‘Flow’ occurs when you’re so fully absorbed in what you’re doing that you don’t notice what’s going on around you. You often lose track of time, and afterwards you feel great. Athletes call it ‘being in the zone’.
All health professionals agree that doing some form of exercise on a regular basis is essential for keeping the mind as well as the body fit and healthy.
Flow is a tried and tested pathway to achieving greater happiness, through controlling your inner experience or consciousness. In order to be able to get into a flow state with your favourite activity, the levels of challenge and skill need to be in equilibrium. What works for you may be different to what works for others. But the more you get into flow, the happier you’ll feel!
There is mounting evidence that exercise can mitigate against psychological as well as physical illness. In one study, participants diagnosed with depression were randomly assigned to medication, exercise, or a combination. Ten months later recurrence rates for the medication-only group were 38 per cent, for the combination group 31 per cent and for the exercise-only group 9 per cent. The message here is that physical exercise is an absolute must for not only your physical health but also your mental

The Father of Genetics
Gregor Mendel Although their lifespans overlapped, Gregor Mendel and Charles Darwin never met. But while Darwin was developing a theory of evolution, Mendel found statistical proof that plants and animals pass physical characteristics from one generation to the next. From the simple observation of livestock and crops, people knew that the offspring of plants or animals showed mixtures of their parents’ physical characteristics. In his first paper, Experiments in Plant Hybridization, published in 1866, Mendel wrote that he wanted to discover a ‘generally applicable law of the formation and development of hybrids’. He described how he had carefully bred a type of pea, Pisum sativum. The plant was cheap and came in many strains that when bred in isolation produced identical offspring, but gave more complex results when mixed to produce hybrids. Crossing a plant that produced smooth peas with another that produced wrinkled peas, gave offspring that all had smooth peas. When these second-generation offspring were interbred, some of the new plants produced smooth, and some wrinkled peas. Intriguingly the ratio was almost perfectly three plants with smooth peas for every one with wrinkled peas. He then looked at the way different colours were passed from one generation to the next and found that the same rule applied, and noted that inheritance of the colour of both the plant’s flowers and its peas occurred independently of pea shape. Mendel studied with incredible diligence, cultivating some 28,000 pea plants to generate data for just two scientific papers. But it took genius to make sense of the results. Mendel realised that such phenomena could only occur if three things were happening in the

Fennel Salad with Pistachios

2 fennel bulbs 1/2 bunch fresh mint 1 spring onion 3 tbsp extra virgin olive oil Salt and ground pepper ½ head of lettuce or Romaine lettuce 50 g green pistachios 1 tsp organic lemon zest 1 tbsp white balsamic vinegar
1 . Clean and wash the fennel bulbs, remove stalks and stems. Slice the fennel into wafer-thin slices, finely chop the fennel greens. Wash and dab the mint dry. Clean the spring onion, wash and cut into fine rings. 2 . Heat 2 tablespoons of olive oil in a pan and sauté the spring onions. Add the fennel slices and cook until tender at medium heat while stirring, then season with salt and pepper. 3 . Wash and dry the lettuce. Cut the leaves into fine strips and place in a bowl. Garnish the salad with half of the mint, the stewed fennel and the fennel greens. 4 . Chop the pistachios and remaining mint roughly. Finely grind half of the pistachios, mint and lemon zest in the mortar. Mix with the remaining oil, vinegar, salt and pepper to a dressing. 5 . Drizzle the dressing over the salad, mix well, season the salad again and sprinkle with the remaining pistachios before serving.

Chickpea stew with poppy seeds and plums

INGREDIENTS Serves 2
200g dried chickpeas (or 400 g can chickpeas) salt 1 tsp cumin 1 onion = 1 small bell pepper (red or yellow) 100g plums (or 75g prunes) 50g organic coconut oil 2 tsp poppy seeds 60 g cashews 300 ml vegetable stock 1 bunch of coriander leaves

1 . Soak the dried chickpeas overnight in cold water, if using, with a pinch of salt and the lightly crushed cumin. 2 . The next day peel the onion and cut into thin slices. Wash and clean the plums and pepper. Core the pepper, pit the plums, and cut both into bite-size pieces. Drain the chickpeas. 3 . Heat the coconut oil in an oven-proof pot, add the poppy seed and onion and sauté. Once the onion is glassy, add the pepper pieces, chickpeas and cashews. Sweat again, add the vegetable stock and cook the vegetables for 10 minutes. Preheat the oven to 160°C. 4 . Stir in the plums and place the pot in the oven to cook for 15–20 minutes. Wash the coriander leaves and chop roughly. 5 . Remove the stew from the oven, sprinkle with the coriander and serve in the pan.

Dust the dough evenly with buckwheat flour. Fold the dough in half; then fold each half back on itself so that the dough is quartered lengthways.
