORN PHENOMENON But for this new kind of consumer, every last detail counts. Take, for example, Georgetown Cupcakes based in Washington, DC. There, the mini-patisseries that have recently become so fashionable are dressed up to the nines. The stunning selection of colours and flavours is truly a sight to behold, delighting sweet-toothed foodies who were previously convinced they’d already seen and tasted everything… The single-product

concept knows no limits, no bounds. In the Brazilian metropolis of Sao Paulo, it’s the “brigadeiro” that’s currently flavour of the month. This luscious little ball made from chocolate and condensed milk, Brazil’s best-loved delicacy, even boasts its very own store, “A Brigaderia”, where no fewer than 30 different flavours line the shelves tempting discerning taste buds: cheesecake, orange, macadamia, cachaça liqueur, cinnamon... Demand has, in fact, become so great that additional outlets have been opened in other parts of Sao Paulo. Another style, another continent – Europe, where the cereals of our youth are tempting taste buds a second time around in the world’s first ever cereal bar, the Cereal Killer, based in London. The venue stocks no less than 120 types of cereal, including American, French and Spanish brands and even some Australian breakfast classics.

d ash of f lavou r… and a generous serving of excellence Customer loyalt y is par t ly down to ser vi ng delicious products, but primarily down to promoting excellence. Perfection is key. These entrepreneurs are well aware that when customers visit a store with the sole intention of buying one specific product, they will be more demanding than ever. Money is consequently poured into hiring the world’s most talented chefs to ensure the products always deliver their magic. Over in New York, Jean Tsai, the inspired founder of PopKarma, came up with the idea of giving popcorn a brand new spin, helped by chef Stéphane Lemagnen. Together, they invented six different flavours of organic popcorn, all gluten-, preservative- and additive-free (that's no small task!). Some of the current best-sellers are the Classic Mediterranean with olive oil and sea salt, and the Zen Cheddar featuring simple pure white cheddar. A TREAT FOR THE EYES Besides focusing on flavour, a great deal of energy is also invested in how a concept store looks. A store’s appearance is actually critical to its success. At specialist chocolate shop Chök in Barcelona, products adorn

the walls much as in a jeweller’s. Chocolate is everywhere you look, represented in all its forms, from individual chocolates to indulgent chocolate-based treats such as churros, cupcakes and even crisps and toffee apples! In Monaco, a product that could initially be construed as rather less visually appealing lines the shelves of the Beefbar Butchers Shop: beef. Here, however, the world’s very best cuts are proudly displayed for all to see, resembling precious museum exhibits. Architects from the Humbert & Poyet agency were charged with the difficult task of turning rump steak into a design feature, a mission they accomplished with flare, setting the meat against noble, understated materials such as wood, black and white marble and brass. New York’s La Maison du Croque Monsieur, housed in Anaïs Nin’s former print shop, exudes the same design flair. Jet across the Atlantic to fashion capital Paris, and it’s the same old story yet again. The charming Maison de la Chantilly has just celebrated its first birthday in the modern and elegant setting created by design agency Centdegrés. Oozing from cones, spread generously across pastries or simply flaunting its pure, white credentials… wherever you lay your eyes, the famous Chantilly cream steals the show.

A HUNGER FOR INNOVATION This, however, is a concept that demands relentless innovation. The global success of French pastry chef Christophe Adam, present across Asia and Europe, is by no means a stroke of pure luck. Today, boasting six outlets in France, Japan, China and Korea, he built the success of “L’éclair de Génie” on one simple idea – selling traditional French eclairs but filling them with a multitude of exciting new flavours such as salted butter caramel or yuzu lemon, rather than the usual chocolate or coffee.

The unusual The Beefbar Butcher Shop in Monaco, and the chocolate kitchen Chök in Barcelona.

Eclairs aren’t the only French speciality to have been given a brand new spin. Take "Mesdemoiselles Madeleine" in Paris, for example, where "Prudence", "Garance" and "Hortense" are just some of the beauties adorning the mouth-watering window displays. Here, the madeleine, a small shell-shaped cake first invented 3 centuries ago, is given a modern twist with the addition of Madagascan vanilla, Moroccan rose essence and a multitude of other flavours, all in beautifully refined surroundings. In South West France, cities such as Bordeaux have also got swept up in the single-product trend. Le Palais de la Truffe celebrates one very special ingredient – the truffle. Oils, tapas and even a chocolate truffle mousse feature on the menu alongside the flagship dish – a truffle omelette, created by the two delightful Franco-Finish owners who share a passion for Italian and Périgordian truffles. A veritable taste sensation.

© MRG

A GREAT DEAL OF ENERGY IS ALSO INVESTED IN HOW A CONCEPT STORE LOOKS

The trend for unique products is booming, driven by curious, food-loving consumers with thoroughly discerning tastes. It’s a success story written by all the small firms who have dared to try something new, adopting clever marketing techniques to win over their clientele. Today, their achievements have even caught the eye of the FMCG (fast-moving consumer goods) world, with leading players such as Amora and Nestlé now joining the adventure and launching their very own concept stores.

Sarah Hoey wants you well WHO SAID THAT WE NEED TO HAVE BAD LIFESTYLE PATTERNS WHEN WE TRAVEL? WELLNESS TOURISM IS BOOMING, AND SARAH HOEY, FITNESS AMBASSADOR FOR THE PULLMAN HOTELS & RESORTS, IS SURFING ON THAT WAVE BEAUTIFULLY. HER MISSION IS TO HELP A WHOLE NEW GENERATION OF TRAVELLERS THRIVE WHILE ON THE GO. INTERVIEW JULIETTE MICHAUD PHOTOGRAPHY SARAH MARSHALL

What brought you to fitness? Sarah Hoey : My proper education is in global business management and international relations, but I always loved working with people in health and sports. Ten years ago, I was diagnosed with cancer and decided to beat it by entering fitness and bikini competitions, where strong and independent women became my role models. I worked with the best, but then it was time to expand my horizons. How did it happen? I believe in vision boards: if you visualise your dreams, they become reality. In the summer of 2014, in search of another adventure as a global nomad, I was given the opportunity to train clients at the Pullman Marrakesh. The timing was perfect, so I packed my backpack, and in addition to being a trainer at this magical Morrocan resort, I started to talk about how to provide a better variety of healthy options for the guests.

What is your role as a wellness Pullman ambassador? I've been designing and teaching fitness and yoga classes, but now this honorific role extends even further. The travellers’ mentality has evolved. It’s a bit like “40 is the new 20”: millennials want to live healthier and feel healthier. They've defined age not as appearance but as the overall feeling of wellbeing. Checking-in at a Pullman resort, you’ll be offered a choice of four healthy juices: Age Defence, Energy-Boost, Detox, or Balance, which can be combined with a corresponding work out. Those tailored programs have three levels, beginner, intermediate, advanced, and are 7 minutes long. We are shooting videos of these 7-minute workouts in heavenly Thailand, and they will be shown in the guest-rooms of Pullman hotels across the globe. We believe that the better our guests feel while travelling, the more successful their trips will be. And that’s true whether they are travelling for business or pleasure.

When did you start adding yoga to your teaching? I started Vinyasa yoga, coordination of the poses with breath, to relax my own body from the pressures of weight lifting and cardio vascular fitness schedules. The benefits were so great that I wanted to share them with my clients.

As for the favoured equipment, even if older adults have a clear preference for indoor cycling, the number one sports equipment, regardless of gender or generation, remains the "smart" treadmill.

One of the survey’s most significant revelations is that Millennials do not exercise alone, focused and in silence, but rather, they address sports as a way of engaging in fun and open activities with each other. Are you paying

attention ? AT HIS PULLMAN PULSE CONFERENCE AT PULLMAN LONDON ST PANCRAS LAST OCTOBER, ASSOCIATE EDITOR, JOURNALIST AND AUTHOR ROWLAND MANTHORPE HIGHLIGHTED HOW INTERNET-DOMINATING COMPANIES ARE CAPITALISING ON OUR ATTENTION. AND HOW BEING IN BETTER CONTROL OF WHAT WE PAY ATTENTION TO COULD ACTUALLY BE THE KEY TO HAPPINESS. TEXT ROOKSANA HOSSENALLY

How many times have you almost bumped into another person or a lamp-post while walking in the street because you were looking down at your smar t phone and weren’t paying attention? However, not walking into things on the street isn’t quite the bottom of it. As editor, journalist, and author Rowland Manthorpe highlighted at his Pullman Pulse conference at Pullman London St Pancras, online companies are ruthlessly fighting for our attention to monetise it. And by letting our attention being

74

PULLMANHOTELS.COM

coerced this way and that, we’re underestimating the direct impact that paying better attention to what we pay attention to can have on our sense of wellbeing. As a result of our obsession with being constantly connected to the internet, our attention has become the currency of the internet age. “The internet is the biggest mass surveillance system ever built, and what it tracks, primarily, is attention,” Rowland Manthorpe points out. And as we sift through the onslaught of material shoved

our way by internet- dominating c o mp a n ie s , o r to b o r r ow Manthorpe’s expression, the “deluge of distraction”, his main concern lies in what he calls the ‘monetisation’ or ‘weaponisation’ of our attention. “The basic theory here is that any economy is defi ned by a single scarce resource – and in the digital economy, that scarce resource is attention. Online, we are all fighting over the limited attention span of our fellow human beings, in the same way that our ancestors fought over land,” explains Manthorpe.

"WHERE WE GIVE OUR ATTENTION DEFINES OUR HAPPINESS LEVELS"

STYLES

“Advertising is where attention converts to money: if you pay attention to it, then the website running the ad will make money. That’s the basic business model of Google and Facebook, the two most powerful internet firms in the world. The battle for attention is also the battle for dominance online.” While companies battle it out, further evidence is emerging to back the premise that paying attention to what we pay attention to is vital to our sense of wellbeing. Originally brought forward in the 90s, like in writer Howard Rheingold’s book Virtual Communities, numerous psychologists including Nobel prize-winner Daniel Kahneman, h ave s i n c e e s t a b l i s h e d t h e correlation between controlling what we pay attention to and our levels of happiness. “What we attend to is, in a sense, who we are. It sums up thought, feeling, action… everything we do and think, even, you could say, everything we know to be true,” says Manthorpe. Often unnoticed and untracked by us, attention actually is fundamental to our very being because where we give our attention defines our experience of living and how we feel, and thus our happiness levels.

For economist Paul Dolan who worked with Kahneman, “If you are not as happy as you could be, then you must be misallocating your attention...” (Happiness by Design: Finding Pleasure and Purpose in Everyday Life) And it’s true. The internet, and social networks for instance, can be perceived as mirrors that reflect our insecurities. They hold our attention for hours on end while exposing us to idealised versions of other people’s lives, which often leaves us feeling highly inadequate and unhappy. So, according to previous research, by selecting what we pay attention to, by curbing how much time we allocate to activities that bring negative feelings like browsing social networks for example, we should be able to increase our happiness levels. However, with the “deluge” of information, it’s becoming harder to choose, leading many of us to apathy and compliance to the dom i nant on li ne compan ies’ methods. As a possible solution, artificial intelligence and self-driving car companies are looking at ways of reducing choice. But avoiding making decisions about what we should pay attention to altogether may not be what drives us forward out of the cyber void.

It’s hard to know what the future holds for the attention economy. Will it implode? Will we be happier to have computers do the choosing for us? Or, as Rowland Manthorpe jokes and perhaps hopes, maybe we’ll all become Buddhists and learn to master the art of mindfulness, paying attention simply to what is in front of us. Whatever the result, as the success of digital detox holidays for instance, go to show, reducing the attention we pay to the internet increases our sense of self, others, wellbeing, and happiness. So if we don’t know what the long-term impact of a life totally absorbed in cyberspace is yet, at best we know that freeing up attention to share real lasting memories that serve to build real-life relationships as opposed to accumulating likes that are lost in the cyber void, make us happier. And who knows, the next time we take a walk we might even start to look up once in a while and reconnect with our lamp-postplanted surroundings. Pullman Pulse is a series of talks originally launched in October 2015 at Pullman London St Pancras. The next meeting will take place early 2016. hose days are long gone when the worlds of the consumer and the producer, the city dweller and its rural counterpart might be thought of as two separate entities. In today’s world, 1 out of 9 practices urban farming, which adds up to the 800 million gardening enthusiastic city dwellers. And about time, that is! Because in 10 years, 1 out of every 2 people will be living in a city. Which means that we need solutions to counteract – or, should we say outgrow – issues such as traffic congestion, increasing greenhouse gases levels and over exploitation in agricultural areas. From Kinshasa to Paris According to the United Nation's Food and Agriculture Organization (FAO), urban farming plots – also called potager or kitchen gardens – produce 15 times more efficiently than rural holdings. An area of one square meter can provide 20 kg of food a year. Urban vegetable growers spend less on transport, packaging and storage, which reduces the so-called food miles – the distance covered from producer to consumer.

Picture yourself in a city parking lot, in front of the kind of container, which one usually comes across in large harbors. Some scaffolding, some glass and a spark of genius, and you have the UFU, conceived by designer Damien Chivialle. Combining hydroponic cultivation with fish farming, UFU presents a new and revolutionary means of “re-thinking cities, food production and consuming.” The idea is to create a simple system, which is completely independent of culture. This is based on a pond of farm fish, whose excrement is degraded by bacteria into mineral salts. In a greenhouse component above the sewage tank, plant roots are dipped in the enriched water through a closed circuit system, so that the water works as a natural fertilizer. The system implies zero water spill, since the plant-filtered water eventually returns to the fish pond and thus avoids evaporation. And the concept goes further than that: by means of micro-methanization, the sewage basin recovers biogas. This energy source powers the generator providing energy for the heating and circulation of water. The process releases no CO2, as the plants absorb all. As of today, 5 containers nourish 50 people in Brussels, while 24 people in Istanbul yield the harvest of 384 plants as well as an entire farm of delicious, city-bred tilapia fish.

A flourishing example of a newly green city is Kinshasa. In the 10 M Congolese capital, urban farmers have produced 330 000 tons of amaranth, cabbage and tomatoes locally, showing an impressive 122% increase in just 5 years. Traditionally, the lack of building-free space in the city constitutes a major obstacle to farming. In this respect, the concept of an urban potager is ideal for cultivating the many spots of wasted space and on top of buildings. Speaking of which, the vertical plane is where gardening enthusiasm has found an apt platform for the true transformation towards urban farming. Once we start to see kilometer after kilometer of concrete rooftops burgeoning here and there in a big city. This is the case of the imposing organic garden on top of the Pullman Paris Tour Eiffel. The project was launched in March 2014 upon the initiative of the hotel’s Executive Director, René Angoujard. Young startup Topager, which specializes in urban farming and biodiversity, created it as a unique concept in the spirit of sustainable development and social responsibility. As a result, these 650 green m2 of asphalt,

feature a potager garden, but also an orchard, two composters processing 6 tons of organic waste, as well as a henhouse and four beehives, which have already produced 170 kg of honey in 2015. Straight from the restaurant roof to the guest’s dinner plate, this Parisian rooftop farm is now able to supply the Frame, Pullman Paris Tour Eiffel’s brasserie, with honey, eggs, and, not least, a half ton of 100% biodynamically grown fruits and vegetables. Paris is not the only city to cultivate its gaps and roofs by means of urban potagers. For instance, the oyster of the Pullman Tangshan grounds in the East China province of Hebei holds a true pearl; namely the aptly named “happy herb garden,” whose crops furnish the chef’s mouthwatering, aromatic dishes. The Pullman Danang Beach Resort in Vietnam also has a green thumb. In its signature restaurant Epice, clients can dine overlooking the four-year-old potager garden. Some Pullman hotel projects go even further still to pursue these “next-to-nature” ethics: at the Pullman Kuala Lumpur Bangsar, the guests' coffee grounds are used to feed the plants! The stated

objective? To cut down 30% of food waste by 2020. The same with Pullman Bali, where – under the patronage of Franck Loison – a natural herb garden feeds upon the entire hotel’s kitchen compost. And should anything be left, the hotel's own rabbits are in for a treat. The transfer of ecological and sustainability knowledge is equally important. On the other half of the planet, touching the white beaches of Stagno di Notteri in Sardinia, one finds “Orto di Lello,” Pullman Timi Ama Sardegna’s 130 square meter-potager garden, cultivated with love by the gardener Lorenzo. A garden that hosts cooking workshops for the kids at Baboo Club. This emphasis put on learning is shared by the “beekeeper teachers” at the beehives of Pullman Cologne, where 2 beehives are kept on the roof since 2011. Providing both for breakfast and cocktails, the delicate honey supplies the hotel’s restaurants as well as the brand new skyline bar, Lab12. In Aachen, Germany, Executive Director Walter Hubel and his team also joined the growing number of proud urban beekeepers, entrusting the professional maintenance to Werner Beeretz. At Pullman Melbourne in Australia, they also stick to bees. Every two weeks, the beekeepers visit the swarms, thereby harvesting 10 kg of honey annually, of which 2 kg will be enjoyed by the hotel guests. The Green Silicon Valley In the future, we will not look to the horizon for fields, but to the skies, as it will soon be the case in Silicon Valley, near San

Francisco. In September 2015, Uruguayan architect Rafael Viñoly announced his fascinating project: 12 ha of vines and orchards are going to green up the roof of an ageing shopping mall a stone’s throw from the newly installed Apple headquarters. The whole project, which includes housing, business and leisure premises, as well as walking trails for the local residents, is estimated at $3 billion. Not only do these green roofs have an aesthetic purpose, it has also been assessed they will reduce the surrounding atmosphere by up to 2 °c during very hot periods. However, cool garden breezes are not an exclusively rooftop phenomena. In Clapham, a southwest area of London, 2.5 ha of salads, arugula, radishes and broccoli grow 30 meters underground. Still, not a leaf is to be seen by the pedestrians crisscrossing the city surface above, as this garden thrives in a former bunker dating back to WWII. Zero Carbon Food is the codename of this unusual operation, imagined by Steven Dring and Richard Ballard. The idea is simple and efficient. The farm’s hydroponic produce rests on mats and is fed with clean, nutrient-laden water. As for light, LED technology is used to a triple advantage: it provides light, runs on renewable energy from the surface (wind and sun) and raises the temperature to 20 °c. Head in the clouds or underground, these entrepreneurs are convinced that urban farming is our future!

Contemporary Art Goes Over

XXL

MONUMENTAL SCULPTURE, EXTENSIVE LARGE-FORMAT PHOTO SERIES, BULKY CONCEPTUAL INSTALLATIONS… TO ACCOMMODATE THE UNLIMITED CREATIVITY OF TODAY’S GLOBAL ART SCENE, RENOWNED GALLERISTS FROM ALL OVER THE WORLD ARE BUILDING NEW EXHIBITION SPACES THAT MEASURE UP. © Charles Duprat

TEXT ESTELLE BOUTHELOUP

The 1980s white cube is out. For the last three years, the XXL gallery is where it’s at! That is, very large volumes for creation and exhibition: tracts of industrial wasteland, abandoned warehouses, private mansions, ancient as well as modern buildings make up for a new generation of art spaces. Only breaking it is the standard in the search for artistic inspiration and testing grounds upon which to play out new ideas! “This is the kind of space that allows us to take in work with close to no restrictions in terms of size and weight, and which in addition offers artists a possibility to create freely and without constraint,” says Thaddaeus Ropac about his third gallery in a former heating systems factory in the Parisian suburb of Pantin, opened in 2012. Prime examples of this patronage include German artist Anselm Kiefer’s enormous, disintegrating typewriter, The Missing Letter, and American artist James Ronsenquist’s dazzling 14 x 5 m painting, Four New Clear Women—a masterpiece of his current retrospective show, Four Decades 1970–2010. AN EXPERIMENTAL LAB By opening the Until Then gallery in 2015 by the Puces flea market (in the northern Paris suburb of St. Ouen), Olivier Belot and Mélanie Meffrer Rondeau wanted to broaden the range of their gallerist commitment: “We didn’t want an XXL space at all costs. Our priority was to create a proper narrative. By choosing to make no more than 4 or 5 shows a year enables to collaborate extensively with artists, collectors, commissaries and curators.”

Thaddaeus Ropac works with major artists, such as Anselm Kiefer. Pictured here is his exploded typing machine that spits out image rolls (Missing Letter, 2013).

At the same time, the idea was also to have a site, which was out of the ordinary: “Working with artists such as Douglas Gordon and David Claerbout, who have already exhibited

monumental pieces in major museums, we had to respond accordingly. To have a large space is being able to propose a site for research, like an experimental lab, one in which the artist can confront new pieces with the world – whether the work is final or not.” AN EXPERIMENTAL LAB Paris is, of course, not the only place that’s au courant with this trend. Everywhere in the art world, XXL is gaining ground: “It is a market question” stresses Mélanie Meffrer Rondeau. “With more and more capital, we see more and more large-scale production.” And to this end, nothing beats Art Basel! Considered one of the most important annual fairs of contemporary art on a global scale, it provides a unique opportunity to explore the work of well-known artists as well as young talents, represented by distinguished gallery owners such as Gagosian, whose world-wide gallery business encompasses – among others – Hong Kong, or the Miami-based Rubell Family Collection – one of the world’s most important in its field. If it is the galleries that now respond to the artists’ needs, how big might be big enough? “The Saint Ouen space is going to be destroyed soon, and we will then relocate at the end of the year,” says Mélanie Meffrer Rondeau, and adds: “An occasion for Until Then to redirect towards intimacy.” Well well, might the XXL trend be on its way back to L? ime wasn’t built in a day. It took many long years of complex political and economic negotiations and a healthy dose of diplomacy before an agreement was finally reached at the 1884 International Meridian Conference in Washing ton to make Greenwich the Prime Meridian. Prior to that, each country had its own meridian, with local time being deter mined by the sun. A lthough the 20th cent ur y witnessed the adoption of Greenwich Mean Time, or GMT, the term disappeared in 1972, making way for UTC, Universal Time Control or Coordinated Universal Time, now determined by some 400 atomic clocks scattered around the world, the most precise of which is said to be near London… Time moves on and our means of communication have changed beyond all recognition, from the invention of the electrical telegraph by Samuel Morse in 1832 right through to the arrival of the Internet. But the one thing that never changes is precision.

The uber-chic Cellini Dual Time may boast an attractive new brown guilloche dial teamed with a similarly hued alligator leather strap, but it nonetheless retains all the key features of the 2014 model. Connoisseurs will recognize the sub-dial for the second time zone, sitting at 6 o’clock, itself featuring an exquisite rotating day/night indicator disk whose sun and moon replace the 9 o’clock marker, and the domed and fluted double bezel. Polished Everose gold adorns the hands, hour markers and pin buckle clasp as well as the 39 mm case, which houses the COSC chronometer-certified and Rolex Superlative Chronometercertified self-winding mechanical movement, offering a power reserve of approximately 48 hours.

The addition of some brand new functions has in no way made the Radiomir 1940 3 Days GMT any less legible. The seconds are displayed in their own off-center dial sitting at 9 o’clock, which also features the hand for a second time zone as well as a day/night indication. The date is displayed at 3 o’clock, while the 72-hour power reserve display sits at 5 o’clock. The hands, figures and hour markers, all coated with beige Super-LumiNova, offer outstanding clarity at all times of day and night against the black-hued dial adorned with raised vertical stripes. With Panerai this year opting for the vintage look, the 45 mm steel case is reminiscent of the 1940s models originally designed for the Italian Navy’s commandos. As regards the mechanism, the self-winding movement has been specially reworked to incorporate all the new features.

Initially unveiled in 2014 by the Fabrique du Temps Louis Vuitton, the Escale Worldtime is now exploring new horizons, flaunting a navy blue dial that echoes the colour of the alligator leather strap. A celebration of the brand’s aesthetic codes, and notably the way in which its iconic trunks are customized. On the outer disc, which the wearer can spin at will, these tiny designs are interspersed with the names of global capitals. Aligning the home city with the yellow arrow displays the correct time all around the world. The two central discs, which mark the minutes, are in permanent rotation, with the blue/white disk acting as a day/night indicator and the other displaying the numbers and hour markers. The 41 mm case is crafted from titanium, while white gold is used for the bezel, crown, folding clasp and lugs where the strap is attached.

TIME’S UP For the past 80 years, the World Time has been one of Patek Philippe’s most popular complicated wristwatches. Recent changes to certain time zone designations have propelled this model to the realms of benchmark timepiece, toppling previous models from their throne. The newly-reworked watch now exudes more personality than ever, with the hour hand sporting a silhouette evocative of the Southern Cross constellation, and the minute hand featuring a lozenge-shaped contour. The push-piece sitting at 10 o’clock is used to select the time zone, aligning the name of the city in question with the tiny red arrow at 12 o’clock.

Back in the 18th century, Pierre Jaquet-Droz left his Swiss hometown to present his famous automata all around the world, visiting the royal courts of Europe and the Emperors of China, Russia and Japan. For this ardent traveller, the ability to simultaneously display two different time zones was something that made real sense, leading to the creation of the 43 mm Grande Seconde. This iconic timepiece featured two overlapping off-centre dials that formed a figure 8, a number that has since become inextricably linked with the brand. Today, a new self-winding movement enables the local time to be displayed in the upper dial while the reference time – coupled with

" TIME MOVES ON, AND OUR MEANS OF COMMUNICATION HAVE CHANGED BEYOND ALL RECOGNITION SINCE THE INVENTION OF THE TELEGRAPH. BUT THE ONE THING THAT NEVER CHANGES IS PRECISION. Cars down sizing the trend powering through the motor industry TEXT MICHEL HOLTZ

FORCED TO MOVE WITH THE TIMES, CAR MANUFACTURERS ARE NOW REDUCING ENGINE SIZES IN AN EFFORT TO CURB CO2 EMISSIONS. A TASK THEY HAVE SUCCESSFULLY ACCOMPLISHED WITHOUT COMPROMISING ON POWER, AT TIMES EVEN GIVING IT A BOOST. HERE’S HOW.

It’s the word on every motor engineer’s lips. And not just those designing engines for mass-market vehicles. “Downsizing” has swept across the entire automotive industry, from Formula 1 racing cars down to small city runarounds. The change has been driven by a simple observation: reducing an engine’s size simultaneously reduces fuel consumption, in turn reducing pollution – something now governed by legislation for everyday vehicles, whilst for racing cars, motorsport federations draw up the regulations. In the motorsport world, having to reduce engine sizes actually suits the manufacturers, as fewer pit stops mean less wasted time, boosting their chances of winning the race. There’s just one problem. Logic dictates that reducing the size of an engine automatically diminishes its power. Engineers have consequently spent the past decade attempting to achieve the impossible. But their efforts are now paying off, both on the tracks and on our streets.

PULLMANHOTELS.COM

EVERYDAY VEHICLES – MAKING SMALL BEAUTIFUL It is a phenomenon that has swept right across Europe and notably across France. When purchasing a small or medium-sized car, the majority of buyers no longer choose diesel, opting instead for a petrol-powered model. A trend that also applies to the larger, heavier SUVs, such as the Volvo XC90 (see insert). Because whilst dieselpowered cars have always been relatively fuel-efficient (consuming 6 to 7 litres, on average), their new petroldriven counterparts are no longer the fuel-guzzlers they once were, with some of them now even able to lay claims to the fuel-efficiency crown. All thanks to downsizing, of course. The Volkswagen group was the first to open the floodgates approximately ten years ago, on unveiling a 1.4-litre engine. That in itself was no innovation, but this brand new block was capable of delivering a power output of 122 to 180 bhp, depending on the model, whereas similarly sized engines could previously only manage a paltry 75 bhp. The solution was so successful that all the other manufacturers rapidly followed suit, notably Ford (see insert), Renault, Fiat and Peugeot-Citroën. The result? A significant drop in both fuel consumption and CO2 emissions, which have been halved over the past 20 years and continue their downward trend. Downsizing is by no means over. Certain engineers are already hard at work designing tiny two-cylinder engines that are able to run on just two litres per 100 km, without compromising on power. An achievement that is absolutely vital if our cars are to be kept on the roads.

Volvo XC 90 © DR

The veritable power of a Formula 1 racing car may remain a carefully guarded secret to which only team members are privy, but the consensus amongst experts is that the vehicles belonging to the big-name teams (Mercedes, Ferrari, Renault) deliver 750bhp, on average. Several decades ago, these vehicles were powered by huge V12 engines, before being scaled down to the smaller V8s. But since 2014, the same level of power has been achieved with simple V6s, in other words, engines with half the number of cylinders. How? Thanks to “crutches”, the term the motoring industry uses for systems put in place to compensate for an engine’s lack of power. There are two different types of crutch. The most important, the turbo, offers a significant power boost, but a battery and a small electric motor can also come to a lacklustre engine’s rescue. On paper, a state-of-the-art F1 car able to notch-up speeds of 320 km/hour actually works in exactly the same way as a basic Toyota Prius hybrid. Yet contrary to popular belief, racing cars do not serve as guinea pigs for mass-market vehicles. It’s actually quite the opposite. The Japanese model running on a combination of petrol and electric power has in fact been around since 1997, whereas hybrid F1 vehicles first hit the tracks just two years ago. The vehicles involved in France’s iconic 24 heures du Mans did get a slight head start on their Grand Prix counterparts, though, having been powered in this way for the past 6 years. In the motorsport world, "downsizing" isn’t solely restricted to track events, either. The vehicles currently used for the World Rally Championship are fitted with tiny four-cylinder 1600 cm3 engines. Helped by a turbo, they nonetheless manage to clock up a highly respectable 300 bhp. It was, indeed, behind the wheel of one such turbocharged car that Sébastien Loeb drove to success, becoming nine-time world champion.

FORD ECOBOOST

THE AWARD-WINNING ENGINE. It is one of the engines that has powered the spread of the downsizing trend. The 1L Ford Ecoboost engine, with its three slender cylinders, can deliver 100, 125 and 140bhp, and is now fitted as standard right across the brand, from the tiniest Fiesta to the seriously sizeable Mondeo. Its minuscule fuel consumption coupled with exceptional driveability have seen it drive away with the title of International Engine of the Year for three years running.

BECAUSE ONLY 4 CYLINDERS WILL DO Petrol, diesel or hybrid: whichever engine you opt for when buying this Swedish SUV, you can be sure it will come with four cylinders, its predecessor’s 5-cylinder and V8 engines having now been relegated to the past. But the car is no less powerful for it, delivering a punchy 190 to 225 bhp. Volvo really plays a blinder, however, with its T8 hybrid model, which offers 420 bhp, a performance achieved by coupling a small 2-litre engine with a secondary electric engine. The result? Outstanding acceleration for a 2.3 ton colossus and fuel consumption of no more than 9L/100 km, half of what was needed to achieve equivalent power output just a few years ago. Spending less at the petrol pump may be extremely tempting, but it will nonetheless involve an initial outlay of almost 90,000 euros.

bed time table WHAT DOES YOUR BEDSIDE TABLE REVEAL ABOUT YOU? AS A TRENDSETTER DESIGNER, MATHIEU LEHANNEUR HAS BEEN AWARDED MANY PRIZES AROUND THE GLOBE RECOGNIZING HIS WORK PROMOTING USERS’ WELLBEING AS A STEPPING STONE OF THE CREATIVE PROCESS.

As such, he designed the Business Playground by Pullman, areas where performance meets pleasure. And more recently, the Pullman Globe, an iconic piece symbolizing harmony in traveling. www.mathieulehanneur.fr

M AT H I E U LEHANNEUR My watch A Royal Oak Audemars Piguet. I love both the item and the brand. The watch seems carved out of a piece of metal. It is at my temperature when I remove it in the evening and it feels cool when I clasp it back to my wrist in the morning…

My Wedding Ring Designed by my wife, Cécile Fricker, creator of the Cecil brand. It is a golden ring lined in the interior with micro-gold beads on three rows. I take it off every night… I prefer to live my nights as a single person. Our dreams remain our ultimate space of total freedom!

A Flint It is a magnificent two-sided stone. It was given to me and I consider it as the very first designer item. One of the very first items of civilization that made it possible to light a fire, cook, hunt and build.

A Stack of Books I am a compulsive book buyer, both new and old. Right now, the pile features books on Noguchi, Casa Malaparte on Capri, on the Russian space conquest, on a collection of medical instruments and a book on mathematical diagrams in non-Euclidean geometry…

My iPad Pro I only use it to draw sketches. I have two basic tools to work: tracing paper with a pencil (not ideal in a bed) and an iPad with a stylus. I do not draw my dreams, only the last-minute ideas I come up with before I fall asleep. © Ann Ray

travelling

AND ON YOUR BEDSIDE TABLE IN A HOTEL? My BoomBoom A Bluetooth speaker I designed and that I always keep in my travel bag. It is shaped as a sort of technological fruit that plays music, but also records audio conversation in 3D quality.

My Huawei P9 Plus Smartphone I have been the brand’s artistic director for almost two years. The P9 Plus is perfect for travel as it can accommodate two SIM cards: your regular card and one for the country you’re visiting. It also has a dual Leica camera lens. This is the Smartphone of the esthete and the traveler. © Huawei

Penhaligon’s Oil Beard

This is one of my few cosmetic rituals. It softens my beard, my skin and the one of those you kiss. What more could you ask for?
