elcome to another edition of your favourite lifestyle magazine and your escape from the bombardment of election campaigning you can expect throughout May! Certainly this is one of my favourite times of the year as spring begins to move into summer and we have the prospect of some good weather to enjoy - or, at least, that’s what I’m hoping for. All of which means plenty of opportunities to explore this great county of ours – and you’ll find plenty of ideas for things to see and do inside. It’s also, of course, the start of wedding season - and we’ve got plenty of coverage inside whether you’re the happy couple or a guest. In fact we have a 20-page special section that is ideal for those planning their big day. But before we start heading to the nuptials of friends and family, we’re off to exhibit at Kent Vision Live - a major business-to-business event held on May 10 at the Kent Event Centre in Detling. If you’re in a business why not come down and say hello? We’d love to see you. If you’re after a little relaxation, however, why not just put your feet up and enjoy this month’s magazine? Inside, we’ve got a fascinating look at the former Kent schoolboy who ended up being one of Nasa’s foremost astronauts - spending months in space. The story of Michael Foale is a fascinating one. We’ve also got a special feature on Jessica Brown Findlay - a young actress best known for her role in Downton Abbey but now establishing herself as one of Britain’s most respected performers on stage and screen. And that’s in addition to all of our regular great features. What’s more, we’ve also recently published the latest edition of our Best Places To Dine guide - an essential title to help you find some of the county’s top restaurants, cocktail bars and tearooms. Keep a look out for it - you’ll be pleased you did. So enjoy this month’s edition of mmm and remember when the election coverage all gets a little too much, we’re here to provide you with an escape!

For him it was not the staid atmosphere of a lecture theatre or school hall. He spoke to those embarking on their young lives from the International Space Station – some 250km above the Earth’s surface. For the pupils of the plush King’s School in Canterbury, it was the opportunity

to see a man who had once sat where they had, fulfilling his quite remarkable potential on the most awe-inspiring stage. At the time, it was a world first – a former student speaking to his old school while in space. It wasn’t cheap either. Space agency Nasa estimated that the eight minute chat cost around £8,000 a minute. For Foale the chance to field questions from inquisitive youngsters came as something of a light relief midway through a six-month stay on the space station, having reached it via the space shuttle Discovery. His advice to those pondering what route

to take when they left education? “The best thing people can do is pick something they like doing,” he said from space, “and work at that as well as they possibly can because that way they will always be motivated and get the best out of life”. Aged 47 at the time of the live link-up, Foale had been born in Lincolnshire in 1957 and raised in Cambridge. His British father and American mother then sent him to King’s from 1970 until he took his A-levels in 1974. Even at that age he knew he wanted to reach for the stars. Recalling one of his many trips to the US to see his relatives, he recalls the moment when he knew his life’s ambition lay well above everyone else’s. “My earliest space-related memory was at the age of about six-years-old,” he recalls, “I went to the World State Fair in Minneapolis, with my mum and grandma, American grandma, and I saw John Glenn’s [the first American to orbit the Earth] capsule there. It was back in the 60s, early 60s, and it was all blackened and it looked charred. One person only could fit in that capsule and they said that it had been CELEBRITY FEATURE
in space. And I thought, wow I’d like to do that.” Now 60 and retired after a 30 year career with Nasa, Foale explained: “To get ready to become an astronaut, you need to study hard in school; maths and science – physics. “I thought quite hard about what it would take to be either a test pilot astronaut or a scientist astronaut. I chose the science route and did well on my exams. I also did the outdoor things like scuba diving, and I learned to fly and I followed all of the interests that go around space flight. I put those together as well, to make myself a good candidate when I applied to Nasa. “But first and foremost, any budding astronaut has to decide if they’re really into space. They should read as much as they can about space travel and learn about space flying history. “Having understood all the things that go into space exploration they should then think about what they would like to do in space, because you can’t do everything. You can’t do all the space walks, all the experiments, fly in all the spacecraft. You also have to decide somewhat how long you want to be in space. Is it alright for you

to be away from home for six months? On top of all this, learning Russian or Chinese is a great advantage in the industry.” Having left Canterbury, he went to Cambridge University – one of his contemporaries, a certain Stephen Fry, would tease him for wanting to go into space and graduated with first class honours in nature sciences. A doctorate in laboratory astrophysics followed. He explained: “I made sure I got my A Levels, got into university and then got into a technical job in space navigation. “I then learnt to fly using gliders because it was a cheaper way to get a pilot’s licence. I also led a scientific diving exhibition, and took part in the excavation of the Mary Rose. “After these I was qualified enough to be selected for the space programme, and undergo astronaut training. This involved learning how spacecraft are constructed, how they can be operated by the astronauts and what to do if things go wrong. That was the main focus of astronaut training. “The basic training lasts three or four years before you get assigned to a flight, and then the flight training lasts a year if you’re going on a short flight. If you’re going on a long flight like the Mir or the space station, then the flight specific training lasts 18 months to two years.” It was not all plain sailing, however. In 1980, he was driving a car in Yugoslavia when a truck veered across the road and crashed into him. It killed his girlfriend and brother who were both in the car at the time. Courtesy of his dual nationality, he moved to Houston and by 1983 had joined Nasa, working his way up through the ranks. After twice being rejected for the astronaut programme, in 1987 he was finally accepted. Five years later, he was

on his first space shuttle mission in 1992. Then again in 1993 and 1995. Two years later he was selected for an extended mission aboard the Russian Mir space station when he would go on to spend some four months. By the time his career came to an end in 2013, he had spent 375 days in space during six space shuttle missions and extended stays aboard two space stations. He’d spent 145 aboard in 1997 and 194 days aboard the International Space Station as commander of Expedition 8 from October 2003 to April 2004. He also conducted four spacewalks over his Nasa career totalling almost 23 hours. In one memorable journey in 1999, he spent an incredible eight hours on a space walk while fixing the Hubble space telescope.Even after his days of riding space craft were over - his long stay on the ISS was his last trip into space - he held a host of other positions within the US space agency, developing an enviable reputation.Just before calling time on his 26-year Nasa career, he was involved in support of the Soyuz and ISS operations as well as space station spacewalk activity and spacesuit development. One a more local level, he was awarded an honorary doctor of science degree from the University of Kent in 2000 and given an OBE in 2004. There’s a house named after him at the Folkestone Academy and in Cambridge there is a street named after him. Earlier this year, he was inducted into the United States Astronaut Hall of Fame. Today he spends much of his time touring to speak and inspire students. Married, he has two children. Just try following in your dad’s footsteps when he was one of the world’s great space men. mmm

watches for her Eccentrica
Daring, self-confident, entirely new and yet giving the impression it has always been part of the de Grisogono family, the new Eccentrica collection opens up unexplored creative territory. By imagining an anti-conformist design expressed through a succession of nested circles with varying diameters and centres, Fawaz Gruosi has found the key to a perfectly harmonious geometrical aesthetic. It creates an original visual balance, like a hymn to roundness, in which diamonds trace mesmerising depth effects, while the overall subtly asymmetrical structure extends through to the lugs. The large Arabic numerals on the dial tell the story of time with appealing opulence. A crown set with a black diamond and a galuchat-dotted strap set the perfectly elegant finishing touches to a watch bearing the inimitable identity codes of the Maison de Grisogono that naturally predestine it for success.
Lvcea Moon Phases
Placing women at the heart of its concerns, Bvlgari plays with contrasts and allies light and moon by revealing the various phases of the mysterious heavenly body on its Lvcea watch. The mother-of-pearl dial reveals a sky alternately unveiling the new moon, the first quarter, the full moon and the last quarter. In a blend of poetry and horological precision, the lunar cycle calculation is orchestrated by the automatic BVL 210 calibre, decorated and finished in the finest Swiss traditions. The new Lvcea moon phases is the ultimate temptation, interpreted in various compositions staging fascinating encounters between the ‘light watch’ and the night star. Intense blue, bright red or plum coloured: the sky around which the moon performs its steady rotations echoes the shade of the strap, while the pink or white gold case is interpreted in versions with or without diamonds, as do the lugs.
T-Wave
Inspired by the graceful dance of a ribbon swirling in the wind, the T-Wave radiates a delightfully light and elegant design. The rounded curves of its case and lugs perfectly hug the lines of the flowing silk. The dial features a teardrop index set with white or black mother-of-pearl, while the dainty skeletonised hands accentuate the pure nature of the timepiece. Available with a dial pared down to its simplest expression or swept over by a discreet flurry of ribbons revealing the shimmering mother-of-pearl beneath, the Tissot T-Wave play with various glamorous touches, alternately focusing on absolute purity or evoking a piece of jewellery. Polished or diamond-set, in steel or pink PVD-treated versions, it is suitable for wear on any occasion: it makes a perfectly chic accessory suitable for every occasion, whether adding a refined touch to a daytime outfit, as well as complimenting an evening gown for a special occasion.

watches for him Calvin Klein minimal
Calvin Klein revisits a grand classic. A vintage-inspired icon is now reinterpreted through an authentic anthem to restrained purity, aptly named Calvin Klein minimal. The understated graphic lines of the dial form a perfectly controlled design accentuated by the extremely slim bezel framing the case. This new unisex model comes in two sizes available in various colour variations, either playing with contrasts or taking a tone-on-tone approach. The case comes in stainless steel, yellow gold PVD, pink gold PVD or black PVD-finished variations, teamed with a matching Milanese mesh bracelet or a black leather strap. The hours and minutes tick off the time against a blue, silver-toned or black dial background.
U20 Ultra-Skeleton Tourbillon
An authentic haute horlogerie sculpture, the U20 Ultra-Skeleton Tourbillon is designed in such a way as to provide a 3D view of its flying movement from any angle. Taking the quest for transparency to its ultimate limits, the Angelus showcases a wealth of skills dedicated to optimising each element and preserving only essential elements, while maintaining the rigidity and sturdiness of the entirely open-worked movement. Built on a sapphire main plate, the calibre appears to be literally floating inside the carbon fibre case, which also displays fascinating feats. Fitted with chamfered titanium lugs reflecting the light, it dispenses with a bezel and is instead topped by an imposing sapphire crystal dome that magnificently highlights the overall transparency and the 3D architecture. 18-piece limited edition.
Excellence Regulator Power Reserve
Louis Erard plays the magician by transforming one of the earliest instruments of precision timekeeping into an ‘in-house’ complication driven by an exclusive module: the regulator with power reserve. Combined with a power-reserve display, this sophisticated mechanism elegantly expresses purity and refinement through a timepiece mingling a contemporary spirit with a classic aesthetic enabling it to find its way through successive eras while losing nothing of its appeal: Excellence Regulator with Power Reserve. Enthroned at the centre of the silver-toned guilloché dial, the regulator draws all eyes, while the hours and seconds tick by on two separate counters at 12 and 6 o’clock respectively. Perfecting the visual balance of the dial design, the retrograde powerreserve indicator appears at 9 o’clock, while a black leather strap sets the ideal finishing touch. ONES TO WATCH

The Groom
some might argue that the groom plays an imporant role in the wedding... here at mmm we have outlined some of the crucial things that the groom should be thinking about before the big day, and after it.
The Proposal G
uys only get one shot at a marriage proposal, so thinking ahead and having a plan beats spontaneity hands-down. One of the biggest pitfalls is doing it off the cuff, with no contingency plan… Think of all the things that could go wrong, from the traffic to the weather. A proposal doesn’t have to be big and elaborate but it needs to be personal. And we think some of the best proposals involve couples living out a fantasy, like a trip to Paris. And even if you can’t afford to get away, you could transform your home into a perfectly romantic setting for a proposal. We also believe in an element of surprise. Keep every single person from friends to family to the taxi driver on a need-to-know basis. If you’re going to New York, for
The Wedding F
orget bridezilla taking charge: grooms are involved in all aspects of planning these days. The Groom tends to be responsible for the business side of the planning, like negotiating with suppliers and confirming costs. We suggest you choose the best man and ushers as soon as possible. And don’t forget that you’ll need
example, and everyone expects you to get engaged, set up a decoy. Book a show or a great restaurant which is going to be special - then propose the night or day before. If you want to preserve the surprise, propose with a place-keeper ring. The ring could be anything from a candy ring to an obvious fake to make her laugh, but she insists that you have to have some kind of ring to put on her finger when you propose. A proposal is an exciting and emotional moment, so we suggest keeping what you’re going to say simple, as five minute speech can often ruin the element of surprise. Even if you memorise a script, when you get down on one knee it can slide out of your head, so just focus on three important things you want to say instead.
to take their suits into account when setting a budget. Ideally, write your speech at least a week before the big day as it’s nice to mention some of the experience of planning the wedding without any last-minute panic. Make it personal with stories of the two of you and only tell funny stories you’ll both appreciate! a
48

t’s important to thank people in the speech, mainly the bridesmaids, ushers, best man, parents for their support and the guests for sharing the day with you. If some have travelled from a long distance, single them out and thank them - and be sure to say how beautiful your bride looks! When it comes to the final practicalities, the groom can take on plenty more responsibility. You can ensure name cards and decorations get to the venue, for example, and make sure guests are in the right place at the right time with the help of your ushers.
The Honeymoon T
raditionally the groom’s responsibility, organising the honeymoon is a great way to treat your new wife. You know your bride better than anyone, so use your common sense when choosing your honeymoon. For example, someone who can’t live without hair straighteners isn’t going to enjoy camping in the Serengeti! If you’re worried about making the wrong decision, we suggest you ask her to draw up a list of 10 ‘dream’ and 10 ‘nightmare’ destinations to get a better idea. Start planning the major arrangements as early as possible to avoid paying over the odds or missing out on your dream hotel - and don’t forget to include the honeymoon in the wedding budget: it’s an expensive time so choose a honeymoon that allows you to budget
easily. All-inclusive resorts are a great option and many offer airport transfers, watersports equipment and various activities. See page 58 for honeymoon inspiration. When it comes to practicalities, check you are travelling at the right time of year: A beach holiday won’t be fun if the weather is cold and wet - and don’t forget to factor in flights and jetlag too: if you’ve only got a week, Australia and Asia probably aren’t ideal. Allow a day or so to recover on your return home. If the hotel is aware it’s your honeymoon, they’re sure to make the experience extra special, but arrange a few special events yourself, from a private candlelit dinner to a bubble bath with petals and champagne. Saving some sentimental souvenirs - even just pressing a flower you gave her during the honeymoon - is also a really nice touch.

Transport
with all the excitement over the dress, flowers, venue, and of course the stress of arranging the wedding breakfast seating plan, often a crucial piece of the wedding puzzle gets overlooked: getting to your reception
T
he size of your wedding party will be the first factor you’ll need to consider when picking out your vehicle of choice. If your wedding party is around the size of 5-8 people, you’ll have a lot more vehicle choices to transport your wedding party from the ceremony to the reception. If you have a large wedding party with more than 10 people, you might need to start thinking creatively about getting everyone to the reception. Many limousine companies offer extra long vehicles, but your wedding party might not even fit in those if there’s more than 14 or 15 people. Every wedding isn’t the same, so
there’s no reason to limit your options because it’s not what other people do. If you have a wedding party of more than 15 people, you’ll want to consider one of the newest trends in wedding transportation - the party bus. The party busses normally hold up to 30 people, so if you have some friends or family who need a lift to the reception, then this option can be a great way to squeeze in a few bottles of bubbly before the reception. If you want to provide transportation for more than 30 people, you may want to consider hiring a guest shuttle to get your wedding party to your reception. a

Continued from page 53
f your wedding party is on the smaller size, you have an incredible opportunity to really separate your wedding from others. You can create a unique wedding experience by finding a unique vehicle to transport you throughout the night. If you want to have a flashy ride, consider renting a luxury sports car such as a Lamborghini, McLaren, Ferrari or Tesla. These cool rides will have everyone doing double takes as they see you pass them after you take your vows. You might want a flashy ride for your
wedding day, but if you’re looking to add a touch of class to the wedding, a classic livery vehicle is the perfect match. Many companies offer luxury rides in classic cars including Hudsons, Bentleys and Chevys. These cars will grab everyone’s attention when you’re driving down the road, headed to your reception or even taking post-wedding photos in front of them.
Entertainment
ENTERTAINMENT IS CENTRAL TO ANY WEDDING CELEBRATION. IT KEEPS THE GUESTS ENGAGED WHILST YOU AND YOUR PARTNER ARE BUSY MEETING AND GREETING, AND PROVIDES GREAT MEMORIES OF YOUR SPECIAL DAY.
Ceremony L
Nicola Veal
et’s start with the ceremony. As the guests are waiting for the bride to arrive it can often feel a little tense (just ask the groom!) and stuffy, so some live musical entertainment here can really help to lift the mood, lighten the atmosphere and setting a tone for the rest of the day. There are different options depending on your musical preference and here are three of the most popular: Choir - to add the WOW factor. Acoustic Guitarist & Singer - to create a more contemporary feel. Harpist or String Quartet - for the romantic and classical element.
Mr Sketchum
Mr Sketchum (Alfie Deliss) is the man at the party with a clipboard - he draws laughter and smiles from guests (literally) by handing out appealing as well as funny caricatures absolutely free at parties and weddings.Partygoers get involved “in the spotlight” as the subjects, as sardonic commentators, and as spectators, eyes on stalks watching the likenesses take shape, and a few convivial repartee-assisted penstrokes later are rewarded with their caricatures - unique souvenirs of the occasion - which they helped create! t: 07719 262736 e: alfie@sketchum.co.uk w: www.sketchum.co.uk/kent.html
Chris Harding
Nicola Veal is a harpist and music teacher based in the South East of England, playing regularly at many weddings and functions in the Kent, Sussex and Surrey area. Drinks Reception I
f you think about it, this is where the party actually starts. You did the main deed of the day and now it’s time to start celebrating being married with your family and friends. There’s just a matter of your photographs though. You’ve spent a lot of time and money scrubbing up to look the best you ever have and you’ll want the pictures to prove it. But who’s going to get the party started and look after your guests whilst you’re not there? Cue some super entertainment options to the rescue: Caricaturist - also provides a great memento for your guests to take away. Saxophonist - Jazz standards or a Café Del Mar vibe - it’s up to you and either way it’s bound to get your guests’ feet taping and hips swaying. Magician - a professional and contemporary magician (think Dynamo) will leave your guests shocked and amazed.
From huge rooms of 2000 down to intimate dinner parties for 20, award-winning magician Chris Harding always amazes and leaves a long-lasting impression that makes his magic unforgettable and so therefore will your event be! Wedding Breakfast Y
ou may think that the food and speeches are entertainment enough during this time and absolutely, if you’ve booked a 5 star gourmet delight for your guests to feast upon and the groom and best man are confident and ready to entertain with their hilarious anecdotes and imaginative speeches then you could be right. If however, you have a nervous groom who hates public speaking, or you’re worried about the table plan and whether your guests will get on then the right entertainment can be a huge help: Comedy Lookalikes - there’s lots of options here from Del Boy to David Brent and they can include interrupting and helping with the speeches to stand up comedy routines. Surprise Singing Waiters - a real show stopper that will produce both laughter and tears. You can choose the style and theme of music from Mariachi to Classical and even Pop or Show tunes. Pianist - they have huge repertoires to suit all tastes and will provide the perfect backdrop to proceedings.
Evening Reception T
his is a really important part of the day. Not only is it a chance for everyone to let their hair down, the guys to take their jackets off and if it’s going really well wrap their ties around their heads, it’s also the time when you’ll have the most amount of guests and also the last thing everyone will remember from

Steve Christie
Steve Christie is a versatile and talented pianist, and has been playing piano professionally for weddings, parties, corporate events and recording sessions throughout the United Kingdom since 1996. He can provide support as to the type of music you may be looking for to suit the mood of your occasion, and is able to create the perfect atmosphere to enhance your event, and to “read” the clientelle/audience, enabling the perfect balance of music, soft, smooth, jazz, classical, pop etc. Steve is able to play arrangements of absolutely any piece, even if there is no sheet music available! your big day, so here are some ideas to help make it count: A Live Band - a great band will provide energy, a focal point and have your guests throwing shapes they didn’t know existed. Ice Luge - get the drinks flowing and provide a great photo opportunity and talking point. Fire Show - amaze your guests with a fantastic alternative to fireworks, which they will have seen hundreds of times before.
Ice Agency
Ice Agency has now taken over ice carving in Kent from Ice Work and has a large ice store and carving premises in Kent, which has allowed them to increase their services in what is commonly known as “The Garden of England”. Asian chicken slaw
Recipe from: Tudor Park Marriott Hotel & Country Club Ashford Road, Bearsted, Maidstone, Kent, ME14 4NQ 01622 734334 @tudorPark www.marriotttudorpark.co.uk
Ingredients 150g egg noodles 2 carrots Handful of mangetout 1 red onion 4 oyster mushrooms 1 red chilli Bunch of fresh coriander, chopped 2 skinless, boneless chicken breasts 250ml milk 250g fresh breadcrumbs Vegetable oil for shallow frying Salt and pepper For the dressing: 1 tbsp sunflower oil 1 tbsp sweet chilli sauce 1 tbsp dark soy sauce Squeeze of one lime 1 tsp sesame oil
METHOD • First soak the egg noodles in hot water for about 10 minutes. Prepare the vegetables by peeling the carrots and slicing into fine sticks – or use a julienne peeler. Slice the mangetout in half lengthways. • Slice the onion and mushrooms. Deseed the chilli and finely chop. • Butterfly the chicken breasts (see chef’s tip) and season with salt and pepper. Dip each one into milk, then into the breadcrumbs. • Heat the oil in a frying pan and fry the chicken breasts for a few minutes each side to seal the outside. Place in a preheated oven, 160°C, for seven to ten minutes until cooked. Keep warm. • Mix the dressing ingredients together by placing in a screw topped jar and giving it a shake. If you are eating this dish hot, then stir-fry the vegetables in a wok or large frying pan for a few minutes and stir in the noodles.
• Pour over the dressing ingredients and fry for a further two minutes. Stir in the fresh coriander and then divide between two plates. Slice the chicken into thick strips and serve on top. • If serving cold as a salad, simply combine the finely chopped vegetables and the egg noodles. Pour over the dressing ingredients and toss. Serve cold with the warm chicken.

Butterflying a chicken breast gives an even fillet and speeds up cooking time. It is very easy to do. Simply place the chicken breast on a chopping board and place your hand flat on top. Using a sharp knife, slice into the chicken breast sideways, starting at the thicker end and ending at the thin point. Be careful not to cut all the way through to the other side. Then open out the two halves to reveal an even fillet.

meatball and escarole soup Ingredients 1 lb ground pork 1/4 cup grated Parmigiano Regianno cheese plus more for serving 1/4 cup finely chopped fresh parsley 1/4 fresh breadcrumbs 1 large egg, slightly beaten 1/2 teaspoon onion powder 1/4 teaspoon garlic powder 1/2 teaspoon kosher salt 1/4 teaspoon ground black pepper 1/3 cup finely diced onion 1/2 cup finely chopped carrots 1 garlic clove, minced or grated 3 tbsp extra virgin olive oil, divided 1 head fresh escarole, washed, chopped and cut into bite sized pieces 8 cups chicken broth
METHOD • Place the pork, cheese, parsley, breadcrumbs, egg, onion powder, garlic powder and salt and pepper in a large bowl and gently mix all ingredients until blended. • Line a rimmed sheet pan with wax paper or plastic wrap and form the meat mixture into small meatballs, about a heaped tablespoon each. You should have about 20 meatballs. Place on the sheet and chill in the fridge for about 30 minutes. • Heat a large heavy pot over medium heat. Spray with some nonstick cooking spray and add a tablespoon of olive oil. • Place half the meatballs in the oil and gently sauté until golden brown. • Remove to a plate, add another
tablespoon of olive oil, and add the other meatballs to brown the same way. • Remove the meatballs and do not wipe out the pot. • Add the remaining olive oil to the pot and add the carrots and onions, gently sautéing for about five minutes. • Add the garlic and cook for about a minute more. • Add the escarole and cook, turning the greens, until they collapse a little. Add the chicken broth and gently return meatballs to the pot. • Give the soup a stir, bring to a simmer, cover and cook on low for about 20 minutes, until the meatballs are cooked through. • Serve with additional grated Parmigiano cheese.

Crab Cakes for summer Now the longer, warmer days are here, try making your own crab cakes perfect for alfresco dining. Tudor Park’s new senior sous chef, Mervin Herfort, has a simple recipe that has the wow factor.
Recipe from: Tudor Park Marriott Hotel & Country Club Ashford Road, Bearsted, Maidstone, Kent, ME14 4NQ 01622 734334 @tudorPark www.marriotttudorpark.co.uk
INGREDIENTS Serves 4 for light lunch or starter 300g white crabmeat 1 tab vegetable oil 1 red pepper, deseeded and finely diced 1 shallot, finely diced 1 clove of garlic, crushed Small handful coriander, chopped 2 level tablespoons of mayonnaise One tablespoon crème fraiche 5 chive leaves, chopped Pinch of Old Bay seasoning* one slice of bread, crusts removed knob of butter and 1 tab vegetable oil for frying DELICIOUS RECIPES
Crab cake served here with pan-seared trout, a saffron shallot confit, brie croquette and cauliflower puree.
METHOD • Heat the oil in a small frying pan and gently sauté the red pepper, shallot and garlic until soft but colourless, then leave to cool. • Halve the slice of bread and turn one half into breadcrumbs in the food processor. Cut the remaining half into tiny cubes. • Flake the crab meat into a bowl and stir in the cooked vegetables, mayonnaise, crème fraiche, coriander, chives and Old Bay seasoning. *If you can’t find Old Bay seasoning, mix equal quantities of mace, mustard powder, cayenne pepper, black pepper, paprika and celery salt together and add a pinch of this to the crab mix. Keep in an airtight container to use in the future. • Stir in half the breadcrumbs and half the diced bread. Reserve
the rest. • First, make a small practice cake to test the mixture will hold together during the cooking process. Shape a small amount of crab mixture into a round disc. Heat the oil and butter in a frying pan and sear the crab cake a few minutes each side until golden. Place on a baking tray and cook for a further 5 minutes in a preheated oven, 180C. If the mixture doesn’t collapse, shape the remaining mixture into small patties about 5cm diameter. Sear them both sides in the frying pan and finish off in the oven for five minutes. • If the test mixture collapses, add a sprinkle of the reserved breadcrumbs and cubes to the mixture and combine thoroughly. This will help hold the cakes together.
INGREDIENTS 5 Waitrose large oranges 2 tbsp extra virgin olive oil ½ tsp ground cinnamon 1 tsp wholegrain mustard 250g pack chicory, leaves separated 260g soft goat’s cheese, trimmed and cut into small pieces 25g hazelnuts, toasted and roughly chopped 15g fresh mint, chopped
METHOD • Grate the zest and squeeze the juice from one of the oranges. Whisk together with the oil, cinnamon and mustard to make a dressing. • Cut away all the skin and pith from the remaining oranges and slice each one horizontally into rounds. • Arrange the chicory leaves, orange slices and goat’s cheese on a platter, and drizzle over the dressing. Scatter with the hazelnuts and mint, and serve with crusty bread.

HEALTH BENEFITS
that come from eating miso
BUILDING STRONG BONES
Miso is a great natural source of vitamin K2, which helps calcium to be stored in our bones. Now, you may think you get plenty of vitamin K from green vegetables, but they contain vitamin K1, which is not thought to be as effective for this purpose although it does have other important roles. Miso also provides the minerals manganese and phosphorus, which supports bone strength too.
A SOURCE OF PROTEIN FOR VEGANS/VEGETARIANS
Clearspring’s Brown Rice Miso (RRP £4.49, www. clearspring.co.uk) can be a helpful source of protein – especially for vegans and vegetarians, who may be more likely to fall short in this nutrient. It’s worth noting that the protein in fermented forms of soya beans – such as that found in miso – can be more easily digested than unfermented forms such as tofu and other beans and pulses. So miso is worth including in your diet even if you feel you get lots of protein from these other sources.
HORMONE BALANCING
The natural phytoestrogens found in soya foods may be beneficial for women’s health and hormone balance – especially from around the time of menopause onwards. The greatest benefits are linked with eating traditional fermented forms of soya such as miso – as Japanese women do – rather than unfermented forms such as tofu or soya milk.
ENERGY
Miso provides energy-supporting B vitamins, manganese, copper and phosphorus. All of these nutrients play a role in converting the food we eat into energy.
HEART HEALTH
We’ve seen that vitamin K2 in miso is good for our bones. But the same nutrient is helpful for our heart and blood vessels too. While it helps calcium to be stored in bones, it helps to prevent calcium being stored in the arteries where it could cause hardening and stiffening, helping to keep them flexible.
GOOD FOR YOUR GUT
Unpasteurised miso in particular can be great for our digestive health. It’s a natural source of friendly bacteria, which plays many vital roles in gut health, including breaking down and absorbing nutrients and helping to keep the ‘bad’ bugs at bay. For the greatest benefits, make sure you go for unpasteurised miso, as the pasteurised versions are heat-treated and will contain only minimal – if any – beneficial bacteria.
IMMUNITY
We’ve seen that unpasteurised miso – that contains natural ‘friendly’ bacteria – may support our gut and digestion. But our immune system may benefit from this effect too. This is because there are lots of immune cells and tissues found in and around the gut. The friendly bacteria in the gut are thought to help ‘train’ these immune cells to recognise which substances are safe and which are unsafe, and respond appropriately.

WHY YOU SHOULD BE going mad for matcha
ENERGY-BOOSTING
For an energy boost without the over-stimulating effect of coffee, try Clearspring’s Organic Matcha Shot. While matcha does contain some caffeine, its levels are lower – and it also lacks some of the other stimulating substances in coffee that can give us the jitters!
CALM, CONCENTRATION AND FOCUS
We may also reach for a cup of coffee to help us feel more alert and achieve more. But if we’re stressed, coffee and other stimulants can just make us feel more wired and anxious and less able to focus. In contrast, green tea may help us to feel more alert and calm at the same time. This is thought to be due to an amino acid called L-theanine in green tea. L-theanine has been found to increase alpha waves in the brain, helping to relax the mind without causing drowsiness1. And here’s the best news: matcha green tea in particular is said to have a high percentage of relaxing theanine2.
ANTIOXIDANT POWER!
Green teas are high in polyphenols such as catechins, which are associated with antioxidant and anti-ageing benefits. And relative to other green teas, matcha is thought to contain much higher levels of these substances. One study, for example, found 137 times higher levels of epigallocatechin gallate (EGCG – a type of catechin) in matcha than a standard China green tea!
SUPPORTING WEIGHT LOSS If you’re trying to slim down for summer, Matcha may be your new best friend! It’s been found that green tea may increase fat burning4,5, reduce fat absorption from food5, and may even help to control appetite6.
PROTECTIVE AND ANTI-AGEING BENEFITS FOR THE SKIN
Thanks to the catechins it contains, matcha may be protective for our skin too. In a trial on 60 women, those who drank a high-catechin green tea every day showed reduced skin redness in response to UV light (to mimic sunlight) compared to those who did not consume the green tea. They also showed improvements in skin elasticity and reduced skin roughness compared to the non-tea drinkers.7 Although studies have not yet been carried out on matcha specifically, its high content of catechins indicates that it could be particularly beneficial for our skin!
Ten weight loss tricks
Struggling to lose those extra few pounds? You could be missing out on these weird but wonderful weight loss tricks. Our experts share their top tips for shifting those stubborn pounds.
Smell yourself slimmer
1
To help stop you from raiding the biscuit tin, try the new lipstick-sized anti-snacking device, Slissie, (from £24.99, Slissie.co.uk). Slissie delivers appetite-suppressing flavourings that instantly help you resist snack temptation. Once the flavours that contain aromas are detected by your taste buds and olfactory receptors, messages are sent to the appetite control centres of the brain leaving users feeling their appetite has been satisfied. At the press of a button you can taste flavours such as, chocolate, vanilla and mint, making your brain think you’ve had that sweet treat without any nasty sugars being involved! Psychologist Corrine Sweet explains, “It is entirely possible to retrain yourself to break old, bad habits and adopt new, positive ones, to help you curb your food cravings. You need to identify your behaviours and make a decision to stop them. Then replace them with a positive strategy for curbing old habit patterns. This may take effort and time, as we often hang on to what is familiar, but if you stick to it, you will soon be reaping the rewards for a little thoughtful decision-making, retraining and application of willpower – with a little help from your Slissie friend.”
Sneak in some moves at your desk
“To keep yourself feeling fit and healthy, why not set yourself the goal of doing 5 minutes Pilates at your desk whenever you get a break? If you’ve time for coffee, you’ve time for Pilates! Even though you are only doing 5 minutes, you need to focus, and do the exercises mindfully. Then try to retain what you’ve learnt with you as you move around the office,” explains Lynne Robinson, Founder of Body Control Pilates, and author of Pilates For Life.

Make those windows sparkle
Finding it hard to burn calories, when you feel as though there are so many chores to do around the house? Try embracing the housework, as this can in fact help you burn calories – win, win! If you clean the windows in a circular motion you can expect to sweat off around 125 calories an hour, according to Muscle Food.
4
Check your self out when you’re eating
Hang a mirror up opposite you when you’re eating as seeing your reflection appears to cut down on how much munching you do by a third, according to a study. It seems having to look at yourself helps to remind you of your fitness goals, helping you resist delving in for seconds.

Instagram your meal
5 6
Taking a snap of your meal cannot only make others envious of your feed, but it may also benefit those ‘love handles.’ “Researchers suggest that taking a photograph of food just before you eat, concentrates the mind to eat not only healthier foods but also less of it. The photographs seemed to deter binges,” explains Dr Marilyn Glenville, the UK’s leading Nutritionist, author of Natural Alternatives to Sugar (www.marilynglenville.com).
Drink tomato juice
Can’t decide what cold beverage you fancy? Research suggests that tomato juice can help trim your waistline, even without making any other changes to your lifestyle.
Give up guilt
7
Eat with a man
Whether you’re a man or a woman research suggests that eating with a male could help you eat less. [5] The study found that women tended to purchase fewer calories when with men as compared to when they’re with women.
8
For a healthy relationship with food, start by not associating them with being ‘good’ or ‘bad.’ “People talk about themselves in terms of being ‘good’ or ‘bad’ according to how habitually they eat or drink things, or whether they snack. ‘I’ve been bad today’, might mean someone has had a chocolate bar or muffin with their coffee. Or ‘I’ve been good’ can mean they have abstained from the biscuit round in the tearoom. We also tend to pass their language, and the concept, on to our children, making them feel ‘bad’ for having an ice cream and ‘good’ for eating broccoli. Often this creates stress and complex feelings, which can actually accentuate and increase the behaviour rather than curb it,” explains Psychologist, Corinne Sweet.
9 Have a warm soak
Don’t fancy slogging it out on the treadmill today? Mix up your calorie burning techniques by having a soak in a hot bath. Research suggests that relaxing in the tub increases energy expenditure levels by 80 per cent, which can burn 126 calories per hour. Who knew that burning calories could be so relaxing?
Treat Yourself
10
If you can’t resist the odd cheat meal, such as a burger, then don’t deprive yourself completely on every occasion. Instead, where possible, give it a healthier boost. “Add a simple green salad as a side dish for a tasty yet healthier meal. I wouldn’t order a burger that contained too much cheese and mayo, as these can up the calories. Always ask for any sauces to be served on the side so you have control over the amount you use. If you must go for fries, opt for the sweet potato fries, which don’t affect your blood sugar levels as much. This will help avoid that energy slump some people feel after a meal,” explains Shona Wilkinson, nutritionist at SuperfoodUK.com FITNESS TIPS

Jessica’s quick-step from Downton to liberation
Her dreams of dance dashed, Jessica Brown Findlay has gone on to become one of the nation’s best loved actresses
82 mmm
J
essica Brown Findley has come a long way since being part of the original line-up in period drama extraordinaire Downton Abbey. But some things remain
the same. Her character of Lady Sybil was nothing if not head strong – a young idealistic woman who never felt a woman’s place was out of the frontline. And it’s fair to say that Jessica is cut from the same basic cloth. Certainly her roles, since her character Lady Sybil was killed off, have been strongly slanted towards the empowering female character. “So often you read a script and the women are just sitting there reading

a book or doing a tapestry,” she reflects, “but these women go out and do something. There is an aspect of fearlessness to them.” Now 27, she is only too aware that the public still associate her with Downton. A series she deliberately left five years ago, at the very peak of its popularity, in order to pursue her career ambitions. “It is something of a double-edge sword,” she admits. “It’s been years since I left but every time I read something about me I’m described as Downton’s Jessica Brown Findlay. It’s like I’m owned by it. “But it was great to be a part of something that people love so much,” she says, although admits she hates the

corsets she used to be squeezed into. “It was such an extraordinary, once-ina-lifetime experience. Plus I made some wonderful, lifelong friends.” She has remained close to her Downton ‘sister’ Laura Carmichael, who played Lady Edith, and Lily James, the feisty Lady Rose. “I don’t regret my decision to leave,” she remembers. “I kind of had a gut feeling. I had come to the end of my contract and I was so hungry to do other things. I had had a few jobs in between the filming of the first and second series and then I had had to turn down a job I got because I was filming the third series, so it felt right.” But her focus has been on other things since then. Currently she can be seen in Harlots -
a drama about the sex industry in 18th century London. It’s raunchy stuff, but with females in all the key production roles. “It’s a feminist piece of work about sex in all its many forms,” she says. “Just how volatile that world was for these women was something that felt really relevant. “Women are still fighting for rights over their own bodies, for equality, and for a world in which these transactions – especially in the sex industry – can be safe. “London at the time was going through such a huge economic boom, and it was in some ways an incredibly liberal place. “And yet the protection and laws weren’t there, and it was such a hypocritical world. these women are having to learn the complexities of that while living and surviving. Every time you looked into the subject there was more and more to unravel. There’s nothing clear cut.” Since leaving Downton, her roles have included starring alongside Daniel Radcliffe – a man who has been spending his career also trying to shrug off association with the Harry Potter movies which made him a household name - in Victor Frankenstein. She was also in the big budget BBC drama Jamaica Inn. But while the roles both on the screen and stage have barely dried up, she keeps her private life a tightly guarded secret. She has, however, revealed some of the personal demons which haunt her. “I was doing Hamlet,” she explains of her recent role in London’s West End, “and it explores a lot about mental health. I’ve had an eating disorder since I was 14. “We can feed certain ideas of what beauty is and what success is. There CELEBRITY FEATURE
has to come a time where those aren’t the rules any more. Then we can have a mature conversation about what that is about, and about depression. “I felt so alone for so long, and I just hid. Then I started talking and held my head up and instead of saying sorry decided to tell myself that I matter. For a while, I really shied away from things. “It’s about learning to stand up and say, ‘This is me, and that’s OK’. I’m not going to be a better actor if I’m a dress size smaller.” Her privacy was rudely interrupted too in 2014 when she was one of a number of celebrities to have photographs stored on a digital cloud intercepted by hackers and spread on the internet. The intimate snaps made her hide from the media spotlight. Now, however, she expresses her anger at the situation. “I was so quiet about everything, because I felt such a colossal amount of shame and I had no idea if I could even say it out loud. could go or who I could properly talk to. “Eventually I realised I wanted to look at this properly, find other people who have gone through similar things and talk about it openly. “I want the world to really start looking into the treatment of women, particularly on the internet. “Because, to me, there seem to be two sets of rules: one for the real world and one for the cyber world. I don’t understand why, in a society where we are encouraged to live through the internet, that that forum is not being better policed.” Acting was something of a second choice for the young Jessica growing up. Born in 1989 in Cookham,
”
Berkshire, she had set her hopes and dreams on becoming a professional dancer. She trained with the National Youth Ballet and at 16 won a scholarship to the Arts Educational School in Hertfordshire. “Nothing else mattered to me except dancing,” she says. But a series of surgeries on an injured ankle brought her career aims crashing to the ground. “It was utterly, completely shattering. I don’t think it was until very recently that I truly stopped grieving. I realised that the part of ballet that I missed the most - becoming a character and telling a story - I could do as an actor.” Dance’s loss has certainly been drama’s gain. mmm

Summer of fun in Maidstone & Medway!
W
ith children in their last term before the long summer holiday, understandably parents are starting to think about how to keep them entertained over the break. With the unpredictable Great British weather, it is really important to think about what you can do with them indoors to avoid the dreaded words: “I’m bored!”
Performing arts is a natural way for children to learn while they are having fun. They use all of their muscles and senses to move around and during a class in dance, drama or singing, they will develop healthy, strong, and complete neurological connections in their brains. Performing arts give children the opportunity to express their fears in a safe environment, challenge their preconceptions about the world in which they live, develop their aesthetic sense, language and communication skills. Razzamataz in Maidstone & Medway are offering children between the ages of 4-18 the opportunity to use their imaginations and work with experienced actors, musicians and dancers during their Summer school from 31st July to the 4th August at The Cornwallis Academy in Maidstone and Rainham School for Girls in Medway. “The performing arts is a lovely way for children to improve their confidence, make new friends and have lots of fun and we hope that with our classes in dance, drama and singing, we can inspire children to take part in the Summer school even if they have never had any performing arts training before,” says Charlotte, Principal of Razzamataz Maidstone. During the week, children and their teachers will work on various songs, dances and drama pieces, together with learning about theatre skills in general. Being given the chance to perform is paramount to building a child’s confidence which is why on the last day, the children will all get the opportunity to perform their showcase to friends and families. Razzamataz offers exceptional part-time training in dance, drama and singing together with exciting opportunities to perform for 2 – 18 year olds. To find out more information about the summer school or term-time Saturday classes, please contact their team: Maidstone: 01622 322817 Medway: 01634 893524 or email maidstone@razzamataz.co.uk or medway@razzamataz.co.uk.

garden space design ideas explore different ways in which you can transform your garden into an outdoor space that will be the envy of all your neighbours
Pink Powder Planter
This small private courtyard to the side of a house was in need of updating; it wasn’t used, due to its dull and uninspiring appearance. The transformation started with a bespoke waterwall feature, in slate with a wood surround. The paving is a cool grey ‘plank’ paver set slightly on the offset, giving the illusion of a deeper and wider space; also contrasting well with the purple/pink planters. These were also bespoke and give a really bright and contemporary feel to the space. The planting is in soft pinks, purples and whites, adding colour and softness to the space. Herbs are also featured as they give a Mediterranean feel and can be used in cooking.
Low Maintenance
This terrace needed enlarging and screening from the sun. A water feature was required and the existing shed had to be incorporated. Clean lines and a planting scheme of oranges and blues were requested by the garden owner. The lawn was removed and stone and gravel paving were introduced, with oak sleepers for steps and retaining walls. The new pergola was painted grey and incorporates a chain link down which water drips into a galvanised steel trough set into the ground. A custom made curved willow screen was made for the bottom of the garden to provide a secluded and sheltered seating area.
Contemporary Split Level Terrace
This terrace, in buff sawn sandstone giving a contemporary feel, was designed to form an extension of a newly fitted kitchen/entertaining room. The bi-fold doors open onto an elegant space that has purposebuilt areas for dining and seating. The rendered walls offer privacy and give an ‘outdoor room’ feel. Carefully positioned, horizontal slots offer tempting glimpses of the space beyond. The raised beds have simple planting schemes and also include illuminated sculptures that act as focal points. Large planters and a stone monolith water feature also give interest to this space. A subtle lighting plan highlights key features to give a pleasing view from the property at night.
Small Terrace
This terrace area overlooks a truly beautiful scene, and it was important to ensure that this outdoor area allowed the owner to make the most of the views. The boxed shape of the terrace area is accompanied by geometric furniture, and the low level of the seating area and modern coffee table make the space feel comfortable and relaxing. a landscaped gardens

CURVED DECK
This scheme makes use of the Zen features and the mature trees on site, but reduces the existing lawn and paved areas. The focus of the garden is a curved Eucalyptus hardwood deck leading to a Japanese-style Tea House with Cedar shingle roof, from where the owners can relax and admire the garden.
GARDEN DESIGN
This Garden Design needed to reflect the very contemporary, modern interior of the house. To mirror the clean lines and minimal style, porcelain tiles were used along with grey composite decking and tall, white gloss planters. The grey and white tones in this design are lifted by the warmth of the cedar wood slats which continue the modern, linear style along the walls. Privacy in the garden was achieved using a bespoke pergola to give a sense of enclosure, and the gentle flow of the blade water feature masks the noise of traffic providing the garden. The garden was designed to be as easy to maintain as possible; artificial turf, box hedging and low-maintenance planting means the owners have more time to spend sitting and enjoying the garden and less time working in it. The subtle uplighting provides the perfect evening light for socialising with friends, and an open area under the pergola provides space for seating.
STEEP SLOPE
This landscape design brings order to chaos. The slope of the garden was a major issue, and rather than use traditional masonry it was thought that steel gabions filled with a local sandstone would give a different, more organic feel. As this garden is also supporting the garden of the next property the gabions provide the necessary structural support without having to use several tonnes of concrete. Planting bags were also installed within the gabion stone so that walls could be softened with greenery.

If you want to create a cosy dining area for eating out on warm nights, zone off a secluded spot on the patio using elegant garden wall lights to cast a romantic glow over your garden dining table, and set the mood with tabletop candles placed in pretty wind-resistant vessels - perfect for intimate dinner parties and candlelit meals. Don’t forget to work integrated garden lighting into your landscaping design as these final details will really set off your scheme and create a stunning effect in the garden by night. Go for smart spotlights in walls and pathways to light your way and uplighters to accentuate beautiful architecture, water features and sculptural planting. Wireless solarpowered lights are an easy and eco-friendly alternative to plumbed in lighting and come in all shapes and sizes. Embed them deep within your borders or line them up along the path and watch them illuminate your garden at twilight, with a warm glow. a

Create an inviting glow
When dining outdoors in the garden, the natural glow of candlelight as an ambient garden lighting option cannot be surpassed. As it is in the controlled setting of your alfresco table, go for real candles, but secure them against wind by opting for a sturdy yet elegant vessel. These heavy ribbed glass holders are the perfect balance of smart and safe. Avoid the temptation to keep mosquitoes at bay by using citronella candles – the scent can put diners off. Save them for after dinner.
Hang fairy lights for a magical touch
Add some sparkle to your home, inside and out, with a set of unique fairy light designs. Fairy lights bring a magical quality to any garden, and these flower versions work beautifully with the lace tablecloth and pressed-glass tealight holders.
Go for colour coordinating candles
If you are fortunate enough to have a garden in full bloom, light up your flora and fauna with lanterns. Especially now, with LED battery-powered candles at their most efficient and cost-effective, you can avoid any risks involved with real candles while still providing a striking glow. The gentle pinks and red of these silk and paper lanterns are just perfect for enhancing the natural palette of the rhododendrons. Just beautiful. landscaped gardens

Garden steps with paper-bag lanterns
Nothing makes a bigger garden lighting impact than the repetition of lights on a darkened path – for both striking simplicity and after-dark safety. With a garden party in mind, these steps are smartly lit with decorative paper bags, which can be bought with a pretty punched design or create it yourself with a hole-punch and a few minutes of your time. The trick is to weigh the bags down with gravel or rice and most definitely use LED tealights.
Garden pathway with solar powered lighting
Whether it’s the eco-friendly aspect, the freedom that comes from being wirelss or the sleek, industrial look, a solarpowered light is the simplest option for hassle-free garden lighting. As the technology advances, so do the choices for creating a number of looks in your outdoor space – from putting them deep within the foliage for an internal glow to lining them up loud and proud along a path
.
Courtyard garden with integrated lighting
Backlit plants and trees look incredible after dark with the help of integrated garden lighting. This look is super-contemporary and enhances the sharp angular choices in the garden hard landscaping, furniture and fencing. Even the water feature benefits from the integrated system, lighting up from the inside for a moonlit effect. The organic shadow-play of leafy foliage softens the edges and balances the whole look beautifully.
Garden with bamboo torches
Torchlight brings a vibrant and festive glow to your garden lighting scheme. Think Hawaiian beach party style and line the lanterns around the edges of planted areas or balance them either side of a pathway. The usual safety rules apply: plant the torches securely to prevent tipping, keep fauna well clear of the open flames and never leave burning candles unattended. Safety first, tropical garden party mood second…
Mixture of lanterns
Display a variety of lanterns in different, colours, shapes and sizes and use to light up your outdoor space for your next barbecue. Group together for a funky display or dot them around to mark paths or walkways. a landscaped gardens
Elaborate Rooftop Gardens
if you’re lucky enough to have a rooftop garden, take inspiration from the next few pages as to how to transform your space
T
he designers of Green Roof and Garden have made the most of its small Toronto plot of only 6.5 by 18 meters (21 by 59 feet) by cleverly utilizing the roof above the garage to increase the amount of green space available to the owners of this stylish and contemporary garden. The strong lines of the garden and the garage are softened by the greenery. For example, the contemporary limestone patio flooring is broken up by herbaceous planting and grasses. This linear pattern is
also echoed in the horizontal slats of the untreated ipe wood fencing, which guide the eye towards the ipe-clad garage. Above the garage is a lush green roof which doubles as entertaining space. Here the rectangular layout of the courtyard is restated in a calming reflection pool and the use of limestone paving slabs is repeated. The green roof planting is reminiscent of an English country garden with clipped boxwood, lose sedums, and ethereal periwinkle bordered by grasses, creating a low maintenance, yet attractive garden.
Roof Deck with Unusual Lighting
This roof terrace in Holland Park, London, is a beautiful and subtly feminine garden for entertaining with soft, textural planting and mellow evening lighting. The challenge of retrofitting a roof terrace garden to an existing historic building has been met with innovative use of lightweight materials and careful plant selection. The spatial layout of this modest-sized roof terrace is simple: a large central area of ipe decking is surrounded by predominantly herbaceous planting and western red cedar benches that are large enough to also be used as day beds. The decking is edged in a narrow border of crushed glass aggregate, which lends a chic, contemporary feel to the space. The decking is also inset with frosted glass panels that are lit from below. Due to weight restrictions on the roof the planting is limited to those with shallow roots that can thrive on limited soil. Lush herbaceous perennials have been used to great effect with Alliums poking their spherical heads above billowing grasses, including Mexican feather grass and Korean feather reed grass. Tulips give an early splash of colour in spring. a landscaped gardens

Eastern-Inspired Roof Garden
This Crosby Street rooftop terrace provides a tranquil haven above the hustle and bustle of New York’s Soho through the artful blending of Eastern-influenced aesthetics and sharp contemporary lines. The roof garden contains everything you could wish for in a contemporary garden, including a kitchen, entertaining area, and even a spa. These separate areas are unified through the use of one single material palette for the whole garden. Natural materials such as ipe wood, Yangtzee limestone, and smooth beach pebbles contrast with the man-made materials of the surrounding city to create a sense of calmness and serenity. A lawn of artificial grass provides soft relief to the limestone paving and is virtually maintenance free and also eliminates the need for irrigation on the roof. The planting of Himalayan birch, Japanese maple, and Bisset’s bamboo all provide architectural structure, while having light foliage to create gentle movement and dappled shade. The inclusion of an evergreen juniper hedge on one side of the site provides privacy from neighboring properties.
ROOF TERRACE WITH MODERN GARDEN FURNITURE
The Romolo roof terrace at is a playful, open-plan garden for entertaining and offers peaceful seclusion from the city and shade from the hot Milan summer sun. The terrace is divided into three main areas, each with their own functional identity and atmosphere. The large dining area adjacent to the property is dominated by a pergola, which has retractable awnings to provide varying amounts of shade. An area with a large sofa offers a semi-enclosed place for a quiet drink of an evening. A third, more intimate space is formed by taller luscious plantings creating a cozy nook in which to relax. The three spaces are visually open to each other creating a light openness to the terrace that fosters an atmosphere of cool serenity. Planting keeps the boundaries of the space and is used primarily for screening views from neighboring properties. Structure in the planting comes from snowy mespilus, the strawberry tree, and crepe myrtle, all chosen for their limited size. Much of the herbaceous planting, such as fountain grass, sedge, silvergrass, and bamboo has a soft nebulous form to it, reminiscent of clouds, thus conceptually linking the roof garden with its lofty location.
ROOF GARDEN WITH COLOURFUL CHAIRS
The series of three terraces at Archilabo make an intriguing roof garden with a striking post-industrial ambiance full of rich, contrasting textures. The building houses both private accommodations and the architect’s studio. The entrance is an exciting journey on circular concrete stepping stones that appear to be floating over a shallow pool engulfed in verdant textural foliage-rich planting of weeping birches that create a green tunnel. Underwater lights create dancing patterns of light during the evening. The first floor terrace is an intimate space for the staff of the studio. A wall of cutfaced natural stone clearly bears the marks of quarry drilling, complementing the industrial feeling of the building. Japanese maple and bamboo provide height to the planting, while an overhanging neighbouring tree lends its shade to the space. The private fifth floor terrace is a moderately-sized deck surrounded by galvanized steel planters full of delicate-leafed herbaceous and woody perennial plants such as sweet fennel, Chinese fountain grass, and Mexican feather grass. The space includes a concrete kitchen area that is not only practical but also reinforces the industrial theme. landscaped gardens

KENT IN MAY
with National Trust GARDENS TO VISIT THIS MONTH FOR A SURGE OF INSPIRATION
chartWEll The house and gardens of Chartwell exude the spirit, tastes and interests of their illustrious former owners, Sir Winston and Lady Churchill. The gardens include a grass terrace with fine views, an enormous fish pond and a walled garden which has recently been restored. The ornamental design of the garden reflects the taste of Lady Churchill, nowhere more so than the rose garden which she created herself, bordered by high walls famously built by Sir Winston who was a keen brick-layer. Filled with a mixture of soft pink and white floribundas and hybrid tea roses from June to October, this was Lady Churchill’s favourite part of the garden. The Golden Rose Walk, planted with 32 varieties of yellow roses, was an enduring golden wedding anniversary gift to Sir Winston and Lady Clementine from their children in 1958. Restoration work carried out last winter returned the Golden Rose Avenue to its former glory for 2016.

In the 1930s writer Vita Sackville-West and her husband Harold Nicolson, created the world famous gardens of Sissinghurst. It is best known for its intimate garden “rooms”, each with a different character, colour or theme, and the rose garden filled with old rose varieties. Old-fashioned climbers and shrub roses were among owner Vita Sackville West’s favourite flowers. The gardens reflect Vita’s approach as an “artist gardener”, exemplifying the great garden designer Gertrude Jekyll’s ideas of using colour themes in planting design. The famous white garden, which peaks in late June when the gardens are at their busiest, is home to ‘rosa mulliganii’ cascading over the central arbour and covering it with thousands of single, white, scented blooms. a

Emmetts Garden
The informal gardens of this Edwardian estate were created by former owner and keen plantsman Frederic Lubbock, who planted rare and exotic trees and shrubs to grow to their unique natural form, very different in style from the formal planting of the Victorian era. In the meadow, where you can sit and enjoy fine views over the Weald of Kent, wildflowers are a riot of colour in the summer. The small formal rose garden planted in a classic style is affectionately known as the ladies’ rose garden due to its abundance of pink hues. Using photographs from the 1900s the Edwardian rose garden has recently been restored to recapture the delicate pink rose collection, with its romantic rose swags on the terrace that its original creator Frederic Lubbock, designed for his wife.
Ightham Mote The gardens of this picture-perfect place surround the medieval moated manor house and, like the house, they reflect the period and ideas of successive owners. Stable Courtyard has a formal lawn with enchanting cottage-style flower borders and the Enclosed Garden is filled with roses, geraniums, lilies, agapanthus and anemones. The terraced walk near the “bowling green lawn boasts a fine mixed herbaceous border providing a colourful display in summer. The Cutting Garden provides colour and scent as well as flowers for the house and the orchard is filled with old apple varieties. They are on the site of two kitchen gardens, thought to be in use since medieval or Tudor times. Grassy terraces lead to other areas with informal lawns and specimen trees where you can picnic or take a stroll around the lake and discover other delights such as the Stumpery and the natural play area. national trust

Scotney Castle
Considered to be one of the most romantic gardens in England, the garden at Scotney Castle is like something out of a fairy tale, with the ruins of the medieval castle on a small island in the middle of a lake glimpsed through a swathe of colourful herbaceous borders. In early summer the slopes around the lake are ablaze with rhodendrons and azaleas, wisteria and old English roses adorn the sandstone walls of the castle, and its inner courtyard is filled with roses, clematis and geraniums. A huge variety of dazzling dragonflies that hover around the moat add to the colourful, dreamlike scene at the height of summer. a

Age no (parking) barrier to success for Chatham NCP customer service assistant
Bob Bruce, a 79-year-old customer service assistant for NCP in Chatham, has shown that age is just a number when it comes to excelling in the workplace, after he was named Parking Person of the Year at the British Parking Awards 2017. Now in its 16th year, the British Parking Awards recognise leading examples of car park management, enforcement, design and team work. Parking Person of the Year Award is given to the person who is judged to have gone above and beyond the call of duty and made an outstanding contribution in their work. Bob, who works at NCP’s Chatham Rhode Street multi-storey car park, has been commended by both colleagues and customers for his invaluable knowledge and professional, yet friendly attitude. LOCAL NEWS
His exceptional customer service skills have even led to him becoming an NCP Training Ambassador – a local expert who trains new colleagues, ensuring they understand not only how to deliver excellent customer service and practically assist customers, but also the importance of representing the NCP brand and its values. Bob joined NCP in 1990, beginning his career with the company as a kiosk attendant in Maidstone before moving into his current role where he is able to put his outstanding customer service skills to good use. Having previously served in the Royal Navy, Bob can frequently be found using his engineering expertise to perform maintenance across the site, ensuring it is in perfect working order for both the customers and his colleagues. Bob said he was delighted to have been recognised in the awards: “I’ve always seen what I do as a service. Yes, customers are paying for a parking space, but they’re also paying for my service – whether that’s helping them find a location they need to get to in the easiest possible way, lending them my umbrella when it’s raining or making sure they’ve understood what the price they’ve paid covers.” Jill Pearson, cluster manager at NCP, said: “We’re all thrilled that Bob has been recognised by the industry; we can’t think of anyone more deserving. He is an inspiration to all of us - his positive can-do attitude and his ability and willingness to adapt to any situation with a smile on his face is truly humbling.” The multi-talented impressionist, actress and singer Debra Stephenson presented Bob with his award at a ceremony held on Friday 10th March 2017 in London.

BUSINESS SECRETARY OPENS CRIPPS’ NEW OFFICE The Secretary of State for Business, Energy and Industrial Strategy and Tunbridge Wells MP the Right Honourable Greg Clark today (Friday 24 March) formally opened the new Tunbridge Wells headquarters of law firm Cripps – the first substantial office to have been built in the town for more than 25 years. The 40,000 sq ft state of the art building, which is on the site of the former Kent & Sussex Hospital, was built by Berkeley Homes as part of its major Royal Wells Park development and is occupied by around 300 of the firm’s staff over four floors. “This is a significant investment in Tunbridge Wells, securing jobs and continuing to benefit the local economy,” said Mr Clark. “Cripps has been in the town since the firm was founded in 1852 and in that time has become one of the most high profile law firms in the South East. I am delighted this large and significant local employer has shown such dedication to remaining in

the town.” The firm’s Tunbridge Wells offices were previously based in five different buildings in Mount Ephraim Road, which were increasingly unsuitable for its expansion. It took more than ten years to find an office building capable of accommodating all its staff under one roof. “It has been a very long search but things had to be right,” said Gavin Tyler, managing partner at Cripps. “The way we work has changed significantly over the years. Modern business requires modern premises and we have made very significant investments in the latest technology and office systems to ensure that we can operate as collaboratively and efficiently as possible as well as ensuring that the client and visitor experience when visiting the office is memorable. “As a business we are committed to Tunbridge Wells, its people and business community so we are delighted to have been able to find such wonderful offices at the heart of the town.”

They are led by a Director of Music and organist, with a Deputy Director of Music and an organist. Matthew will have oversight of this department. The Dean of Rochester, the Very Revd Philip Hesketh, said “We welcome Matthew as our new Canon Precentor which marks a new Chapter in the history of the Cathedral. Kent student wants to inspire others to volunteer to support children with disabilities Matthew Williams, a student at Canterbury Christ Church University, has been praised by a national charity for his volunteer work on holidays for children with complex disabilities, and is now calling on others in his position to volunteer on breaks across England and Wales. For over 40 years, national disability charity, Sense, has provided a range of holidays and short breaks for children, young people and adults who are deafblind, have sensory impairments or complex needs. The breaks enable the holidaymakers to develop physically, socially and emotionally, and also provide vital respite for families from caring duties. 21-year-old Matthew, from Longfield, is studying ‘Special Educational Needs and Inclusion’ at the Kent based university has already volunteered on two breaks, with his third planned for this summer. He credits the experience with giving him greater confidence in communicating and supporting people with disabilities, which will helps his development and future career. Matthew, who this year will act as Deputy Holiday Leader, said: “The experience has definitely given me confidence in communicating and supporting people with disabilities – being in an environment where the holidaymakers and volunteers are using British Sign Language is fantastic. Every young person on the holiday achieved something, whether it was trying a new food or climbing
extremely high ropes! I helped with everything from cooking meals and driving the minibus, to playing games with the holidaymakers. The training in advance meant that I was well prepared. For anyone thinking of volunteering, but unsure if they’re suitable or have the right skillset, I’d say bite the bullet and go for it. You will be surprised at how much you have to offer, how much there is to learn and how much fun you will have.” Sense have a range of holidays and short breaks planned for 2017. high treason in Kent
The year 1500 saw Sevenoaks inhabited by many people of fame and fortune. Criminal acts were very rare indeed but in 1554 an uprising that took place in another area of Kent brought a public hanging to this peaceful town. Robin J Brooks delves into a forgotten piece of Kent history.
T Thomas Wyatt
homas Wyatt was born in 1520 and after succeeding well at school he joined the military and saw service on the Continent. He was a statesman and became firmly opposed to the proposed marriage of his Queen, Mary, to King Philip of Spain. So strong were his feelings that he gathered together likeminded people and planned a rebellion against the crown. Assembling a huge force of Men of Kent, he marched through the county with the intention of storming
Thomas Wyatt
the residence of Mary. He was however forestalled at Rochester and Allington near Maidstone long before he even reached London. The attack failed and Thomas Wyatt was captured, tried and executed as a traitor. Whilst the failed rebellion did not take place within the Sevenoaks area, the local community was very sympathetic to Wyatt’s cause including many of the Sevenoaks nobility. One morning in 1554, the town was unusually crowded. In every direction groups of people could be seen huddled

in conversation but it was the Market House, situated in the middle of the town, which seemed to attract the most attention. The building served as a meeting place, business premises and a court room and it was the latter function that made it the focus of attention on this particular day. With the capture and subsequent execution of Thomas Wyatt, the troops loyal to the Crown began rounding up the important dignitaries who had supported the rebellion, two of them being Sir William Isley who was described as of Sundridge, and a man known as Mould or Martell, a farmer from Wrotham. They had both been arrested and were now awaiting a trial which was to be carried out by several judges in the Market House. The area known as ‘the Shambles’ was filled with many of the supporters of Wyatt’s cause, their faces denoting that they only wanted a leader to attempt to rescue Isley and Martell. Brown uniforms were seen appearing in ever increasing numbers as the rebellious army gathered to hear the verdict read. At first the murmer of voices could just be heard but as the crowd increased, they were replaced by loud shouting and many threats of
reprisals if the two men were found guilty of treason. Above all of this could be heard the war shouts of the Chiefs who had played a major part in conducting the uprising. All of this caused the local authority a great deal of concern and as the feelings of discontent became louder, they brought in a strong body of horsemen to ensure that an attempt was not made to free the two men. Late that same day the verdict was given: guilty. The sentence was to be death by hanging at a later date. The chanting and shouting became louder and many scuffles broke between the two rival factions as the two men were removed to the Sevenoaks Jail, a reinforced building that stood opposite the old ‘Crown Inn’. (Today the jail is a furniture shop directly opposite the Sevenoaks Post Office). That evening as Sir William Isley and Martell were locked behind bars, the crowd that had stood outside the Market House were milling around as if meditating whether to attempt a rescue. The authorities however moved in with more horses and policemen and, as darkness fell, the militant crowd slowly dispersed. It was later that same evening

that Lady Isley arrived to visit her husband. In the words of Jane Edwards of Sevenoaks from whose diary this incident is recalled: “The imagination of those only whose love is like theirs can faintly realise the meeting between Lady Isley and her unfortunate husband.” For her it had come as a shock to learn that her husband had been part of a rebel army but this was nothing compared with her feelings when he was found guilty and condemned to death. Sir William strove to speak words of comfort to her and attempted to remain composed but slowly his spirit failed as he realised that his wife would be left alone in the world. The time they were allowed together was all too short as news reached the prisoners that they were to be executed the next day on Gallows Common. Isley and his wife spoke their last together, words of love LOCAL HISTORY
and comfort, until it was time for her to go. Lady Isley left the jail knowing that she would never see her husband again for she had promised him that she would not attend his execution. The next morning, again quoting from Jane Edward’s diary: “The yellow haze of autumn filled the air and the leaves, which had expanded when their hopes were in the bud as the wind passed mournfully through them, were falling fast from their stunted oaks and birches which grew around on the morning that Sir William Isley and Martell bravely met their fate on the hill above the ruins of the hospital of St. John.” The execution by way of hanging was swift and silent and the early hour that it was carried out ensured that crowds of people such as the night before had seen, were not present. However there was still

some sympathy and support for Wyatt’s cause and as the hour of hanging approached a chorus of chanting broke out. Gallows Common, that triangle of ground that is situated where the Bradbourne and Camden roads now meet, was a sad place on that fateful morning. When the news travelled around Sevenoaks that the two had met their fate, a feeling of shock invaded this quiet peaceful town. Something had happened some distance away and had reached out and contaminated the very air that the good people of Sevenoaks breathed. It was some considerable time before the streets and inhabitants began to take life back to normal. Lady Isley was devastated and was rarely seen in public again. There had been some talk that she would be arrested as an accessory to Sir William but in the event the courts left her alone, perhaps realising that she had suffered enough. She survived for a number of years and when she died she was buried in Sundridge Church. Sometime later a stone was placed in the aisle of the church which bore the inscription: ‘To the memory of Sir William Isley and Margaret his wife’. The tablet is no longer to be seen having been removed many years later. Although time has changed the face of Sevenoaks, the three major scenes of this tragic story are still to be seen. The Market House where the trial was held became a public convenience for many years during LOCAL HISTORY
the 1930’s until the 1970’s when it became a building society latterly to be taken over by a retail shop. The Shambles area has changed considerably since the 16th century but the old Sevenoaks jail is now a furniture shop. Part of Gallows Common is now the site of ‘The Rifleman’ public house whilst the rest of the surrounding area known as Hartslands was given over to housing many years ago. It is said by some however, that on moonless nights the cries of the executed can still be heard upon the wind. Could it be possible that these are the cries of the ghosts of Isley and Martell? I acknowledge with thanks reference to Jane Edwards diaries of Sevenoaks. By ROBIN J BROOKS

Medieval Story Garden: Magical Patterns 27th May to 4th June
The Canterbury Tales team will be exploring the magic of patterns this May half term with a variety of activities in the Medieval Story Garden. Have your hair beautifully braided, marvel at the magic patterns in kaleidoscopes, try your hand at maypole dancing and enjoy a demonstration of Astrolabes, ancient instruments for determining time and the position of stars, which Chaucer himself was fascinated with. The Canterbury Tales is the only attraction in the world dedicated to celebrating the works of Geoffrey Chaucer, the father of English Literature who is widely considered to be the greatest English poet of the Middle Ages. During the 40 minute experience, through a combination of live interaction and audio guides, guests are regaled by five very different tales of true love, saucy scheming and spine-chilling trickery as each of Chaucer’s colourful characters competes to win the title of best story-teller. The Canterbury Tales is part of Continuum Attractions, the leading operator of cultural heritage experiences in the UK. Continuum currently manages an award winning portfolio of visitor attractions including Oxford Castle Unlocked and York’s Chocolate Story. Adult £9.95, Concession £8.95, Child £7.95, Family £28.50.
